Brizol classic

Brizol is a dish that came to us from French cuisine. It is a thin pancake with minced meat inside. Before preparing this dish, I studied many recipes on the Internet and was amazed at the number of different cooking options. It's not about the filling, which can be completely different. It's a matter of cooking method.

Ingredients

Basics

  • Minced beef 200 g
  • Butter 30 g
  • Milk 3 tbsp. l.
  • Ground black pepper 1 g
  • Khmeli-suneli mixture 1 g
  • Salt 1 pinch
  • Chicken eggs 3 pcs.

Filling

  • Fresh cilantro 0.5 bunch
  • Green onion 1 feather
  • Mayonnaise 3 tbsp. l.
  • Pickled cucumbers 1 pc.
  • Hard cheese 60 g
  • Garlic 1 clove

Preparation

To prepare brizol (or brizoli), we will take all the products on the list. Number of eggs according to the number of eaters. Lightly beat the eggs with a fork along with the milk. Add salt and pepper to taste. Add spices and salt to the ground beef (it’s better to use very lean ground beef). I added suneli hops, which can hardly be called a French version :)), and you add what you like, any herbs. Stir the minced meat well and beat until smooth and sticky. When beating, the structure of the meat changes and it becomes manageable.

Divide the minced meat into 3 identical balls, according to the number of eaters. Place the ball of minced meat on a plastic bag. It’s better to take the bag and cut it into 2 parts; it’s inconvenient to work with the film. Cover the bun with the second part of the bag and press down. Flatten the meat between cellophane to a thin pancake. Usually, its size should be the diameter of your frying pan, but I decided to make it smaller, my frying pan is too wide.

Pour 3 parts of the beaten egg onto the heated oil and put on fire. Place the meat flatbread on top, freeing it from the cellophane. And fry on both sides until golden brown and the meat is cooked. While the brizoli are fried, prepare the filling. In the winter months, I wanted just such a perversion - pickled cucumber, greens, mayonnaise with garlic. We chop the cucumber and herbs, and grate the cheese, I already had grated cheese.

Combine mayonnaise with a clove of garlic. Instead of mayonnaise, you can use yogurt or sour cream. Add chopped herbs and mix well until smooth. Grease the fried brizol with sauce and herbs. Place cucumber and cheese on top and roll. Do this with all pancakes. I repeat that the filling can be anything you like. Brizoli is ready. I wrapped one roll the wrong way, mixed it up, it turned out to be an egg inside and meat on top. It's tasty and satisfying. Help yourself!

Brizol with minced chicken

It is not always possible to make chops. But minced chicken can be purchased at any store. And it is great for preparing delicious and satisfying brizol.

To prepare 2 servings you will need:

  • 150 grams of minced meat;
  • 3 eggs;
  • 2 tablespoons of milk;
  • 50 grams of sour cream;
  • pickled cucumber (or several if you have tiny gherkins);
  • garlic clove;
  • fresh herbs (dill is best, although parsley, cilantro, and green onions are also suitable);
  • a little vegetable oil;
  • and seasonings.


The thick sauce will add a piquant taste to this hearty delicacy.
To prepare it, you need to mix finely chopped herbs with sour cream, pour in the garlic passed through a crush and, adding salt, stir the mass thoroughly. Chop the cucumbers into thin strips. Salt and pepper the minced meat. Beat one egg into it and mix it well with the meat.

Form the minced meat into two patties. Roll out into a flat cake and set aside: you will need them a little later.

Next, beat 1 egg along with salt and half the milk. Pour the mixture onto a flat plate and carefully place the chicken tortilla on top. Then carefully move the entire mass into a well-heated frying pan with a drop of oil.

Fry the omelette over medium heat on both sides (4-5 minutes each) and remove to a clean plate. Make sure the meat filling is on top. Top with half the sour cream sauce and chopped cucumbers. Now all that remains is to roll the first brizol into a roll and prepare the second portion in the same way.

Of course, if you need to feed a large number of guests, it can take quite a lot of time to prepare the required number of rolls. However, their amazing taste and original appearance are worth it!

Minced chicken brizol

Heat a frying pan over low heat, pour in vegetable oil and add butter. In a mixture of oils, fry three omelettes on both sides, 1 minute each. Beat the egg into the minced meat, add chicken seasoning, a little salt and pepper. Mix well. Spread a thin layer of minced meat on each omelette. We wrap it in a roll. How to prepare brizol at home according to the original recipe? To do this you will need the following ingredients:

  • egg - 3 pieces;
  • minced chicken fillet – 300 g;
  • vegetable oil – 2 tbsp. l.;
  • onions – 1–2 pieces;
  • table salt and ground black pepper, 1 pinch each.

The recipe for making brizoli with minced chicken is quite simple:

  • The minced meat must be mixed with salt, ground black pepper and finely chopped onion.
  • 3 eggs must be beaten in separate containers and fried in a frying pan, previously greased with vegetable oil.
  • On the surface of each of the resulting omelettes, you need to evenly distribute the minced chicken with spices and onions.
  • After this, each omelette with minced meat must be wrapped in a roll and placed in a baking dish.
  • You need to bake at 180 degrees for 25–30 minutes.

This dish can be used both everyday and for holidays if the resulting rolls are cut into slices.

Turkey fillet brizol

Brizol is more likely not a dish, but a way of preparing meat, fish, and poultry. Translated from French it means “fried in an egg, omelette.” A quick dish to prepare, tender and savory. Appropriate on weekdays and on the holiday table.

Ingredients

  • Turkey (breast fillet, 3 steaks) – 500 g
  • Chicken egg (category C0) - 1 pc.
  • Wheat flour / Flour - 2 tbsp. l.
  • Salt - to taste
  • Black pepper - to taste
  • Vegetable oil - 1 tbsp. l.
  • Milk (may need a little more) - 150 ml

Preparation

Wash the turkey, dry it, and pound it with the blunt side of a knife. Salt, pepper, breaded in flour. Heat vegetable oil in a frying pan. Dip turkey steaks, breaded in flour, in egg and place in a frying pan. Fry on both sides until golden brown (about 3 minutes on each side). Pour milk into the frying pan with the fried turkey up to half the height of the piece. Bring to a boil, reduce heat and cook until the milk evaporates. Ingredients

  • Minced chicken – 300 gr.
  • Mushrooms (champignons) – 200 gr.
  • Chicken eggs – 4 pcs. (+ 1 piece in minced meat).
  • Milk – ½ tbsp.
  • Salt, spices, dill.
  • Mayonnaise – 2–3 tbsp. l. (can be replaced with sour cream).
  • Frying in vegetable oil.

Preparation

Beat eggs with milk and salt, bake 4 thin omelettes-pancakes. Fry on both sides, turn over very carefully so as not to tear. Prepare minced meat by adding eggs, salt and spices. Dill, washed and chopped, mix with mayonnaise. Finely chop the mushrooms, canned mushrooms do not require additional heat treatment, fry raw champignons in a small amount of vegetable oil.

You can start “assembling” the brisols. Place the minced meat on the omelette pancake. Grease it with mayonnaise-dill mixture. Place fried champignons on top. Carefully roll up into a tube (roll). Take a baking dish. Grease with oil. Transfer the brizoli. Bake in the oven for 20 minutes. To prevent the omelet from burning, cover with a sheet of foil. Chicken or pork goes well with cheese in hot dishes. Brizoli is no exception here. Below is a recipe for brizol, which is prepared from minced meat and grated cheese. The dish is easy to prepare, but has a very beautiful appearance and can replace boring cutlets. Products:

  • Minced lean pork – 500 gr.
  • Chicken eggs - 5 pcs., of which one egg is for minced meat, the rest is for omelet.
  • Dill – 50 gr.
  • Garlic – 3-4 cloves (depending on size).
  • Hard cheese – 150 gr.
  • Mayonnaise – 1 tbsp. l.
  • Salt.
  • Spices.
  • Oil for frying.

Cooking algorithm:

  1. The first stage is mixing the minced meat. Twist the pork, add the egg, salt, spices (you can also grate the onion). Mix well. Form the minced meat into 4 flat cakes.
  2. The second stage is preparing the filling for brizol. Grate the cheese, rinse the dill, dry it, chop it. Peel the garlic, finely chop it or use a press. Mix cheese with garlic and herbs, season with mayonnaise.
  3. Beat 4 eggs until foamy. Heat a frying pan with oil. Separate a quarter of the egg mass into a container. Place the flatbread here, then carefully place it on the frying pan so that all the egg mass is on the bottom.
  4. When the bottom is fried, carefully turn the flatbread over to the other side (meat side) and fry until done.
  5. Transfer to a plate so that the omelette is on the bottom. Place some of the cheese filling on the flatbread and roll it into a roll. Do the same operation with the remaining cakes.

Place the beauty on a dish, garnish with fresh vegetables - cucumbers, sweet peppers, tomatoes are suitable. The final chord is a little chopped dill!

Options for preparing chicken brizoli

Despite the simplicity of the recipe, brizol can be prepared in different ways. In the form of a roll with filling or as a chop in batter. Bake in the oven or fry in a frying pan. Each version of the dish is tasty in its own way, but they are all united by ease of preparation.

There are several known ways to make brizoli:

  1. The most popular is frying in batter (or egg).
  2. Making pancakes from an egg mixture, in which minced chicken, mushrooms, vegetables or a mixture of ingredients are subsequently wrapped.
  3. “Lazy” brizoli.
  4. Cooking omelet pancakes immediately with minced meat.

Brizol is most often prepared with fillings of tomato, cheese, mushrooms or a combination of similar products.

It is recommended to make minced meat for preparing snacks yourself. It is better to take the meat chilled rather than frozen.

Chicken fillet brizol in a frying pan

This method of preparing brizoli is very similar to making regular chops. The recipe is very simple. The meat retains its juiciness and natural taste.

Compound:

  • 0.6 kg chicken meat (loin);
  • 2 eggs;
  • 3 large spoons of flour;
  • pepper and fine salt as needed;
  • oil.

How to cook:

  1. Rinse the fillet thoroughly. Be sure to dry it. Cut off films and excess fat.
  2. Cut into layers 1 cm thick.
  3. Wrap the pieces in cling film and lightly beat them.
  4. Sift flour into a bowl, add finely ground salt and pepper, mix well.
  5. Drive the eggs into another cup and beat them.
  6. Heat a frying pan over medium heat. Pour oil.
  7. Dip the beaten meat first in flour, then immerse it in beaten eggs and place in the frying pan.
  8. To be ready, just fry each side of the brizoli for 3 minutes.

With cheese in the oven

An exquisite version of brizoli with chicken and cheese can be served both on holidays and on weekdays. You will have to tinker a little with the preparation. After all, you need to fry pancakes from the egg mixture.

Compound:

  • 0.4 kg minced chicken;
  • 0.2 kg curd cheese;
  • 3 tbsp. milk;
  • 5 eggs;
  • 3 garlic cloves;
  • 2 sprigs of any greenery;
  • salt and pepper as desired.

How to cook:

  1. In a deep container, beat milk and eggs until fluffy. Pepper and salt.
  2. Fry pancakes from the egg mixture in a frying pan without oil. Each side of the omelette pancake is fried for literally 30 seconds.
  3. Chop the greens, crush the garlic, beat the curd cheese. Salt and mix the ingredients.
  4. Salt the minced meat in a separate plate and add a little pepper. Mix.

This option is perfect as a tasty and satisfying breakfast. It's easy and quick to prepare.

Compound:

  • 0.5 kg minced chicken;
  • large tomato;
  • 5 eggs;
  • 100 g cheese;
  • 100 g mayonnaise (unsweetened yogurt);
  • greenery;
  • salt and pepper as desired;
  • 2 garlic cloves.

How to cook:

  1. First you need to prepare the sauce for the finished brizoli. For it you need to put mayonnaise in a bowl, add crushed garlic to it, salt and pepper the mixture. Mix everything.
  2. Next, the filling is prepared. Chop the greens, cut the tomatoes into thin slices, grate the cheese or cut into small bars.
  3. For the base: salt and pepper the minced meat, beat in 1 egg and mix thoroughly.
  4. Roll the minced meat into small balls.
  5. Place the meat ball on a table dusted with flour and roll it out thin.
  6. Beat the eggs. Pour some egg mixture onto a plate with a flat bottom and place a layer of minced meat on top of it.
  7. Heat a frying pan with oil. Carefully place the egg and minced meat on it. This should be done slowly, slowly removing the plate from under the food so that the egg remains on the bottom and the minced meat on top.
  8. Fry the brizoli on both sides for 3-4 minutes.
  9. Place grated cheese, tomato pieces and herbs on top of the fried minced meat, season with mayonnaise sauce and wrap in a roll.

Chicken and mushrooms, in particular champignons, are considered a successful combination in cooking. Brizoli is no exception.

Compound:

  • 0.2 kg champignons;
  • 0.4 kg minced chicken;

  • 80 g cheese;
  • medium sized onion;
  • 4 tbsp. milk;
  • 2 tbsp. mayonnaise;
  • spices, fine salt and pepper as desired.

How to cook:

  1. Place eggs and milk into a deep bowl. Add salt to the ingredients and beat thoroughly until foamy.
  2. Fry “pancakes” from the resulting egg scramble.
  3. Chop the peeled onion into half rings, wash the mushrooms and cut as desired.
  4. Place the products in a frying pan with oil and sauté for 6 minutes, then add pepper, spices and salt.
  5. Place a strip of minced meat on the edge of the egg pancake, and next to it the onion-mushroom mixture.

  4. Pour some egg mixture into the pan and immediately add the meat patty. As soon as the egg is browned, turn the workpiece over. Cover the frying pan with a lid and simmer the brizol for a quarter of an hour over moderate heat.
  5. Prepare the filling - cut the tomatoes into slices and cucumbers into long bars. Chop the greens.
  6. Place the finished egg-meat flatbread with the fried minced meat facing up and brush with mayonnaise or other sauce of your choice. Place vegetables and herbs on top. Roll into a roll.

  4. Once the pancakes are ready, you can start preparing the filling. Place the minced meat in a deep container. Add water, chopped herbs, pepper and salt. To stir thoroughly. The minced meat should be dense and at the same time slightly fluffy.
  5. Form 6 balls from the minced meat.
  6. Grate the cheese and distribute into 7 approximately equal parts.
  7. Place 1 part of the minced meat on the egg pancake, spread 1 tbsp on top. sour cream.
  8. Sprinkle with some grated cheese.
  9. Wrap the cake in a tube and place in an oiled mold.
  10. Use the same method to make the remaining 5 brisols.
  11. Sprinkle the brizoli laid out in the form with cheese. Place the pan in the oven (180 degrees) for half an hour.
