Basic Chicken Noodle Recipe
Chicken noodles, prepared and assembled for serving according to classic rules, will have a unique aroma and fresh taste.
Ingredients:
- 600 g chicken meat per 2 liters of water;
- 1 onion;
- 1 carrot;
- salt;
- peppercorns;
- greens with stem or peeled root (celery, parsley, thyme);
- Bay leaf;
- cloves (2-3 pieces);
- 2 eggs;
- 200 g flour;
- 2 tbsp. l. warm water.
Cooking technology:
The classic process of making chicken noodles has two parts - broth and cooking the noodles.
- The breast cooks faster and is separated from the rest of the meat so it can be removed from the pan earlier. The washed meat is poured with cold water and placed on medium heat until it boils.
- A simple dough is kneaded. The flour is poured into a slide and a funnel is made in it. Beat the eggs with water and a pinch of salt and pour them into the flour mound. After kneading the dough to a uniform consistency, wrap it in cling film and set aside for 30 minutes.
- After boiling, all scale is carefully removed, the fire is reduced to a minimum and a whole onion, peeled to the penultimate layer, a bunch of stems and roots of greenery tied with culinary thread, a bay leaf, as well as peeled whole carrots are placed in the pan. Black peppercorns and cloves are thrown in.
- The surface on which the noodle dough is rolled out is generously dusted with flour. The finished layer should be about 1 mm thick. It is rolled into a flat tube and cut into thin strips no more than 2 mm wide.
- The noodle ribbons are shaken to unfurl and stretch, then left to dry for 20 minutes.
- The breast is removed from the broth, cut and placed on a plate under foil.
- 40 minutes after boiling, remove the onion and bunches of herbs from the broth. The chicken meat is separated from the bones and returned to the pan.
- Dried noodles are cooked separately in boiling water for no more than 5 minutes.
- Place noodles and a piece of breast on plates, add hot broth and fresh herbs.
Important! A good chicken broth should be clear.
HOMEMADE NOODLES WITH CHICKEN - RECIPE WITH PHOTO STEP BY STEP
So, how to make homemade chicken noodles? The entire preparation of our dish can be divided into two stages. At the first stage, you need to cook the chicken (preferably the whole carcass) and, while it is cooking, knead the dough. At the second stage, we will prepare the noodles.
First, a few words about chicken. Since I’m writing you a recipe for homemade noodles, then, as a villager, I can afford to cook it with homemade chicken, and not with chicken bought in the supermarket. I know this is not available to everyone, so I can only regret it and share some advice when buying a bird.
Be sure to consider these before making your chicken noodle soup. You should not use broilers for cooking soup. Their meat, of course, is more tender and cooks quickly, but the broth from homemade chicken turns out better and tastier!
Ingredients for making homemade chicken noodles
To prepare noodle soup at home, we will need chicken (I’ve already told you how to choose it), onions, herbs and noodle dough. Many housewives add potatoes to this soup, but in our family we don’t add them. As for me, potatoes distort the very taste of homemade noodles. Homemade egg noodles are prepared from the following ingredients:
- eggs – 3 pcs.;
- 2 cups wheat flour;
- 1/2 teaspoon salt.
As you can see, egg dough for soup (for homemade noodles) is easy to make without an extra trip to the store, because you probably have all the necessary ingredients in your refrigerator.
Homemade noodles for chicken soup
So, now I’ll tell you step by step how to prepare homemade chicken noodles - first I’ll provide you with a recipe for the dough with a photo. While the first stage of preparing the soup (cooking the chicken) is in full swing, let's make the dough for homemade noodles.
Well, now we’ve got to the eggs!))) It’s with them that we’ll knead the dough!))) I wrote it and I’m sitting here laughing!))) Well, what else can you say?! We will knead with eggs!)))
- Making homemade noodles is quick and easy - we need a sieve to prepare it. After beating the eggs in a deep bowl and adding salt, use a sieve to sift the flour into the cup, then add water and begin kneading the dough with a fork.
- When the dough becomes thick, knead it with your hands, adding sifted flour periodically. It is necessary to knead until the dough becomes elastic and stops sticking to your hands. The result should be juicy, as in the photo.
- Cover the prepared dough with a cup and let it rest.
- After 10-15 minutes, we knead our bun again and divide it into four parts. And then we roll out each part with a rolling pin. Make the pancake very thin, almost transparent!
- The juices rolled out in this way now need to be dried a little. To speed up the process, I dry them in a preheated oven on a baking sheet (you can also dry them in a large frying pan on the stove). After drying one side, turn it over to the other.
- After drying the juices, you can begin directly preparing homemade noodles. To do this, I fold the dried juice in four, put the same folded juice on top and start cutting the noodles from the end (thinner). Noodles are considered tastier and more refined the thinner they are sliced!
- Homemade noodles with chicken are almost ready: the recipe with step-by-step photos is almost finished, there is very little left. Having cut the noodles, we return to our chicken.
- We need to cook our bird until the meat begins to easily come away from the bones. Then we take it out, separate the meat from the bones and put it back into the pan.
- As soon as the broth boils again, salt it and, stirring slowly, add our chopped vermicelli to the pan in small portions. How much to add depends on whether you like your soup thick or thin. According to my recipe, there is enough noodles for a 7-liter pot of soup.
- After this, we wait for the contents of the pan to boil and note the time. Cook the noodles for a short time: like all flour products, you need to keep them on the fire for 10-15 minutes after boiling - it all depends on the thickness of the cut noodles.
- After this, add a little bay leaf to the pan for taste and remove from heat. You can add separately fried onion until golden brown to the vermicelli. And already on a plate you can chop fresh herbs, and also add a spoonful of sour cream - God himself commanded! Now the dish is ready.
How to cook at home
The home method has fewer manipulations.
Product composition:
- one small chicken;
- 1 carrot;
- 1 onion;
- peppercorns;
- 2 bay leaves;
- water – 2 liters;
- 1 egg;
- a glass of flour;
- salt;
- greens (parsley, dill or celery).
Cooking technology:
- The chicken is cooked in the same way and 10 minutes after boiling, salt to taste, add peppercorns and bay leaves.
- The noodles are also prepared according to the classic recipe.
- If the broth is not clear, you can pour it through a sieve and return to the heat.
- Frying is prepared from finely chopped carrots and onions (sauteing the vegetables in a heated frying pan in a small amount of vegetable oil).
- Before the end of preparation, the chicken meat is separated from the bones.
- Pieces of poultry, dried noodles and frying are sent into the broth. Cook for no more than 5-7 minutes.
- When serving, add finely chopped greens to a plate with chicken noodles.
This simple and quick way to cook chicken noodles makes it a favorite among housewives.
With mushroom flavor
Thick, hearty soup and juicy pieces of chicken will make a complete lunch for a family of 5-6 people.
Ingredients:
- 1 large chicken;
- 2.5 liters of water;
- 3 medium potatoes;
- 1 carrot;
- 1 onion;
- mushrooms 250 g;
- 1 tbsp. l. salt;
- 0.5 tsp. ground black pepper;
- ground paprika;
- 750 g flour;
- 3 eggs.
Cooking technology:
- The chicken is cleaned of its entrails, chopped in half and placed in a large pot of water.
- Finely chop the onions and carrots.
- After boiling the broth and removing the foam, add salt, onions and carrots. The fire decreases. Cook for 20 minutes.
- Beat eggs with a pinch of salt into the sifted flour. Steep dough is kneaded. Cover with a bag for 10 minutes.
- Mushrooms are cut into slices, potatoes are divided into 8 parts.
- The soft dough is kneaded again with effort for 4-5 minutes and again sent to the bag.
- Chicken halves in broth, turn over. Potatoes and mushrooms are added.
- The dough is rolled out from small pieces to a thickness of 1-2 mm. Strips of 3-4 cm are stacked on top of each other, after which they crumble into short noodles.
- After 20 minutes, the chicken is removed, cut into large pieces, salt and pepper to taste, sprinkled with onions and herbs.
- The noodles go into the pan and after boiling, cook for no more than 3 minutes.
How to cook “Homemade chicken noodles”
1. First, let's do the dough. Sift the flour into a deep bowl. Beat an egg into a glass, add 1/2 teaspoon of salt and pour in water (you will get about 1/3 glass). Beat with a fork and pour into the flour. Stir until smooth.
2. Roll the dough into a ball and put it in the refrigerator for an hour.
3. Wash the breast and place it in a pan with water. Add salt and cook over medium heat until soft.
4. Divide the dough into 4-5 parts. Roll each one out thinly.
5. In a dry frying pan, fry the tortillas on both sides for literally 30 seconds.
6. Afterwards you can cut into large pieces.
7. And thin stripes.
8. That's it, homemade noodles are ready.
9. Remove the finished chicken from the broth. Cool a little and disassemble. Strain the broth and send back the shredded chicken.
10. Fry the carrots in a frying pan with vegetable oil.
11. And put it in a saucepan.
12. Next add the noodles.
13. Add chopped herbs and bay leaf. Bring to a boil and immediately remove from heat. Leave covered for 10 minutes before serving.

Cooking with rice noodles
The execution takes about half an hour and allows you to get a light and healthy dish for two people.
Product composition:
- rice noodles – 150 g;
- chicken fillet – 400 g;
- cucumber – 1 pc.;
- carrots – 1 pc.;
- bell pepper – 1 pc.;
- soy sauce – 3 tbsp. spoons;
- a little French mustard, olive oil and balsamic vinegar.
Cooking technology:
- Chicken fillet is cut into medium cubes, poured with soy sauce and marinated for 30 minutes.
- Vegetables are chopped into strips and successively fried in oil over medium heat.
- Bell peppers and carrot and cucumber strips are sautéed separately. After softening, the vegetables are placed on a plate.
- The last thing to go into the frying pan is the marinated chicken, which after 3-4 minutes on an open fire is ready. The fire is turned off, and the meat remains in the pan.
- Cook rice noodles in boiling water for 10 minutes.
- The frying pan with chicken meat is placed on medium heat, vegetables and rice noodles are added to it. Mix everything thoroughly over medium heat for 3-4 minutes.
- A dressing is prepared (olive oil, balsamic vinegar and French mustard are whisked) and poured over the finished dish.
How to cook “Egg noodles with chicken and vegetables”
Peel the carrots, rinse and cut into strips 3-5 mm thick.
Cut the onion into half rings.
Wash the chicken and cut into pieces.
Boil the noodles in salted boiling water for 6 minutes (see package instructions).
Place the finished noodles in a colander. Add oil to it.
In a bowl, beat the egg with pepper and soy sauce.
Pour the egg mixture into a hot frying pan with oil.
Then add the chicken breast to the pan.
Add carrots, onions, coriander and ginger. Simmer the dish over high heat for 10 minutes.
Then place the noodles in the pan and add more soy sauce.

Chicken broth soup with homemade noodles
For the broth, you can take not a whole bird, but chicken bones with a small amount of meat and achieve good taste through noodles on egg yolks.
Ingredients:
- 2-2.5 liters of water;
- 500-700 g chicken bones with meat;
- salt, pepper, bay leaf;
- 6 eggs;
- 2 tbsp. l. olive oil;
- 250 g flour;
- fresh/dried herbs (dill, parsley, cilantro).
Cooking technology:
- Chicken bones with meat are cooked like regular broth. 20 minutes after boiling, add salt to taste (1.5 teaspoons of salt), add peppercorns and bay leaves.
- For the noodles, 5 eggs are separated from the whites, the last egg and olive oil are added. The mixture is salted and stirred. When kneading noodle dough with yolks, you must always add liquid (vegetable oil or water), otherwise the dough will not form.
- The egg mixture is poured into the flour and a stiff dough is kneaded, which must be kneaded for at least 10 minutes. The finished dough is left under the film for half an hour.
- The yolk dough is rolled out without adding flour. Sprinkle the noodles only after cutting into thin strips.
- Ready noodles are added to the broth 40-50 minutes after it boils.
- Greens are poured into plates with ready-made chicken soup.
Dried yolk noodles can be used within a week.
First dish in a slow cooker
This chicken noodle soup is so easy to prepare that anyone who is far from cooking can master it.
Product composition:
- chicken – 500 g;
- ready noodles – 400 g;
- carrots and onions - 1 pc.;
- tomato and bell pepper – similar amount;
- vegetable oil;
- salt pepper;
- water.
Cooking technology:
- The chicken, cut into large pieces, is poured with boiling water for 5 minutes.
- Vegetables are chopped into small strips and fried in vegetable oil in a multicooker bowl for 15 minutes.
- Chicken, salt and pepper are added to them, after which everything is mixed and fried for another 10 minutes.
- Pour in warm water, add salt to taste and set the “Soup” mode for one hour.
- Check the preparation time of the purchased noodles on the packaging. If it is 5-10 minutes, then it is during this time before the end of the “Soup” mode that the noodles need to be inserted into the multicooker bowl.
- When the cooking cycle is over, add chopped greens and select the “Warming” mode for 10 minutes.

- any greens (dill, parsley, cilantro).
Cooking technology:
- The chicken breast is filled with water and placed on the fire until it boils. After removing the foam, add 1-1.5 teaspoons of sea salt and chopped celery. Cooking time for meat is 20 minutes.
- All vegetables are chopped as finely as possible, broccoli is disassembled into inflorescences.
- In a separate pan, cook rice noodles in boiling water for 10 minutes.
- The chicken is disassembled into fibers. Add vegetables, except broccoli, to the soup for 5 minutes.
- At the end are broccoli, chicken, rice noodles and chicken spices. Processed cheese is mixed with one spoon of broth and, together with a spoon of olive oil, is also added to the soup.

With homemade noodles
If you cook the noodles yourself, the dish will take longer, but the taste will be completely different. This recipe uses 1 kg of chicken, a large onion, carrots, several potatoes, a chicken egg, sunflower oil and spices to taste. Step by step recipe:
- Prepare the noodles: pour flour onto the table, form a slide with a depression in the center, add egg, salt, 1 tbsp. l. water. Knead the dough with your hands and roll it out thinly. Cut into thin strips and let dry. It is better to make the noodles at least an hour before the dish is ready.
- Cut the chicken and let it cook. After boiling, be sure to remove the foam, add salt and reduce the heat. The chicken takes 30 minutes to cook.
- Chop the carrots and onions and fry them until the vegetables become soft.
- Add frying to the finished chicken.
- Cut the potatoes and place them in the pan.
- Cook the broth until all its ingredients are cooked.
- Add spices, noodles and cook for another 5 minutes after boiling.
