Ingredients:

broccoli - 200 g champignons - 5-7 pcs. potatoes - 1–2 pcs. processed cheese - 2 pcs. carrots - 1 pc. salt, vegetable oil for frying

Preparation:

Cut the champignons into slices and fry them for 5–10 minutes.

Grate the carrots and fry them.

Divide the broccoli into florets.

Cut the potatoes into cubes.

Mushroom soup with broccoli can be made using several unique recipes. Next, we propose to consider the recipe for preparing two of the most popular soups: puree soup from broccoli and champignons and classic cheese soup with mushrooms.

Recipe 1

To prepare the puree soup we will need:

  • broccoli - 1 small fork;
  • water – 1 liter;
  • potatoes – 3 – 4 medium tubers;
  • processed cheese – 1 pc.;
  • fresh mushrooms (champignons) – 400 g;
  • onion – 1 pc.;
  • salt;
  • parsley – 10 – 15 g;
  • pepper;
  • butter (butter) – 20 g.

Preparation:

  1. Pour boiling water over broccoli.
  2. Peel the potatoes and boil until tender.
  3. Finely chop the champignons.
  4. Chop the onion, fry until golden brown in butter, then add mushrooms to it and sauté over low heat for another 5 minutes.
  5. Grate the processed cheese on a coarse grater.
  6. Place broccoli and boiled potatoes in a blender bowl, add 250 ml of water, and chop.
  7. Boil 750 ml of water, then put our vegetables in it, bring everything to a boil.

  9. Cook the soup for another 5 minutes, then turn it off.

  • broccoli cabbage – 400 g;
  • champignons – 250 g;
  • carrots – 1 pc.,
  • onion – 1 pc.;
  • potatoes - 4 medium tubers;
  • processed cheese – 2 pcs.;
  • pepper;
  • crackers – 150 g;
  • salt;
  • olive oil - a little for frying.

Preparation:

  1. Peel the potatoes and cut them into small cubes.
  2. Separate the broccoli into florets and boil in water for 3 – 5 minutes.
  3. Cut the mushrooms into strips.
  4. Chop the onion.
  5. Grate carrots and cheese.
  6. Fry mushrooms and onions in olive oil.
  7. Then boil water, add potatoes, cook for 10 - 15 minutes.
  8. After that, add mushrooms, all the vegetables, and processed cheese.
  9. Bring to a boil, cook everything together for 5 minutes.
  10. Then you need to turn off the soup and give it a little time to brew.
  11. It should be served with crackers, first sprinkled with parsley.
