  2. Chop the meat, onion and mushrooms.
  3. Fry the onion in oil for about 1 minute. Add the chicken to the pan and cook for another 3 minutes. Add mushrooms to the mixture, add salt and pepper and simmer for about 10 minutes.

  4. Grease the collapsible mold with butter (or margarine), place the potato mixture into it, forming sides 3–4 cm high.
  5. Pour in the filling and smooth it out. Fill it with a mixture of cream and egg.
  6. Place in an oven preheated to 180⁰C for 30 minutes.

This delicious pie can be prepared using almost any dough, ready-made puff pastry, shortbread, yeast, or pizza dough. This recipe contains unsweetened chopped shortbread dough, so the end result is very reminiscent of Laurentian pie)) Very tasty both warm and cold!

Filling: Chicken breast 1 pc. Champignons 300 g Onion 120 g Vegetable oil 2 tbsp Salt ground black pepper to taste Cream 10% 200 ml Egg 2 pcs. Cheese 120 g Spices to taste (thyme, oregano, rosemary)

Dough (if desired, you can take ready-made approx. 350 g): Butter 110 g Flour 190 g Ice water approx. 2 tbsp Salt 1/2 tsp Sugar 2 tsp.

Preparing chopped shortcrust pastry for the pie. Once again, I repeat that this pie can absolutely be made with yeast dough, pizza dough or ready-made puff pastry. The differences will be that the form with the dough will not need to be dried in the oven, and it is better to wrap the sides over the filling. So cut the very cold butter into cubes and mix with flour, salt and sugar. Chop into crumbs with a knife or blender (with cold hands). Add ice water. Add a little at a time (half a tablespoon) and stir lightly. Roll the resulting dough into a ball, wrap it in film and put it in the refrigerator for 1-2 hours. There is no need to knead the dough with all your might, just mix and knead a little.

Let's start preparing the filling . Peel the onion, cut and fry in vegetable oil. Once the onion has turned golden, add the chopped champignons. You can take frozen mushrooms, or you can take fresh ones. While the mushrooms and onions are fried, cut the fillet from the chicken breast. Cut into strips. Salt and pepper.

Let's take out the dough. Add fried mushrooms with onions and fried chicken. To fill, mix cream with 2 eggs. Beat, salt, add herbs to taste (I used thyme + rosemary). You can take fresh finely chopped greens. Add finely grated cheese, mix and pour in the pie filling. Bake at 180 C for 30 minutes until the filling sets. Third stage: dough, butter, filling.

  • Cut the dough in half and roll out two sheets to fit the baking sheet. Grease it with oil and line the bottom and high sides with dough.

  • Add the filling and wrap the pie, carefully sealing the edges.

  • Cook for 45 minutes at 180°. For a golden brown crust, you can brush the dough with yolk.

Ingredients

  • Flour – 400 gr.
  • Water – 160 ml.
  • Egg – 1 pc.
  • Dry yeast – 3 gr.
  • Margarine – 15 gr.
  • Sugar – 40 gr.
  • Milk – 80 ml.
  • Vegetable oil – 20 ml.
  • Salt – 10 gr.

Filling:

  • Champignons – 300 gr.
  • Boiled chicken – 370 gr.
  • Onions – 120 gr.
  • Vegetable oil – 20 ml.
  • Dill to taste.

Liezon:

  • Water – 80 ml.
  • Egg – 1 pc.

Cooking:

  1. Add water to the milk and heat slightly. Add yeast and sugar and salt. Mix well and leave for a few minutes.
  2. Add the egg and softened margarine, spread or butter. Mix well.
  3. Gradually adding flour, knead the dough until it has a dense, homogeneous consistency, so that the dough stops sticking to your hands. Roll the dough into a ball and brush the top with vegetable oil to prevent a crust from forming. Cover with cling film and leave for half an hour in a warm place.
  4. Cut the onion into small cubes and the champignons into even small slices. Shred the chicken fillet.
  5. Fry the onion cubes in vegetable oil until golden brown, then add the champignons to them and fry until tender.
  6. Season the fried filling with salt and pepper, add finely chopped onion and mix everything thoroughly.
  7. Whisk the lezon from the water with the egg.
  8. Divide the dough into two parts, roll them into balls, cover with cling film and leave for 10 minutes.
  9. Roll out one piece of dough, roll it out and place it on a baking sheet. Place the filling on top, leaving space around the edges.
  10. Roll out the second part of the dough and close the filling on top, rolling up the edges.

  2. Fry the onion in oil until golden brown. Cut the champignons into small cubes, add to the onion and fry for 10 minutes.
