Caramelized oranges - recipes

If you have ever tried these magical orange slices, I am sure that you will never be able to forget their amazing taste.
The combination of dark chocolate with the tart sweetness of caramelized oranges... mmm, this is something incredible! They simply melt in your mouth, leaving behind a unique sensation. At this moment, you want to forget about everything around and just enjoy the taste... And if you add some spices - cinnamon, cloves, star anise... you will get a completely New Year's dessert, which can also become a wonderful gift for loved ones! The most important thing is that preparing this dessert at home is not at all difficult - you really need to be patient, because preparing this deliciousness will still take a couple of hours, but there is absolutely no fuss! Cooking time:
2-2.5 hours

4-5 regular or 6-8 blood oranges (depending on size)

Ingredients:

  • 550 g sugar (you can use regular sugar for a lighter color of the circles or brown sugar for more flavor)
  • 10 g vanilla sugar or vanilla pod
  • 300 ml water
  • 200-250 g dark chocolate
  • At will and taste - cinnamon, cloves, star anise, ginger and other spices

Cooking method:

Cut the oranges into beautiful slices approximately 5 mm thick.

Place them in boiling water for 2-3 minutes to get rid of bitterness. We drain the water, and lay out the circles on a paper towel, cover the top with it and gently blot it to absorb excess moisture.

Then we place the oranges on the bottom of a deep dish (it is better to take a large diameter one so that the oranges are stacked in fewer layers). In a separate bowl, heat 300 ml of water with brown and vanilla sugar until it dissolves. If we use vanilla from a pod, simply cut the pod in half, remove the seeds and add the whole thing to the syrup. You can also add your favorite spices there - cinnamon, cloves, star anise, ginger and so on. Pour the resulting syrup over the orange slices. And we begin to cook them exclusively over low heat for about 1.5-2 hours - until the orange peel becomes almost transparent, well saturated with sugar syrup. If the syrup evaporates during the process, it’s okay, just add a little more water. But as a result, there will practically be none left. Turn your oranges over a couple of times so that they are soaked on all sides. And watch the ones on the bottom so they don’t burn. In general, they do not require close attention - just look occasionally.

We carefully take out the mugs, let the liquid drain a little and place them on a baking sheet lined with cooking foil. We put the baking sheet into the oven to dry our miracle circles a little at a temperature of 90-100ºC, 20-25 minutes is enough. Be careful not to burn the oranges!

Let the oranges cool. By and large, at this moment we already have a full-fledged dessert ready - oranges in caramel! They are already very tasty in themselves and can not only be eaten with coffee or tea, but also used as a filling for a variety of baked goods...

But, as you understand, we don’t stop there! Melt the dark chocolate in a water bath or in the microwave (you can use both milk and white, but the combination of dark chocolate and sweet orange creates an incredible explosion of flavor). We cover the plate, tray or board with cling film so that later there will be no problems with scraping the oranges from the surface. Dip each orange slice halfway into chocolate and place on film. By the way, some people prefer to dip oranges completely, you can try both ways :)

Leave the circles for a while so that the chocolate hardens. The temptation to eat them early is great, but your patience will be rewarded! If you're in a hurry, you can put it in the refrigerator.

You can store such oranges in a cool, dry place, placing them in a tightly closed jar or container. They will easily last for a couple of weeks, I haven’t tried it longer - they are always eaten faster.

I am sure that if you spend your time on this small culinary feat, you will not regret it at all - because the result will give you and your loved ones real pleasure! I’ll just add that my entire apartment was filled with the wonderful aroma of sweet oranges for a couple of days...

Eh, it’s a shame, I didn’t get the oranges... I wanted to surprise my child at school for the holiday and failed. I bought food for the whole class, but now I realized that the oranges should have been small and thin-skinned. Half of my oranges don’t look very good, too wet, but I want more crust. Although I dried them for about 40 minutes. The most interesting thing is that on the Internet many people also get ugly ones, but people praise them)) I don’t know, the aesthetic side is important to me. Caramelized Oranges: Brown Sugar Recipe

To prepare this dessert you will need the following ingredients:

  • medium-sized oranges - 1 kilogram;
  • brown sugar - 400 grams;
  • water - half a glass.

Wash the fruits and cut them into slices no more than half a centimeter wide. For the process itself we will need a deep frying pan. If you don't know how to caramelize oranges, we'll give you detailed instructions. Spread a layer of brown sugar over the bottom of the pan, then add a layer of oranges. Let's alternate the sequence again. Sprinkle the second layer of oranges again

Now all this fruit and sugar splendor needs to be filled with water. Spread the water evenly around the edges of the pan. Turn on the gas and simmer the dessert under the lid over moderate heat for two hours. Don't forget to check the state of caramelization. If it seems to you that the water has completely boiled away, you can add a little liquid. After the cooking time has expired, remove the circles with a slotted spoon and place them on a flat plate.

Caramelized oranges are suitable not only as an independent dessert for tea or coffee. They can be used to decorate homemade cakes and baked goods. Tip: if you want to get slices of equal thickness, use a vegetable slicer or slice grater.

How to make Caramelized Oranges

Prepare all ingredients.

Wash the oranges, then cut them into 5-8 mm circles.

To remove bitterness, pour boiling water over the oranges and leave for 5-10 minutes. Then drain the water.

At this time, prepare the syrup. Mix sugar and water, bring to a boil. Remove from stove.

Pour hot syrup over oranges. Add cinnamon, cloves and vanilla syrup for flavor. Simmer the oranges over low heat for 1-1.5 hours, covered. Stir occasionally.

Determine readiness by the softness and peel - it should become almost transparent.

Line a baking tray with foil or parchment. Place orange slices in one layer. Bake in an oven preheated to 150 degrees for 25-30 minutes.

Cooking method

First, cut the oranges into thin slices. Again, you can use a vegetable cutter or a slice attachment for small circles. It is better not to use them. If you don’t like the bitterness of the zest, you can pour boiling water over the prepared slices for a couple of minutes. This time is quite enough to give hot water its characteristic bitter taste. However, after this procedure, do not forget about thorough drying. Line a wide plate with a towel, place orange slices on it, and cover the top with the towel again.

It's time to prepare the syrup. To do this, take a deep saucepan or stewpan of the appropriate diameter. As you already know, you can use a frying pan for these purposes. Add sugar, vanillin, and water. Stir the resulting mixture with a wooden spoon or spatula. Heat until the sugar crystals are completely dissolved.

It's time to lay out the citrus slices. Cook the mixture over moderate heat for one and a half hours. Don't forget to check the condition of the bottom of the vessel with a wooden spoon. Also remember that the slices cannot simmer on one side, so turn them over using metal tongs. The readiness of oranges can be judged by the white layer between the zest and fruit pulp. If it becomes translucent, then it’s time to remove the slices from the vessel.

Caramelized Oranges Recipe

The dessert became incredibly popular, but then the chocolatier added another drop of melted chocolate and the delicacy literally “blew up” the world. Why are we worse? Let's try to make both recipes and choose what exactly we will eat today and what can be served for a large family tea party.

Advice! During the preparation of the dessert, an incredibly aromatic syrup remains, which can be used as an additive to tea, porridge or for soaking biscuits.

So, caramelized oranges, what you need:

  • 5 medium oranges;
  • 500 gr. regular sugar;
  • 2 tbsp. water.

How to cook:

1. Wash the fruits, scald and wipe dry;

2. Cut crosswise into circles 5-6 mm thick;

3. Pour water into a saucepan, place all the rounds of fruit, put on fire and boil for exactly 2 minutes to remove bitterness from the skin;

4. Strain the water, place the slices on a napkin and blot off excess moisture;

5. Pour sugar into the same bowl, add water and cook the syrup, stirring it constantly;

6. Place the slices in the syrup, reduce the heat and cook slowly, turning the slices occasionally, and boil for 2 hours.

All that remains is to line a large baking sheet with foil or parchment, place the slices boiled in syrup on it and dry in the oven at 100C for about 20 minutes. The caramelized orange is ready! Now eat dessert and make a batch of caramelized chocolate covered oranges.

How to make caramel oranges

Caramel fruits are more like candied fruits. They are boiled in sugar syrup and then dried in the oven. Due to this they become hard and crispy. Let’s present the recipe step by step on how to prepare such delicacies.

Ingredients:

  • 6 medium oranges;
  • 0.5 kg granulated sugar;
  • 0.3 l of water;
  • 1 cinnamon stick;
  • a few vanilla stars.

Cooking method:

  1. It's all about the oranges. You will need small or medium fruits. If you take large ones, then the cut thickness should be greater, otherwise the fruit circles may become deformed in the process. And it will take longer to dry. Rinse the oranges well and dry with a paper towel.
  2. Next they need to be cut. In rings or half rings, as you wish, the width of each is no more than 1 cm, but better up to 8 mm, if possible.
  3. Place the fruit slices in a saucepan and pour boiling water over them. Boiling water will remove all the bitterness from the orange zest.
  4. Prepare the syrup. The required portion of sugar is poured with water, exactly 300 ml. if there is more water, the fruits will simply boil in sweet water.
  5. Place future candied fruits, cinnamon and vanilla into boiling syrup. Reduce heat and simmer with the lid closed for about 2 hours. The fruit must be stirred during cooking. This is done carefully so as not to damage the integrity.
  6. Readiness is determined by the transparency of the zest.
  7. Cover the oven tray with foil or parchment and place the orange slices on top.
  8. Preheat the oven to 90-100 degrees. Place a baking sheet in it and bake for 25 minutes. If you add a little time, the oranges will become truly caramel and acquire a brownish color.

Caramelized oranges in chocolate

Hello everyone) As I wrote here before, I like to cook on the weekends with feeling, with sense ☺️ And then soon there will be a holiday: there is much more work for the soul) So, in addition to my liqueurs-tinctures, I do the same as a gift and such beauty (a kind girl Vera from a neighboring community shared the recipe).


Next weekend I will finish some more things and pack up the packaging - but more on that later.

So, the recipe (I have the proportions for 7 pieces of not very large oranges):

1. Place a pot of water on the fire and bring to a boil.

2. At this time, thoroughly wash the oranges, cut off the butts and cut them into 0.5 cm thick rounds. Thicker ones can be bitter, thinner ones they fall apart in the middle.

3. Turn off the pan with water and put all the orange mugs in there at once for 3-4 minutes.

4. At this time, put pan No. 2 on the fire and make syrup: 300 ml of water + 600 g of sugar, pour into the pan, put on the fire to dissolve the sugar. (I also added a bag of vanilla sugar + black pepper + star anise + cinnamon stick).

5. Our oranges were first taken out of the pan and laid out on paper towels on the table to drain with plain water.

6. Place the orange mugs into pan No. 2. And here we put it on the slowest heat and cook and simmer them in syrup for about 1.5-2 hours. Don't be afraid, they won't dissolve or become watery - on the contrary, they will be saturated with syrup. Cook them until their orange skin becomes slightly transparent.

7. We take our syruped mugs out onto the wire rack (I put a baking sheet with a wire rack on it without paper), let the syrup drain so that the sugar doesn’t drip in the oven and the sugar doesn’t burn.

8. At this time, heat the oven, I put it on the lowest heat, for me it’s 180 degrees. Place the rack with the oranges there and bake them for about 20-25 minutes. Here for the first time I constantly turned on the light and watched so that the round things didn’t start to burn. The second and subsequent times I simply set the timer for 25 minutes.

9. Take out and cool. My circles of 7 oranges required a double approach in baking: that is, I baked them on a wire rack in two batches. If you have two grates, things will go faster)

10. Already at this stage it is magic: tasty, slightly like marmalade, baked, aromatic - the aroma for the whole house throughout the entire process of witchcraft).

But I didn’t stop, let’s move on:

11. Place a ladle of water on the fire, place a deep plate on it (the main thing is that the bottom of the plate does not touch the water - it will burst!). We break two bars of any chocolate into a plate (I have Russia bitter 72% and Russia milk with hazelnuts) and melt it. In the process, I added 3-4 tablespoons of 20% cream and Vana Tallinn liqueur for a brighter taste.

12. Dip the cooled orange slices in chocolate (I sprinkled seeds, peanuts and hazelnuts on top - whatever I had in the house) and place them on a silicone mat. Or on a board covered with baking paper to prevent sticking.

13. Cool. Not in the refrigerator. Don't rush it - let the houses freeze calmly. This way our glaze will hold on stronger and will not be brittle.

ALL!

Don't be intimidated by the recipe: as always, it took me longer to type than it took to make it all! After the oranges, I put 3 mugs of lemons in the same syrup. We just eat lemons, without chocolate - it tastes better than the most delicious sweets! Especially with coffee and on Sunday morning!)

Ps. I boil the oranges in syrup in a wide saucepan. Don't worry if there isn't enough water to cover all the oranges. First, you calmly add water and add more sugar, keeping the proportions 1:2. Secondly, I cover with a lid, the water does not evaporate and still soaks the oranges. And finally, I check them periodically: I stir them and pour syrup from a ladle on top.
