Puff pastry with sugar: simple and delicious recipes

I know that you, just like me, love simple and quick baking from the first available ingredients . This time I have prepared a recipe for you in case you have ready-made puff pastry without yeast lying around. Without false modesty, I can say that the recipe is ingenious; I was inspired by store-bought cookies that did not foretell trouble.

Secrets of puff pastry

A special feature of making puff pastries is that a mechanical loosening method is used. The process of interlayering is used - sequential rolling with softened butter; after baking, crispy layered products are obtained with a two or even threefold increase in volume. For kneading, use flour with a high content of strong gluten. To completely swell the flour proteins and give the dough strength and elasticity, the ratio of flour to liquid should be 1:0.38. For good layer formation, salt and food acid are needed. Baked goods with the right amount of salt have a clear pattern and thin, even layers. If there is not enough salt, the baked goods will be mushy. Food acid helps increase the firmness and elasticity of flour gluten.

Pay attention to the choice of fat. Many recipes advise using creamy margarine, but the taste is lost. Butter improves the taste, but is more difficult to work with.

It is important to knead puff pastry without yeast in a kitchen with a temperature no higher than 15-17 degrees Celsius. If the kitchen is colder, the fat layers in the dough become hard and may crumble during rolling. Sharp pieces can tear the thinnest layers, and fat may leak out of the product during baking. If the temperature is higher, the butter melts and seeps into the dough layer, so its elasticity may decrease.

Cooking process

The recipe for cookies made from puff pastry with sugar and kefir looks like this.

The flour is ground with creamy margarine until crumbs form. Combine with egg yolk and kefir. Mix the products well. You should get a mass with an even texture. It should be covered with film and placed in the refrigerator for sixty minutes. Beat the whites with a fork. The dough for dessert is taken out and divided into four fragments. Each part is leveled with a rolling pin and given a rectangular shape. Triangular pieces are cut out of the layer. The products are greased with egg white and sprinkled with sugar sand. Place on the surface of a baking sheet covered with parchment. Puff pastry with kefir sugar is cooked in the oven for twenty minutes.

Preparing unleavened puff pastry

Consider a traditional recipe for puff pastry without yeast.

Ingredients

Here you will need the following products:

  • 2.5-3 cups wheat flour;
  • 250-300 grams of butter;
  • 230 ml water;
  • 0.5 dessert spoon of vinegar;
  • a third of a teaspoon of salt;
  • 1 egg.

Cooking method

Let's start mixing:

  1. We select the required volume of liquid, add egg, salt and food acid to it. Observe all proportions; excess acid and salt have a bad effect on the taste of baked goods. Stir until the acid and salt are completely dissolved. Carefully sift the flour and pour it into the liquid. Knead our mass until it becomes sufficiently elastic and dense, and will not separate well from your hands and from the bowl. We form it in the form of a round lump, cover it with a damp cloth and send it to rest for half an hour. While resting, the elasticity will increase, and the layers will be easier to form while rolling.
  2. Pour approximately 70-80 grams of flour into the softened butter without lumps. Adding flour to fat increases the layering of the product during baking. From the prepared oil we lay out a rectangle 2 centimeters thick, cool to 12-14 degrees Celsius.
  3. Flour the work surface and make a rectangular piece 20-25 mm thick. We make sure that the thickness at the edges is 3-5 mm less than in the middle. Place the chilled butter in the middle of the rectangle and fold it into an envelope. Smoothly and leisurely roll out our semi-finished product in one direction until its thickness reaches 10 mm.
  4. Remove excess flour from the resulting workpiece and fold it in four so that the opposite edges meet not in the middle of the sheet, but slightly to the side.
  5. Cool for 30 minutes at a temperature of 4-8 degrees Celsius. You need to roll it out two more times, then fold it again into four layers and cool again for at least 30 minutes. To prevent the surface from drying out and becoming covered with a crust at this time, which can persist in finished products and make them hard, it is recommended to cover it with a damp cloth or lightly grease it.

The operations of rolling and folding the dough into 4 layers are usually carried out four times; 256 layers are formed in the finished dessert. Further rolling and folding is impractical; the thinnest layers can tear, the butter will combine with the flour base, and the product will turn out heavy.

How to make “Puff Cookies with Sugar”

Prepare all products.

Pour warm water into a bowl and add yeast.

Add salt and one teaspoon of granulated cane sugar.

Stir until all ingredients are dissolved.

Pour the flour into the water in parts, sifting through a sieve and gradually mixing it in.

Continue kneading the dough with your hands on the work surface, knead for about 10 minutes.

Cover the dough with cling film and leave to ferment for 1.5-2 hours.

In 1.5-2 hours the dough should increase in volume.

Stretch the dough with your hands and spread softened butter on it.

Wrap the butter in the dough, it must be mixed into the dough.

If flour is needed, add as needed. When kneading the dough, you can help yourself with a plastic scraper.

The dough turns out uneven, as it should be, cover it with film and let it rise for another hour.

After an hour, the dough has increased significantly in size, now you can start making cookies.

Place the dough on a table dusted with flour.

Divide the dough into portions at once, you should get 20 pieces.

Roll each piece of dough into a small sausage 12-15 centimeters long.

Cross the ends over each other, make a loop and lightly secure them together. You should not get too carried away with flour, so that it will be easier to roll the cookies in sugar.

Place cane sugar on a plate and roll both sides of the cookies in it.

Place the cookies on a baking tray lined with baking paper. Preheat the oven to 200 degrees and bake the cookies for 20 minutes.

Place the finished cookies on a plate and invite everyone for tea or coffee.

The cookies smell great of butter, have a nice crunchy crust with sugar on top, and are flaky on the inside. Enjoy your tea!

Preparing puff pastry dough

Yeast puff pastry differs from the unleavened version in its base. The recipes suggest using 6 products needed for kneading.

Ingredients

There are few components:

  • wheat flour with high gluten - 500 grams;
  • butter (margarine is possible) - 350 grams;
  • sugar - 60-70 grams;
  • milk - 300 milliliters;
  • pressed yeast - 12 grams (or 4 grams dry);
  • table salt - 1 teaspoon.

Cooking method

So let's get started:

  1. Let's make a dough. Take some milk, heat it slightly, add sugar, crumble the yeast, and mix thoroughly.
  2. Add 150 grams of flour into this bowl.
  3. Mix thoroughly, place the dough in heat for 30-40 minutes, this time is necessary for rising.
  4. When the dough begins to rise, pour it into a large spacious container. Pour in the remaining warm milk and add salt.
  5. While stirring, add the remaining flour little by little. Add 50 grams of butter and knead the dough. You need to stir for 10-15 minutes until it becomes plastic and smooth. Make a bun and cover the bowl with cling film. Now you need to cool it well, this will take 3-4 hours.
  6. In the meantime, we are working on oil. Transfer the remaining butter to a parchment sheet, cover with another sheet and roll out into a rectangle. We send it to the cold.
  7. If you used good fresh yeast, even in the cold the dough will rise quite vigorously. The further process of layering the yeast dough is completely identical to working with unleavened puff pastry. In exactly the same way, rolling and folding into 4 layers is carried out four times. You got 256 very thin layers in the dough.

What kind of puff pastry is there?

Before making puff pastry cookies recipes with filling, let’s remember what kind of dough is there? But it’s true, some people don’t know that there is a yeast-free puff pastry and a yeast one. They are slightly different from each other, as the name implies, and accordingly the baked goods are different.

Of course, it’s convenient to just go to the store and buy puff pastry, be it simple or yeast. But I’ll tell you right away, it’s not as easy as it seems.

In this article, I made my own yeast-free puff pastry and made cookies from it. But the yeast puff pastry is purchased. It took me about 7 hours to make a simple dough, but the result is worth it))).

What is the difference in puff pastry?

  • Yeast-free puff pastry is made from unleavened dough (water, salt and flour) and butter dough (there is a lot of butter and a little flour). And by doing a lot of folding and rolling the dough it becomes flaky. It rises well and you can use it to make liver, puff pastries, cakes, strudels, and so on.   • Yeast puff pastry is prepared in exactly the same way, but the main dough is yeast. Here, of course, everyone chooses for themselves which test to use. This dough can be used to bake croissants, buns, Viennese pastries and much more.

Well, now let's get down to baking.

Cookies made from puff pastry dough

You can very quickly bake tender and airy cookies from puff pastry with sugar.

Ingredients

Using classical cooking technology, you will need the following products:

  • ready-made puff pastry;
  • 60-70 grams of sugar;
  • one egg for brushing.

Cooking method

It will take a little time to bake cookies with sugar, 25-30 minutes:

  1. Sprinkle flour on our board and roll out the puff pastry into a sheet 2 mm thick.
  2. Using a knife or curly notches, cut out the cookies, trying to leave as few scraps as possible. The knife and recesses should be sharp; they should not crush the edges of the cookies. Try not to press the edges of the puff pastry with your fingers.
  3. Brush only the surface of the cookies with the beaten egg; the edges are not greased.
  4. We lightly moisten the baking sheet with water, dip the cookies with the greased side into sugar, and place them on a sheet.
  5. Preheat the oven in advance, bake the puff pastries for about 15 minutes at 230-240 degrees Celsius.

Puff pastry cookies recipes in the oven are simple and quite quick. Now let's see how easy it is to make delicious croissants. Although they differ from store-bought ones, they are very tasty.

Instead of condensed milk, you can use absolutely any filling, the main condition is that it be thick. Then it won't leak out in the oven.

We will need:

  1. Puff pastry (yeast) - 1 sheet;
  2. Egg - 1 piece;
  3. Sugar;
  4. Condensed milk - about 6 teaspoons.

Step 1.

We take out the dough or prepare it ourselves. If you take it out of the freezer, defrost it.

Step 2.

Place the dough on the table, sprinkling it with flour or placing a silicone mat. Now you need to cut the strips lengthwise. I first divide it in half, and then the remaining strips into approximately equal pieces. But we make sure that we get narrow rectangles.

Next is the triangle mode. That is, we cut these rectangles diagonally so that we get elongated triangles. As in the photo below.

Now we begin to lubricate the widest part and upwards above the middle with condensed milk. Leave the edges empty. It is necessary to take into account that the condensed milk will melt and spread. Make the condensed milk layer thin.

Now, from the widest base, we begin to wrap it in a spiral so that the narrow part is in the middle of the cookie.

Now put parchment on a baking sheet, grease with oil and place on a baking sheet, leaving a little space between the cookies.

Beat the egg. We grease the croissants with it and sprinkle a little sugar. But you can do without sugar.

Preheat the oven to 180°C, place the baking sheet there and bake for about 25 minutes. When they are browned, take them out. Can be served.

If you are wondering how to make cookies from puff pastry, and you are tired of your recipes, try making puff rolls with chocolate filling. Instead of real chocolate, use a more budget-friendly option - cocoa powder or confectionery glaze.

Ingredients

Take the finished dough and ingredients for the filling:

  • unleavened puff pastry - 450 grams;
  • brown (optional) or regular white sugar - 2 tablespoons;
  • cocoa powder - 2 tablespoons.

Cooking method

Let's start the cooking process:

  1. Preheat the oven to 200 degrees Celsius. Wet a baking tray with water or cover it with baking paper.
  2. Roll out the puff pastry and sift cocoa powder over the entire surface, leaving about 0.5 centimeters of free space around the edges.
  3. Pour granulated sugar on top of the cocoa and roll the layer into a roll along the narrow side.
  4. Using a sharp knife, cut our roll into pieces approximately 1 cm thick and place on a sheet.
  5. Bake the puff rolls for 10-15 minutes until golden brown. If the dough turns out very soft and does not cut well, you can put it in the cold for a while.

Let’s start with the topic of puff pastry cookies recipes with filling, and the kids will love this recipe. These cookies will entertain your child and yourself, let's go.

Ingredients:

  1. Puff pastry (yeast-free) - 1 sheet;
  2. Egg - 1 piece;
  3. Jam (any) - about 6 tablespoons;
  4. Vanilla sugar - 2 tablespoons;
  5. Cinnamon - 1/2 tablespoon (optional).

Step 1.

In this recipe I will use my own puff pastry, this is how it turned out:

Place a sheet of puff pastry on the table and cut out circles. They can be cut out with special molds, or you can simply take a mug with a large diameter. We use two circles for one cookie, so the total number must be even.

Mix vanilla sugar and cinnamon. The latter may not be used as you wish. Now sprinkle all the mugs with this mixture.

Step 3.

Now prepare a baking sheet, line it with parchment paper and grease it with oil. We put the mugs there. They will be the bottom layer.

Step 4.

Now put a little less than a spoonful of jam on half of the circles, they will be the bottom layer. You can use it in any way, for example, I have an assortment of wild strawberries, raspberries and some blueberries.

Cut out triangles from pieces of dough and make ears out of them.

Now put the remaining circles on top. We press down a little from the edges, otherwise in the oven the edges may bend upward a little (this happened to me). Now beat the egg and grease our cookies.

Place in the oven preheated to 180°C for 20 minutes. But watch how they brown, you can take them out.

When ready, take it out and use a spoon with jam to make eyes, a mouth and a nose onto the finished baked goods. You get such funny faces.

We also know ear cookies made from puff pastry under another name: Berlin puff pastry cookies. To make it, you need to soak the most delicate pastries with lemon jam or fudge. You can buy this glaze ready-made at the store, or you can make it yourself.

To make it we use unleavened dough.

Ingredients

Use just 3 ingredients for puff pastry ear cookies:

  • puff pastry;
  • sugar to taste;
  • 1 lemon.

Let's start baking:

  1. Lightly flour the table and roll out the dough into a long strip 7-8mm thick. Sprinkle this strip with granulated sugar and roll both sides towards the middle. Lay out the rolls so that they lie one on top of the other, roll them on top with a rolling pin.
  2. Place in the refrigerator to cool for 1-2 hours.
  3. Cut our workpiece into pieces 1 centimeter thick, lay out each piece in the shape of a heart.
  4. Dip each cookie in granulated sugar and place on a sheet moistened with water.
  5. Keep in the oven at 200 degrees Celsius until golden brown.
  6. Grind the lemon along with the zest in a meat grinder, add 1 cup of sugar, mix thoroughly. Spread a thin layer of glaze over the lukewarm hearts.

Me, my husband and Garibaldi

My husband is not only a big sweet tooth, but also a wonderful actor, and this time I decided to please him and congratulate him on the premiere by presenting him with a delicious gift. Among the delicacies were cookies with the unusual name “Garibaldi”. We remember about the famous Italian revolutionary from our school history course, but this was the first time I had seen such an interesting cookie. It was a thin crispy biscuit made from two layers of unleavened dough with a layer of raisins.

The package of cookies ran out quickly, but I still had an appetite and, to begin with, I decided to search the Internet for information about these cookies and found several variations. I read it carefully and decided... to come up with my own!

This is how my “Garibaldi style” puff pastry cookies for the lazy appeared.

For it we will need:

  • 1 package of ready-made yeast-free puff pastry
  • 200 gr. raisins
  • 1 protein
  • 100 gr. granulated sugar
  • a little flour for rolling out the dough

"Roses" with apples

To prepare this treat we will need the following ingredients.

Ingredients required:

  • puff pastry 500 grams;
  • apple - 4-5 pieces;
  • water 1.5-2 glasses;
  • sugar - 4 tablespoons;
  • powdered sugar for dusting.

Cooking method

Very easy to prepare:

  1. Wash the apples, cut them in half, remove the seeds and core. Cut into thin slices 1-2 millimeters thick.
  2. Boil 2 cups of water, add sugar. We place our apples in this sugar syrup.
  3. Keep on the fire for no more than 2-3 minutes; the apples should become pliable, but not boiled. Remove the apples from the syrup and cool.
  4. Roll out the dough to 1-1.5 millimeters thick, cut into strips 3 cm wide. Place the apple slices on the strip of dough overlapping so that they protrude above the top edge of the dough by about 1.5 centimeters.
  5. Roll up this strip of apples and pinch the bottom edge of the dough. We get a very cute apple rose in dough.
  6. Place our dessert on a baking sheet lined with parchment. Place in an oven heated to 200 degrees Celsius and leave there for approximately 30 minutes.
  7. Let our roses cool completely and crush them with powdered sugar through a strainer.

Cookies with apples
We continue the theme of puff pastry cookies recipes in the oven. My child and I really liked these cookies, they are sweet and have an unusual taste.

We will need:

  1. Puff pastry (yeast-free) - 1 sheet;
  2. Green apples - 1-2 pcs;
  3. Peach or apricot jam - 100 g;
  4. Water - 50 - 60 g;
  5. Egg - 1 pc.

Step 1.

Peel the apples, cut them into slices and remove the core. Cut the apple into thin slices. Very thin, approximately 4 mm.

To prevent apple slices from darkening, you can dip them in cold water with a spoon of lemon juice.

Step 2.

Place jam and water in a small container, heat over low heat and stir for 2 minutes. We rub the resulting jam through a sieve.

Step 3.

Roll the dough a little and cut out rectangles. Small enough to fit in your hand. It is not necessary to make exactly the same ones, even if they are different and creative.

Prepare a baking sheet, put parchment on it and grease it with oil. Now we lay out our rectangles on it. We lift the edges of the rectangles with our fingers to create indentations. This is to prevent our jam from leaking out.

Now we place our apples in the middle in one layer, more densely. They will shrink in size as they bake. pour a thin layer of our peach (apricot) syrup on top. Not much, just to fill the bottom and voids.

Step 6.

Preheat the oven to 180 - 190 °C. Now beat the egg and coat the edges of the cookies. Place in the oven for 25 - 30 minutes. Once the edges are browned, take it out. If there is still syrup left, you can pour the rest. Let it cool and you can serve it with tea.

With pineapple

Recipes for desserts made from puff pastry suggest using a wide variety of products for filling. Let's try to cook “daisies” with pineapples.

Ingredients

Take ingredients for puff pastry cookies:

  • 250 grams of puff pastry;
  • one can of pineapple rings (800 milliliters);
  • powdered sugar for decoration.

The number of finished puffs corresponds to the number of pineapple rings in the jar. You can also take pineapples in pieces, but then the shape of the finished baked goods will change - the cubes will need to be tightly wrapped in the base.

Cooking method

The preparation is simple if you have made the dough in advance:

  1. You need to remove the pineapples from the jar and dry them by laying them out on a paper towel.
  2. Roll out the dough into a rectangle approximately 40-45 cm long and about 20 centimeters wide. Try to roll the dough in one direction. We cut our rectangle into 10 identical strips.
  3. Wrap the pineapple ring with a strip of dough and thread the strip through the hole in the center. Most often, 6-7 turns are obtained per ring.
  4. We place our rings on a baking sheet, having previously covered it with parchment. Brush the pastries with egg or just syrup from a jar. Bake in the oven at 180 degrees Celsius until golden brown. Transfer the cooled “daisies” to a dish and sprinkle with powdered sugar using a strainer.

Recipe No. 4 Bagels made from puff pastry without yeast with prunes

Tender, tasty, aromatic - this is about puff pastry bagels with prunes and nuts. A simple, quick and original dessert recipe for tea.

To complete the recipe you will need:

  • one package of puff pastry (500g);
  • 100 g prunes;
  • 50 grams of walnuts;
  • 1 yolk;
  • powdered sugar for sprinkling.
  • The dough is defrosted at room temperature.
  • Lightly fry the nuts in a dry frying pan and chop.
  • Chop the dried prunes and mix with nuts.
  • The dough layer is rolled out and cut into triangles. Place the filling into the triangles and roll them into a bagel shape.
  • Place the bagels prepared for baking on a baking sheet lined with baking paper and brush each one with beaten egg yolk on top.
  • Place the baking sheet in a preheated oven at 200°C for 20-25 minutes.
  • Ready and cooled bagels are sprinkled with powdered sugar before drinking tea.

Helpful Tips:

  • The optimal thickness for rolling puff pastry without yeast is a little thinner than a centimeter. If you make the cakes thicker, the product will be too fluffy, and thin cakes will turn out to be too dry.
  • When preparing recipes for puff pastry cookies, we also suggest using preserves and jams, condensed milk and marmalade, various nuts and dried fruits, and lemon zest. The additives proposed in the recipes are first crushed to a pulp, and then the puff paste is applied.
