Classic sour cream: 5 simple homemade recipes

This appetizing, delicious and sweet dessert of Soviet children, like the classic manna, was considered a truly festive cake, especially in those years of scarcity when there was no surplus on the kitchen tables. Since all the ingredients for its preparation were available, that is why many mothers and grandmothers knew how to bake it at home.

The recipes for such a wonderful delicacy are quite simple and varied. After all, its main product, which is part of the dough and cream, is something else - like sour cream. And the classic version of the cakes are baked in two colors, with the addition of cocoa powder; in some versions they also include products such as nuts, poppy seeds and raisins.

So, in this article we will look at simple recipes for making classic sour cream at home, which you and your loved ones will definitely like! I also propose to consider recipes for very tasty and fluffy manna made with kefir.

Ingredients:

  • Sour cream - 1/2 cup
  • flour - 1 cup
  • sugar - 1 cup
  • chicken eggs - 2 pcs
  • soda - 1/2 teaspoon
  • vanillin - 1 sachet
  • coconut flakes - 2 tsp
  • syrup - 1 tbsp. l
  • apricot jam
  • salt - 1 pinch.

Cooking method:

Beat the eggs into a deep bowl, add salt, sugar and beat with a mixer until smooth.

Next, add sour cream and mix well.

To make the dough more tender and richer, you need to use richer sour cream.

Then add the sifted flour, a bag of vanillin, coconut flakes and add soda dissolved in 9% vinegar. Then mix everything thoroughly until smooth.

Transfer the resulting dough into a greased, in this case, silicone mold and place in an oven preheated to 180 degrees for 25-30 minutes until ready.

For impregnation, in a bowl, dilute one tablespoon of syrup to your taste in 100 ml of boiled water and pour it on top of the still warm pie.

Now cut the soaked cake lengthwise and coat it with a thin layer of apricot jam.

All that remains is to place the second part of the cake on top of the first, grease it with jam and sprinkle with coconut flakes.

This turned out to be a wonderful and very tasty pastry, try making it too.

Vanilla sour cream pie (video)

Probably the most difficult thing in preparing this pastry is grating the frozen butter.

Of course, to simplify this task, you can ask the male half to grate the oil; believe me, this will make the task much easier for the hostess. All other manipulations in the recipe are performed simply and quickly.

And don’t worry too much if you think that the filling for vanilla pastries is a little runny. It will thicken during cooking. So, let's begin.

Bon appetit!!!

Sour cream Tatar: a recipe for the perfect breakfast

  • Tatar sour cream
  • Smetannik in Tatar style
  • Sour cream with raisins in Tatar style
  • Tatar-style sour cream with poppy seeds

Everyone knows the golden rule of the daily diet: “Eat breakfast yourself, share lunch with a friend, give dinner to your enemy.”

But not everyone wants to have scrambled eggs or salad for breakfast.

It’s so nice to drink a cup of freshly brewed coffee or tea and treat yourself to something sweet... There is a great solution - Tatar pie with filling! Tender, moderately sweet sour cream on a thin dough will give you a feeling of fullness, and a healthy filling of sour cream and eggs will give you energy for the whole day.

Tatar sour cream

Here is a classic Tatar recipe - sour cream. Its delicate taste will conquer the sweet tooth the first time.

Ingredients

For the test:

  • milk - 200 milliliters
  • vegetable oil - a couple of tablespoons
  • 1 egg
  • teaspoon salt
  • sugar - 1-2 tablespoons
  • active dry yeast - teaspoon (about 5-6 grams)
  • quicklime soda - on the tip of a knife
  • flour - 300 grams

For filling:

  • sour cream - 500 grams
  • sugar - 6-7 tablespoons
  • eggs - 4 pieces

Cooking method:

From the indicated ingredients of the first list, knead the dough and leave for an hour at room temperature or in a warm water bath. While the dough is rising, beat (but only lightly) the eggs with sugar, add sour cream and stir - the filling is ready.

Roll out the matured dough into a circle 4-6 cm larger in diameter than your chosen baking dish. Grease the mold with a piece of butter and place the dough, forming sides. Pour the filling onto the base, bend the sides slightly inward.

Place the pie in a preheated oven for about half an hour at 200 degrees. That's it, a hearty and easy-to-prepare dessert is ready. Bon appetit!

Smetannik in Tatar style

To make a tender pie, you don't have to fuss with the dough yourself. This recipe suggests using frozen puff pastry or puff pastry dough purchased at the supermarket. It is very important to defrost the dough correctly: simply remove the packaging and leave it on the counter or on the bottom shelf of the refrigerator until completely warmed up.

Ingredients:

  • frozen puff pastry - 250 grams
  • sour cream - 300 grams
  • sugar - 4 tablespoons
  • egg - 3 pieces
  • fruits or berries (for decoration)

Cooking method:

Since this recipe is prepared using store-bought puff pastry, first prepare the filling: beat sour cream, eggs and sugar in a blender or using a mixer. Roll out the defrosted dough a little and place in the prepared pan. The sides must be at least 3 centimeters. Pour in the filling, use a knife to trim the edges and fold them in slightly.

Place the Tatar pie in a preheated oven and bake at 180 degrees for 15 minutes, let the top brown a little. Then cover the pan with foil and continue baking for another 20 minutes. The filling should be completely set and rise slightly.

Decorate the pie with fruits or berries as you wish. If you have sweet fruits, submerge them briefly in the half-cooked filling before covering with foil. It is better to simply place sour berries on top, otherwise they will become even more sour after cooking.

Bon appetit!

Sour cream with raisins in Tatar style

Add a few raisins to your favorite recipe - and here you have a new original dish. Sour cream turns out to be very harmonious in taste. It is best to use white varieties of raisins, and before cooking, steam the berries and roll them in flour.

Ingredients:

For the test:

  • 7 grams dry yeast
  • 250 milliliters milk
  • 70 grams melted butter
  • 45 grams of sugar
  • zest from half a lemon
  • 420 grams flour
  • a pinch of salt

For filling:

  • 500 grams of sour cream 25% fat
  • 6 tablespoons sugar (80 grams)
  • 4 eggs
  • 10 grams vanilla sugar
  • 70 grams of raisins

Cooking method

Dissolve the yeast in warm milk, combine all the bulk ingredients: flour, salt and sugar. Pour milk and yeast into this mixture and mix well. Add melted butter and zest from half a lemon. Knead the dough thoroughly for a couple of minutes - it should become soft and slightly sticky.

Turn the mixture out onto a floured work surface and form the dough into a ball. Grease a deep bowl with olive oil and transfer the mass into it, cover with film and leave it at room temperature for one and a half to two hours - let it double in volume. Then place the bowl of dough in the refrigerator for 8 hours.

3 hours before the start of the intended baking, remove the dough from the refrigerator and let it warm up.

The recipe has come to the second stage - preparing the filling for the pie. Pre-soak and rinse the poppy seeds. Mix sugar with eggs, add sour cream and raisins, mix thoroughly. Roll out the finished dough into a cake slightly larger than the diameter of the mold, lay it out and cut the edges at intervals of 2 centimeters.

Then bend every second “clove” slightly inward. Pour the filling onto the dough and bake at 180 degrees for about 30-40 minutes. Tatar pie is checked for readiness in this way: when lightly shaking, the center should sway.

Remove the sour cream from the oven and cool well, or best of all, leave it in the refrigerator overnight. Bon appetit!

For the dough, pour flour into a bowl, add baking powder, margarine (do not melt it, just grate it), sugar, sour cream or kefir. You should get a smooth soft dough. For vanilla sour cream souffle, thoroughly beat eggs and sugar, vanillin, sour cream using a mixer. Now that all the ingredients are ready, it’s time to assemble the pie.

Place the dough on the greased bottom of a springform pan, approximately 22-24 cm in diameter, forming low sides. You can cut them evenly and bend them inward in a checkerboard pattern. Then lay out the poppy seed filling and pour over the sour cream soufflé. Preheat the oven to 180 degrees and bake for approximately 45-50 minutes. Leave the sour cream in the mold to cool.

Tatar "Smetannik"

Tatar cuisine has its roots deep in history. Over the centuries, the cooking traditions and culinary habits of the indigenous population have been formed. Unique living conditions, nature, and surroundings have left their mark on the preparation of desserts.

Tatars pay attention to dough and baking; they love and know how to prepare a variety of desserts for tea. Thus, the Tatar “Smetannik” in its traditional variation is a thin layer of dough - shortbread or puff pastry - filled with sweetened sour cream and eggs. Other products are also added: raisins, poppy seeds, dried apricots and fresh fruits.

The prototype of such a Tatar dish can be considered the kystyby dish - a flatbread made from unleavened dough filled with porridge, and later - with crushed potatoes. Round pies (belish) were also stuffed with vegetables. Sweet fillings - cottage cheese, dried fruits - were used in pies (gubadiya).

Tatar “Smetannik” is, of course, a more modern dish: it does not use rendered lard (sometimes horse lard), as in ancient recipes. However, such a dessert will be a great addition to breakfast or tea with friends. Delicate taste and quick preparation - what a busy housewife needs.

Products for national Tatar dishes can be purchased at Bakhetla. Cooking time: approximately 1 hour. Tatar “Smetannik” refers to shortbread-type baked goods.

Cooking process

Let's knead the dough for "Smetannik":

  1. Beat the egg, adding sugar.
  2. Add dry ingredients: flour, salt, soda, yeast. Dry yeast does not need to be diluted before use; mix it directly with flour.
  3. Add oil.
  4. Mix everything into a thick, shiny dough. There should be a little bit of it.
  5. Leave it to brew for one hour in a warm place. You can place the bowl with the dough in another container with boiling water.

Prepare the filling:

  1. Beat the eggs until foamy.
  2. Add sugar little by little.
  3. Mix everything with sour cream. If the sour cream is runny, you can strain it through a sieve or beat it with one packet of a special thickener for cream/sour cream.

We prepare the filling for Tatar “Smetannik” No. 2 in almost the same way:

  1. Beat sour cream, eggs and sugar with a blender/mixer for about 5 minutes until the sugar is completely dissolved.
  2. You can add vanilla and cinnamon if you wish.

Assemble the pie:

  1. For Smetannik, use a round mold with sides.
  2. Roll out the risen dough into a thin layer, which will be 2-3 centimeters larger in diameter than the mold.
  3. Grease the mold with butter, carefully lay out the dough, forming sides.
  4. Pour the filling into the center and slightly fold the sides inward.
  5. The cake is baked in an oven preheated at 200 degrees for about half an hour. The dough bakes faster, watch when the filling hardens.

Recipe #2

  1. Use ready-made puff pastry. Defrost it, but not completely.
  2. Roll out into a circle slightly larger than the diameter of the baking dish.
  3. Place in an oiled mold and make the sides slightly higher than the mold (at least 3 centimeters).
  4. Pour in the sour cream filling. Pour into the center so that it spreads towards the sides of the cake.
  5. Smooth the surface with a spatula.
To prevent the filling from sticking to the spatula, moisten it with water before using.
  6. Bake the Smetannik pie at 180 degrees for about 15 minutes. Then, when the filling on top is already slightly browned, cover the product with foil and bake for another 20 minutes. The filling should increase in volume, cover with a thick crust and brown well.
  7. To decorate Smetannika, use non-watery berries or fruits.
Hard pears, strawberries, raspberries, blackberries, and peaches are best suited. Cut the sweet fruits and place them in the still unset filling 5–10 minutes before the end of cooking, as if drowning them a little. Sour berries can be lightly sprinkled with sugar, allowed to drain excess juice and placed on a fully prepared dessert.

Traditional recipe for Tatar sour cream: continued

The baking dish is first greased with butter, and then sprinkled with flour, then the rolled dough is laid out in it. It needs to sit in the mold in a warm place for it to rise.

Now to prepare the filling, eggs are beaten with sugar. Sour cream is added to this mixture, and everything is thoroughly mixed until smooth. When the filling is ready, it is poured into the mold with the dough. Small cuts are made along the edges of the dough with a knife to form petals. Every other petal bends into the middle of the shape.

The oven is heated to 190 degrees, and the cake is baked in it for 45 minutes. The dough should be browned. The cake should then be allowed to cool before removing it from the pan. It can be decorated with strawberries or raspberries. The dessert must cool, and only then can it be cut and placed on plates.

Homemade cakes turn out no worse than store-bought cakes, but there are pleasant moments associated with them, such as waiting for the fragrant cake to brown, then cool down and be enjoyed with a cup of tea.
