Good afternoon, dear friends and readers of my blog! Today we will continue to prepare vegetable snacks with you. The first recipes we were introduced to when starting our vegetable series were radish salads. It's the tomatoes' turn.
I like most to prepare various dishes from large meaty and sugary varieties of tomatoes, such as “Ox Heart”, “Crimson Giant”, “Pink Mikado”. Their large fruits sometimes do not fit in one hand! But you can use any tomatoes you like.
My sister, for example, prefers to use small cherry fruits and cream in salads. The dishes turn out more beautiful, but, it seems to me, not as tasty, since the taste of small tomatoes is not so pronounced, and most varieties lack sweetness. Our recipes will use both large-fruited varieties and cherry tomatoes.
And the most important thing is that preparing such snacks takes no more than 10-15 minutes.
With cucumbers and melted cheese
This appetizing and incredibly tasty dish consists of products that do not require heat treatment. That’s why it’s incredibly easy and quick to prepare. To feed it to your family, you will definitely need:
- 150 g processed smoked cheese.
- 100 g mayonnaise.
- 300 g tomatoes.
- 75 g cucumbers.
- 1 onion.
- Salt, fresh herbs and ground pepper.
Any teenager can easily prepare this delicious salad of tomatoes, onions and melted cheese. Cucumbers and tomatoes are washed in running water, cut into cubes and placed in a bowl. At the next stage, the vegetables are supplemented with chopped onions, pieces of cheese, salt and pepper, and then seasoned with mayonnaise, mixed carefully and sprinkled with herbs.
Salad with tomatoes, chickpeas, avocado and pomegranate

Ingredients
- ¼ red onion;
- ¼ bunch of parsley;
- 250 g cherry tomatoes;
- 2 ripe avocados;
- 1 cucumber;
- ½ pomegranate;
- 250 g canned or boiled chickpeas;
- 3 tablespoons olive oil;
- 3 tablespoons lemon juice;
- 1 clove of garlic;
- salt - to taste;
- ground black pepper - to taste.
Preparation
Cut the onion into feathers and chop the parsley. Cut the tomatoes into quarters. Cut the avocado into slices and the cucumber into slices. Place these ingredients in a salad bowl, add pomegranate seeds and chickpeas.
Mix oil, lemon juice, chopped garlic, salt and ground pepper. Pour the dressing over the salad and mix thoroughly.
With garlic and mozzarella
This moderately spicy dish will not go unnoticed by lovers of spicy food. To treat your family to a fragrant and incredibly tasty salad with red tomatoes, you will need:
- 6 medium sized tomatoes.
- 3 cloves of garlic.
- 1 pack of mozzarella.
- 1 tsp. Provençal herbs.
- Salt, fresh basil, olive oil and a mixture of peppers.
Thoroughly washed tomatoes are cut into thin slices and placed on a plate, alternating with slices of mozzarella. The whole thing is topped with a sauce made from crushed garlic, salt, spices, basil and a tablespoon of olive oil, and then sprinkled with dried Provençal herbs.
With eggs and apples
This interesting, vitamin-rich and very tasty tomato salad has an extraordinary aroma. Thanks to the presence of eggs, it turns out to be quite filling and, if desired, can replace a full light dinner. To prepare it for yourself and your household, you will need:
- 6 tomatoes.
- 2 apples.
- 2 hard-boiled eggs.
- 1 onion.
- 1 tbsp. l. fresh lemon juice.
- 3 tbsp. l. any vegetable oil.
- Salt, ground pepper, water, sugar, vinegar and herbs.
The peeled eggs are chopped into small cubes and placed in a deep bowl. Apple slices and tomato slices are also added there. At the next stage, all this is supplemented with onion half rings, previously pickled in a mixture of vinegar, sugar and water. The finished salad is salted, peppered, sprinkled with lemon juice and sprinkled with vegetable oil. Just before serving, it is decorated with sprigs of fresh herbs.
Cherry and striped cheese
Tomatoes contain another extremely useful element - lycopene. It protects body cells from destruction and reduces the risk of cancer. In addition, it slows down the aging process at the cellular level and protects the heart from premature diseases. Tomatoes are best complemented by cheese, preferably pickled varieties with a layered structure. We offer this simple but win-win salad recipe with grilled cheese.
Ingredients:
- cherry tomatoes - 300 g
- suluguni cheese - 200 g
- wine vinegar - 2 tsp.
- dried rosemary, basil and thyme - 0.5 tsp each.
- olive oil - 1 tbsp. l.
- lettuce leaves - a bunch
Cut the suluguni into thick slices, sprinkle with herbs, pour over wine vinegar, and leave to marinate for 10 minutes. Grease a grill pan with oil and fry the cheese slices until golden stripes. If you are going on a picnic, you can quickly brown the cheese right on the grill. Chop the cherry tomatoes in half. Cover the plate with lettuce leaves, lay out slices of grilled suluguni and halves of tomatoes. Simple, fast and incredibly tasty!
With cucumbers and nut sauce
This delicious fresh tomato salad has a pleasant aroma. And the exquisite dressing made from walnuts gives it a special zest. To serve it for a family feast, you will need:
- 4 tomatoes.
- 3 cucumbers.
- 2 onions.
- 2 tbsp. l. natural apple cider vinegar.
- 1 bunch each of parsley and spring onion.
- Salt and red pepper.
Since this recipe for a simple and tasty salad with tomatoes requires a special dressing, you will have to additionally stock up:
- 2 cloves of garlic.
- 1 pod of hot pepper.
- 3 sprigs of cilantro.
- ½ cup shelled walnuts.
- ½ cup of water.
- ½ tbsp. l. khmeli-suneli.
- ¼ tsp. ground saffron and coriander.
- Salt and vinegar.
You need to start the process by preparing the sauce. To do this, the nuts are combined with cilantro, garlic, coriander, saffron and pepper, and then added salt and processed in a blender. The resulting mass is poured with hot water with the addition of a small amount of vinegar. Mix everything thoroughly and place it in a bowl that already contains chopped tomatoes, chopped cucumbers, chopped onions, chopped herbs, salt and ground red pepper. Lightly sprinkle the finished salad with apple cider vinegar and mix gently.

With champignons
Fans of vegetables and mushrooms can be encouraged to pay attention to another interesting recipe for a delicious tomato salad. The dish made using it turns out to be very beautiful and aromatic, and the tomatoes included in it will be somewhat reminiscent of barrel tomatoes. To prepare this treat you will need:
- 100 g champignons.
- 2 tomatoes.
- 1 onion.
- 3 tbsp. l. any vegetable oil.
- Sugar, vinegar, salt and pepper.
First you need to deal with the onions. It is cleaned, rinsed, finely chopped and placed in a bowl, which already contains vinegar, added with sugar and salt. While it is marinating, you can process the tomatoes. They are washed, scalded with boiling water, carefully removed from the skin, cut and placed in a large salad bowl. Mushroom slices, vegetable oil and onions are also sent there along with the marinade. All this is carefully mixed, covered with cling film and placed in the refrigerator for three hours.
With roasted peppers
This delicate and light salad with tomatoes has a very original taste and pronounced aroma imparted by the spices present in it. To prepare it yourself for a family feast, you will need:
- 6 tomatoes.
- 2 red onions.
- 1 lemon.
- 4 cloves of garlic.
- 2 red and yellow peppers.
- Sea salt, vegetable oil and cumin seeds.
Peeled and washed peppers are cut into quarters, rubbed with garlic, combined with onions and placed in a greased heated frying pan. All this is sprinkled with cumin and fried over medium heat. After about fifteen minutes, the vegetables are transferred to a dry, clean plate, and tomato slices rubbed with garlic are sent in their place. After some time, the finished tomatoes are combined with peppers and onions, and then added some salt and poured over heated vegetable oil mixed with lemon juice and spices.
With carrots and celery
This simple and tasty salad with tomatoes and yogurt dressing will be a real find for those who love unusual food combinations. To prepare it you will need:
- 100 g of good hard cheese.
- 2 tomatoes.
- 2 sour apples.
- 1 juicy carrot.
- 2 stalks of celery.
- 1 glass of lemon juice.
- 2 tbsp. l. honey
To make a delicious yogurt dressing, you will have to additionally prepare:
- 2 tbsp. l. cream.
- 2 tbsp. l. coconut flakes.
- 1 tbsp. l. grated ginger.
- 2 tbsp. l. sunflower seeds
- 150 g unsweetened yogurt without additives.
Apples and carrots are peeled, rinsed, processed with a grater, sprinkled with lemon juice and combined with finely chopped celery. All this is supplemented with crushed tomatoes, previously peeled, and liquid honey. At the next stage, the almost finished dish is seasoned with a sauce consisting of yogurt, cream and ginger. Before serving, the salad is sprinkled with coconut flakes and seeds, and then grated with cheese.
Impromptu pasta
Disputes about the species of tomato are still ongoing. Botanists insist that by all appearances it is a berry. The US Supreme Court ruled back in the 19th century that it is a vegetable. But the European Union recognized the tomato as a fruit at the beginning of the 21st century. We prefer not to argue, but to cook delicious dishes. How about a salad recipe with tomatoes, pasta, ham and cheese?
Ingredients:
- penne pasta – 250 g
- ham - 100 g
- cherry tomatoes - 10–12 pcs.
- hard cheese - 80 g
- green peas - 3 tbsp. l.
- olive oil - 2 tbsp. l. + 1 tbsp. l. for cooking pasta
- salt, black pepper, Provençal herbs - to taste
Cook the pasta in salted boiling water until al dente. Don't forget to add a spoon of olive oil. While the pasta is cooking, drizzle the whole cherry tomatoes with olive oil, sprinkle with salt and spices, and place in the oven at 180°C for 10 minutes. Now we cut the ham into strips and grate the cheese on a coarse grater. Place the prepared pasta on a plate mixed with ham, cheese and green peas. Decorate the salad with baked cherry tomatoes and you are ready to serve.
With cucumbers
This spring and delicious tomato salad has a refreshing vegetable flavor and is suitable for a light snack. To prepare it at home, you will need:
- 6 ripe tomatoes.
- 4 cucumbers.
- 3 tbsp. l. any vegetable oil.
- Salt, fresh herbs, vinegar and ground pepper.
Vegetables are washed in running water, freed from everything unnecessary, cut and combined in a deep salad bowl. At the next stage, they are supplemented with chopped herbs and poured with a dressing consisting of vegetable oil, salt, pepper and a small amount of vinegar. Everything is carefully mixed and served to the table.
Salad of tomatoes, cucumbers and bell peppers
It’s hard for me to imagine that someone might not know the classic salad of tomatoes and cucumbers. But today we will still start with it. This delicious dish is prepared in ten minutes.
Ingredients:
- Tomatoes – 500 g
- Cucumbers – 500 g
- Bell pepper – 1 pc.
- Green onions – 1 bunch
- Greens (parsley, dill) – 1 bunch
- Garlic – 1-2 cloves (optional)
- Vegetable oil – 3 tbsp. l.
- Salt, ground black pepper
For this recipe I chose large sweet pink tomatoes and small cucumbers. The only herb I had was dill.
Wash vegetables and herbs well under running water. Then cut the cucumbers into slices. We cut the tomatoes into crescents, so our dish will look more attractive. Cut the bell pepper into strips. I only had green fruits in stock.
But if you use yellow-fruited varieties for this snack, it will look brighter and more festive.
Finely chop the greens and garlic with a knife. Place everything in a deep salad bowl, add salt and ground black pepper. Now add vegetable oil and mix gently.
Vegetable oil must be aromatic: unrefined sunflower oil, pumpkin oil, mustard oil or sunflower oil made from roasted seeds.
Our salad is ready and we bring it to the table.
With onion
This delicious tomato salad has an extremely simple composition and incredible speed of preparation. To create it you will need:
- 7 ripe tomatoes.
- 3 onions.
- Salt, vegetable oil and ground red pepper.
Peeled and washed onions are chopped into thin half rings and combined with tomato slices. All this is peppered, salted, poured with vegetable oil and served.
With feta cheese
This is one of the most delicious tomato salads. It is prepared from simple and inexpensive ingredients, and the process itself takes just a few minutes. To make it in your own kitchen, you will need:
- 100 g feta cheese.
- 8 ripe tomatoes.
- ½ cup sour cream or vegetable oil.
- Salt and fresh herbs.
The washed tomatoes are cut into slices and combined with grated cheese. All this is added, sprinkled with chopped herbs, and then poured with sour cream or vegetable oil.
With ham and chicken
This hearty dish is an extremely successful combination of poultry meat, sausages and vegetables. To serve a salad with tomatoes for dinner, you will need:
- 50 g cheese.
- 150 g ham.
- 2 hard-boiled eggs.
- 2 tomatoes.
- 4 pickled cucumbers.
- 4 tbsp. l. thick sour cream.
- ½ boiled chicken breast.
- Salt and herbs.
Eggs and cheese are processed using a grater, and then combined with pieces of boiled chicken. All this is complemented with chopped cucumbers, ham strips and tomato slices. The salad prepared in this way is seasoned with salt, sprinkled with sour cream and decorated with fresh herbs.
With beef and Korean carrots
This nutritious and very tasty salad of tomatoes and boiled meat is equally suitable for a family lunch and a holiday dinner. To feed it to your family and friends, you will definitely need:
- 250 g boiled beef.
- 150 g cheese.
- 250 g Korean carrots.
- 2 fleshy tomatoes.
- 2 cucumbers.
- Salt, mayonnaise, pepper and herbs.
Beef, cucumbers and tomatoes are chopped into thin strips, and then supplemented with Korean carrots, cheese shavings and chopped herbs. All this is added and lubricated with mayonnaise.
How to prepare a salad of tomatoes and onions for pilaf
You and I have already learned how to cook pilaf from lamb and chicken. And if at least one of the recipes I proposed has earned your attention and taken its rightful place on your table, then I offer you a wonderful appetizer that will serve as an excellent addition to pilaf. Catch the recipe for tomato and onion salad.
Ingredients:
- Tomatoes – 500 g
- Onions – 1 pc. (large)
- Greens (parsley, dill) – 1 bunch
- Sugar – 1 pinch
- Salt, ground black pepper
Wash vegetables and greens. Remove the skins from the onion. We try to cut the vegetables into thin rings. For us to succeed, the knife must be sharp enough. And another very important condition: it is advisable to take large sugar varieties of tomatoes for this dish.
Finely chop the greens. Then we begin to lay out our vegetables in layers on a large dish, sprinkling each layer a little with herbs, salt, sugar and ground black pepper. If the tomatoes are very sweet, then you can do without sugar.
This is such a simple and incredibly tasty dish we came up with. And most importantly, no matter what you cook for a summer lunch or dinner: lamb pilaf, pork shish kebab, grilled sausages or regular fried potatoes - without this salad everything will not be as tasty! Don't be lazy, cook it more often.
With potatoes and beef
This is one of the most delicious tomato salads that chefs have ever come up with. It has a relatively high energy value and, if necessary, can replace a full meal. To prepare it you will need:
- 500 g beef.
- 150 g cheese.
- 4 tomatoes.
- 4 potatoes.
- 3 pickled cucumbers.
- Salt, parsley and mayonnaise.
The beef and potatoes are boiled separately until tender, then cooled and cut into small cubes. At the next stage, they are supplemented with chopped cucumbers, tomato slices, cheese shavings and chopped parsley. The resulting salad is added, poured with mayonnaise and mixed.
With crab sticks
Using the method discussed below, a fairly satisfying dish is obtained, distinguished by a moderately spicy taste and pleasant aroma. To treat your relatives to it, you will definitely need:
- 200 g crab sticks.
- 150 g cheese.
- 3 ripe tomatoes.
- 2 cloves of garlic.
- Salt and mayonnaise (to taste).
Pre-defrosted crab sticks are removed from packaging, cut into small pieces and poured into a salad bowl. Slices of tomatoes, crushed garlic and cheese shavings are also sent there. All this is seasoned with salt, smeared with mayonnaise and served for dinner.
Salad with tomatoes, shrimp and beans

Ingredients
- 2–3 tablespoons olive oil;
- 450 g peeled shrimp;
- 400 g canned white beans;
- 200 g cherry tomatoes;
- 1 red onion;
- ¾ teaspoon grated lemon zest;
- 150 g mixture of lettuce leaves;
- 3 tablespoons red wine vinegar;
- 120 ml olive oil;
- 2 cloves of garlic;
- salt - to taste;
- ground black pepper - to taste.
Preparation
Heat oil in a frying pan over high heat. Fry the shrimp in several batches until golden brown. Place the beans in a salad bowl, after draining the liquid, the tomato halves, finely chopped onion, lemon zest and lettuce. Add cooled shrimp.
Mix vinegar, oil, chopped garlic, salt and pepper. Pour this dressing over the salad and mix well.
With ham and corn
This quickly prepared and incredibly tasty tomato salad will repeatedly help out housewives who often have to receive unplanned guests. To create it, your refrigerator must have:
- 100 g tomatoes.
- 250 g ham.
- 150 g cheese.
- 1 can of corn.
- Mayonnaise.
The tomatoes are rinsed under the tap, cut into slices and placed in a large bowl. Thinly shredded ham, cheese shavings and grains of canned corn are also poured there. At the final stage, all this is greased with mayonnaise, mixed carefully and served.
With pork and croutons
This interpretation of the famous “Caesar” will definitely appeal to lovers of Mediterranean cuisine. To prepare this salad, you will need:
- 300 g pork.
- 70 g cheese.
- 2 ripe tomatoes.
- 1 cucumber.
- 1 handful of crackers.
- Mayonnaise and Iceberg salad.
- Salt and water.
The pork is cleaned of films and veins, washed and boiled in salted boiling water. Cool the finished meat completely, cut into cubes and pour into a large bowl. Cheese shavings, cucumbers and tomatoes are also sent there. All this is poured with mayonnaise, mixed, placed on a flat dish lined with lettuce leaves, and sprinkled with crackers.
Salad with tomatoes “Fed Caesar”
You can always use this recipe when you get a little tired of the classic Caesar. The salad turns out more juicy and with a bright, unforgettable taste.
Ingredients:
- Tomato - 2 pieces
- Pork – 300 grams
- Cucumber - 1 piece
- Cheese – 70 grams
- Iceberg salad - ½ head
- Crackers – 1 handful
- Mayonnaise – for dressing
Preparation:
Boil the pork, cut into cubes. The salad is torn into small leaves by hand. Three cheeses. Cut the cucumber and tomatoes into cubes or strips. Place the salad on the Iceberg or mix the lettuce leaves with the rest of the ingredients. We combine everything with mayonnaise. Sprinkle with crackers.
Pork can be replaced with dietary chicken or beef. Iceberg salad can be replaced with Chinese cabbage. You can make your own croutons - fry a sliced loaf in butter with garlic, or buy ready-made croutons with garlic, cheese, and bacon flavors.
With pasta and ham
This tasty and nutritious salad was invented by Italian housewives and is very popular with big and small eaters. To prepare it you will need:
- 200 g ham.
- 200 g pasta.
- 50 g cheese.
- 2 tomatoes.
- 2 cloves of garlic.
- 2 cucumbers.

An instant salad that absolutely everyone will love! It can be used as a filling for tartlets or stuffed into tomatoes.
Ingredients:
- Tomato - 3 pieces
- Crab sticks - 200 grams
- Curd cheese – 150 grams
- Garlic - 2 cloves
- Mayonnaise – for dressing
Preparation:
Cut the tomatoes and crab sticks into strips. Grate the cheese. Pass the garlic through a press or finely chop it. Combine ingredients with mayonnaise.
With olives and chicken liver
This interesting recipe will surely end up in the culinary treasury of every offal lover. To recreate it at home, you will need:
- 500 g fresh chicken liver.
- 100 g pitted olives.
- 3 eggs.
- 1 sweet pepper.
- 2 ripe tomatoes.
- Salt, water and mayonnaise.
Eggs and chicken liver are boiled separately in boiling water, cooled and cut into small cubes. All this is complemented with tomato slices, olive rings and strips of sweet pepper. Add some salt to the resulting salad, pour mayonnaise over it and mix gently.
Tomatoes with cucumbers and eggs - the most delicious recipe
The simplest and most satisfying salad from my childhood is tomatoes with cucumbers and eggs. You can season it with vegetable oil, mayonnaise, and yogurt. We will cook it with sour cream.
Ingredients:
- Tomato - 2 pcs. (large)
- Cucumber - 3 pcs.
- Greens (dill, parsley)
- Green onions
- Salt, ground black pepper - to taste
- Sour cream
Wash vegetables and herbs well under running water. Boil the eggs in salted water for at least 10 minutes, cool and peel. To make eggs easy to peel, immediately cool them in cold water after boiling.
Then cut the cucumbers into slices. Cut the tomatoes into large pieces, so that they can be easily pricked with a fork))
Finely chop the eggs or grate them on a coarse grater. Finely chop all the greens with a knife.
Place everything in a deep salad bowl, add salt and ground black pepper. Now add sour cream and mix gently.
With grated horseradish
This simple vegetable salad has a pleasant, slightly islandy taste and light aroma. It goes well with meat dishes and will help diversify your usual diet. To prepare it, you will need:
- 4 tomatoes.
- 5 cucumbers.
- 1 small onion.
- 1 clove of garlic.
- 1 tbsp. l. fresh grated horseradish.
- 1 tbsp. l. 9% vinegar.
- Salt, seasonings and vegetable oil.
The washed vegetables are cut into thin slices, supplemented with chopped onions and crushed garlic. The resulting mixture is poured with a sauce consisting of grated horseradish, vegetable oil and table vinegar. At the final stage, all this is added, seasoned with spices and put in the refrigerator for ten minutes.
Salad with tomatoes “Juicy Crisp”
The salad really turns out unusually juicy and bright. By using different types of cucumbers in the ingredients, the taste becomes even richer.
Ingredients:
- Tomato – 2 pieces
- Cucumbers – 2 pieces
- Crab sticks – 100 grams
- Cheese – 100 grams
- Pickled cucumbers – 3 pieces
- Greens - to taste
- Crackers - for decoration
- Mayonnaise – for dressing
Preparation:
Cut all types of cucumbers and cheese into strips. Cut crab sticks and tomatoes into cubes. Chop the greens. Mix the ingredients with mayonnaise. Add salt to taste. Decorate with crackers.
If you don’t have pickled cucumbers on hand, lightly salted cucumbers are perfect for this salad, and you can make them literally overnight. To do this, fill a three-liter jar with cucumbers, add salted water (two heaped tablespoons of salt for 1.5 liters of cold water). Close the lid and put away overnight. If desired, you can put dill umbrellas and garlic in the jar.
With nuts
This aromatic and relatively filling salad has a very simple composition that allows you to prepare it every day. To create it you will need:
- 50 g shelled walnuts.
- 120 ml of any vegetable oil.
- 2 tomatoes.
- 1 small onion.
- 1 clove of garlic.
- Salt and parsley.
Washed and dried tomatoes are cut into thin slices, and then combined with chopped nuts and onion rings. All this is salted and topped with a dressing made from chopped herbs, crushed garlic and vegetable oil. Before eating, the prepared salad is kept in the refrigerator for a short time so that the vegetables have time to soak in the aromas of the sauce.
Salad with tomatoes and baked eggplants

Ingredients
- 2 eggplants;
- 2 tablespoons olive oil;
- 3 large tomatoes;
- ½ red onion;
- 1 lemon;
- ½ bunch of parsley;
- 2 cloves of garlic;
- salt - to taste.
Preparation
Cut the eggplants in half lengthwise and place on a baking sheet lined with parchment. Grease them with 1 spoon of oil and place in an oven preheated to 190°C for 20 minutes. Then cool and peel.
Cut the eggplants and tomatoes into small cubes. Add finely chopped onion, juice of a whole lemon, chopped parsley, chopped garlic, salt and the remaining oil and mix.
