The maximum fluffiness of the pancakes can be achieved if you cook them with yeast, which, having fermented, when frying, will begin to “puff up” the dough and create the effect of air bubbles bursting inside. Lush pancakes with cottage cheese and kefir
Every housewife wants to make pancakes airy; many try to do something of their own to get a fluffy and tasty dough. For example, some people put cottage cheese and kefir in it.
It is thanks to kefir that our pancakes turn out so light, to some extent they look like cottage cheese. You need to make the dough similar to sour cream; it will be porous and will not spread when frying.
To enhance the aroma, you can add vanillin or citruses.
What you will need to prepare tender kefir pancakes:
- kefir 1 tbsp.
- egg 2 pcs.
- cottage cheese 200 g.
- flour 8-9 tbsp.
- soda 5 g.
- sugar 80 g.
- tangerine peels 5 g.
- refined oil.
- salt on the tip of a knife.
The process of making cottage cheese pancakes:
- Pour the eggs into a container, add sugar and salt.
- Using a mixer, beat everything until foamy.
- Pour the cottage cheese into a separate container.
- Add kefir to it and mix everything.
- Combine the eggs with the curd mass, sugar and mix.
- Grind the tangerine peels, put them in flour, then add soda. Pour the contents of the container into the curd mass.
- Now you need to knead the dough. See for yourself, because the amount of flour is approximate and it may not be enough.
- Let the dough rest for about 30 minutes. It will become airy and filled with air. Then you should not stir it, otherwise the dough will fall again.
- Fill the frying pan with refined oil and heat it well. Try to pour oil in moderation, otherwise the pancakes will absorb a lot of fat. Place a tablespoon of dough into the pan. Personally, I fry 4 things at a time; I can’t fit any more. During the frying process, the dough will rise a little more.
- Keep the heat low and don't forget to cover with a lid. As soon as one side becomes golden brown, start frying the other.
- After frying, place them on a paper towel to remove excess fat.
- Place it on the table. Pair with pancakes with jam or honey. Bon appetit!
