There are many options - butter, pizza, etc., but this is a universal option for you:

  • Fresh pressed yeast 50 g
  • Margarine 200 g
  • Granulated sugar 4 tbsp. l.
  • Salt - a pinch
  • Milk – 1 glass 250 ml
  • Flour is about 0.5 kg - maybe more...

We prepare the dough without dough, simply mixing the ingredients together. Don't forget to sift the flour and use warm ingredients, especially milk, since we are still working with yeast dough.

Then you need to place it in a container with warm water, you can put it in a bag or wrap it in a rag, it will first go to the bottom, but when it’s ready, it will float up. It should take no more than 30 minutes. You can do it in the usual way in a warm place for 20-30 minutes.

Leftover dough can be refrigerated and will keep for 3-4 days. Bake your products at 180 degrees.

Both the dough and the baked goods made from it turn out airy and very tasty. There is nothing complicated in preparing this dough, and it cooks quite quickly.

  1. First, prepare a package of butter, you may even need 1.5 packages, since you need to use at least 150 g (you can use margarine instead), as well as 2 chicken eggs. All products cannot be cold; they need to be brought to at least the same temperature as in the room.
  2. Meanwhile, heat 500 ml of milk on the stove and dissolve 2 tbsp in it. sugar with the contents of one pack of dry yeast. Please note that the milk should not boil, it just needs to be hot. If you get a foamy milk mass, then you did everything right. The dough is ready.
  3. Break 2 eggs and beat their contents with a whisk or fork. After this, pour everything into the dough.
  4. Salt the dough - add 1 tsp. salt.
  5. Grate the already warm butter or margarine on a coarse grater.
  6. Add 1 kg of flour (it needs to be sifted). At this stage, you can start making the dough itself. Do everything according to technology so that it is elastic, but at the same time soft and not dense.
  7. Pour very cold water into a deep and wide container, and then lower the resulting dough into it so that it sinks in the literal sense of the word.
  8. The dough will slowly rise up - within 20 minutes it should be completely on the surface of the water. Perhaps this will happen earlier. As soon as you see the dough on the surface of the water, take it out, blot it with a napkin and set it aside for 10-15 minutes.
  9. After this, the dough can already be used to prepare various baked goods.

with live yeast

  1. Grind 20 g of live yeast with 15 g of sugar. You must ensure that a homogeneous mass is formed.
  2. Heat 250 ml of milk and then add 6 tbsp. flour. Stir everything thoroughly so that the flour dissolves in the milk so that no lumps form.
  3. Place the warm milk and flour in a place where the temperature is always kept warm. Let the dough cook for a quarter of an hour.
  4. Turn into a homogeneous mass by whipping a stick of butter (again, you can use a cheaper analogue, margarine, instead of this product) with 15 g of salt and 1 egg.
  5. Mix the yeast mixture with the milk mixture, mix everything, and then add 350 g of flour.
  6. Knead the dough with your hands until it becomes elastic.
  7. The resulting dough should be immersed in water, which should have an extremely low temperature (it’s good if there is ice in such water), and then take it out after it floats, blot it, and let it rest. The dough can then be used to form buns and other baked goods.

  1. Place 25 g packets of fresh yeast, 1 tbsp. sugar, the same amount of flour. Mix everything, pour ½ glass of water or milk. This is how the dough is mixed, which must be allowed to brew for 40 minutes.
  2. During this time, it is necessary to prepare a cream or margarine preparation - this is done simply by melting the product in a water bath. You only need 100 g of either butter or margarine.
  3. Next, you will need to gradually add 750 g of flour into the finished dough, which it is advisable to sift with a sieve, a couple of eggs, 150 g of high-fat sour cream and salt - this ingredient is added to taste. The dough must be kneaded by hand, and then melted margarine or butter is added to it.
  4. Place the resulting dough in the same way as in previous recipes to the bottom of a bucket of ice water and wait until it floats to the surface.
  5. Once the dough can be removed from the water, blot it, squeeze it out and knead again.

  1. Grind 20 g of fresh yeast with 15 g of sugar. You need to achieve a consistency in which there are no lumps or any impurities.

  3. During this time, beat 1 egg, salt the resulting mixture to taste, and immediately add 100 g of butter (it should be slightly melted).
  4. Stir in the remaining amount of flour (the total according to the recipe should be 0.5 kg). You need to make the dough so that it does not stick to your hands, but at the same time is soft.
  5. Dip the resulting dough into ice water and wait until it floats. This usually happens after 10 minutes. Please note that if the dough is kneaded well, it will rise as quickly as possible.
  6. The dough is removed from the ice water and blotted (for this you can use either a napkin or a towel). Culinary experts recommend leaving the finished dough, for example, close to the stove, because the temperature is always high in this place.

The “Drowned Man” dough can be kneaded without using eggs. This applies to those who do not like adding animal products to baked goods.

So what do you need? To prepare this dough:

  1. Dilute 2 tbsp in 1 glass of non-cold water (room temperature is the best option). dry yeast. Add 4 tsp here. sugar, mix everything and leave the prepared yeast batch for 30 minutes in a place where the temperature is always kept warm.
  2. After half an hour, add 4 tbsp to the dough. vegetable oil (if it is possible to use olive oil, then it is preferable), 4 tsp. salt, 500 ml warm water and 8 cups flour.

Ingredients:

Gather the dough into a homogeneous ball.

Pour very cold water into a deep and spacious pan and carefully lower the dough; it will sink to the bottom under its own weight.

Let it sit until your dough floats to the surface, about 30-40 minutes.

Place the dough on a lightly floured work surface. Wipe a little with a paper towel and knead well. Do not add additional flour under any circumstances; it should remain quite sticky.

Place the finished dough on a well-floured table, divide into two halves, one of which is slightly larger.

Roll out most of it into a circle approximately 0.5 cm thick and place in a ring or mold with a diameter of 24-26 cm, without cutting the edges.

Filling:

Preheat the oven to 180C.

And only after the dough is completely prepared, start filling. The fact is that when the lemons lie rolled for a while, they give a lot of juice, which will be unnecessary in the pie.

Wash the lemons and cut into 4 parts. Pass them through a meat grinder. You cannot use a blender! You will end up with too runny puree.

Add sugar and stir.

And immediately place it on the bottom of the pie.

Cut the overhanging dough so that it rises about 1-1.5 cm above the lemon filling.

Roll out the second part of the dough. Cut out a circle with a diameter slightly larger than the diameter of your mold.

Lightly brush the edges of the cut dough on the pie with beaten egg and place a circle of dough that will cover the pie. Make a hole in the center with a knife or scissors. Decorate your pie with the remaining dough. Brush the entire surface with beaten egg.

Place the pan in the oven for 30 minutes or until the surface is a nice golden hue.

Let the finished cake rest in the pan for 10-15 minutes, then remove the sides or ring.
