General principles of cake preparation

  • Buy ready-made cakes at the store.

If there is no base in the cake, then you can use jelly, fruits or berries. The jelly itself can be prepared using the classic and simplest method based on ordinary food gelatin, using sour cream and natural fruit juice as the main component. If you add whipped cream to the dessert, you will get a very voluminous and colorful cake.

There are a few more useful tips to consider:

  • To prevent the jelly from saturating and greatly softening the cakes, it is necessary to create a kind of insulating layer. For it you can use thick cream, thick jam or jam. The layer is applied in a very thin layer so that the dessert does not turn out too cloying.
  • Jelly should not be poured over some fresh fruits, such as kiwi and pineapple. In this case, the jelly mass will not be able to harden. The only exception in this case are fruits that have undergone heat treatment. It is also possible to use fresh kiwi and pineapple when preparing jelly with agar-agar rather than gelatin.
  • To fill this type of dessert, it is recommended to use a mold (preferably detachable) with high sides. You also need to ensure that the mold fits tightly to the workpiece.

  • To make it easier to separate the jelly from the mold, you can place it in hot water for a while. If you are using a split-type mold, you can slightly heat its walls using a regular hair dryer.
  • You can find special confectionery jelly on sale. It does not use gelatin, but other thickeners that have better properties. This jelly is much easier to work with. Just read the instructions. As a rule, such compositions harden much faster.

  • 250 g fresh strawberries;
  • 2 medium ripe apricots or peaches;
  • 0.5 tbsp. boiled water;
  • 400 g sour cream (it is best to use a product with a fat content of 10%).

To prepare dessert:

  1. First of all, you need to pour boiling water over the dry gelatin and mix the mass well. After this, you need to wait until it swells and cools.

  2. During this time, you can prepare fruits and berries. It is necessary to remove the peel from peaches or apricots and divide each into 4 equal parts. Strawberries need to be cut into smaller pieces, and blueberries should only be washed.
  3. Also, while the gelatin is cooling, you can mix sour cream and powdered sugar.
  4. At the next stage, you need to very carefully pour the cooled gelatin into the sour cream mixture in a thin stream. In this case, you need to constantly stir it.
  5. Next, you need to place the fruits in the jelly-sour cream mixture and distribute them with a spoon. You need to ensure that the fruits and berries are covered with the mixture.

  • 0.5 kg sour cream (10% fat);
  • 0.5 tbsp. water;
  • 100 g butter;

  • 1 lemon;
  • 50 g of ready-made Kiwi jelly;

In this case, a jelly cake without baking is prepared as follows:

  1. First you need to crush the cookies so that they turn into crumbs. The easiest way to do this is to use a blender. If you don’t have it at hand, then an ordinary rolling pin will do, which just needs to roll out the cookies several times.
  2. After this, you need to soften the butter (leave it at room temperature until it becomes soft) and mix it with the cookie crumbs. You will get a mass that can easily be rolled out into a cake. Next, you need to place it in a round shape, compact it and put it in the refrigerator.
  3. While the cakes are cooling, it is recommended to prepare the gelatin. To do this, you can proceed as described above or use another method. To do this, you need to pour dry gelatin with cold water and wait for the mass to swell (the waiting time should be indicated in the instructions). After this, you need to slightly heat the gelatin on the stove, stirring constantly until all the clots have dissolved. Under no circumstances should you bring it to a boil.
  4. When the gelatin is ready, it must be cooled.
  5. While the gelatin mass is cooling, you need to mix the cottage cheese with sugar, vanillin and sour cream. You also need to add 3 tsp to this mixture. lemon juice.
  6. The resulting curd mass must be whipped until the sugar is completely dissolved in it.
  7. After this, you need to pour gelatin into the curd mass. This should be done slowly, constantly stirring the contents of the container.
  8. At the next stage, you need to pour the prepared cream onto the cookie crust and put it in the refrigerator for 2-3 hours.
  9. After this you need to prepare additional jelly. To do this, you need to follow step 3, but reduce the amount of water by half. The resulting thicker jelly must be poured onto the cake and the dessert should be put back into the refrigerator for 2 hours.

When everything is ready, all that remains is to decorate the cake. To do this, you can use lemon zest, fruits, berries, or any decorations purchased in the store.

Strawberry cake with gelatin soufflé

Products for cooking:

  • fresh strawberries - 415 grams;
  • warm water - 0.5 cups;
  • high fat sour cream - 535 ml;
  • “Jubilee” or “Creamy” cookies - 125 grams;
  • granulated sugar - 210 grams;
  • frozen strawberries - 215 grams;
  • granulated gelatin - 23 grams.

Step by step recipe:

To prepare a cake without using baked goods with gelatin, fruits and cookies, you need to defrost the berries in advance. To do this, they are transferred to a bowl and left in this form until completely defrosted. Some people prefer to use a microwave for this purpose, but such heating will spoil the taste of the berries. As soon as the strawberries are thawed, only part of the sugar is added to it; we will need no more than fifty grams of the product. The mass is transferred to a blender and crushed to a liquid puree.

Now take a separate plate, pour half a glass of water into it, and add gelatin. Infuse this gelatin mixture for 40 minutes. You can also prepare fresh strawberries; they are washed in water and then the green tails are removed. For the cake, you need to cut the strawberries into thin plates or pieces.

Preparing the base for the cake:

The next step is to deal with cookies; in our case, it is better to use “Yubileinoe” cookies, since they easily break into pieces. The cookies are transferred to a blender bowl and then crushed to crumbs. Still, you shouldn’t grind it too much, as small grains will quickly get soaked in the cream and turn into porridge.

The sour cream is whipped using a mixer; we use exclusively fatty product, since only in this case the soufflé will keep its shape. The cream is brought to fluffiness, and then the remaining granulated sugar is added in small portions. It is necessary to beat the mixture until the granulated sugar is completely dissolved in the cream. Gelatin is dissolved in a steam bath, and then introduced in a thin stream into the prepared cream of sour cream and sugar. Mix everything thoroughly.

Cake formation process:

To prepare a no-bake cake with gelatin, fruit and sour cream, we need a round silicone mold. One layer of cookies is placed at the very bottom, and it is best to mix it with melted butter, this will give the cookies their shape. It is very important to compact the layer of crumbs well. They begin to spread the cream on top; we will need about a third of the entire mass.

The next step is to spread jam from thawed strawberries and granulated sugar, and you can put a few berry pieces on top. If there is still berry jam left, then it is poured into the creamy mass and everything is mixed. This mixture is poured over the top of the cake.

Berries or strawberry slices are used as decoration. The mold is refrigerated for at least four hours.

This is a very quick option for preparing a cake, which in its taste is in no way inferior to ready-made desserts from a confectionery shop.

To prepare this dessert:

  1. First of all, you need to prepare gelatin using one of the methods already described above.
  2. While the gelatin swells, you need to wash and cut the fruit (you can also use berries) into pieces. After this, it is advisable to blot them with a paper towel to collect excess moisture.
  3. Next you need to prepare the cream. To do this, add sugar and vanillin to the sour cream. After this, the mass is thoroughly beaten. The sugar should completely dissolve. However, you cannot beat the sour cream too vigorously and for a long time. Otherwise, it may turn into oil and you won’t be able to make a tender cake.
  4. The next step is to cut the sponge cake into large pieces.
  5. After this, you need to add gelatin to the sour cream mass and mix everything using a mixer.
  6. Next, place cling film on the bottom of the mold. This will make it much easier and faster to remove the cake when it's ready. Place fruit on the bottom of the mold. Keep in mind that the bottom will ultimately be the top of the cake, so you need to carefully arrange the ingredients.
  7. After this, you need to place pieces of sponge cake on the fruits and berries and pour sour cream into the mold. Next, it is recommended to shake the mold a little so that the mass fills all the voids well.
  8. All that remains is to put the cake in the refrigerator for several hours (it is advisable to also cover the top part with cling film).

When the cake has hardened, simply turn the pan over and place the cake on a plate.

No-bake sour cream cake with fruit and gelatin

A very beautiful dessert, the taste is reminiscent of “rainbow sour cream”, which was sold in all cafeterias in Soviet times.

Ingredients:

  • 650 ml sour cream (15-20%);
  • 650 g fruits (any);
  • 15 g vanilla sugar or 1 g vanillin;
  • 25 g gelatin;
  • 350 g sugar;
  • 200 ml water.

Preparation:

  1. First of all, pour gelatin into 1 tbsp. cold water, leave it to swell for 30 minutes. Then warm it up and leave it to cool, but not in the refrigerator.

  6. If you are using a non-separable pan, be sure to line the bottom with film to make it easier to remove the finished treat later.

With fruits

Jelly cake without baking can be prepared from the following ingredients:

  • 450 g of fruits in syrup (you can buy any, for example, tropical mix);
  • 10 pieces. fresh strawberries (if the berries are not large, you can use more);
  • 400 g of cottage cheese (cottage cheese of any fat content is suitable for this recipe);
  • 150 ml milk;
  • 200 ml sour cream (fat content not less than 15%);
  • 100 g granulated sugar;
  • 20 g dry gelatin.

Step-by-step cooking process

To make an easy fruit dessert:

  1. First you need to drain the syrup from the purchased fruit. The volume of the jar varies, but on average it yields about 200 ml of liquid.
  2. After this, you need to pour the gelatin not into the water, but into the syrup itself. The mass needs to be mixed well and left for a while (usually 20 minutes is enough) until the jelly swells
  3. Mix sugar, vanillin, milk and cottage cheese. It is best to use an immersion blender for this. Next, you need to add sour cream to the mixture and mix all the ingredients again.
  4. At the next stage, you need to transfer the resulting curd mass into a deep container and slightly warm up the syrup with gelatin (for example, you can put the jelly in the microwave for a few minutes, stir and warm up again). When the gelatin has dissolved well, the resulting liquid must be poured into the curd mass and mixed thoroughly.
  5. Next, you need to add cut fruits (canned and fresh) to the jelly mass.
  6. After this, all that remains is to pour the mass into any silicone mold, cover the jelly with cling film and place in a cold place. It is best to leave the cake in the refrigerator overnight.

When the jelly thickens, you can carefully remove the cake from the mold and decorate with berries, chocolate chips and any other ingredients to your liking.

Curd cake with strawberries without oven

The beauty of this recipe is that you can use either frozen or fresh berries.

Here is a detailed list of the main ingredients:

  • vanilla crackers (or shortbread) – 300 g;
  • cottage cheese (non-fat) – 300 g;
  • fresh sour cream – 200 g;
  • strawberries – 150 g;
  • butter (soft) 100 g;
  • boiled (chilled) water – 50 ml (a little more is possible);
  • granulated sugar – 2-4 tbsp. l.;
  • jelly (strawberry) – 1 package;
  • gelatin - 1 package;
  • vanilla sugar – 1 tsp.

Main stages of preparation:

  1. Gelatin is poured with boiled water for 20-30 minutes - this time should be enough for it to swell. After that, it goes into the microwave for 1-2 minutes and cools.
  2. Vanilla crackers (or cookies) are passed through a meat grinder and then mixed with butter. It is preferable to do this with your hands in order to better feel the consistency of the “dough”.
  3. The resulting mass is evenly spread on the bottom of the springform pan and sent to the refrigerator.
  4. Using a blender, sour cream is whipped with cottage cheese, granulated sugar and vanilla sugar. After achieving a homogeneous consistency, cooled gelatin is introduced.
  5. Some of the berries are cut in random order and placed in the curd filling. Everything is thoroughly mixed and poured into a mold in which the cookies have already cooled. Try to stick to the same size when cutting cubes. You can stick to the dimensions 1.5 by 1.5 cm, or any others.

A muffin tin will work too. You can take a deep bowl. Lay out multi-colored cubes in layers with sour cream. You can pour a little sour cream on the bottom.

A few red, yellow and green cubes at the bottom of the mold, you don’t have to stick to order, you can be chaotic.

You can put marshmallows or jelly candies. Sometimes they add pieces of fruit. Many people like to add cookies or pieces of biscuit.

Then a layer of sour cream, then place the cubes again, and again a layer of sour cream and so on until the top. You can put pieces of fruit in a jelly cake with sour cream. Strawberry, kiwi, orange and others are suitable.

  3. After this, in another container you need to mix yogurt with sugar and gelatin prepared in step 1. The resulting mixture must be placed in the mold on the cake and the cake must be placed in the refrigerator for 1.5-2 hours.

  • 700 ml sour cream (20-30%);
  • 300 g of unsalted cracker (fish, “crunch”, you can take a cracker with poppy seeds);
  • 100 g raisins (optional);
  • 200 g milk chocolate;
  • 25 g gelatin;
  • 1 bag of fruit jelly (if you don’t have it, then another 10 g of gelatin separately - for the very top layer of the cake);
  • 300 g of fruit;
  • 200 g sugar;
  • 450 ml water;
  • vanillin.

Preparation:

  1. Prepare the gelatin and leave it to cool at room temperature.
  2. Pour boiling water over the raisins and let sit for 5 minutes until the berries become soft.
  3. Break the cracker into pieces about 1.5-2 cm.
  4. Grate the chocolate on a coarse grater.
  5. Beat the sour cream with a mixer with sugar and vanilla until it increases in volume and becomes fluffy.
  6. Next, pour cold gelatin into the sour cream mixture and beat again. Then add crackers, raisins, pieces of fruit (but just a little of the total) and mix.
  7. Place the components in the prepared form in layers: first lay out 1/3 of the sour cream mixture, sprinkle it with half the chocolate, then again part of the sour cream - chocolate - and the remaining sour cream.
  8. Place the form in the refrigerator for half an hour. Then take it out, arrange the remaining fruits and berries beautifully and fill with fruit jelly or the remaining gelatin.
  9. Place the mold in the cold again and leave for 3 hours.

With condensed milk

To prepare this recipe you need to prepare:

  • 200 g cookies (shortbread is best);
  • 300 ml cream (fat content not less than 33%);
  • a can of condensed milk;
  • 2 tbsp. frozen cherries (you can use any other berries, but they must be sufficiently sour);
  • 40 g dark chocolate;
  • 1 tbsp. l. gelatin.

Step-by-step cooking process

To prepare the cake:

  1. First you need to break the cookies into fairly large pieces. It is also worth removing cherries and condensed milk from the refrigerator.

  2. After this you need to prepare gelatin. To do this, it needs to be dissolved in 150 ml of water. If you want the cake to be a soft pink shade, then you can use not water, but the juice that formed after defrosting the berries. Some people use milk. In this case, the dessert, on the contrary, will be snow-white. Regardless of the liquid used, you need to wait until the gelatin dissolves. As a rule, this takes about 20 minutes.
  3. While the jelly is infusing, you need to remove the seeds from the cherries and wait until the berries are completely defrosted.
  4. The next step requires whipping the cream (it must be cold) so that its volume doubles.

  7. At the next stage, you need to place cling film on the bottom of a round bowl and put part of the mass into it. After this, lay out a layer of cherries and add the jelly mass again. This can be repeated several times until the cherry runs out. A few berries should be left to decorate the cake.

  9. The next step is to melt the chocolate. To do this, you also need to use a water bath so as not to bring the liquid to a boil. When the chocolate has melted, you need to pour it onto the cake. It can flow carelessly, creating the effect of smudges.

For dessert you will need:

  • 350 g medium fat sour cream;
  • 100 ml water;
  • a pinch of vanilla sugar.
  • 400 g marshmallows;

  • 2 tbsp. l. gelatin;
  • 3 tbsp. l. granulated sugar;
  • 300 g of berries and fruits (any combination can be used);
  • 150 g of cookies (cake can be prepared without them);
  • nuts and jam to decorate the cake (you can also use candied fruits or chocolate chips).

Step-by-step cooking process

To prepare the cake:

  1. First of all, you need to melt the gelatin in warm water and wait for it to swell.
  2. Next you need to cut the fruits and berries, and also break the cookies.
  3. At the next stage, you need to beat the sour cream, adding vanillin and sugar.
  4. Next, when the gelatin swells, you need to heat it in a water bath and carefully pour it into the cream prepared in the previous step. The mass must be constantly whipped.
  5. After this, you need to divide the marshmallows into plates or cut them into pieces. Place half of the resulting marshmallows on the bottom of the mold, and leave the other half for the next layer.
  6. The next step is to lay out some of the cookies and fill the layers with ½ cream. After this you need to lay out a layer of berries.
  7. Next, lay out the remaining marshmallows and cookies. Also at this stage you can add some ground nuts, jam, berries and any other ingredients at your discretion.

Ingredients:

  • 500 g ryazhenka (can be replaced with sour cream);
  • 300 g cottage cheese;
  • 150 g butter;
  • 400 g shortbread cookies;
  • 200 g sugar;
  • 500 g of fruit;
  • 6 tbsp. l. gelatin;
  • 100 g nuts for decoration (any).

Preparation:

  1. First prepare the base for the cake. To do this, melt the butter and add the cookies, ground into very fine crumbs, into it. It is most convenient to perform this operation with a combine, using a special grater attachment.
  2. You should get a thick plastic mass. Place it on the bottom of the mold, level it well and refrigerate for 1 hour.
  3. Prepare gelatin: soak for half an hour in cold water, heat and cool.
  4. Beat the cottage cheese with a blender until it forms a paste, add fermented baked milk and continue beating with the mixer. Add sugar little by little. Then pour in the cooled gelatin and stir.
  5. Prepare the fruit by cutting it into neat pieces and place it on the cookie base.
  6. Next, pour all the ingredients mixed with gelatin and refrigerate for 40 minutes.

Useful tips and tricks

When making your own jelly, the following tips will be useful:

  • If the cake will stand on the table for a long time before it is cut, you should not prepare jelly with gelatin. It melts too quickly. In this case, it is better to prepare jelly using agar-agar or purchase specialized confectionery jelly. It will keep its shape much longer.

  • If you want the jelly to have clearly visible berries and fruits, then it is recommended to use a light type of jelly. You can also reduce the amount of water used to prepare gelatin. If you reduce the volume of water by a third, the finished mass will be more transparent. Also, to obtain transparent jelly, you should not use juices or other liquids with any pigment. If you add a little sugar to gelatin with water and then heat the mixture in a water bath, the mass will also become more transparent.
  • You should not use small figures made from mastic to decorate jelly cakes. You also need to give up marzipan and protein creams. Such elements may leak.
