  • 1 kg (7-8 cups) wheat flour
  • 1 teaspoon salt
  • 2 cups poppy seeds
  • milk for soaking
  • 4 tablespoons sugar
  • 4 tablespoons honey
  • 1/2 cup raisins
  • 4 tablespoons walnuts, chopped
  • 50 g butter at room temperature
  • 1 protein
  • 1 egg yolk
  • 1 tablespoon water for covering

Preparation:

  • Dissolve the yeast in warmed milk, add two tablespoons of sugar and two cups of flour. Mix.
  • Cover with film and leave warm for 35-40 minutes, meanwhile stir several times.
  • Add margarine, eggs, sugar, salt and remaining flour. Knead the dough - it should be soft and flexible - knead for 7-8 minutes. Cover with foil and leave to rise again.
  • In the meantime, prepare the filling. Pour the poppy seeds into a saucepan and add enough milk to cover the poppy seeds. Cook over low heat for 15-20 minutes. Strain and blend the poppy seeds in a blender. Add honey, sugar, raisins, nuts, butter and whipped cream with egg whites, mix well.
  • When the dough has risen, divide it into three parts. Each one is laid out 25 cm wide. Spread the filling, leaving 2 cm from the edge. Roll tightly into a log.
  • The roll is cut into pieces 3-4 cm thick. Place the cut side on a greased baking sheet and leave for 20 minutes.
  • Preheat the oven to 200 degrees C. Bake for 20-25 minutes.

How to make buns with sugar

We start preparing buns, like other baked goods, with dough. The dough for buns is very simple to prepare, and the kneading process is practically no different from other yeast baked goods. These yeast dough buns are beautiful sweet buns that are very easy to prepare if you have a good recipe with a photo in front of you. I immediately make the dough, namely, pour warm milk into a deep bowl, add yeast, 4 tablespoons of sugar and 3 tablespoons of flour.

After which, I mix the added ingredients with milk. It is very important that the yeast dissolves in the milk and there are no lumps left. The yeast must be fresh as its quality can affect the final result of your baked goods. Now I cover the dough with a towel and leave it in a warm place for 30 minutes until a foam cap forms on it.

When the foam has already appeared, I beat the egg into it, pour in all the vegetable oil and half the melted butter. Next, I mix and start adding flour to knead the dough.

You don't need to add all the flour at once, because it will be difficult to knead the dough with your hands. It’s easier to add it a couple of tablespoons at a time and knead. You can also knead it in a bread machine or using a mixer, in which case we add all the necessary flour at once. The dough should be soft and elastic, and not stick to your hands. This is how you get delicious buns from yeast dough.

Now I leave the dough in a warm place, after covering it with a towel. First, it fits within an hour, then I press it down a little with my hand, and then leave it for another hour so that it increases in size again.

I sprinkle a silicone mat or other work surface with flour and place the dough on it, which I cut into two equal parts. I cut each of these parts into 4 more approximately equal parts. In total you will get 8 sweet buns.

Next, I take a piece of dough and, using a rolling pin, roll it out into a long oval. This is necessary so that the bun has many layers.

Since I have cinnamon buns made from yeast dough, I pour the remaining sugar into a separate container, add cinnamon to it and mix. The bun filling is ready for further use.

To make the yeast dough buns as sweet as in the photo, I grease the dough a little with the melted butter that is left and sprinkle it with a mixture of sugar and cinnamon.

Now I want to show you how to make buns, or rather, how to roll them correctly. I roll the prepared dough into a tube. I roll it not with the long side, but with the short one, this way I get more layers in the bun.

I connect the ends of the tube together, securing the two edges with my fingers.

Next, using kitchen scissors, I cut the folded dough in the center, but without cutting a little to the end. Then I bend the two cut edges from the center to the sides, and you get these heart buns with sugar.

As can be seen in the recipe, I place the buns with sugar on a baking sheet lined with parchment so that they do not stick. If there is no parchment, I simply sprinkle the baking sheet with a small amount of flour. I place the buns at a distance from each other, since during the baking process they will increase in size.

Be sure to let them cool a little, as eating hot baked goods is harmful to the stomach. Sweet buns made from yeast dough are ready, and I really hope that you liked my recipe with detailed photos and will become one of your favorites.
