Chopped chicken cutlets
There are two stages of cooking: marinating the minced meat and frying the cutlets.

Ingredients:
For 5-6 people (about 20 pcs)
- 3 chicken breasts (750 g)
- 250g onions
- 2 raw eggs
- 3 tbsp. flour
- 1 tbsp. vinegar 9%
- 1 tsp with a little top of salt
- 1 tsp mustard
- 0.4 tsp freshly ground black pepper
- 2 tbsp. refined vegetable oil (for marinating meat)
- about 8 tbsp. refined vegetable oil (for frying)
Recipe:
- Finely chop the onion. It is very convenient to cut it on a shredder.
- Wash the chicken fillet, cut off any remaining bones, veins and fat. Cut the chicken breasts into 1 cm cubes; to do this, cut the fillets in half lengthwise, then each half lengthwise into strips and crosswise into cubes.
- Combine meat and onion.
- Add 2 tbsp. oil and 1 tsp. mustard.
- Add 1 tsp. with a little top of salt and 1 tbsp. vinegar. Spice up.
- Mix well.
- Cover with a lid and put in the refrigerator to marinate for at least 2 hours; it’s convenient to marinate in the evening to fry the cutlets tomorrow.
- Add eggs and flour to the marinated minced meat.
- Mix well. You will get a viscous mass.
- Heat a frying pan thoroughly with 2-3 tbsp. vegetable oil. Scoop the minced chicken with a tablespoon and place it in a hot frying pan. Fry over medium heat without a lid for 2-3 minutes on one side.
- Turn the cutlets over and cook for a couple more minutes on the other side until browned. Fry without a lid.
How to replace starch in cutlets?
First, it’s worth figuring out why you need to add this ingredient to the minced meat. The fact is that minced chicken has a liquid consistency and will spread in a frying pan, like pancake batter. To prevent this from happening, you need to connect all the components of the minced meat together. Chicken cutlets with starch do not spread or smear, because starch is a natural glue that perfectly binds fibers together.
Starch is also added to regular meat cutlets to make them fluffy, fried, but juicy. How can you replace starch if you simply don’t have it at home, but the minced cutlet is already ready?
