One of these recipes is pies with sour milk.
In this case, you can use the remains of the sour milk product, and not just dispose of them. The main advantage of the proposed recipe for pies with sour milk is that you don’t need to fuss with yeast, leave the dough for hours and worry about getting the base to fit well. This dish will be ready in just 40 minutes without much effort or hassle.
Features of baking with sour milk
To make delicious pies, you need to prepare the dough correctly. There is one trick to preparing dough with sour milk for pies - add soda to the dough. Sodium carbonate is not preliminarily quenched with vinegar, since sour milk contains enough acid. In this case, the dough must rest well (30-40 minutes) for the fermentation process to begin.
Be sure to sift the flour before adding it to the dough so that it is well saturated with oxygen. The dairy product must sour well until homemade curdled milk is formed. Also, milk cannot be used cold; it must be heated in the microwave or in warm water to 36-40 degrees. This way the dough will be light, fluffy and airy.
Quick dough with sour milk
You should start preparing sour milk dough for pies in the oven with bulk ingredients.
- The first step is to sift the flour into a bowl using a sieve or a special device with a mesh bottom and an iron handle.
- Add soda to the flour and stir everything well. Meanwhile, beat the egg in a mixer bowl, add salt and sugar.
- Beat the egg mixture a little until light foam appears. Then form a mound from the flour and make a small depression inside.
- Pour the beaten eggs into the resulting hole. After this, immediately pour vegetable oil into the well and mix it with the egg mixture inside the flour.
- The next step in preparing dough without yeast for pies is to add warmed sour milk in portions to the flour.
- At the same time, you need to start mixing the dough with a wooden spoon. In this way, gradually pour in the entire volume of sour, not forgetting to stir the dough.
- Next, the yeast-free base needs to be transferred to a flour-dusted surface (cutting board).
- All that remains is to knead the dough well with your hands so that it becomes elastic, pliable and does not stick to your hands. You can add a little more flour if the base turns out liquid. But you don’t need to make the dough too tight, as it won’t rise well and the baked goods will be tough.
- The last step of the dough recipe for fried pies with sour milk is to put the yeast-free base back into the bowl, cover well with a towel and leave in a warm place for 30 minutes to separate. For example, put it in a multicooker and set the “Dough” program.
After the specified time, you can start preparing pies with sour milk.
Choosing filling for pies
For fried pies with sour milk, in addition to preparing yeast-free dough, you also need to decide on the filling. You can choose almost all ingredients as a filling. Ideal for sweet pies: fresh berries, fruits, jam or dried fruits, cottage cheese.
To prepare salty pies, you can fill semi-finished products with vegetables, for example, fry onions, carrots and cabbage, prepare mashed potatoes, boil liver with eggs or fry mushrooms, add minced meat or canned fish. The main advantage of this dough is that absolutely any filling goes well with a quick sour milk dough for pies.
Preparing fried pies
When the dough has risen, you can begin the actual process of cooking pies with sour milk in a frying pan.
- The yeast-free base must be rolled out into a layer no more than 1 cm thick.
- Using a glass, press out circles from the dough. Collect the remaining dough together and repeat the process of creating blanks.
- You can also immediately roll the dough into a sausage and cut into pieces of 1-1.5 cm. In this case, the circles must still be kneaded in your hands, forming a flat cake.
- You need to put the filling in the middle of the round piece.
- Pinch the edges of the workpiece with wet fingers and flatten the semi-finished product on both sides. Repeat the process for each piece.
- Place the prepared semi-finished products on a floured cutting board.
- Meanwhile, heat the sunflower oil in a frying pan. There should be just enough vegetable fat in the pan to cover the semi-finished product by a few centimeters. After this, place the pies on a hot frying pan.
- Fry the pies in sour milk until browned on each side (about 7-10 minutes). At the same time, set the fire to medium.
- Ready-made fluffy and rosy pies with sour milk, cooked in a frying pan, should be placed on paper towels so that the paper absorbs excess fat. Thus, baking will not only be tasty, but also easy.
You can also bake sour milk pies in the oven at 200 degrees. Cooking time for oven-baked pies is 25-30 minutes, depending on the size of the semi-finished product. And if you brush the pies with egg before putting the pies in the oven, the baked goods will be shiny, rosy and golden.
Cool the finished pies based on yeast-free dough with sour milk and serve with sour cream sauce or homemade yogurt. For drinks, you can boil dried fruit compote or brew aromatic tea.
Baking with sorrel and pies with sorrel
To bake in a slow cooker with sorrel, divide half of the dough into 6 parts. Knead each part with your hands, giving it a flat cake shape. Place chopped sorrel and a teaspoon of sugar in the middle.
Pinch the top, giving it a rounded shape, and place seam side down.
Place the baked goods with sorrel in a multicooker bowl (oiled), turn on the heat for 10-15 minutes so that the baked goods rise more. And “Baking” for 40 or 50 minutes. Do not open the lid during baking.
The finished sorrel pastry can be browned using.
For sorrel pies, divide the second half of the dough into 8 parts. Place each part in the same way in the form of a circle, fill it with chopped sorrel filling along with sugar (a teaspoon per pie). Pinch the edges to create an oblong shape.
Place on a baking sheet, brush with milk (or beaten egg), and place in a warm oven for 10 minutes to proof. And after increasing the size of the pies, bake them for about 20 minutes at 200 degrees.
This is the result you get from baking with sour milk. The dough is soft, fluffy, ideal for sorrel pies.

Sour milk pie
Often, your household members really want something rich, but they are too lazy to run to the store, and “finances sing romances”! And then the thought of homemade baking comes to the housewife’s mind. It’s true, why not please your loved ones with a delicious aromatic pie for dinner? Especially if there is something like yogurt, kefir or sour milk in the refrigerator.
We offer you several simple recipes for delicious pies that even a child can prepare. And, importantly, they are all really economical, and the necessary ingredients can be found in every home. If you don’t find some of the necessary products in your refrigerator, it doesn’t matter, they are almost all interchangeable. Don't be afraid to experiment! Please yourself and your loved ones with pleasant little things.
Fruit pie with sour milk
Ingredients:
- fruit to taste
- sour milk, maybe kefir - 1 glass
- sugar - 1 glass
- flour - 2-3 cups
- eggs - 2-3 pcs
- soda - 1 tsp.
Beat sugar and eggs with a broom or in a blender. Add sour milk to this mixture and stir until smooth. Now add flour in a thin stream while stirring. Quench the soda with vinegar (you don’t have to extinguish it) and add. The dough must be kneaded for 5-10 minutes.
Bring the dough to the consistency of thick sour cream. Peel and cut your fruit. Take fruits to your taste - it can be apples, pears, kiwis, bananas - anything! Everything will turn out very tasty early! Pour the dough into the mold.
And then place the fruit on the dough (here you can show your creativity if you wish). Now all that remains is to put the pie in the oven, which you first remembered to preheat to 180 degrees. This is the ideal setting for a good and smooth rise of the dough. Bake for 30 – 35 minutes. Check readiness with a toothpick or match. Bon appetit!
Chocolate pie with sour milk
Ingredients:
- Wheat flour - 2 cups (200 ml cup)
- Sour milk - 1 glass
- Cocoa - 2 tbsp. spoons (heaped)
- Egg - 1 pc.
- Sugar - 0.5 cups
- Baking powder - 1.5 teaspoons
- Vanilla sugar - 1 teaspoon
- Salt - 1 pinch
- Vegetable oil - 3 tbsp. spoons
- Walnuts - 4-5 pcs. (optional)
- Dried apricots - 5-6 pcs. (optional)
As usual, turn on the oven. In order to preheat it to 180 degrees. Grind nuts and dried apricots. You can do without these ingredients, or use other dried fruits, but with these it turns out especially tasty. In the first bowl you should add the required amount of dry ingredients.
And into the second - pour sour milk, sunflower oil and add an egg there. Don’t be lazy to separate bulk and liquid products - this is very important. Mix ingredients in two bowls. It’s good if you use a blender to stir the liquid mass. Now mix the contents of two bowls until smooth (a blender will help again).
The dough should be slightly thicker than sour cream. Add dried apricots and nuts to the dough. Mix everything again with a broom. Line a baking pan with parchment paper and place our dough there. Let it “come to its senses” for about 5 minutes at room temperature, and then safely put it in a preheated oven. Bake for 35 - 40 minutes. Check the readiness of the pie with a toothpick. This is a banal, but the most reliable way. The cooled pie can be sprinkled with powdered sugar or poured with melted chocolate. Ready!
Sour milk pie with berries
Ingredients:
- granulated sugar - 1 cup
- vanilla sugar - 1-2 teaspoons
- eggs - 2 pieces
- sour milk - 1 glass
- baking powder or baking soda - 1 teaspoon
- premium wheat flour - 2 cups
- any fresh berries - 1 cup
- odorless vegetable oil for greasing the mold - 1 teaspoon
The pie will be baked in the oven, so turn it on in advance and heat it to 200 degrees. Before. How to start kneading the dough, wash the berries if necessary. Remove the seeds from them. If you use raspberries, do not wash them - they will fall apart. The bactericidal properties of this berry provide us with complete safety. Beat sugar, vanilla sugar and eggs with a mixer for 2 minutes.
Pour sour milk into the resulting mass, add baking powder or soda. Mix all this well with a broom or a special spatula. Then add flour sifted through a sieve to the mixture. Mix everything again. Make sure that there are no lumps left. Stirring with a broom, bring the dough to the consistency of thick sour cream. All that remains is to pour the berries into the dough and mix. The mold must be greased with a thin layer of oil, then pour the dough into it.
It is better to give preference to a mold with a smaller diameter - this way the cake will bake better (ideally 20 centimeters is suitable). Now place the pan with the dough in the hot oven, and to prevent the bottom of the pie from burning, place a metal cup of water on the bottom of the oven. The berry pie will take 35-45 minutes to prepare. The pie is ready when it has risen well and the top is nicely browned. Try to control the process through the glass without opening the oven door, as the temperature difference may cause the baked goods to not rise.
Having taken out the finished pastry, let it cool for 7-10 minutes, and only then serve. Ruddy berry pie with sour milk will decorate any family tea party! If desired, you can add powdered sugar or chocolate icing to the top of the cake. In summer, prepare this pie with seasonal fresh berries, and in winter - with frozen, canned, or jam. In any case, it will turn out tasty, aromatic, and therefore homely!

Cooking steps
Prepare products for the test.
If you, like me, knead the dough in a bread machine, then pour warm sour milk into a bucket, add egg yolks and an egg.
Then add two types of sugar and curd cheese. If there is no curd cheese, you can add cottage cheese, previously rubbed through a sieve.
Melt the butter, cool slightly and pour into a bucket.
Do not forget to monitor the formation of the bun in the bread machine; the dough should not stick to the walls of the bucket. To knead the dough by hand, add yeast to warm sour milk and leave to rise for 10-15 minutes. Then in a deep bowl, combine the yeast, egg yolks, egg, cottage cheese (or grated cottage cheese), two types of sugar, melted butter and salt, mix lightly, and then, adding flour, knead a tender and soft dough, cover it and leave for 1.5 hours in a warm place. The dough will increase in volume.
Place the finished dough on a silicone mat or floured table and knead well.
Using a rolling pin, roll out the dough into a rectangular layer.
Soften the butter for the filling and brush it onto the dough sheet.
To prepare the filling, combine cinnamon, sugar and nutmeg, sprinkle this mixture onto a greased layer of dough.
Roll the dough into a tight roll.
Cut the roll into 17-18 pieces.
Prepare ingredients for syrup.
Place sugar, honey, butter and cinnamon in a saucepan.
Place the saucepan on the fire and heat the mixture well until the sugar and butter are completely dissolved.
Pour some syrup into the baking dish.
Place the buns in the mold.
Then pour the syrup over the buns.
Sprinkle the buns with chopped nuts. Leave the pan with buns for 35-45 minutes in a warm place. Then place in a preheated oven and bake at 200 degrees for about 35-45 minutes.
Let the finished yeast cinnamon rolls cool slightly and then serve.
Appetizing, tasty buns, mixed with sour milk, are easily separated from each other, while being completely covered with syrup.
This is such beauty and unreal deliciousness!
It happens that the milk you bought the day before has turned sour. For what reasons does this happen?
Children are often the culprits: after taking something out of the refrigerator to make a cocoa drink or milkshake, they forget to put it back.
The result is known - the milk turns sour. But this is not a reason to be upset, because from it you can make fluffy buns with sour milk, which have excellent taste.
Pie dough with sour milk, recipes.
Everyone loves homemade baked goods, even those who are constantly losing weight. And most housewives like quick baked goods that don’t require fuss. One of these is dough for pies made with kefir or sour milk. The recipe for such a test is also good because it allows you not to throw away the spoiled product, but to put it to use.
It happens that either you bought stale milk, especially in the summer, in the heat, or it stood for a long time and was simply pushed into the depths of the refrigerator. I’m not upset about this at all, because so many delicious things can be made from sour milk, especially like our village milk.
Most often, sour milk is used to make cottage cheese, but this is only if there is a lot of milk. Not everyone has it in such quantities. Therefore, I offer several delicious and simple recipes using sour milk. Pies made from this dough can be fried or baked in the oven. Some recipes are also suitable for pasty dough. With the addition of yeast, the dough turns out especially light and airy. In general, see for yourself.
Normal milk, that is, without additives, sours in a warm room in 3-4 days. If you put milk in, but can’t wait for it to sour, then most likely you have come across an unnatural product made from palm oil and should not be used for dough. If it turns sour over time, it will become bitter.
Sour milk dough for pies, recipes
For those who will be making this dough for the first time, I want to share one subtlety. In order for such a dough to rise, soda is added to it; it is not quenched first, since it is quenched by acid from milk. But the dough must be allowed to rest for at least half an hour so that the slaking process can begin, then it will be lighter and fluffier. You also need to sift the flour before pouring it into the dough, then it will be completely saturated with oxygen, which will also make the dough light.

Sour milk dough, video
Step by step recipe
- Buns made with sour milk are soft, airy and tasty. Well, what could be better than homemade baking? There is an opinion among people that dough prepared with kefir or sour milk in finished form is rubbery. But if you add vegetable or olive oil, then there will be a completely different effect. By adding butter to the dough you will need a little less flour and then the buns will be fluffier. There may be less flour in this recipe than stated in the list. It all depends on the quality of the flour. Let's begin. Warm the sour milk slightly above room temperature. Pour all the dry ingredients into the milk, except salt (yeast, sugar and a tablespoon of flour).
- Mix with a whisk until smooth. Leave in a warm place for about thirty minutes.
- After thirty minutes the dough will become lumpy (come to life).
- Now, preferably with a tablespoon, add flour and salt and mix with a spoon. When it becomes difficult to stir.
- Dust your work surface with flour. And dump the dough onto the table. Pour in the oil and odorless vegetable oil.
- And knead the dough, adding flour. Place the dough back into the bowl; it is advisable to grease it with oil, this will make it easier for the dough to rise. Cover the dough with a lid or cling film and place in a warm place for an hour.
- In an hour, or even less, the dough should double or triple in volume. Knead the dough directly in the bowl, take it out and form ten buns.
- Place in greased pans or on a baking sheet lined with parchment paper. I put six buns in one pan and the rest of the dough in a small ceramic pan. Leave in a warm place for about forty minutes.
- During this time, the dough will rise again.
- We have already preheated the oven to 210 degrees. We send the buns and cook for about 30 minutes. You need to check the readiness with a wooden skewer.
- Cool the finished buns completely on a wire rack. These buns can be served instead of bread or made into sandwiches. If you have made a lot of buns, cool them completely, put them in a bag and put them in the freezer. When you need the buns, remove them from the freezer and leave them at room temperature. In half an hour you will have buns better than straight out of the oven. Believe me, this has already been verified. Bon appetit!
Sour milk dough for pies
Milk is not always drunk while it is fresh. It happens that there is a lot of it left, but it has already begun to sour. You should not rush to throw out this product just because you cannot cook porridge or cocoa with it, or you cannot whiten coffee or tea with it. It can be used to prepare various types of dough. Many housewives make delicious pancakes with it, others use it for delicious pastries. Dough with sour milk can be made for fried and baked pies, sweet or savory. It is kneaded with or without yeast. Whatever pies you plan, it’s easy to choose a suitable flour base mixed with sour milk.
Cooking features
Recipes for pie dough with sour milk can be of varying degrees of complexity, however, even a novice cook can cope with its preparation if he knows and takes into account several points.
- Sour milk must be distinguished from spoiled milk. It has a slightly sour smell, not repulsive. Missing milk smells sharp and unpleasant. To prepare the dough, use sour, but not lost milk.
- The higher the quality of flour, the tastier the baked goods. A second-rate product gives products a gray color and a specific taste. The difference in price between high-quality and second-grade flour is not so great as to save on this product.
- Flour must be sifted before combining with other products. Experienced bakers even do this 2-3 times. The purpose of this manipulation is not only to rid the product of small debris and insect larvae. The main task is to saturate the flour with oxygen. After sifting, it becomes lighter; this flour combines well with other components without forming lumps. Dough made from such flour rises well. Baking from it turns out tender and airy.
- When preparing dough for pies, you need to use products at the exact temperature indicated in the recipe. They usually need to be warmed to at least room temperature. To do this, just remove the products from the refrigerator half an hour before starting to prepare the dough. For yeast dough, sour milk must be heated to at least 30 degrees. This should be done carefully to prevent the sour milk from separating into curds and whey. To prevent milk from curdling, it is heated in a water bath or allowed to stand near a warm stove for an hour.
- The dough for fried pies is made a little more liquid than for baked ones. The dough recipes for them do not have any other significant differences. Both pies can be made from unleavened or yeast dough, with or without the addition of eggs.
- Yeast dough takes longer to prepare, but the baked goods made from it are more fluffy. If you want to make yeast pie dough, but don’t have time to wait for the dough to rise, you can use instant yeast - it rises the dough several times faster than usual.

1
Beat eggs into a bowl, add sugar (both regular and vanilla). Stir and set aside to let the sugar dissolve.
2
Now let's start preparing the apples: wash them, remove the core. You can peel the apples, or you can leave them that way, whatever you want. Cut the apples into not very thin slices. Well, turn on the oven to heat up to 180 degrees.
3
Grease the baking dish with butter or margarine and lightly sprinkle with flour. Place chopped apples on the bottom of the pan.
4
Now let's prepare the dough. Mix the eggs with sugar again, by this time the sugar should have dissolved. Add soda, sour milk and flour. Stir so that there are no lumps. It should be a liquid dough. Pour the batter into the pan on top of the apples.
5
Place the pie in the preheated oven for 30-35 minutes. We check the readiness of the pie with a wooden toothpick; to do this, pierce the pie and take out the toothpick. If the cake is ready, the toothpick will be dry.
6
The cooled pie can be sprinkled with powdered sugar. If it has time to cool down, at my house it is eaten almost straight from the oven.

Yeast dough for pies with sour milk
A bottle of sour milk is an ideal base for yeast dough for pies. Even those housewives who are not very fond of making dough with yeast will appreciate the ease of preparing yeast dough with sour milk.
Cooking time: 30 minutes Total time: 1 hour 30 minutes
- 900 g wheat flour
- 0.5 l milk sour
- 50 ml warm water
- 10 g dry yeast
- 1 tbsp. l. sugar with a slide
- 3 tbsp. l. vegetable oil
- 1 tsp. salt
1. Add sugar and yeast to warm water.
Wait until they rise into a foamy cap.
2. Pour the sour milk into a deep bowl or pan.
3. Pour diluted yeast into it and stir.
4. Add salt and about 600 grams of flour, which was sifted in advance.
Mix the dough well. At this stage, you can stir it with a spoon, since it is still soft and even liquid in structure.
5. Add butter to the dough and add another hundred grams of flour, continuing to knead the yeast dough with your hands.
If necessary, add the remaining flour so that it does not stick to your hands. The exact amount of flour is determined as you knead; the dough should not turn into a heavy, hard lump, but should be soft and elastic.
6. When the dough becomes smooth and easily comes away from both hands and dishes, it should be covered with a towel and sent to a warm place. An oven turned off and heated to 50 degrees will do.
7. After about 60 minutes, the yeast dough with sour milk will more than double in size.
This means that it can be formed into pies or buns, and is suitable for both fried pastries and oven-baked yeast dough products.

- Adding flour in parts, knead soft and tender dough into buns. Place the dough in a warm place for an hour and a half until it increases in volume.
- After the allotted time has passed, roll out the yeast dough into a rectangular layer and grease with butter intended for filling.
- Sprinkle a mixture of sugar, cinnamon and nutmeg on top.
- Roll the roll, pressing it lightly with your hands so that the layers fit snugly against each other.
- Divide it into 17-18 buns.
- While the buns are melting, cook the syrup: melt honey, butter and sugar in a thick-bottomed saucepan, add cinnamon.
- Pour some of the syrup into a round mold and place the buns. Pour a spoonful of syrup onto each of them (see photo).
- Sprinkle the surface of the dish with crushed nuts, let it stand for about forty minutes, and then bake in an oven preheated to 200 degrees. The buns should spend 35-40 minutes there.
When the buns are baked, they need to be cooled and then served. The buns are easily separated from the mold and from each other.
