Many vegetables and spices go well with trout, so preparing something original and delicious is not difficult.
The most suitable spices are rosemary, lemon juice, basil, pepper, garlic, thyme and many others. The correctly selected composition of ingredients will give you an original, appetizing dish.
As for the vegetable component, there is also a huge choice. These can be tomatoes, bell peppers, potatoes, zucchini, onions, carrots and so on.
Finally, the main thing is the choice of fish: it should be fresh, without unpleasant odors, the meat should be without darkening and have an even red hue.
Step-by-step simple recipe “Family Dinner”
Trout in the oven with vegetables in a special garlic sauce is prepared quite quickly and easily, which is important given the modern fast pace of life. Below is a detailed step-by-step recipe with photos, from which you will learn how to prepare a healthy dish for you and your family. Set of ingredients (for 4 servings):
- Trout – 4 steaks;
- Potatoes – 6-7 tubers;
- Onion – 1 head;
- Carrots – 1 pc.;
- Cream – 250 ml;
- Garlic – 2 cloves;
- Flour – 1-2 tbsp. spoons;
- Butter and vegetable oil;
- Bay leaf – 1-2 pcs.;
- Salt, pepper mixture.
First, let's prepare garlic sauce, thanks to which the fish will acquire a unique taste. Melt 40-50 grams of butter in a saucepan; when it is completely dissolved, add chopped garlic. When a persistent garlic aroma appears, add a tablespoon of flour, mix thoroughly, and simmer over low heat for 3-4 minutes.
The final touch is to pour in the cream while constantly stirring the mixture. When the sauce begins to thicken, add 50 ml of warm boiled water, bay leaves, a mixture of peppers, and salt. Bring the mixture to a boil, stirring constantly, then remove from heat and set aside to cool.
Let's start preparing the remaining ingredients. Chop the peeled carrots and onions with a knife and simmer in a frying pan in a small amount of vegetable oil.
Cut the washed and peeled potatoes into thin slices, place in a baking dish (it is better to take one with a high side), greased with vegetable oil (as in the photo).
Place trout steaks on the potatoes, previously seasoned with salt and pepper to taste.
The next step is to distribute the fried vegetables evenly over the pieces of fish.
The finishing touch is to pour the cooled garlic sauce over the contents of the baking dish (according to the photo).

Trout in the oven with potatoes
At first I didn’t plan to cook trout, but in accordance with the day of the week, just in the Soviet way, I decided to think of something fishy, well, at least cook pink salmon. But while examining the display case with fish, I was surprised to discover that there was a promotion for the sale of trout!
It would have been a sin not to take advantage of this opportunity and not buy a fish. And immediately thoughts began to swirl in my head: what dishes exist from trout, how can I cook this trout, bake it in the oven or fry it, cook the fish with vegetables or cheese, or both, how long to cook and will it be tasty?
Thinking in this way and not leaving the store, I began to strain my memory and remember everyone who could help me choose a recipe. It’s good that my phone’s address book was swollen with phone numbers of specialists in various fields, among whom (hurray-hurray) were culinary experts.
And so, perched near some display case, I hastily write down a recipe called “trout baked with potatoes in the oven,” and already somewhere in the subconscious I understand what a wonderful dish I can taste today.
According to the chef, who kindly shared with me the recipe for his secret dish, he (or rather, she) came up with this composition on her own and does not prepare this delicious dish for her family every day. I'm lucky! So, I purchased the following ingredients from the supermarket:
- Trout fish 810 grams for 486 rubles (on promotion)
- Potatoes 700 gr.-25 rub.
- Carrots 2 pcs.-14 rub.
- Onions 2 pcs.-11 rub.
- Lemon 1 piece - 46 rub.
- Tomato 2 pcs.-38 rub.
- Hard cheese 200 gr. - 149 rub.
- Caucasian herbs Kotani-56 rub.
- Ground black pepper-32 RUR.
- Mayonnaise-44 rub.
- Green peas in a jar - 35 rubles.
- Corn jar - 46 rub.
In total, my expenses amounted to 982 rubles, which in general is a lot, but if you recalculate for one serving, you get 164 rubles, and this is not at all inexpensive. However, not everyone can eat six adult portions alone (at least at one time) and that means that I won’t have to eat dinner alone...Although, as an option, this dinner can be spread out over several days.
I knew I’d forget something! Dill...I forgot the dill for decoration, and, as luck would have it, there was no supply at home.
Red fish with cheese and tomatoes “royally”
Trout baked with vegetables in the oven under a cheese crust with spices will give you incredible pleasure. A very tender, juicy and appetizing dish, truly a “royal” pleasure. Grocery list:
- Trout fillet – 800 gr.;
- Onions – 2 pcs.;
- Tomatoes – 1-2 pcs.;
- Sweet bell pepper – 1 pc.;
- Hard cheese – 100-150 gr.;
- Sour cream – 150 ml;
- Salt, spices.
Rinse the fish fillets in cool water, dry with paper towels, then cut into small pieces.
Pour the chopped onion into a deep bowl, mix with sour cream, salt, and spices. Marinate the trout in the resulting mixture and refrigerate for 20-30 minutes.
While the fish is marinating, prepare the remaining ingredients. Remove the seeds and stalk of the bell pepper, cut into strips or half rings (at your discretion). Cut the tomatoes into thin rings.
Line a baking dish with foil or baking paper and grease with vegetable oil. Place the fish on the bottom and pour over the remaining marinade. Lay out the next layer of chopped vegetables, sprinkle with cheese, grated on a coarse grater. Place the container with the fish in an oven preheated to 180°C for 25-30 minutes.
Trout baked with vegetables in the oven according to this recipe invariably turns out tender, soft and aromatic. You can serve with chopped fresh parsley or dill.
Baked trout with potatoes and cheese step by step photo recipe
Ingredients:
- Fresh or frozen trout -700 gr.
- Onions - 2 pcs.
- Potatoes - 1 kg.
- Cheese - 200 gr.
- Mayonnaise - 200 gr.
- Sunflower oil - 50 gr.
- Lemon - 1 pc.
- Bunch of parsley - 1 piece
- Salt, black pepper, fish seasonings
To prepare this recipe, I used fresh, not frozen trout, as well as frozen fillet pieces of butterfish, which ended up in this dish only because I had them on hand. Don’t let the presence of the second fish bother you, let’s pretend that the dish is prepared from trout alone.
So, we will need either trout steaks (like mine) or trout fillets. The point is that you need to use parts of the fish without bones, and how you get these parts from the fish is up to you, the main thing is that the pieces are not very small.
We start cooking trout by peeling the potatoes, after which we cut one onion into not very thin half rings, and the second into rings. Once the vegetables are peeled, turn on the oven and let it preheat. And don’t forget to take out a baking sheet before turning on the oven (if you have one there), we will need it cold.
Sprinkle trout fillets or steaks on both sides with salt, pepper and fish seasonings, then squeeze a little lemon juice onto our fish. While the trout is marinating in this way, we look for a baking sheet and turn our attention to the peeled potatoes...
Pour the baking sheet with vegetable oil (a little! You just need to grease it!), and evenly spread the peeled potatoes onto it.
We evenly space the spaces between the peeled potatoes with onion rings, add a little salt and pepper, after which we put the baking sheet with the potatoes and onions into the preheated oven and let it stand there at a high temperature for 15-20 minutes. The essence of this procedure is that the potatoes are baked in the oven for a much longer period of time than is necessary for baking our tender trout, so I have provided such preliminary perversions...
Cut our marinated trout steaks in half and cut out the spinal bones from the middle. No need to remove the skin! If you have fillet, then just cut it into larger pieces...
After 15-20 minutes, the baking sheet with potatoes and onions in any case (even if you haven’t finished with the fish yet) needs to be removed from the oven, otherwise it will burn and there will be no “kin”!
On pre-baked potatoes (and in the intervals between potatoes), we place our pieces of fish in the center of the baking sheet, after which we sprinkle it all with chopped half rings of our second onion on top.
Coarsely chop a bunch of parsley (I recommend not to forget to leave a little at this point for garnishing the finished dish).

After that, sprinkle the entire baking sheet evenly with grated cheese (the cheese can be grated directly over the baking sheet), and evenly distribute the mayonnaise on top of the grated cheese. The process, although tedious, is necessary... this will make the cheese rind much softer and tastier after baking. As soon as we have finished spreading the mayonnaise, we place our baking sheet back in the oven...

After which the dish is packaged on flat plates, decorated with the remnants of a bunch of parsley and lemon rings, and quickly devoured hot by all the eaters watching the cooking process.
Diet recipe with broccoli
Trout prepared in this way turns out to be very light and low in calories (only 96 kcal per 100 grams of product). This fish will come in handy for those who follow a healthy diet. For preparation you need:
- Trout fillet – 400 gr.;
- Broccoli (frozen) – 350 gr.;
- Chicken egg – 3 pcs.;
- Milk – 100 ml;
- Flour – 1 tbsp. spoon;
- Parmesan – 100 gr.;
- Salt pepper.
Broccoli needs to be defrosted, but never do it in the microwave or by immersing it in hot water.
Cut the red fish into small square pieces. Place the trout and broccoli in a baking dish greased with a piece of butter.
Now you need to prepare the filling: beat the eggs in a bowl, then add the milk, flour, salt, pepper, and grated cheese. Pour the resulting mixture over the fish.
The dietary dish is prepared in the oven at t=180oC for approximately 35-40 minutes.
Red fish with mushrooms and tomatoes
A wonderful dish that can be prepared for both a gala dinner and a family dinner. Despite its simplicity, it looks quite appetizing and impressive, and the taste is excellent! List of ingredients:
- Trout steaks – 0.5 kg;
- Tomatoes – 3 pcs.;
- Fresh champignons – 200-250 gr.;
- Hard cheese – 100 grams;
- Onion – 1 head;
- Vegetable oil;
- Garlic – 2 cloves;
- Fresh herbs (for serving optional);
- Salt, spices.
Cut the peeled onions and champignons with a knife, fry in a small amount of vegetable oil in a frying pan.
The trout must be salted, rubbed with spices, and transferred to a baking container greased with oil.
Spread the fried onions and champignons on top of the fish; place the tomatoes, cut into thin rings, in the next layer. Sprinkle garlic, passed through a press, onto the tomatoes. If desired, you can grease everything with low-fat sour cream; it will give a soft, creamy taste to the dish.
It is necessary to bake trout with vegetables in the oven for half an hour at t=200C. The finished dish can be served garnished with chopped fresh herbs.
How to cook trout in the oven with potatoes
Okay, let's go with feeling, sense, arrangement... and step by step: Clean the fish and cut it into pieces with a sharp knife at the rate of one part of trout per 1 serving. I got six servings in perspective.
Rub the chopped fish with salt and pepper and place in a pan or other container of suitable size. Add 2 tablespoons of mayonnaise there, sprinkle with Kotanyi Caucasian herbs to your taste and mix everything thoroughly. Leave the fish to marinate for 30 minutes.
Now that we have plenty of time, wash and peel the potatoes, carrots, and onions. Cut the potatoes into circles, the onion into half rings, and cut the tomatoes into beautiful and even circles. Using a coarse grater, grate the cheese and carrots into a separate bowl.
I’ll be honest, of all the kitchen tools, my least favorite is the grater! But, so far in my household there is nothing to replace it with and there is no alternative, so the three of them gently and slowly.
It took me a little less time to prepare, clean and grate the ingredients than it took to marinate the trout, which means I still managed to play the guitar for about seven minutes.
I adore the guitar, and I always try to find time to play the instrument, especially while cooking, and I think that this (the food) only becomes tastier. Of course, I am far from a professional game, but such performance has a positive effect on the culinary process :)
And now, when all the components of the future delicacy are prepared, the most enjoyable part of culinary creativity begins, and I consider the entire process of cooking precisely as creativity - laying out food on a baking sheet. Oh, how nice it is to do this and imagine that you will soon be able to see the result of your creation.
So, generously grease a clean steel sheet with vegetable oil and place a layer of onion on its middle part. Next, carefully place a layer of carrots on top of the onion, and then lovingly place the trout on these two layers, evenly distributing the pieces. We take the tomatoes and place them beautifully on top of the fish.
And on the sides, on the remaining free space of the iron sheet, we place the potatoes, cut into slices, pre-slightly salted and mixed with mayonnaise in the amount of two tablespoons, and already on the potatoes and fish we place grated cheese, also mixed with mayonnaise.
And at this moment you still need to remember to add a little water so that all this beauty does not burn during baking. It's better to do this before loading it into the oven. This splendor looks something like the photo below:
At this time, I turn on the oven, set the temperature to 200° Celsius and warm it up for 5-7 minutes. Of course, you can turn on the oven a little earlier, and then you won’t have to wait, but I do this on purpose and try to guess why? That's right, in order to play the guitar a little...
In my deep conviction, it is best to learn to play an instrument in small periods of time at a time, but more often. There will be much more benefits from this. And the cooking process will be more enjoyable. And now the oven has warmed up, and you can place the sheet with the dinner preparation into the oven.

Now everyone can find something to do during this period of time. I won’t surprise you if I say that this time I’ll occupy myself with playing the guitar...
