  • cottage cheese - 200 g
  • sour cream - 2 tbsp. l.
  • eggs - 2 pcs.
  • butter - 20 g
  • flour - 180 g
  • sugar - 180 g
  • soda - 1/2 tsp.
  • salt - 1/3 tsp.
  • raisins – 50 g

Cooking method:

  1. First, pour hot water over the raisins to swell them a little.
  2. Melt 20 g of butter and leave to cool.
  3. Add cottage cheese to a bowl and mash it with a fork so that there are no lumps. Break 2 eggs into it, add cooled butter, sugar, salt.
  4. Mix everything and add another 2 tbsp. l. sour cream and mix again. Also add soda slaked with citric acid and water. Then add flour and knead the dough with a spoon. The dough will be a little thicker than for pancakes.
  5. Sprinkle the raisins with flour and stir until they stick together and are evenly distributed in the dough. Place raisins in the dough and stir.
  6. Grease silicone baking molds with vegetable oil and fill them halfway with dough.
  7. Place the curd cake in silicone molds in the oven and bake for 30-40 minutes at 180 degrees C.

Amazing taste and a simple recipe - this is a curd-lemon dessert. To prepare this pie you will need:

  • one tablespoon of butter;
  • 200 grams of sugar;
  • 400 grams of cottage cheese of any fat content;
  • 4 eggs;
  • 1 lemon;
  • 450 grams of flour.

Step-by-step cooking instructions:

  • In a large bowl, combine butter and half a cup of sugar. Grind the sugar and butter well. Add cottage cheese and stir until smooth.
  • Cut one lemon and grind in a blender.
  • Combine lemon puree with curd mass and mix.
  • In another bowl, beat eggs with half a glass of sugar with a mixer.
  • Combine all ingredients.
  • Add yeast to the dough and place in a warm place for 15 minutes.
  • Gently add flour to the risen dough and mix.
  • Grease the baking pan well with oil and transfer the dough into the pan.

Products needed:

  • flour - 200 g
  • soda - 1 tsp. with top
  • cottage cheese - 250 g
  • sugar - 180 g

  • juice and zest of 1 large lemon

Procedure:

  1. Take a baking dish with a hole in the middle. Grease the inside of the pan with butter and sprinkle with breadcrumbs. Or sprinkle with semolina or a little flour.
  2. Remove the zest from the lemon using a grater and squeeze out the juice. Only remove the yellow part of the zest; you don’t need the white part, otherwise the baked goods will taste bitter.
  3. Sift flour mixed with soda into a separate cup. Then lemon juice will extinguish this soda.
  4. Place the prepared cottage cheese in another bowl, add sugar, eggs and mix thoroughly with a whisk. You can use a mixer for mixing. Add 1 tbsp here. l. butter, which has slightly melted at room temperature and become soft.
  5. Add lemon juice and zest to all ingredients. And mix again very thoroughly.
  6. But now we need to act very quickly. Add sifted flour and soda to the mixture and stir everything quickly. But you don’t need to stir for a long time, since the soda will interact with the lemon juice and raise the dough. Still, it should rise in the oven.
  7. Stir quickly and immediately transfer the dough into the mold. Place the pan with the dough in the oven for 20-30 minutes and bake at 180 degrees C.
  8. In this case, the curd cake was baked for only 20 minutes. It will be very good when the form still stands in the oven with the door open for 10 minutes.
  9. Check the baked goods for doneness with a wooden toothpick; they should be dry. Cover the top of the pan with a plate and turn it over; the baked goods will easily fall out of the pan. The result was a beautiful curd cake with the taste and color of lemon.
  10. When the baked goods have cooled, you can decorate the top with caramel.

  • Sugar (200 grams)
  • Chicken eggs (2 pieces)
  • Butter (120 grams)

Cooking step by step:

  1. The recipe for cottage cheese muffins, which we will prepare in the oven, includes the following ingredients: cottage cheese (I have 3% fat content), wheat flour (preferably premium, but this is not important), butter, medium-sized chicken eggs, granulated sugar, a pinch of vanillin (or a teaspoon of vanilla sugar), as well as baking soda. By the way, if you wish, you can add citrus zest, a little aromatic alcohol, raisins or other dried fruits to the dough.
  2. Since we will prepare the dough for cottage cheese muffins very quickly, we immediately turn on the oven to warm up (180 degrees). Break two chicken eggs into a suitable bowl and add 200 grams of sugar with a pinch of vanillin. The amount of sugar can be reduced if desired (by 50 grams), but in my family’s opinion, the baked goods turned out not cloying and well-balanced.
  3. Beat the eggs with sugar with a whisk or mixer until foamy and the sweet crystals dissolve, then add soft butter, which must be removed from the refrigerator in advance.
  4. Once again, beat everything a little (or mix vigorously) and add the cottage cheese. Choose any fat content that suits you best. The main thing is that the cottage cheese is not paste-like, otherwise you will have to recalculate the amount of flour.
  5. Mix everything and add premium wheat flour, mixed with baking soda and sifted.
  6. There is no need to stir the muffin dough for a long time until it is perfectly homogeneous, otherwise the finished baked goods will turn out dense and not very airy. It turns out quite thick, but at the same time soft.
  7. Place the muffin batter into a suitable baking pan. The molds can be greased with any confectionery fat or paper capsules can be inserted. The most important thing is to not fill them more than half full, as the cupcakes will rise well during the baking process! It is very important.
  8. By the way, it’s very convenient to spread the dough with an ice cream scoop - you get not only neat balls, but also the same size.

    4. Place the cottage cheese into the egg mixture and mix everything well. If you don’t like grains in baked goods, you can rub the cottage cheese through a sieve or blender, or put it through a meat grinder. This recipe turns out to be both delicious, so I thought that I probably shouldn’t make any unnecessary movements, but just quickly mix everything one by one.
    5. Next comes flour. I always sift the flour. My mother taught me, now I can’t do it any other way. I lightly mix the sifted, oxygenated flour with baking powder. At this stage, you can add vanillin. Gradually add flour to the curd dough, and mix the mass well with a spoon.
    6. The cake batter is ready, you can preheat the oven to 180 degrees. Meanwhile, distribute the dough among the molds. This time I decided to take these beautiful shapes. They are small, convenient, and my kids really like the heart-shaped baked goods. But since the dough still didn’t fit, I used my old metal molds. They definitely need to be lubricated.
    7. Place the molds in the oven and bake at 180 degrees for 30-40 minutes. Again, depending on what shape you have in terms of volume. Watch the baking and check for doneness with a match.
    8. The cupcakes are ready, it's time to take them out of the oven and let them cool a little. Then remove from the molds and decorate with berries or powdered sugar. Such cottage cheese muffins do not last long in our country. They get eaten very quickly!
