  • bacon ̶ 4 slices
  • green apple ̶ 1 pc.
  • vegetable oil - 3 tbsp. l.
  • butter ̶ 50 gr.
  • tomato paste or ketchup ̶ 2 tbsp. l.
  • salt, pepper to taste

Preparation:

  1. Beat the poultry fillet moderately; it should not be very thin. Salt and pepper.
  2. Heat vegetable oil in a frying pan and fry the fillet on both sides until golden brown, and transfer to foil. Place bacon on top.
  3. Cut the apple into 4 parts and fry in butter.
  4. Place on bacon, top with tomato paste, drizzle with melted butter used to fry the apple, and wrap everything in foil.
  5. Bake in a hot oven. When the foil is inflated, cut it and immediately serve the dish.

Turkey baked in the oven in foil - a simple recipe

Any parts of turkey are suitable for cooking - drumsticks, wings, thighs. The meat is guaranteed to be incredibly juicy and soft.

You will need:

  • Legs – 2 pcs.
  • Garlic cloves – 4 pcs.
  • Large onion.
  • Soy sauce - 3 large spoons.
  • Sunflower oil – 2 large spoons.
  • Ginger powder - teaspoon.
  • Pepper, salt - to taste.

Step by step recipe:

Rinse the bird's legs and blot lightly with a paper towel.

Cut the garlic cloves into slices.

Add all the seasonings listed in the recipe - ginger, salt, pepper - to the bowl. Pour in soy sauce and oil. Stir the mixture well.

Cut the onion into half rings.

Take the leg, trim the skin a little with the tip of a knife, and wrap it up. Make several punctures in the meat and stuff it with garlic slices. Stuff the meat from below and from above.

Pour in the marinade (use about half). Pull the skin back and pour the sauce over the drumsticks again.

Place half of the chopped onion on a long sheet of foil. Place your leg on it.

Wrap the meat into an envelope. Do all the same manipulations with the second leg.

  • white wine - 3 tbsp. l.
  • sour cream for lubrication
  • salt to taste
  • cinnamon ̶ 1 tsp.
  • pepper ̶ 1/2 tsp.
  • sugar ̶ 1 tbsp. l.
  • breadcrumbs ̶ 1 tbsp.

Preparation:

  1. Put your favorite spices and seasonings in a bowl, add sour cream, mix everything. Rub this mixture all over the bird inside and out.
  2. Cut the apples into medium cubes.
  3. Rinse the prunes well in hot water and mash them a little with your hands.
  4. In a separate bowl, place chopped apples, prunes, crackers, cinnamon, sugar, add white wine and mix gently.
  5. Stuff the turkey with this mixture. The hole can be sewn shut or held together with wooden sticks.
  6. Place back down on a baking sheet, brush with sour cream.
  7. First brown the bird in the oven at 200 degrees, then reduce the temperature to 180 degrees.

  • Turkey fillet – 400 gr.
  • Mushrooms (champignons) – 150 gr.
  • Potatoes, small – 7-8 pcs.
  • Zucchini, not large.
  • Garlic – 5-6 cloves.
  • Cheese – 50 gr.
  • Sunflower oil – 2 tablespoons.
  • Soy sauce – 3 tablespoons.
  • Paprika - a small spoon.
  • Salt, pepper, green onions, parsley.

How to cook:

  1. Cut the poultry fillet into medium-sized pieces. Place in a bowl, add soy sauce and pepper. Mix with your hands and leave to marinate for 45-60 minutes.
  2. Peel the vegetables. Cut the potato tubers into 2-6 pieces, depending on size. Cut the garlic cloves into slices. Cut the zucchini into semicircles. Coarsely divide the champignons (into 2-4 parts).

I recommend replacing boiled pork with healthy poultry meat. It is no less simple to prepare, but the dish will be dietary and worthy of inclusion in a weight loss menu. For cooking, take poultry fillet; the thigh is ideal if you cut out the bone.

We take:

  • Poultry thigh fillet – 1 kg.
  • Garlic – 5-8 cloves.
  • Pepper, salt, any poultry seasonings.

Bake:

  1. Thaw the fillet, remove any excess (bone, skin, veins). Divide into 2 parts.
  2. Slice a few cloves of garlic. Grind some of the cloves into a paste using a grater.

  • honey ̶ 1/2 tbsp.
  • orange liqueur ̶ 1/3 tbsp.
  • lemon juice ̶ 1/3 tbsp.
  • mustard ̶ 2 tsp.

  • Whole turkey carcass.
  • Turkey liver – 100 gr.
  • Butter – 75 gr.
  • Smoked bacon – 50 gr.
  • Lemon.
  • Milk – 80 ml.
  • Wheat bread – 100 gr.
  • Eggs – 2 pcs.
  • Bulb.
  • Apple.
  • Almonds, raisins – 100 gr.
  • Sage, cumin, paprika - 5 g each.
  • Pepper, salt.

How to cook:

  1. Gut the bird carcass. Mix salt and pepper, rub thoroughly outside and inside.
  2. Cut the bacon into small pieces and heat it in a frying pan. Fry the chopped turkey liver in this fat, then add the diced onion. Fry until almost done.
  3. Cut white bread into cubes and dry slightly. Transfer to liver filling. Add raisins and chopped almonds.
  4. Finely chop the apples (preferably into cubes) and add to the filling. Season with sage, caraway seeds, and lemon juice (leave some of the juice for the carcass).
  5. Place the filling in the bird's belly, do not compact it, let it lie loosely.
  6. Pour paprika into the fat remaining from frying. Brush top of turkey and sprinkle with remaining lemon juice.
  7. Wrap the carcass in foil and place in the oven, preheated to 200 o C. Cook for 3 hours.
  8. 40 minutes before the signal, unwrap the foil and finish cooking.

Turkey drumstick stewed with vegetables in the oven

Turkey drumstick in the oven prepared according to this recipe is a truly exquisite dish, with tender juicy meat and a crispy crust. The drumstick can also be cooked in foil or in a baking sleeve.

Ingredients:

  • turkey drumstick - 2 pcs.
  • potatoes ̶ 6 pcs.
  • tomato - 2 pcs.
  • onion ̶ 2 pcs.
  • zucchini ̶ 1 pc.
  • bell pepper ̶ 1 pc.
  • carrots ̶ 1 pc.
  • salt to taste
  • ground black pepper ̶ 1/2 tsp.
  • butter ̶ 50 gr.
  • olive oil ̶ 1 tbsp. l.
  • poultry seasoning

Preparation:

First prepare the marinade. Place melted butter in a bowl and all your favorite poultry spices. Mix everything.

Finely chop the onion into cubes and add to the seasonings.

Take the drumstick. In order for the marinade to saturate the meat well, the skin must be carefully pulled off, try not to damage it. Trim the film and pull the skin off the shin.

Prick the drumstick meat with a knife or make small cuts. Rub the prepared marinade onto the leg, pressing the marinade into the cuts.

Then pull the skin back over the shin and rub it over the top.

Spread the remaining marinade generously onto the meat and leave to marinate for 1 hour.

Our drumstick is ready for baking. It can be baked this way. A good side dish for this drumstick is mashed potatoes and sour cream sauce.

Today we are preparing drumsticks with vegetables. Chop all the vegetables. Cut the zucchini, potatoes and carrots into rings, the onion into half rings, and the tomato into quarters. Salt, pepper, add olive oil.

Grease a baking dish with vegetable oil, place the turkey drumstick and place in the oven for 40 minutes at 180 degrees. As it bakes, baste the drumstick with the juices released and turn it over.

As one chef I know said, if you bake a whole bird it will be great, but if you stuff it with nuts and fruits, then it will be a holiday. So, let's cook a big, tasty, juicy, festive turkey in the oven.

It is very convenient to bake a whole bird in a special roasting bag or in foil. Or you can just put it in a deep oven tray. It can be stuffed with oranges or apples.

Ingredients:

  • turkey - 5-6 kg.
  • walnuts – 500
  • apple - 5 pcs.
  • onion - 2 pcs.
  • sour cream - 1/2 tbsp.
  • pomegranate sauce - 200 gr.
  • spices
  • salt - 1/2 tbsp.
  • sugar - 1/2 tbsp.

Recipe:

First you need to choose the right bird. We go to the market and try to buy a fresh, home-made, steamed carcass. If you don’t have one, then buy chilled poultry. Preferably medium size 5 - 6 kilograms.

Homemade turkey baked in the oven turns out very tasty, juicy and attractive in appearance. It is better to bake it whole.

The carcass should be meaty, the breast and legs should be thick. The skin should be light, without dark spots, with a yellowish tint. Check the freshness by pressing your finger on the carcass; if the dent is quickly restored, then the meat is fresh.

In order for us to get a juicy turkey, it needs to be marinated. To prepare the marinade, take salt, sugar, spices. Dissolve in water. Take a large container, place the bird, and pour in enough brine. Leave for 10-12 hours. This soaking will preserve all the flavor and juice of the meat during its cooking.

While our bird is marinating, it's time to prepare the filling. Since we are preparing the dish for guests for the holiday, we will choose a tasty filling. We will cook apples in walnut and pomegranate sauce.

Peel the walnuts and grind them using a rolling pin or blender. Cut the onion into small cubes, fry in sunflower oil until golden brown.

Take a sunny ripe apple, cut it into slices, and fry it in boiling butter with sugar, add cinnamon, cloves, and black pepper. This combination gives an unimaginable Persian aroma.

Turkey stuffed with mushrooms and vegetables

You will need:

  • Carcass – 5 kg.
  • Cauliflower - head.
  • Porcini mushrooms (or champignons) – 250 gr.
  • Celery stalks – 3 pcs.
  • Bulb.
  • Butter – 75 gr.
  • Broth - glass.
  • Salt, parsley.

Preparation:

  1. Cut porcini mushrooms into pieces, boil, discard. If you take champignons, skip this procedure, just chop them into plates.
  2. Boil the cauliflower until tender, breaking it into florets.
  3. Combine cabbage with mushrooms in a bowl, add finely chopped onion and parsley. Add salt and mix well.
  4. Rub the turkey carcass with salt and stuff with the mushroom mixture. Secure the bird's belly securely with toothpicks.
  5. Place the stuffed carcass in the mold, coat the top with oil. Cover the forta with foil. Do not press the foil against the turkey; let it lie loose so air can circulate.
  6. Bake the meat for 1-1.5 hours. Periodically lift the foil and pour in the extracted juice.
  7. After the timer signal, remove the foil completely. Continue cooking for at least another half hour. Add a little more time if necessary.

Cranberry sauce for turkey


Compound:

  • cranberries (fresh or frozen) – 0.5 kg;
  • sugar – 0.2 kg;
  • orange juice – 100 ml;
  • water – 100 ml;
  • balsamic vinegar – 20 ml.

Cooking method:

  • Sort the cranberries, rinse, and let them dry. Frozen berries do not require preliminary preparation.
  • Squeeze the juice out of the orange. Store-bought will not work, as it is often made with the addition of sugar, citric acid and other ingredients.
  • Place the berries in a saucepan, fill them with water, and add sugar. Stir and place on low heat. Cook the cranberries until they begin to burst.
  • Remove the saucepan from the stove and puree its contents using a blender.
  • Add orange juice and balsamic vinegar to cranberry puree.
  • Put the sauce on the fire. Cook it over low heat, stirring with a wooden spatula, until it thickens.

Turkey with potatoes in French

This is an exquisite second course that can be prepared for both everyday lunch and festive dinner. It's quick and easy to prepare.

Ingredients:


  • turkey fillet ̶ 1 kg.
  • potatoes ̶ 8 pcs.
  • tomato - 2 pcs.
  • red onion - 2 pcs.
  • parmesan ̶ 200 gr.
  • sour cream ̶ 100 gr.
  • salt to taste
  • ground black pepper ̶ 1/2 tsp.
  • vegetable oil - 2 tbsp. l.
  • seasoning for poultry (thyme, rosemary, thyme, basil).

Preparation:

  1. Cut the turkey fillet into small pieces, pound lightly on both sides. Pepper and salt the meat, add your favorite seasonings. Heat vegetable oil in a frying pan and lightly fry the fillet on both sides.
  2. Peel the onion and cut into thin rings. Pour 1/2 cup water into a bowl, add 1/2 teaspoon salt and sugar, add vinegar. Place chopped onion in this marinade for 15 minutes, then gently squeeze it out.
  3. Cut the potatoes into slices 1 centimeter thick. Season with salt and pepper, and if desired, add garlic squeezed through a press.
  4. Cut the tomato into slices 1 centimeter thick.
  5. Grate the cheese on a coarse grater.
  6. Take a baking sheet with high sides, grease with vegetable oil, and lay out in layers: fried meat, pickled onions, potatoes, tomatoes. Grease everything generously with sour cream, cover the top with baking paper.

  1. Mix seasonings in a bowl, add pepper and salt. Pour in the oil and add the mustard.
  2. Transfer marinade to bowl with steaks. Mix thoroughly with your hands, spreading throughout the meat. Keep on the refrigerator shelf for at least an hour.
  3. Place the preparations on a baking sheet, sprinkle with chopped parsley. Cook at 180-190 o C, turning on the timer for 1.5 hours.

According to tradition, a whole bird is prepared for the New Year's table. Ideally, the carcass should be simply chilled, not frozen. If you can’t find one, defrost the turkey without haste: in the refrigerator or at room temperature.

The larger the turkey, the longer it needs to be baked. If many guests are invited to celebrate the New Year, then choose a bird weighing at least 5 kg (at the rate of about 300-500 g of meat per person). Please note that the turkey will “cook” a little during the cooking process.

When choosing, pay attention to the skin: it should be light, without spots, with a beautiful yellowish tint.

Delicious turkey with nut sauce

Take:

  • Turkey fillet – 500 gr.
  • Sour cream – 200 ml.
  • A handful of walnut kernels.
  • Lemon – ½ part.
  • Garlic - a couple of cloves.
  • Pepper, salt.

Cooking:

  1. Grind the nut kernels in any way, add finely chopped garlic.
  2. Add sour cream and lemon juice. Stir the mixture well.
  3. Cut the fillet into pieces and place on a sheet of foil placed in a heat-resistant dish. Pour in nut sauce. Cover the pan with foil and seal the edges.
  4. Bake the dish at 200 o C for 30-40 minutes. if you want a beautiful crust, then open the foil, then keep the dish in the oven a little longer.
