How to knead choux pastry

  1. First of all, we sift the flour, so it is enriched with oxygen. I get 2 mugs = 350 g. Since the quality is different every time, so as not to overdo it with its quantity, I first pour 1.5 mugs. And I save the second one for filling. So, pour 2/3 of the flour, salt, and add vegetable oil into a deep bowl. Stir well with a spoon, combining the products.

  2. I measure out 200 ml. water and boil. As soon as bubbles form on the surface, remove from heat and pour into a bowl of flour.

  3. I immediately start working with a spoon without stopping. At first it will be difficult to mix and the mass will look like a paste. Then it will turn into lumps and it will become easier to stir.

  4. Set aside and let cool - 5 minutes will be enough.
  5. Let it cool so that when you beat in the egg you don’t end up with it boiled. So, the mass has cooled, beat in the egg and continue kneading. This is where it will be a little difficult to knead, but you need to be patient.

  6. After thoroughly mixing with a spoon, it’s time to work with your hands. I put it on the board and start to crush it. Now what we left for filling may come in handy. You will feel by the quality of the test whether it needs more. The dough should not be liquid or sticky. It will resemble soft warm plasticine.

  7. Now he needs to let it stand. I wrap the ball in film and leave it on the table for 30-40 minutes.

  • water – 180 ml;
  • flour – 0.45 kg;
  • vegetable oil – 20 ml;
  • sugar – 100 g;
  • butter – 50 g;
  • cottage cheese – 0.35 kg;
  • salt - a pinch;
  • vanillin - on the tip of a knife;
  • chicken egg – 2 pcs.
  • Beat one egg, mix it with salt and sugar (20 g).
  • Sift the flour.
  • Pour about a third of the flour into the bowl with the egg. Stir.
  • Add vegetable oil, stir.

  • Rub the cottage cheese through a sieve, add the yolk of a chicken egg and the remaining sugar and vanillin. Add softened butter. Mix thoroughly, you can even use a blender for this.
  • Roll out the dough, cut out even circles. Place a sweet and aromatic curd mixture on each circle, pinch the edges of the dough.
  • Boil the dumplings in boiling salted water. You need to cook for 4 minutes after they rise to the surface of the water.
