This dish is quite popular in Belarus.
It is easy to prepare and does not require unusual or expensive ingredients. For greater richness and satiety, lard is added to the potatoes, preferably with a meat layer. Basically, babka is cooked in pots, which gives this casserole its special taste. Ingredients:

  • potatoes - 1.5 kg
  • pork belly - 200 gr.
  • onions - 4 pcs.
  • milk
  • salt, pepper - to taste

Cooking method:

1. Cut the brisket into small cubes.

2. Heat the frying pan and place the chopped lard on it so that it melts. During this time, cut the onion into small cubes. You will need 3 onions, leave one.

3.When the fat has rendered from the brisket, add chopped onion to the pan. If there is a lot of meat in the brisket, and not enough fat has been rendered to fry a large amount of onions, you can add a little vegetable oil. Salt and pepper the roast, stir. Fry the onion until slightly golden.

4. Peel the potatoes and grate them on a fine grater. If you have a combine harvester, it is better to use it, it will be faster. Grate the remaining onion in the same way.

5.When the root vegetable is grated, there will be a lot of juice in the bowl. It needs to be squeezed out. To do this, place a colander in a bowl and place gauze on it in two layers. Place the potatoes and cover the edges with gauze. Hold the cheesecloth over a bowl and allow the liquid to drain. There is no need to squeeze hard until dry. This will make approximately 1.5 cups of juice.

6.Measure with glasses or another measuring container how much juice you got, everyone’s potatoes are different.

7.Put the potatoes in a bowl, pour in the same amount of milk as you squeezed out the juice. And add the onion sauté with the brisket. Also, don’t forget to turn on the oven to preheat to 200 degrees in advance, so you don’t waste time waiting.

8.Add salt to taste, mix well until smooth. Place the future granny in pots. Cover the pots with a lid or foil. Do not pour to the very top so that nothing spills out of the pot when boiling.

9.Place in the oven to bake for about 1 hour. Cooking time may vary depending on the size of your pan. The smaller the pot, the faster the dish will cook. In a 0.5 liter pot it can be baked in 40 minutes. So keep an eye on your food and test it for readiness.

Preparation

Turn on and preheat the oven to 200°C.

Place the peeled and diced potatoes in a saucepan and fill with water. We use just enough water so that all the potatoes are covered with water. Add salt (use 2 teaspoons per 3 glasses of water). Cover with a lid and bring to a boil. Then reduce the heat to low and cook until it is almost ready (with a light cheese).

Meanwhile: heat the oil in a large frying pan, add the finely diced onion. Fry until translucent, about 4 minutes. Add fresh spinach and sauté until all the leaves are wilted, about 5 minutes. After this, add the garlic, chopped with a knife or passed through a press, and cook for a few more minutes. Turn off the fire. You can use olive oil or regular oil (sunflower, vegetable).

In a small bowl, mix 200 grams of sour cream, salt, black pepper, oregano and garlic powder until smooth.

Drain the water from the potatoes and place in a heat-resistant dish. Mix it with fried onions, spinach and sour cream mixture

Spread the ingredients in a layer.

Sprinkle thickly with grated cheese on top.

Place the pan in a hot oven. Bake for about 25 minutes until the cheese is golden brown and the potatoes are tender.

  2. Remove the skin from the bacon and cut it into thin slices. Fry the bacon in a frying pan over low heat until golden brown.
  3. When the potatoes are cooked, drain the water from the pan and mash the potatoes with a potato masher. It is not necessary to make a super soft puree, but it is better to mash all large pieces.
  4. Add salt, pepper, milk and sour cream and mix everything well with a spoon.
  5. Grate the cheese on a coarse grater. Add half the cheese to the puree, set aside the other half for a while.
  6. Add half the bacon to the puree. Mix everything so that the cheese and bacon are evenly distributed in the puree.
  7. Preheat the oven to 200 degrees. Grease the baking dish with oil. Place the puree in the pan and smooth it out with a spoon. Place the pan in the oven and bake for half an hour.
  8. Remove the casserole from the oven and sprinkle with the remaining bacon.

How to make potato casserole

Let's prepare all the ingredients. First you need to peel the potatoes, cut them into cubes and put them in a saucepan. Pour in just enough water to cover the pieces. Season with salt (I usually use about a tablespoon). Cover with a lid and bring to a boil. When it boils, reduce the heat to low and cook without a lid until almost done.

Meanwhile, prepare the bacon, lightly fry it in a frying pan without oil. When ready, transfer it to several sheets of kitchen paper towel to get rid of excess fat. Cut the cooled bacon into small pieces. You can use any bacon you like, but keep in mind that some are saltier than others, so be careful not to over-salt the casserole.

Now it’s the cucumbers’ turn, cut them into thin slices. If you have large ones, you can cut them into semi-circles.

Now prepare the cheese mixture for the casserole. In a small bowl, combine Greek yogurt, cream cheese, mustard, salt, and pepper and stir until smooth. This is convenient to do with a blender at low speed.

Add two tablespoons of milk and mix again. You may need to use more than 2 tablespoons of milk. This will depend on your ingredients - if you feel the cream cheese mixture is too thick, add more milk to thin it out.

When the potatoes are ready, drain the liquid. Place the potatoes in an even layer in a heatproof dish. Arrange the cucumber pieces. Add cooked bacon pieces.

Spread the prepared cream cheese mixture. Mix until smooth.

Grate the cheese on a coarse grater and sprinkle evenly over the prepared dish. Bake in a preheated oven at 200°C for 20 minutes or until the cheese is melted and golden brown.

Take it out of the oven, let it cool a little, decorate with herbs and you can start tasting.

In a frying pan for 1 tbsp. fry onion and bacon in a spoon of sunflower oil.

Grease an oblong shape 20-25 cm well. Place a thin layer of potatoes on the bottom, then fried onions and bacon, again a layer of potatoes, and so on until the very top.

When the mold is filled, pour the egg and milk mixture over the potatoes. Bake the casserole in a preheated oven at 175 degrees.

After 40 minutes, sprinkle the top with the remaining fried onions and bacon. Anyone who wishes can sprinkle with grated cheese. And into the oven for another 20 minutes. Be careful not to burn the top! Remove the finished casserole from the oven, let it stand for a while, use a knife to help it move away from the sides of the pan and turn it over onto a plate! There may be a thin layer of potatoes left at the bottom, but that's okay!
