You can prepare feta cheese using vinegar, citric acid, sourdough, or a special food enzyme called pepsin. It promotes the breakdown of the protein component in milk into small fragments (clumps), from which the cheese mass is subsequently formed. Pepsin, like sourdough, can be purchased in specialized stores or in large supermarkets. To make cheese with pepsin, you will need a minimum set of products.

When preparing, you must adhere to the following technology:

  1. Pour 3 liters of milk into a suitable container (must have high sides) and heat it to 30 0C.
  2. Pepsin (taken from the tip of a knife) must be dissolved in water.
  3. The resulting mixture must be added to the milk, stirring it constantly.
  4. As soon as the fermentation process begins (the milk begins to separate and curds form), the container with milk should be removed from the heat and left to cool.
  5. After this, the milk mixture must be poured into a colander lined with damp gauze and the whey should be allowed to drain.
  6. Next, the remaining clot should be wrapped in gauze and placed under a press.
  7. Then you need to prepare the brine: to do this, dissolve 1 tbsp in 1 liter of water. l. salt, heat the solution and then cool to 20 0C.
  8. The formed cheese should be cut into small slices, put them in the prepared brine and soak in it for 2 hours.
