Yeast-free corn bread

Ingredients:

  • Warm milk - 300 ml;

  • Premium wheat flour - 350 gr.;
  • Corn flour - 150 gr.;
  • Baking powder - 3 tsp.

The bread must be put on the “Quick” program. With this program, bread is baked in 1.5 hours. If desired, you can add 2 teaspoons of dry popcorn kernels.

  • Dry malt - 2.5 tbsp. l.;
  • Ground coriander - 1 tbsp. l.;
  • Warm water - 300 ml.

There is a special program for this bread - “Borodinsky”. Baking time - 4.5 hours. Malt needs to be scalded in 100 ml. boiling water, stir well and cool, then add according to the recipe. An hour before the bread is ready, you can sprinkle the top of the dough with whole coriander grains.

Yeast corn bread

Ingredients:

  • Warm milk - 300 ml;
  • Chicken egg - 2 pcs.;
  • Vegetable oil - 1.5 tbsp. l.;
  • Salt - 1.5 tsp;
  • Premium wheat flour - 350 gr.;
  • Corn flour - 150 gr.;
  • Sugar - 2.5 tbsp;
  • Dry yeast - 1 tsp.

We bake corn bread according to the “Basic” program. Baking time: 3 hours. Unlike cornbread without yeast, yeasted cornbread is soft, airy, and has a milky taste.

Gray wheat bread

Gray bread made from premium wheat flour with the addition of whole grain wheat flour. Recipe for 800 g.

  • Dry yeast - 1.5 tsp;

Bread baking program - “Basic”. I must say, I bake this bread more often than all the others, because... I try to stick to a healthy diet. The benefits of whole grain flour and bread made from it are extremely enormous compared to premium flour. This flour is produced by grinding the grains together with the shell, which allows you to preserve all the vitamins, minerals, macro- and microelements so necessary for the body. Because Since this is coarse flour, the bread obtained from it is not particularly fluffy and airy, even thanks to the yeast. But still the bread turns out extremely tasty. General principles for preparing white bread in a bread machine

The main thing when working with a bread machine is to follow the recipe not only in the quantity of ingredients, but also in the sequence of their addition. The basic ingredients of simple white bread are wheat flour, yeast, water, salt, sugar, vegetable oil. You need to place them in the bread machine tray correctly: all the liquids go first, followed by the dry ingredients.

Before placing dough products in the tray, you can grease it with butter, then the crust will be especially beautiful and fragrant. Then the procedure looks like this: pour water, vegetable oil, add salt and sugar, pour out the flour in a heap, make a small depression in it, put dry yeast in it.

Bread machine recipes typically use instant dry yeast (fast-acting). They must be added to dry flour that is not covered with liquid. You should also not allow yeast to mix with salt, as this will prevent the bread from rising well.

To make white bread especially fluffy, sift the flour through a sieve before placing it in the bread machine.

If a recipe calls for butter, it must be melted or cut into very small pieces. Beat the eggs with a fork before adding.

Water for kneading dough is usually used at room temperature. But for some types of bread, for example, for quick white bread, the water needs to be heated to 40-50 degrees. You can use milk instead of water, this improves the taste of the bread and the color of the crust.

Bread machines allow you to bake products with various additives. You can add raisins or candied fruits, herbs, garlic, pieces of chopped olives, finely chopped nuts, seeds, poppy seeds, grated carrots or cheese. All these ingredients are added after the main dough kneading, about half an hour after the start of the program. The device usually signals that additives can be added with an audible signal.

White bread is baked using several programs. Bread makers from different manufacturers have their own names. But the essence is the same. There is a “Basic” mode, the entire process of kneading, fermenting and baking takes about three hours or a little more. In the “Fast” (or “Ultra-Fast”) mode, you can get ready-made bread in just one and a half to two hours, depending on the model. There are separate modes for baking sweet and French bread. You can also choose the loaf size and desired crust color, from light to dark.

When working with a bread machine, special cups and spoons are used to measure ingredients; they are included. Most often, the measuring cup is designed to hold 230-240 ml of water, 140 grams of white flour or 125 grams of sifted white flour. If your bread machine has a different measuring cup, for example, 200 or 300 ml, then you can recalculate and use the recipe not in cups, but in grams and milliliters. But measuring teaspoons and tablespoons in bread machines, as a rule, correspond to ordinary ones, but without a slide.

Important! When the dough is rising in the bread machine or baking has already begun, do not open the lid, otherwise the bread may settle.

  • Wheat flour, type 550 - 200 gr / 300 gr
  • Rye flour, type 812 – 130 g / 200 g
  • Salt - 6.5 g. / 10 gr.
  • Dry yeast - 1 tsp. / 1.5 tsp.
