The fermented cheese mass must be rid of the whey that has separated from it - to do this, according to the old principle, cover the surface with several layers of gauze and turn it over (do not forget that all this must be done over a sink or some container so as not to flood the floor). As a result, the cheese mass should remain in a gauze package, which is then tied and left to hang over the pan for several hours while the liquid drains. - Place the cheese in the refrigerator . After all the manipulations and when all the liquid has completely drained from the cheese mass, wrap the gauze package with cheese in a plastic bag and put it in the refrigerator overnight (although it will be best if the cheese stays there the whole working day , i.e. 24 hours ).
The resulting cheese mass can be consumed as an independent product, or used as an ingredient for any dishes.
Homemade analogue of Hochland cheese
An analogue of Hochland cheese according to this recipe, when prepared correctly, is not inferior in taste and texture to the original.

- Then you need to carefully remove the clot from the container and place it in sterile gauze, folded in 6-8 layers. It is advisable to first soak the gauze in drinking water and squeeze it out to eliminate the “medicinal” smell.
- Gently but firmly tie the edges of the gauze and hang it over the pan. The whey remaining in the curd mass will drain into it.
- Leave the cheese mixture for 5-6 hours. The cheese is considered ready when liquid stops dripping from the gauze.
Ready homemade Hochland needs to be stored in a closed container in the refrigerator.
With strawberry
Cottage cheese cheesecake, the recipe for which usually calls for vanilla flavoring, can be supplemented with berries.
The strawberry version is one of the classic ones.

- 0.75 tbsp. a glass of strawberry puree;
- 0.5 tbsp. Sahara;
- 0.5 tbsp. l. corn flour;

Step-by-step cooking process
The process of making strawberry cheesecake is carried out in several steps:
- You need to mix the crushed cookies and butter and spread them in an even layer in a spring form.
- Place a bowl in a container with hot water and mix warm water and gelatin in a water bath for several minutes. until completely dissolved.
- To prepare the filling, mix strawberries, cottage cheese, cream, lemon juice and condensed milk in a food processor, then add dissolved gelatin.
