English shepherd's pie: classic recipe
This dish is a casserole made from potatoes, vegetables and meat filling. Today you can find many different variations of this pie, but the most popular, as many years ago, remains the classic shepherd's pie.
To prepare this famous British dish, prepare the following ingredients:
- Meat broth – 80 ml
- Potatoes – 3 pcs.
- Carrots – 1 pc.
- Chopped celery stalks - 2.5 tbsp.
- Lamb pulp – half kg
- Homemade milk – 50 ml
- Onion – 1 pc.
- Tomato paste or sauce – 1 tsp.
- Hard cheese – 70 g
- Greens - a couple of bunches
- Olive oil – 25 ml
- Salt, pepper, curry - at your discretion
Classic
The cooking process will consist of the following stages:
- Let's start with the meat filling, which we will make from lamb pulp. Rinse the piece of meat and dry it with disposable napkins. Next, use a meat grinder or blender to make minced meat.
- Potatoes must be peeled, washed and boiled.
- Grind the cheese on a grater.
- Wash and dry the greens, then chop them.
- Peel the carrots and onions, wash and chop. The shape of the chopped vegetables for this recipe is not so important, however, most often they are cut into small cubes.
- The celery according to the recipe is already chopped. If you buy whole celery stalks, wash them, dry them and chop them in any convenient way.
- As soon as the potatoes are cooked, you need to mash them. We will make mashed potatoes by adding homemade milk and spices to the potatoes.
- Add the specified amount of oil to the pan and fry the carrots and onions in it. This process will take 5-7 minutes.
- After this, place the celery in the pan and cook the filling for another 2 minutes.
- At the next stage of preparation, add the minced meat to the vegetables and mix all the ingredients thoroughly. Prepare the filling for about 7 minutes.
- Next, add the tomato paste and broth into the pan and continue cooking the ingredients until the liquid has completely evaporated. If desired, you can add salt and season the filling at this stage.
- While the filling is cooking, prepare the pan in which you will bake the dish. The form must be high enough.
- So, to assemble this delicious pie, place the prepared filling on the bottom of the pan and distribute it evenly.
- Next, we send the prepared potatoes for the filling, and also level them over the entire form.
- The final layer will be cheese. Most often, Parmesan is used for this pie, since this product has a more pronounced taste, however, if you were unable to purchase this cheese, use regular hard cheese.
- Place the dish in an oven preheated to 200°C and wait for about 40 minutes. Cooking time, of course, largely depends on your oven, so after half an hour, carefully monitor the cake so that it does not sit in the oven for too long.
- Sprinkle the finished delicacy with fresh aromatic herbs.
IMPORTANT: If you want to cook a real shepherd's pie, then the meat you need to use is lamb or lamb. The fact is that the name of the pie, which in English sounds like “shepherd,” literally translates as sheep’s pie. It is based on this that in the homeland of this dish it is almost always prepared from such meat.

Classic Shepherd's Pie
British shepherds, herding sheep in the mountains, could easily afford to cook not only a piece of meat, but also a more complex dish. To do this, it was enough to have leftover meat, potatoes, cheese and spices.
The modern world wants a more refined dish, but based on a classic version of cooking. For Prince George and Princess Charlotte, this is the most desired dish. The recipe for the current shepherd's pie has changed somewhat. To prepare you will need ingredients:
- minced lamb and potatoes 300 g each;
- onions and carrots 1 pc.;
- tomato sauce – 50 g, chicken egg – 1 pc.;
- hard cheese – 50 g, sour cream for greasing – 1 tbsp. l.;
- vegetable oil – 100 ml;
- spicy herbs (thyme, basil, savory) – 1–2 g;
- salt – 3–4 g, black pepper – 2 g.
The cooking technology is as follows:
- Peeled potatoes are boiled in water with a small amount of salt. Cool slightly and mash until pureed. Add grated cheese and egg.
- Onions and carrots are peeled and cut into small cubes. They are fried in vegetable oil until golden brown. Add minced meat and fry it too.
- Add tomato sauce and spices to the meat and vegetables and simmer for 10–12 minutes. The baking dish is greased. Place meat and sauce on the bottom and mashed potatoes on top.
- Level the surface and place in a hot oven. Baking temperature 160 ᵒC, time 12–15 minutes. 3-4 minutes before the end, grease the surface with sour cream. This will make the crust golden.
The method of placing the potatoes on the surface differs in the Irish shepherd's dish. There they make him smart. The puree is placed in a confectionery envelope with a nozzle and with its help a curly layout is made.
If we deviate a little from the classics, then minced lamb can be replaced with beef or pork. If you use minced chicken, then in this case it is better to use sour cream rather than tomato sauce.

Quick master class: preparing shepherd's pie
Shepherd's pie is a traditional British dish, and it's not really a pie at all, but a hearty casserole with meat and potatoes. It is most often prepared during the cold season because it consists of very nutritious ingredients: minced lamb or minced meat, fried with onions, carrots and green peas, and mashed potatoes.
Initially, it was a dish of the poor and was called “cottage pie” from the English word cottage - a modest house of rural residents. This pie was made from leftover fried meat and a large amount of potatoes, which was the most affordable food product for poor people.
The term “shepherd's pie” finally took hold in the 20th century and is used to refer to a dish prepared specifically with lamb. The word shepherd means a shepherd who tends sheep. Previously, only minced meat was used in this dish, but now it is most often prepared with minced meat.
Shepherd's pie can be called an integral part of English life, so it is quite often found in popular British literature, for example in the series of books about Sherlock Holmes and Harry Potter.
