Kurnik classic recipe with chicken and potatoes

Kurnik is a popular Russian dish, which in ancient times was prepared for various holidays and celebrations. Housewives liked the pie with chicken filling because it was filling, aromatic and pleasant to the taste. Nowadays, the dish is prepared not only for holidays, but also to diversify the daily menu.

The modern classic kurnik (recipe with potatoes) differs from the version of the recipe used in the 16th-20th centuries. It is much easier to prepare, as it consists of two layers of dough with a filling in the middle, but it turns out no less tasty.

Ingredients for filling:

  • 5 potatoes;
  • 400-500 g chicken fillet;
  • 1 onion;
  • 1.5 tbsp. oil drain;
  • salt and pepper as needed.

Test components:

  • 3 stacks flour;
  • 2 eggs;
  • 100 g drained oil;
  • 100 g kefir;
  • 1 tbsp. Sahara;
  • ½ tsp. salt;
  • vegetable oil for greasing the baking sheet.

Cooking procedure:

  1. First, the dough is kneaded. Melt the butter in a water bath until liquid, then add salt and sugar and mix thoroughly. Kefir and eggs are added to the cooled oil, and after mixing, pour in the flour and soda passed through a fine sieve. The dough is thoroughly kneaded, the container is covered with a lid or cellophane and put in a cool place for 15-20 minutes.
  2. Next, the filling is prepared. The poultry fillet is cut into small pieces, potato tubers are chopped into cubes of the same size, the onion is finely chopped, and the butter is divided into cubes. Each component of the filling is individually salted and peppered.
  3. The cooled dough is divided into 2 unequal parts. Using a rolling pin, a larger piece is formed into a layer, which is laid out on a greased baking sheet so that there is a little free space left around the edges.
  4. The filling is placed on top of the bottom layer of dough: first potatoes, then chicken, then onions and butter sticks.
  5. The second part of the dough is also formed into a layer and laid out on top of the filling. The edges of the upper layer are connected to the edges of the lower layer and are beautifully decorated.
  6. Baking takes place in a preheated oven at 160 degrees and lasts 40-50 minutes.

Cooking option with kefir

Kurnik with potatoes prepared with kefir differs from the classic one in the taste of the dough and the peculiarities of its kneading. Otherwise it turns out the same: nourishing, aromatic and tasty.

Test components:

  • 400 ml kefir;
  • 1.5 stack. flour;
  • ½ tsp. soda;
  • 4 tbsp. sour cream.

Ingredients for filling:

  • 1 onion;
  • 5 potato tubers;
  • 0.5 kg chicken fillet;
  • 100-125 g drained oil;
  • salt and pepper to taste.

Features of preparing kefir pie:

  1. To obtain the dough, mix slightly heated sour cream with warm kefir. Pour salt and soda into the fermented milk mixture, add the flour passed through a sieve in parts, not forgetting to knead the mass. When the mass becomes tight, knead with your hands a soft dough that does not stick to your hands, divide into 2 equal parts.
  2. To prepare the filling, cut the potatoes into small cubes or thin bars and add salt, cut the chicken into small pieces and sprinkle with spices, chop the onion, cut the butter into thin slices.
  3. Roll each piece of dough into a plate slightly larger than a baking sheet. Place one plate on a baking sheet, spread potatoes on top of it in an even layer, then meat, onions, and butter slices on top. Cover the filling with a second sheet of dough and seal the edges.
  4. Place the baking sheet in a pre-heated oven and bake the pie at 160 degrees for 40-50 minutes.

With added cheese

Kurnik with ready-made puff pastry and cheese takes a little longer to prepare than the classic recipe. The reason for this is the use of raw potato filling.

Ingredients:

  • ready-made puff pastry – package weighing 500 grams;
  • chicken fillet – 400 grams;
  • bell pepper – 1 piece;
  • hard cheese – 150 grams;
  • onions – 2 pieces;
  • medium-sized potatoes - 3 pieces;
  • butter – 40 grams;
  • salt and pepper to taste.

Preparation steps:

  1. It is recommended to pre-marinate the chicken fillet with onion, pepper and salt. Let the meat stand for about 15 - 20 minutes, after which you can start cooking.
  2. Fry bell peppers and onions until golden brown.
  3. Cut the washed and peeled potatoes into thin slices.
  4. Mix potatoes with salt and pepper.
  5. Roll out one piece of puff pastry and place it carefully on a greased baking sheet.
  6. Place the finished fillet. Add pieces of butter.
  7. Grate 1 part of the cheese and cover the chicken mixture with it.
  8. The next layer is potatoes and onions, fried with pepper.
  9. The filling is covered with the remaining grated cheese.


Place the rolled out second piece of puff pastry on top of the pie and carefully secure it to the base. Kurnik should be baked at 180 degrees for 40 minutes.

Delicate puff pastry with cheese

Cheese adds tenderness and a pleasant creamy taste to dishes. Cheese is especially good in baked goods: by holding the filling together, it combines with the other ingredients, improving its taste. And if you cook kurnik with potatoes according to the puff pastry recipe, the result will conquer even the most demanding gourmet.

If you make a dish from ready-made puff pastry, you will need 1 package (700 g).

Ingredients for dough (not puff pastry):

  • 250 ml of fermented milk product (kefir, liquid sour cream, fermented baked milk, natural yogurt);
  • 150 g drained oil;
  • 600-700 g flour;
  • ½ tsp. salt;
  • ½ tsp. soda

Filling ingredients:

  • potato tubers – 4 pcs.;
  • 500 g boneless chicken;
  • 150-200 g cheese;
  • 1 onion;
  • salt and spices to taste.

Sequencing:

  1. To obtain a non-puff pastry, pour soda and salt into kefir and mix thoroughly. Then pour in the melted and cooled butter. Gradually add the sifted flour in small parts, thoroughly mixing the mixture with a spoon. When the consistency becomes thick, place the dough on the table and knead by hand. It should be soft and easily come off your hands. Place the dough in a bowl and refrigerate for 40-60 minutes.
  2. When working with ready-made puff pastry, form two plates from the blanks, the size of which should be slightly larger than a baking sheet or baking dish.
  3. To prepare the filling, cut the potatoes and chicken into small pieces, chop the onion finely, and turn the cheese into shavings using a grater.
  4. Line a baking sheet with one of the dough sheets and place the filling in the following order of layers: potatoes, meat, onions. Sprinkle salt and spices on top, and then grated cheese.
  5. Cover the filling with the second plate, fasten the edges of both plates together with tucks.
  6. Bake the pie in a preheated oven at a power of up to 180 degrees, the process takes an average of 20-30 minutes.

Lazy chicken is the fastest recipe

The simplest and fastest recipe for chicken chicken with potatoes in the oven is called lazy. The preparation of the dish takes a minimum of time, and the taste is slightly different from the pies made according to the recipes described above.

List of ingredients:

  • 5 potato tubers;
  • 400 g boneless chicken;
  • 1 onion;
  • 100 g sour cream;
  • 100 g mayonnaise;
  • 2 eggs;
  • 1 stack flour;
  • ½ tsp. soda;
  • salt and spices to taste.

Description of the cooking process:

  1. Since the recipe requires quick cooking, all components are chopped finely or thinly. The chicken needs to be cut into small pieces, the onion into half rings, and the potatoes into circles.
  2. Place the prepared ingredients on a baking sheet in layers in the following order: potatoes, chicken, onions. Sprinkle each layer (except onion) with a small amount of salt and selected seasonings.
  3. In a separate deep container, beat the eggs, add sour cream and mayonnaise to them, mix thoroughly. Then pour in the baking soda and sifted flour, mix again - the mass will not be too thick.
  4. Pour the dough onto a baking sheet so that it completely covers the filling, bake in a preheated oven for 40-50 minutes at 180 degrees.

Mini chicken puff pastry

Mini-chickens differ from the original in their smaller size. They are quite quick and easy to prepare. You can stuff it inside with either chicken or any other meat, such as pork. The main thing is to pre-boil until fully cooked.

Ingredients:

  • cooked meat – 400 grams;
  • mushrooms (champignons) – 300 grams;
  • small potatoes - 3 tubers;
  • onions – 2 pieces;
  • puff pastry – 1 package;
  • salt, pepper - to taste;
  • vegetable oil;
  • butter.

To prepare mini chicken chicken, it is important to follow the following instructions:

  1. Cut the boiled meat to the desired size.
  2. Chop the mushrooms and onions, mix and fry until tender.
  3. Thinly slice the peeled potatoes, add salt and pepper to taste.
  4. Roll out the puff pastry and make small circles. You can use a regular plate for this.
  5. Place layers of meat, mushrooms and potatoes in the middle of the base.
  6. Pinch the dough so that there is an open circle of small diameter in the middle.
  7. Place pieces of butter in the center.

Do the same for the rest of the chickens. After all the mini pies are ready, place them on a baking sheet greased with vegetable oil and place in a preheated oven. Wait until fully cooked (usually about 35 minutes).

With mushrooms

The recipe for mushroom chicken is similar to the classic one. It differs only in the presence of an additional ingredient - mushrooms, which add a special taste and aroma to the dish.

Ingredients for mushroom chicken:

  • 600 g dough;
  • 300 g mushrooms;
  • 5 potato tubers;
  • 1 onion;
  • 600 g chicken fillet;
  • vegetable oil for frying;
  • salt and pepper to taste.

Sequence of cooking:

  1. Fry large chopped mushrooms in hot oil until light golden brown.
  2. Finely chop the onion, cut the potatoes and chicken into small pieces and rub with spices and salt.
  3. Divide the dough into 2 pieces, each of which roll out into a thin plate slightly larger than a baking sheet.
  4. Place the first layer on a baking sheet, evenly distribute the filling over it in the following order of layers: potatoes, mushrooms, chicken, onions.
  5. Cover the filling with another plate and secure the edges of both plates.
  6. Place the baking sheet in a preheated oven and bake at 180 degrees for 35-45 minutes.

Classic kurnik made from puff pastry

In a classic kurnik made from puff pastry, the filling is separated by pancakes. Therefore, before starting, you need to bake them, or buy a ready-made analogue. This will not affect the taste of the dish in any way.

Ingredients for classic kurnik with pancakes:

  • chicken meat (boil) – about 0.5 kg;
  • puff pastry – 1 package (500 grams);
  • boiled rice – ¼ kg;
  • butter – 50 grams;
  • champignons – 200 grams;
  • chicken eggs (boiled) – 2 pieces;
  • salt - to taste;
  • fresh dill.

Cooking steps:

  1. If the pancakes were not purchased in advance, then first of all you need to make the dough and bake 4 pancakes. While they are cooling, you can proceed to preparing the main dish.
  2. Since the kurnik filling is laid out in layers, each one should be kneaded in a separate bowl. The first layer will consist of finely chopped eggs, dill and butter. Mix all ingredients and add a little salt.
  3. The second layer will be champignons, fried with onions in a heated frying pan for 20 minutes.
  4. Check the chicken meat, remove it from the bones if necessary and chop finely.
  5. Divide the package of puff pastry into 2 equal parts. Roll out the first one to the desired size in the shape of a circle and place on a baking sheet greased with vegetable oil.
  6. Place the first layer of eggs. Add 1/3 of the previously cooked rice. Place 2 pancakes on top. If desired, brush with sour cream.
  7. Place the second layer: mushrooms. Sprinkle 1/3 of the rice. Cover with pancakes.
  8. The last ones are chicken meat and leftover rice cereal.
  9. The pie is covered with 2 pieces of puff pastry. The edges should be sealed tightly so that the juice and filling do not leak onto the baking sheet.

To make the chicken chicken golden brown, brush the top part with one beaten chicken egg. The pie is baked in a preheated oven for 35 minutes at 180 degrees.
