Ingredients:

  • 200 g of sifted wheat flour;
  • 2 tsp with a small pile of dry instant yeast;

  • 90 ml water at room temperature.

  • 4 tbsp. l. chopped tomatoes in their own juice without skin;

  • 1 tsp dried basil;
  • 2 tsp olive oil.

For filling:

  • 200 g ham;
  • 100 g hard cheese.

For decoration:

  • 1 yolk;
  • 1 tsp dried basil.

How to make pizza calzone:

Prepare the dough. Combine flour, butter, salt, sugar and yeast.

Mix with a mixer and add water.

Mix again with a mixer.

Gather the dough into a ball.

And knead well with your hands - about 5 minutes. The dough will become soft, homogeneous, and will not stick to your hands. Place the dough in a container greased with a small amount of oil, then turn it over so that the oil ends up on the other surface of the dough.

Cover the container with cling film or a towel and place in a warm place to proof. In 40-50 minutes the dough should double in volume.

Divide the dough into 3 equal parts.

Place each piece on a floured work surface or silicone mat. Roll out into a circle with a diameter of 18-20 cm. If the circle is not very even, then it can be cut along the contour of a suitable plate.

Mix all the ingredients for the sauce. It should be quite thick.

Spread the sauce onto half of the dough circle, leaving 1.5 -2 cm at the edges.

Place diced ham and grated cheese on top of the sauce.

Cover the filling with the second half of the dough and pinch the edges well.

We carry out the same actions with the remaining pieces of dough. We should have 3 Calzone pizzas. Place the pizzas on a baking sheet lined with baking paper or a silicone mat. Brush the top with yolk and sprinkle with basil.

Place the Calzone pizza in the oven, preheated to 220-230 degrees for 8-10 minutes. Our dough is quite thin and will cook quickly. Make sure the top of the pizza doesn't burn.

  • 1.5 cups white flour;
  • 7 g dry yeast (1 sachet);
  • 2/3 cup warm water;
  • 3 tbsp. spoons of olive oil;
  • a pinch of salt.

For filling

  • 200 g mascarpone cheese (room temperature);
  • 8 slices salami;
  • 8 slices of ham;
  • 8 slices jerky;
  • seasonings - to taste.

Preparation

To make the dough, place the flour, yeast and salt in a large bowl, make a well in the center, then pour in the water and 1 tablespoon of oil.

Using a wooden spoon, mix all ingredients together to form a moist, soft dough.

Turn the dough out onto a well-floured surface and knead it by hand for about 5 minutes, or until the dough ball is smooth and elastic.

Place it in an oiled bowl, brush the top with a little oil and cover with cling film.

Place the bowl in a warm place for 25-30 minutes, then turn the dough out onto a well-floured surface and divide it into two equal halves.

Using your hands, press each lump in the center, and press on all sides until you have 2 circles about 20-25 cm in diameter.

Place one circle on a greased baking tray (or lined with baking paper). Spread the soft cheese over the surface of the crust using the back of a tablespoon (or sprinkle with grated cheese if you have hard cheese). Sprinkle everything with pepper (you can use Italian herb seasoning if desired).

On top of the cheese, arrange the salami, ham and cured meat evenly in a single layer (so that the pieces overlap each other).

Carefully lift the second dough circle and place it on top of the bottom one. Press the edges together so that the filling doesn't show through anywhere. Pinch the edges with a “rope seam” - as in the photo. Then, using a pastry brush, brush the surface of the covered pizza with oil.

While the dough is rising, prepare the pizza filling. Cut the chicken fillet into small slices and fry it in a frying pan with olive oil. Ingredients:

  • yeast dough;
  • smoked chicken (fillet) – 265 g;
  • potatoes – 495 g;
  • – 95 ​​g;
  • sour cream – 95 g;
  • garlic cloves – 3-4 pcs.;

Place 1/4 of the filling on each half of the “dough circle” (leave 2.5 cm empty around the edges).

Cover the filling with the free portion of the dough.
