  • Dry fast-acting yeast - 1 tbsp. spoon
  • Warm milk (not higher than 35-40 degrees) or warm water - 1.5 cups
  • Sugar - 1 tbsp. spoon for dough and 0.5 cups for sprinkling buns
  • Salt - 1 teaspoon
  • Vanillin – 1 sachet (1.5 g)
  • Vegetable oil - 2 tbsp. spoons for dough + oil for greasing parchment
  • Egg for greasing buns - 1 pc.

Fast-acting (instant) yeast does not need to be diluted with water, but must be immediately added to the flour. They are able to raise even the toughest dough and do not give the products a characteristic yeast smell (of course, provided that the yeast is of high quality).

How to make homemade buns:

  • Mix flour, dry instant yeast (read the instructions on the package!), sugar, salt and vanillin in a bowl.
  • Pour in warm milk or water.
  • Quickly knead the dough. At the end of kneading, add vegetable oil so that the dough does not stick to your hands.
  • Knead a little more, then leave the dough to rise. To do this, cover the top of the bowl with the dough with cling film or a towel and place it in a warm place without drafts.
  • After an hour and a half, the volume of the dough will double.
  • It is necessary to knead it and leave it to rise again.
  • This time the dough will rise faster, in about 30 minutes.
  • Place the finished dough on a table sprinkled with flour and knead again.
  • Then roll the dough into a rope, cut it into pieces, and roll the pieces into balls.
  • Roll out each bun into an oval flat cake and sprinkle generously with sugar (about a heaping teaspoon).

How to make Cinnabon cinnamon rolls:

  • 1. Heat the milk and add a packet of dry yeast and half the sugar. Leave for 10 minutes.
  • 2. Beat eggs, sift flour, salt, vanillin into them.
  • 3. Add milk with yeast and knead the dough well. If necessary, add more flour, but not much so that the dough does not become tight.
  • 4. Cover the finished dough with a towel and place in a warm place for 1 hour.
  • 5. When the dough has risen, roll it out into a layer about 5 mm thick.
  • Brush the dough sheet with melted butter. Sprinkle the remaining sugar and cinnamon mixture evenly.
  • 6. Roll the dough with the filling into a roll. Cut it into equal parts about 4-5 cm (I got 8 pieces).
  • 7. I baked the buns in a springform pan, but you can also bake them on a regular baking sheet. Cover the bottom with parchment, grease the pan with butter and place the buns cut side down. Bake for about 25 minutes at 180 degrees. Check readiness with a wooden skewer.
  • 8. While the buns are cooking, prepare the sauce. To do this, you need to mix condensed milk with sour cream and put it in the refrigerator.
  • 9. When the cinnamon rolls are ready, remove them from the mold and brush them with the prepared sauce on all sides (you can add more on top) and leave the baked goods to cool and soak.

Step-by-step preparation

  1. Pour 250 ml of warm, but not hot milk into a deep bowl. Add 2 teaspoons of dry instant yeast and 3 tablespoons of granulated sugar to it. Mix thoroughly and leave the dough in a warm place for 10-15 minutes. A “cap” of a thin layer of foam should form on the surface.

  2. Next, add a pinch of salt, a teaspoon of vanilla sugar, beat in one egg and pour in melted and now cooled butter (50 grams). Stir the mixture using a whisk.

  3. Sift about 400 grams of flour and knead the dough. Add the remaining flour in small portions as needed.

  4. As soon as the dough becomes difficult to stir with a spoon, transfer it to a floured work surface. Knead the dough with your hands, adding flour little by little. The finished dough should be soft, not clogged and slightly stick to your hands.

  5. Grease a bowl with a small amount of vegetable oil and transfer the finished dough there. Cover with a towel and set aside for 30-40 minutes to rise.

  6. Divide the mixture into 4 equal parts, each of which is divided into 3 pieces.

  7. Stretch each piece with your fingers and roll out with a rolling pin into an oval approximately 2 mm thick.

  8. Brush the ovals with melted butter and sprinkle with sugar to taste.

  9. Twist the layer into a tube, fold the ends together and lay it on its side. Stepping back 1.5-2 cm from the ends, make a cut in the middle. The result is a heart shape, which still needs to be carefully adjusted with your fingers.

  10. Shape all remaining buns in a similar manner.

  11. Line a baking tray with special baking paper, place the “hearts” on top and brush them with beaten egg for a golden color.

  12. Place the baked goods in an oven preheated to 180 degrees. After 15 minutes, when the buns are slightly browned, pour cream over each of them and sprinkle with a small amount of sugar. Next, return them back to the oven for 5-10 minutes.

Ruddy, crispy and incredibly fragrant heart buns are ready! On the outside they are covered with a golden crust, and on the inside they are very soft and fluffy.   4. Add 1 tbsp to warm milk. spoon of flour, 1 tbsp. a spoonful of sugar and yeast, crushing them with your fingers.
  5. Mix. Let the dough sit for 5-10 minutes, let the yeast disperse and start working.
  6. After checking the yeast, pour the flour into a larger cup, add the remaining sugar and salt. Mix. This includes the egg and the dough.
  7. Mix. Melt the butter and add it to the dough last.
  8. Knead the dough well for several minutes.
  9. Cover the bowl with the dough with film and leave in a warm place. The dough rises well within an hour.
  10. Lightly knead the finished dough, roll it out into a layer 0.5 cm thick, cover with film and let rest for about 10 minutes. Use a punch (8 cm in diameter) to cut out round buns from the dough.
  11. We transfer the buns to a baking sheet covered with parchment and let them stand on the table under the film for 10 minutes.
  12. Turn on the oven to preheat to 210 degrees.
  13. Mix the yolk with milk.
  14. When the buns have risen slightly, brush them with yolk and sprinkle with sugar.
  15. Cut the frozen butter finely into cubes.
  16. Then place pieces of butter on the dough, immersing them in the dough.
  17. Bake the buns in the oven at 210 degrees for 10 minutes.

  • Vegetable oil (refined deodorized) - 100 ml

Preparation

  1. Mash the cottage cheese with sugar, vanilla sugar and a pinch of salt. Beat in two eggs.
  2. Mix well until the curd mass becomes completely homogeneous.
  3. Pour in vegetable oil. Mix thoroughly again.
  4. Mix flour with baking powder and fold into the dough.
  5. Add all the flour and knead the dough. The dough should be soft, but elastic and not stick to your hands or the table. Cover the bowl with the dough with a towel and leave for 20 minutes.
  6. After a while, turn on the oven to preheat to 180 degrees. Place the dough on the table and divide into four equal parts.
  7. Roll the dough into four ropes.
  8. Fasten the ends of the bundles on one side. Take the two outer strands, cross them over each other and place them between the two remaining strands. Thus, form a pigtail from four strands.
  9. When the braid is braided, fasten the ends of the strands. In a small bowl, beat the remaining egg.
  10. Brush the braid with beaten yolk and sprinkle with cane sugar.
  11. Transfer the braided bun made from curd dough onto a baking sheet and bake in the oven at 180 degrees for 25-30 minutes.

  • Condensed milk (for filling) - 3-4 tbsp. l.
  • Chicken egg - 1 pc.

Recipe for “Buns with Milk Tenderness” filling:

  1. First, place the glass of kefir in a pan with hot water so that it is slightly warm, not from the refrigerator.
  2. Also remove the egg from the refrigerator in advance so that it is at room temperature.
  3. The butter should be the consistency of sour cream.
  4. Yeast, 1 tsp. Stir sugar in 50 ml of warm water, add 1 tbsp. flour, mix, leave for 10-15 minutes.
  5. A cap should appear.
  6. Sift 2.5-3 cups of flour with vanilla. Add sugar and salt to flour, mix. Mix the remaining warm water (100 ml) and kefir. Pour liquid into flour mixture and add egg. Whisk to form a homogeneous mixture.
  7. Then add the zest, yeast mixture, mix, add softened butter, mix lightly and add the rest of the flour. In total, it took me about 5 glasses, 4 exactly, then I added it while kneading on the table.
  8. Knead the dough, cover and leave for 20 minutes. Then knead the dough on the table for about 10 minutes, put it in a bowl greased with vegetable oil, cover and put in a warm place for 1-1.5 hours.
  9. The dough should double in size during this time.
  10. Knead the dough and divide into small balls. Cover the balls with film and let them rest for 10 minutes.
  11. Grease the frying pan with vegetable oil. Prepare jam.
  12. I had a small jar of baby food jam, 110 g, it wasn’t enough for 1 bun, but at first I put it generously, then more modestly, so it was just enough for the frying pan.
  13. Grease your hands with vegetable oil so that the formed buns are lightly greased. Flatten the ball slightly, add a teaspoon of filling, pinch the edges, forming a ball with filling inside.
  14. Place the buns in the pan at a distance of about 1 cm from each other, cover and leave for 30 minutes.
  15. The form must be permanent!!!!! This is necessary, otherwise all the filling will leak out and the buns will burn and be dry, and the most important thing is that you will have something to do later, scrubbing the bottom of the oven)))
  16. Add 1 tbsp to 100 ml of milk. butter, condensed milk, heat it all over heat until smooth.
  17. Pour over the buns and bake at 180 C for 20-25 minutes, until golden brown.
  18. It’s better to take a mold with higher edges than mine, otherwise during the first 5 minutes in the oven, the filling began to bubble and tried to escape, and the edges weren’t enough for it.
  19. Take out the buns, lightly grease the top of the buns with butter and let them stand in the pan for about 10 minutes.
  20. Then carefully remove it. The dough is so tender that it is better to cover it with a plate and turn it upside down, and then cover it with another plate and put them in the correct position.
  21. How tender and soft the buns are, soaked in the milk mixture. The aroma of orange pleasantly breaks through the vanilla butter dough and harmonizes well with the apple filling. Quite simple and quick, and the baked goods are ready for Saturday morning, pour some tea and enjoy the day off.   1. The step-by-step recipe begins with making the bun dough.
  2. Pour warm water into a deep bowl. Add a packet of yeast and 2 tablespoons of granulated sugar to it. To stir thoroughly. Cover the container with a towel and let the yeast dissolve.
  3. In another bowl, mix 2 chicken eggs and milk. Add melted butter (2 tablespoons) to the mixture. Beat the mixture with a blender.
  4. Add a pinch of salt.
  5. Mix yeast with egg mixture. To stir thoroughly.

  • Chicken egg - 1 pc.

Cream

  • Vanillin
  • Milk – 300 ml
  • Corn starch - 30 g
  • Chicken egg - 2 pcs
  • Butter - 50 g
  • Sugar - 120 g
  • Powdered milk – 40 g

Recipe for Custard Buns:

  1. First, let's cook the cream (it can be made in advance, it stores well in the refrigerator). Mix sugar, milk powder, corn starch, eggs, vanillin with a whisk into a homogeneous mass.
  2. Heat milk and butter until hot.
  3. Pour half the hot milk into the egg mixture, whisking until smooth. Pour the egg mixture into the rest of the milk, stir thoroughly, cook on the stove (over low heat), stirring with a whisk, until it thickens. The result is a thick paste, cover the surface with film and leave to cool.
  4. I entrusted the dough to a bread machine, but you can do it by hand. From these products, knead a soft dough (mix yeast with flour, add sugar, egg, water, milk powder, softened butter and salt), put in a warm place until the dough doubles in size.
  5. Divide the risen dough into approximately 18 pieces.
  6. I put the custard in a pastry bag.
  7. Let's start making buns. Roll out the ball of dough into a 10x14 cm cake.

Recipe for Ham and Cheese Buns:

  1. I want to immediately make a reservation that I prepared a double portion of buns (I will describe the preparation of one). Do not add all the flour at once; you may need a little less flour.
  2. Let the dough rise to about double in volume in a warm place.
  3. To prepare these buns you will need a rectangular ham (mine is 5*12.5 cm) and hard cheese.
  4. I cut the ham and cheese into 6 slices (I cut the cheese into pieces 3.5 * 5.5 cm).
  5. I divide the dough into 12 equal parts.
  6. Form each piece of dough into a ball, cover the dough with film and leave to rest for 10-15 minutes.
  7. I take one piece of dough and roll it out into a rectangle, twice the size of a piece of ham. If the dough sticks to your hands, use flour to dust it.
  8. Place a slice of ham in the middle of the rolled out dough.
  9. I fold the edges of the dough towards the middle (covering the ham), pinch the edges of the dough from above - that is, I connect the edges of the dough in the middle.
  10. Using a sharp knife, I cut the dough with ham into 6 approximately equal parts (first I make a cut in the middle, and then I cut each of the 2 parts into three parts).
  11. Then I put the pieces together, moving each next one a little.
  12. I take another piece of dough and roll it into a circle.
  13. I place pieces of dough with ham on the circle.
  14. I put a piece of cheese on top of the pieces of dough with ham.
  15. I pinch the bun like a pie.
  16. I turn the bun over.
  17. Using a sharp knife or a special blade, I make a cut in the middle of the bun as in the photo and slightly open the middle.
  18. I shape the rest of the buns in this way. I transfer them to a baking sheet greased with vegetable oil.
  19. Cover the buns with cling film and let them rise to about double in size.
  20. I brush the buns with beaten egg.
  21. I bake the buns in an oven preheated to 180 degrees until golden brown (it took me 30 minutes to bake, but everyone’s oven is different). Enjoy your meal!
