Preparation: Finely chop the cabbage and pour boiling water over it, boil the rice, chop the carrots, onions and garlic, and lightly fry them. Mix all the ingredients with minced meat, egg and spices, form meatballs and place in a baking dish.

Pour in a sauce made from tomato paste and sour cream, which can be brought to a consistency with water. Bake the dish at 180 degrees for an hour so that it is thoroughly stewed.

Traditional minced meat recipes

Minced meat is prepared from a wide variety of meat (pork, beef, poultry, fish), spices and various flavorings. Their correct combination allows you to achieve optimal taste and makes the finished dish juicy and aromatic.

Classic version

This recipe allows you to get traditional minced meat for cutlets. The classic recipe is the most popular. It uses pork and beef in equal proportions. Additional ingredients can include various vegetables and eggs. Formed cutlets, before frying in butter, are rolled in breadcrumbs. To prepare a classic pork and beef product you need: 300 g of beef and pork, onion, one large egg, 20 g of butter, spices.

It is prepared as follows:


  1. All the meat and onions are minced in a meat grinder. This action is repeated twice, which allows you to obtain a more uniform consistency.

  2. Pre-beaten egg and spices are added.
  3. The minced meat is thoroughly kneaded by hand.
  4. After this, add a little cold water and melted butter.
  5. The mixture is stirred again and left for a few minutes. After this time, you can start frying the cutlets.

Pike fish

Most often, pike is used for minced fish. It is tasty and perfect for frying cutlets. Due to the dryness of its meat, you should add a little butter to the minced meat. Before making minced fish for cutlets, you need to prepare all the necessary products: 600 g of fish, 0.5 cups of milk, 30 g of butter, onion, bread (it is best to use a white loaf), herbs and spices.

Prepare minced pike as follows:

  1. Slices of bread are cut and soaked in milk.
  2. The fish is cut into fillets and the onion is peeled.
  3. The pike along with chopped onions are passed through a meat grinder.
  4. The squeezed bread mixture, chopped herbs and all the spices are added to the minced meat.
  5. The meat product is thoroughly mixed.
  6. Subsequently, cutlets of the required size are formed from it and sprinkled with breading.

It is worth considering that in addition to cutlets, you can also make meatballs or meatballs from minced fish. The principle of cooking minced meat is the same. The only difference will be the process of preparing the formed meat products.

  5. Subsequently, flat cutlets are molded from the minced meat and fried in a frying pan or grill.

Chicken fillet

An important advantage of minced chicken is the speed of its preparation. For it you will need the following products: 0.5 kilograms of chicken fillet, processed cheese, green onions, dill, two eggs, spices.

The chicken meat product is prepared as follows:

  1. The poultry fillet is crushed using a blender or simply chopped with a sharp knife.
  2. In a separate container, mix chopped green onions, chopped dill and mashed processed cheese.
  3. Beaten eggs and cheese with herbs are added to the chicken.
  4. The minced meat is thoroughly kneaded and, if necessary, a little flour is added to it.
  5. You can make cutlets from minced meat and fry them in breading.

Pasta Bolognese

You will need: 900 g of minced meat, a pack of spaghetti, 300 g of onion, 100 g of tomato paste, 250 ml of broth, 100 g of tomatoes, cheese, spices and herbs, olive oil.

Preparation: Peel, chop and fry the onion and garlic, and during this time boil the spaghetti. Fry the minced meat, constantly breaking up lumps and stirring. Mix it with tomatoes chopped in a blender, tomato paste and chopped herbs. Simmer the mixture for a couple of minutes, bringing the broth to the desired consistency, and serve with pasta.

How to properly cook minced meat in a meat grinder or blender

The knives of the meat grinder must be sharply sharpened, otherwise pieces of meat will be crushed in it rather than chopped and it will not be able to cope with its task. Before rolling the meat, it is recommended to freeze it, then it will be really easy to cut into small fractions. Minced meat, especially for children's dishes, can be chopped twice, then the texture of the minced meat will be even more tender. The chopped meat must be thoroughly mixed, then dishes such as cutlets will not fall apart when frying. In the same way, minced meat can be ground in a blender that has this function. The advantages of preparing minced meat through a meat grinder and blender are speed.

Conchiglioni with minced meat

The good thing about pasta in the shape of shells is that they are very convenient to stuff!

You will need: Conchiglioni pasta, 200 g minced meat, 100 g sour cream, 100 g cheese, 200 ml cream, garlic and herbs.

Preparation: Fry the minced meat with garlic so that it does not clump, and during this time cook the pasta until half cooked. Mix it with cheese and put it in shells. Place in a baking dish, pour in a sauce made from cream, sour cream, herbs and spices, bake for 20 minutes at 180 degrees.

Meatloaf

If you're planning a holiday dinner and are looking for a recipe for a delicious, unusual dish, look no further than meatloaf. It will be a very interesting appetizer, and guests will immediately want to try a piece. The roll is prepared in the oven; the cooking time is an hour.

Compound:

  • 600-650 g minced meat;
  • white bagel (bun) – 100 g;
  • a glass of milk;
  • medium carrot;
  • bulb;
  • garlic head;
  • 7 eggs;
  • pepper and salt to taste.

How to cook:

Pour warm milk into a cup, break the bagel into small pieces and soak in milk for 20-30 minutes.

Peel the carrots and grate them on a coarse grater. Chop the onion into cubes. Divide the garlic head into cloves, and pass the cloves through a press or chop on a fine grater. Add chopped vegetables, soaked bread and milk to the minced meat, mix everything well. Add salt and pepper to taste.

Break a couple of raw eggs into the meat mixture and stir. The consistency of the minced meat should not be liquid. Now you can make the roll itself. Prepare a couple of sheets of foil of the same size and line them crosswise in a baking dish. Place the minced meat over the entire width of the sheet and smooth it out. The thickness should be 2 cm. Place boiled peeled eggs in a row in the center.

Take the edge of the top sheet of foil and wrap it together with the minced meat so that it is at the top. Turn the foil back; the roll should not lose its shape. Cover the roll again with foil and bake in an oven preheated to 180 degrees. Bake the roll for 50-60 minutes. 10 minutes before the end of cooking, remove the foil so that the roll is well browned.

When the roll is ready, remove it from the oven and let it cool before cutting into pieces. The dish is ready to serve, bon appetit!

Zucchini casserole

To make the snack you will need ready-made waffle cakes, which can be purchased in the store:

  1. Combine 500 g of minced meat or chicken with finely chopped onion and 1 egg. Stir the mass.
  2. Spread the waffle crust with the meat filling and cover with the second one.
  3. Carefully cut the waffles into portions.

  4. Beat 4 eggs with salt and black pepper.
  5. Dip each waffle into the egg mixture and place in a preheated frying pan with vegetable oil.
  6. After browning, turn the waffles over to the other side.

  1. Fry the minced meat in a frying pan until cooked. Choose the volume at your discretion, based on the size of the eggplant and the required amount of snack. I get 300-500 g.

  1. Chop the onion and 1 carrot, fry in a frying pan, add 400 g of minced meat, salt and pepper. Simmer until done.
  2. Cut 2 tomatoes into slices. Crush 1 clove of garlic into mayonnaise.
  3. Grease a sheet of Armenian lavash with mayonnaise sauce, spread the minced meat, not reaching a couple of cm to the edges, sprinkle with chopped herbs.
  4. Coat the second sheet of lavash with mayonnaise and place it on top of the first one. Place tomato slices and green salad on top.
  5. Cover the appetizer with a third sheet, lightly coated with mayonnaise on both sides. Sprinkle with 100 g of coarsely grated cheese.

Preparation method:

  1. Soak 250 g of dried fruit in 250 ml of milk for an hour. They should soften but not fall apart.
  2. Combine 500 g of homemade minced meat (beef + pork), egg, chopped green onions and 3 tbsp. spoons of mayonnaise, salt, spices. Stir the mass.
  3. Place the dryers on a baking sheet and fill with meat. Cover with mayonnaise.
  4. Bake in an oven preheated to 180 degrees for 25 minutes. If desired, sprinkle the dish with grated cheese (100 g) and cook for another 5 minutes.

Holiday roll


The roll is filled with quail eggs and optional vegetables and herbs.
Cooking method:

  1. Make minced meat from 300 g of pork and 200 g of chicken fillet, add chopped onion, 2 slices of bread, egg, salt and pepper. Stir the mass.
  2. Distribute the minced meat on cling film in the form of a rectangle. Place strips of 1/2 bell pepper, 1 boiled carrot in the middle, sprinkle with herbs. Next, distribute 9 boiled quail eggs.
  3. Roll up the roll and place it in the pan, seam side down. Make strips of puff pastry (125g) and place them on the meat.
  4. Brush the dish with egg yolk. Bake in an oven preheated to 180 degrees for 45 minutes.
  5. After cooling, cut the roll into slices and sprinkle with herbs.

Cooking method:

  1. Combine the chopped onion with 300 g of minced chicken, add salt and pepper.
  2. Roll out 125-200 g of puff pastry (between layers of cling film) to a thickness of 0.5 cm.
  3. Cut the dough into strips. Form meatballs from the minced meat, size as desired.
  4. Wrap each meatball with strips of dough and place in the pan on baking paper.
  5. Coat the dough with yolk. Bake in the oven for 45 minutes.

Crab stick rolls


The shell of the rolls is crab sticks.
To make a snack, you should purchase crab sticks that can be unfolded (thick):

  1. Remove 6 sticks from packaging and place in hot water for a minute.
  2. Combine the chopped onion with 150 g of chopped mushrooms. Fry in a frying pan for 3-5 minutes, then add 150 g of minced meat (beef + pork). Simmer for 10 minutes.
  3. Add beaten egg and 1 tbsp to the meat mixture. spoon of breadcrumbs. Mix the composition.
  4. Forming rolls. To do this, unwrap the crab stick. Place a slice of processed cheese on top (for toast). Next, distribute the meat and mushroom filling and roll it up.
  5. Beat the egg. Dip each roll in egg, flour and breadcrumbs. Fry on all sides in oil in a frying pan.

Burrito

Discover new facets of Mexican cuisine, because minced meat is one of the main ingredients!

You will need: 300 g minced meat, 100 g corn, 150 g canned beans, 1 sweet pepper, half a sweet onion, 50 g sour cream, garlic, spices, cheddar, 2 tbsp. BBQ sauce, tortillas.

Preparation: Fry the minced meat with onions, and then add corn, beans, bell peppers, all the spices and a little cheese. Lay out the tortillas, sprinkle them with cheese and wrap the filling. The burrito can be fried in a pan or eaten as is.

Minced beefsteak

A juicy steak made from homemade minced meat is an excellent option for a family dinner. I suggest making mushroom sauce with them, it turns out to be simply delicious. For a side dish, boil potatoes or make mashed potatoes.

Compound:

  • 600-650 g minced meat;
  • onion – 1 pc.;
  • a glass of breadcrumbs;
  • spices, salt.

For the sauce:

  • small onion – 1 pc.;
  • 300-350 g of fresh champignons;
  • 2 tbsp. olive oil;
  • 50 g flour;
  • 300 ml water;
  • mushroom flavored bouillon cube;
  • tbsp soy sauce;
  • 3-4 tbsp. sour cream;
  • pepper and salt.

How to cook:

Peel the onion, chop finely, mix with minced meat in a bowl. Then add crackers to the bowl, season the mixture with spices and add a little salt. Add water to the bowl and stir again. Leave the cup aside for 10-15 minutes and let the contents sit.

Turn on the oven to 190 degrees. Place a sheet of foil on a baking sheet and lightly grease with oil. Make small cakes from the meat mixture and place them on a baking sheet so that they do not touch each other. Place the pan with the steaks in the oven and bake for 30 minutes.

Start preparing the sauce. Chop the onion and cut the mushrooms into cubes. Pour oil into the frying pan; when it is hot, add the mushrooms and onions into the frying pan. Fry for about 6-8 minutes.

Add flour little by little to the pan and stir. Add water and crushed cubes to the mushrooms. Bring the sauce to a boil, and then add soy sauce and sour cream. Once the sauce returns to a boil, turn off the heat and cover the contents of the pan with a lid.

  1. Before starting work, you should cool the fish fillets.
  2. After this, it is cut into small cubes and turned into a homogeneous mass using a blender.

  2. Grease a mold (for example, for muffins) with butter and sprinkle with flour. Roll out the dough, cut out circles. Distribute them in the mold to form baskets.

  3. Fry 300 g of lean minced pork and chopped onion, without bringing it to readiness, add salt and seasoning.
  4. Distribute the filling into tartlets, sprinkle with 150 g of grated cheese. Beat 2 eggs, a glass of cream and pour the mixture into tartlets.
  5. Bake the tartlets in the oven for 25-30 minutes. Serve the dish warm.

Cooking method:

  1. Finely grate 8 potatoes, an onion, crush 2 cloves of garlic. Add 2 eggs, salt, 3 tbsp. spoons of flour. Mix the composition.

Compound:

  • 500 ml kefir 3.2% fat;
  • chicken egg – 2 pcs.;
  • 200 g flour;
  • 2 tbsp. baking powder;
  • 2 tbsp. vegetable oil;
  • onion – 2 heads;
  • minced meat – 500 g;
  • 130 g cheese;
  • fresh dill - a bunch;
  • spices and salt to taste.

How to cook:

Remove the skin from the onion and chop finely with a sharp knife. Heat the oil in a frying pan, add the onion into it and sauté for 5-6 minutes until it becomes transparent and soft. Without turning off the heat, place the minced meat in the frying pan and mash it with a spatula so that there are no lumps. Fry the contents of the pan for at least 7-8 minutes.

Finely chop the dill, divide the greens into 2 parts: the first will be added to the dough, and the second to the filling. Sprinkle some of the greens into the pan and continue frying for a couple more minutes. Then you can remove the frying pan from the heat and let the filling cool.

Start kneading the pie dough. To do this, break a couple of eggs into a bowl and pour kefir into them. Stir the mixture with a mixer until smooth.

Pour the sifted flour with baking powder into a bowl, continue mixing the dough with a mixer. At the end, add oil and dill, stir again. Your dough should resemble thick sour cream.

Fill a greased pan with about ½ of the dough. As you fill, tap the sides of the mold to ensure there are no gaps. You can add the filling. Transfer the contents of the cooled frying pan into the dough and gently smooth it out with a spatula. Scatter the filling not only in the center, but also along the edges.

Grate the cheese on a coarse grater, sprinkle cheese shavings on top of the filling, and then fill it with the remaining dough. Bake the pie in an oven preheated to 180 degrees for about 40-50 minutes.

You will need: 500 g of minced meat, 1 onion, 1 egg, 150 ml of milk, 2 pieces of white bread, spices, breadcrumbs.

Preparation: Soak the bread in milk and mash into porridge, mix with minced meat, grated onion, egg and spices. Make cutlets and roll each one in breadcrumbs before frying.

Keftedes appetizer

Ingredients:

  • 500 g minced beef;
  • 2–3 medium onions;
  • 2 slices of white bread;
  • 2 cloves of garlic;
  • 1 egg;
  • 4 tablespoons chopped parsley;
  • 4 tablespoons milk;
  • 1 tablespoon red wine vinegar;
  • 1 tablespoon olive oil;
  • 1 teaspoon dried oregano;
  • 10 mint leaves;
  • salt and ground black pepper - to taste;
  • vegetable oil.

Cooking method:

  1. Soak the bread in milk. Squeeze and add minced meat, egg, chopped onion, garlic, parsley and mint. Mix well. Salt, pepper, add oregano, sprinkle with olive oil and vinegar. Mix again, preferably with your hands.
  2. Cover the bowl of minced meat with cling film and place in the refrigerator for an hour. During this time, the spices will release their aroma, and the meat will release juice (it will need to be drained). If you don't have ground beef, use lamb or pork and chicken (50/50).
  3. Form the minced meat into balls and fry them in a large amount of very hot vegetable oil. Place the finished keftedes on a paper towel to remove excess fat.

You will need: 500 g minced meat, 5 eggs, 2 tbsp. flour, bread crumbs, oil and spices.

Preparation: Boil 4 eggs, and during this time divide the minced meat into 4 parts and form into flat cakes. Wrap a hard-boiled egg in each, and beat the last one and brush the balls with it. The entire Internet is filled with a wide variety of recipes for “juicy cutlets.” In fact, the authors are somewhat disingenuous. There is no recipe for juicy cutlets. They are given a rich taste by the breading, which retains the meat juice inside.

Ingredients needed for juicy cutlets:

  • minced fish - 500 g;
  • onions - 2 heads;
  • breading mixture - this can be ground crackers, flour with starch, flax and sesame seeds, semolina, crushed rolled oats;
  • salt and spices to taste;
  • egg - 1 piece;
  • milk 30 ml;
  • vegetable oil - 50 ml.
  1. Mix minced fish with chopped onion.
  2. Roll the prepared cutlets in breading. To form a stronger crust, the cutlets can be dipped alternately in breading and beaten egg with milk.
  3. Fry the cutlets in a deep frying pan. There should be enough oil in the pan so that the cutlets are 1⁄3 immersed in it. Fry until browned. If possible, it is better to use a fresh portion of oil for each serving of cutlets.
  4. Place the fried fish cutlets in the oven. Depending on the size and type of fish from which the cutlets are prepared, the time can range from 10 to 25 minutes.
  5. Check the cutlets for doneness. To do this, you just need to pierce them with a knife. If the juice that comes out is clear, the cutlet is ready. If the juice is cloudy or pinkish, the cutlets need to be cooked further.

However, it happens that fish cutlets, despite proper frying, remain dry. In this case, the situation can be corrected by stewing the cutlets in tomato or cream sauce.

Most often you can find minced chicken on the shelves of our shopping centers. It is made from chicken fillet and drumsticks of broiler chicken.

When choosing minced chicken, you need to look at the following:

  1. Consistency: homogeneous, thick.
  2. Color: light pink. A small addition of pieces of white fat is allowed.
  3. Ingredients: no added cartilage, bones or chicken skin.
  4. Smell: characteristic of fresh chicken meat. No rotten or musty smell.
  5. The presence or absence of stabilizers, preservatives or dyes.

MMO. What it is

On the label of minced chicken you can find the abbreviation MMO. This designation refers to the method of preparing minced chicken – Mechanically Separated Meat. Such raw materials are most often used for the preparation of semi-finished chicken products or ready-made chicken dishes. It is made from connective tissue and chicken bones with a small addition of fillet by pressing under high pressure through a sieve.

The abbreviation MMO has only recently begun to appear on packaging with minced chicken. Compared to minced chicken, this product is fattier and may contain small pieces of bone up to 0.75 mm in size.

Preparation: Add chopped garlic and spices to sesame oil, and fry the minced meat with soy sauce and a pinch of brown sugar. Heat the broth and add miso paste and a little soy sauce. Boil the noodles, chop the onion and cut the boiled eggs in half. Lay out all the ingredients nicely in one bowl.

Cauliflower with béchamel sauce

Bechamel goes perfectly with minced meat and vegetables!

You will need: 450 g minced meat, 500 g cauliflower, 2 onions, garlic, cheese, 300 ml milk, 1 tbsp. breadcrumbs, flour, butter, spices.

Preparation: Fry the onion with minced meat and spices, and boil the cauliflower to make it softer. Melt the butter, mix it with flour, add milk and beat without lumps.

Description

Nothing but meat and onions are put into minced meat for lula ; it does not contain binders or starchy components. No eggs, bread, potatoes, flour, semolina, etc. should be present. The whole secret of the viscosity and stickiness of minced meat lies in the addition of lamb fat or lard.
