The waffles were made on bulky Soviet electronic waffle irons, and the filling was selected from everything that could be lying around in the refrigerator or on the kitchen shelf.
As a result, with the proper approach, real masterpieces of culinary art , and neighbors, friends and relatives from all over the area flocked to the owners of the establishment for tea and waffles.
These are indeed very warm memories, so sometimes it is sad to feel that this cozy time has irrevocably gone into a nostalgic oasis. But is it? After all, you probably didn’t throw away that same madeinUSSR waffle making machine; it’s probably still lying somewhere in a closet, without losing its functionality at all - but of course, it’s made to last...
Advantages of the Soviet waffle iron
The Soviet waffle iron is an appliance that in many homes is undeservedly relegated to the back shelf of the kitchen cabinet. Meanwhile, this baking gadget comes from the USSR:
- bakes dough evenly due to shallow cells;
- it is quite safe to use, so the culinary experiments of many children in the 70-80s began with waffles;
- washes well;
- compact.
Modern devices for baking waffles differ only in design, the presence of a non-stick coating, and also in the fact that they are electric. In Soviet times, the first waffle irons had to be heated on the stove, and only a few years later devices with power supply appeared.
A simple recipe for delicious waffles
For the first steps in making waffles, it is better to use a simple and cheap recipe for the delicacy. You can bring it to life in a waffle iron, which is heated on the stove.
Ingredients:
- 3 eggs;
- 400 g sifted wheat flour;
- 1 tbsp. l. homemade sour cream;
- 1 tbsp. white or brown sugar;
- 140 g low-fat margarine; 1 tsp. vanillin;
- 1 tsp. baking soda;
- 30 g fatty butter.
Preparation:
- Heat the margarine in a water bath until it becomes loose.
- Mix sugar with vanilla powder and beat in eggs. Shake with a whisk.
- Separately mix sour cream and soda.
- In a deep bowl, combine the three mixtures and add flour in small portions, constantly stirring with a whisk.
- Heat the waffle iron on the stove.
- Lubricate the surface of the device with oil. This only needs to be done before loading the test for the first time.
- Pour 1 tbsp. l. dough onto the device, close it and after 1 minute take out a delicious waffle.
If you are planning to make waffles with filling, then roll the finished form into a tube. Just keep in mind that to prepare just such products, you shouldn’t fry the dough too much, otherwise you won’t be able to wrap the cone. Literally 1-1.5 minutes in a closed waffle iron will be quite enough.
Another delicious waffle recipe for a Soviet gas waffle iron suggests using cream instead of sour cream. The baked goods are more airy.
Ingredients:
- 320 g white sugar;
- 130 g butter margarine;
- 1/3 tbsp. heavy cream;
- 120 g sifted flour;
- 4 eggs;
- 1 tsp. vanillin;
- 30 g butter;
- boiled condensed milk for filling.
Preparation:
- Mix margarine melted in a water bath with cream.
- Beat eggs with white sugar and vanilla.
- Combine the products, beat with a whisk and gradually add flour.
- Heat the waffle iron on the stove and grease it with oil.
- Pour the dough, level it over the surface and close the device.
- After 1.5 minutes, open the waffle iron, coat the cake with condensed milk, pry up the edge of the waffle with a fork and roll it into a tube. A delicious treat for tea is ready.
Thin waffles with cream
Ingredients:
For the test:
- Margarine 65-72% 100 gr.
- Eggs 3 pcs.
- Sugar 125 gr.
- Flour 250 gr.
- Vanillin.
- For cream:
- Sugar 150 gr
- Cream 33% 250 gr.
Method for preparing the dough: Melt the margarine. Cool. Beat eggs and sugar. Combine both mixtures. Add flour gradually. Add vanilla.
Method for preparing the cream:
Whip the chilled cream with sugar until sour cream thickens.
Baking method:
Distribute the finished dough evenly over the heated surface of the waffle iron and bake until done. Roll the still hot cakes into tubes or envelopes. Fill with cream when cool.
Soft baked goods in a waffle iron
To make the waffles soft and fluffy, there is no need to change the consistency of the flour mixture. The secret lies in the set of ingredients for cooking.
Ingredients:
- 250 g butter or margarine;
- 5 eggs;
- 700 ml homemade milk;
- 1 tbsp. white sugar;
- 400 g flour;
- 1 tsp. baking soda;
- 1 tsp. baking mixture;
- ½ tsp. vanilla.
Preparation:
- Soften the butter in a steam bath.
- Add white sugar and shake.
- Beat the eggs into the mixture and pour in the milk.
- Add flour, vanilla sugar, baking powder and soda, constantly stirring the dough with a whisk. The result should be the consistency of a cream.
- Heat up the waffle iron, coat the first waffle with oil and pour the dough onto the surface of the device.
- Close the doors and time for 2 minutes. The waffle is ready.
These pastries can be piled up and served with jam, cream or honey. If you have the desire and time, then make straws. After removing each waffle from the device, roll it into a cone - then the filling will look more aesthetically pleasing.
Belgian waffles cooked with soda are very tasty. This ingredient makes baked goods slightly porous.
Ingredients:
- 250 g sifted flour;
- 150 ml highly carbonated mineral water;
- 250 ml fat milk;
- 3 eggs;
- 2/3 tbsp. Sahara;
- 130 g softened butter;
- 1 tsp. table salt;
- 1 tsp. vanilla;
- ½ tsp. baking mixture or baking powder.
Preparation:
- Grind the prepared butter with sugar, table salt, vanilla and eggs.
- Combine flour with baking powder, pour milk into the mixture, stir.
- Add butter, sugar and soda to the dough.
- Bake waffles on a preheated appliance for about 2 minutes.
How to bake?
An electric waffle iron for soft waffles is significantly different from a device designed for baking straws. Its forms are more pronounced and also have a certain depth.
Scoop the dough with a large spoon and place it in the center of the bottom of the unit. Covering it with a lid, bake the waffles until they are browned on both sides. To prevent the dessert from sticking, it is advisable to grease the mold with vegetable oil before preparing it for the first time.
This delicacy turns out to be very tender, fluffy and soft. It should be served with maple syrup or chocolate icing.
Crispy waffles: you'll lick your fingers!
Crispy waffles are prepared in a Soviet waffle iron with the addition of starch.
Ingredients:
- 200 g of sifted wheat flour;
- 1 tbsp. white sugar;
- 2 chicken eggs;
- 1.5 tbsp. l. potato starch;
- ½ tbsp. warm filtered water;
- 130 g melted butter;
- ¼ tsp. cinnamon powder.
Preparation:
- Beat the yolks and whites into a deep wide bowl, add granulated sugar and beat the mixture until foamy.
- Pour in the butter, previously melted by steaming, add the sifted flour, cinnamon and starch, mix well.
- Add water, beat lightly and let the dough rise for 30 minutes.
- Heat up the waffle iron, grease it with oil and pour in 1 tbsp. l. test on both surfaces.
- After 1.5 minutes, pry the waffle with a fork and roll it up into a cone.
These waffles are very tasty even without filling, but if desired, the tubes can be filled with curd mass, thick jam or condensed milk.
What could be more harmonious than a combination of crispy waffles and savory filling as an aperitif? Moreover, preparing such a snack is not at all difficult.

- Add flour and baking powder to the milk mixture and mix well.
- Melt the butter in a steam bath.
- Pour oil into the dough and add protein.
- Pour 1 tbsp onto a preheated waffle iron. l. dough, close the lid and bake for 1 minute.
- Roll the hot waffle into a tube.
- Fill the cooled pieces to your taste.
Viennese waffles: what could be tastier?
Viennese pastries have a centuries-old reputation for exquisite desserts. And waffles are an integral part of this tradition.
Ingredients:
- 2 tbsp. flour;
- 40 g melted homemade butter;
- 2 tbsp. fat milk;
- ¼ tbsp. brown sugar;
- 3 chicken eggs;
- 1 tsp. vanillin; 1 tsp. table salt;
- 1 tsp. baking soda.
Preparation:
- Carefully break the eggs into a deep, wide container, separating the whites and yolks.
- Pour sugar and vanilla into the yolks and beat until foamy.
- Pour milk into the mixture in a thin stream, then oil. Whisk the mixed products.
- Separately mix the sifted flour, baking soda and table salt.
- Make a “well” in the flour mixture and pour in the milk mixture, mix.
- Beat the whites and pour them into the dough.
- Pour the dough onto a preheated and greased waffle iron, let it stand for 2 minutes and remove the finished baked goods.
Viennese waffles can be filled with cream and sprinkled with cocoa powder.
Yeast Dutch waffles with caramel
Waffles cooked with yeast have an amazing aroma.
Ingredients:
- 500 g flour;
- 300 g homemade fatty butter;
- 50 g hard butter;
- 1 tbsp. brown sugar;
- ½ tbsp. store-bought or homemade milk;
- 1 tbsp. l. powdered yeast;
- 1 egg;
- 250 ml molasses;
- 1 tsp. cinnamon.
Preparation:
- Mix flour, butter, heated in a water bath, and ½ tbsp. Sahara.
- Add yeast, egg and milk, mix.
- Leave the dough for 35-40 minutes.
- Let's start filling. Mix the remaining sugar and molasses.
- Add a piece of butter and cinnamon. Mix this mass thoroughly.
- Divide the dough into equal pieces in the form of balls.
- Fry each piece in a preheated waffle iron until golden brown.
- We cut the finished waffle into halves, spread it with filling and form peculiar nuts. Dessert is ready.
Thin waffles made with kefir
Ingredients:
- Eggs 3 pcs.
- Kefir 500 ml.
- Flour 250 gr.
- Sugar 250 gr.
- Butter 125 gr.
- Vanillin.
Cooking method:
Melt the butter and cool. Add sugar and eggs. Whisk. Add flour and bring everything until smooth. Pour in kefir at room temperature. Add vanilla at the very end.
Baking method: Bake the cakes for 3-4 minutes until fully cooked. Roll the finished cake into a tube or envelope while it is hot.
