Poultry goes well with almost all vegetables. Sweet peppers can be replaced with cauliflower or broccoli - then the vegetable side dish will become even more juicy and tender. Those who are on a diet can replace potatoes with boiled celery - then they can reduce the calorie content to a minimum, but at the same time the dish will remain very tasty and healthy. If you boil and grind the legumes in a blender, add a little olive oil and garlic to them, you get a spicy sauce that can be served with boiled chicken.
To boil chicken with vegetables, you will need the following products:
- chicken – 1 pc.;
- carrots – 2 pcs.;
- onion – 1 pc.;
- zucchini or zucchini (small size) – 1 pc.;
- pepper (sweet) – 1 pc.;
- potatoes (young, small) – 13-15 pcs.;
- garlic – 5-6 cloves;
- shallots – 6 pcs.;

- Pour cold water into the pan with food and place it on high heat.
- After the broth boils, reduce the heat and cook the chicken for another 60-90 minutes.
- Remove the finished chicken carcass from the pan, place it in a deep bowl and cover with foil.
- Spices are removed from the broth, fat is collected from the surface with a slotted spoon and brought to a boil again.
- Place prepared vegetables into a saucepan with boiling broth. If desired, the set of vegetables in the recipe can be replaced with others to suit your taste (cauliflower, broccoli, legumes, and so on).
- After the vegetables are ready, they are placed on a plate along with the chicken.
- Now in a saucepan or in a frying pan with thick walls you need to melt the butter and gradually pour flour into it, stirring the mass so that there are no lumps.
- Then add 500-600 ml of broth to the mixture of flour and butter, and when it boils, boil for another 2-4 minutes.
- You can add a pinch of tarragon (optional) to the bowl with the sauce and then pour the mixture over the chicken and vegetables.
To add heat and piquancy to boiled chicken with vegetables, you can prepare a classic white sauce that is suitable for all meat dishes. To do this, add 2 tsp to 100 g of fat sour cream. adjika, then add crushed garlic (2-3 cloves) and chopped parsley (2-3 sprigs). Salt should be added to the sauce very carefully, since adjika itself is quite salty.

Compound:
- chicken fillet – 2 pcs.;
- flour – 160 g;
- breadcrumbs – 160 g;
- egg – 1 pc.;
- lemon – 1 pc.;
- vegetable oil – 100 ml;
- seasonings, salt.
Cooking steps:
- Chicken fillet is divided into 2-3 plates.
- Sprinkle portions on both sides with salt and seasonings and sprinkle with a few drops of lemon juice. Allow the meat to marinate for 15 minutes.
- Wrap the blanks in film and lightly beat them.
- Beat the egg, prepare a container with flour and breadcrumbs.

Pepperonata with chicken - frying pan recipe
After trying the dish, you will discover a different side of Italian cuisine. This is not traditional pizza or pasta, remember - this is pepperonata.
You will need:
- Breast fillet – 500 gr.
- Flour - a large spoon.
- Tomato paste – 2 large spoons (or 400 grams of tomatoes in their own juice).
- Bulb.
- Bell pepper – 2 pcs. (different color).
- Garlic – 4 cloves.
- Black pepper, salt - to taste.
- Sunflower oil.
Preparation:
- Rinse the fillet, cut into 2x2 cm slices. Season with pepper, salt and stir.
- Pour flour into the bowl with meat and mix again.
- Heat oil in a frying pan. Fry the fillet for 5-7 minutes, then place on a plate.
- Crush the garlic cloves with a press. Cut the onion into half rings. Remove the seeds from the peppers and cut the pulp into strips.
- If you use tomatoes in juice, remove the skins from them, puree them in a blender, and turn them into puree.
- Add a drop of oil to the frying pan where the chicken was fried, add garlic and onions. Cook, stirring frequently, for about 4-5 minutes.
- Add pepper strips, cook for another 5 minutes.
- Place the reserved fried meat into the frying pan and add the tomato. Let it boil. If you use paste, dilute it with water.
- Reduce heat to low. Simmer with a quiet gurgle for 20-25 minutes.
Omelette with chicken meat
The secret of this recipe is that chicken meat is stewed together with onions in soy sauce.
Then the omelette acquires a piquant taste and becomes very juicy.

- sauce (soy) – 55 ml;
- sugar – 1.5-2 tbsp. l.;

- Onions are cut into thin half rings.
- Chicken fillet is cut into small cubes.
- Pour soy sauce into a hot frying pan and bring it to a boil. Then add sugar and onions to the sauce, simmer over low heat until the onions become soft (approximately 4-5 minutes).
- Now you can add chopped chicken fillet to the onion. Fry the meat on all sides until golden brown.
- Beat the eggs and then pour the resulting mass into the pan with the meat and onions. The dish is brought to readiness under the lid, over low heat.

Roast with vegetables
Roast chicken can be prepared with any available ingredients.

- potatoes – 450-500 g;
- onions – 2 pcs.;

- honey – 1.5-2 tbsp. l.;
- garlic – 2-3 cloves;
- adjika (spicy) – 1.5-2 tbsp. l.;
- fresh herbs and spices - to taste.
Step-by-step cooking process
Prepare the roast in the following order:
- Washed and dried meat is separated from the bones and cut into portions. Then fry it until golden brown in a frying pan with vegetable oil.
- The potatoes are cut into several parts, and the onions and carrots are cut into half rings.
- Then put the prepared vegetables in a frying pan, add a little salt and fry in vegetable oil for 10 minutes.
- Place fried vegetables and meat on a baking sheet, place peas on top and mix all the ingredients.
- Lastly, the dish is seasoned with a mixture of pepper, salt, honey and adjika.
- Place the pan in the oven for 25-30 minutes.
