Chicken meatball soup
This recipe is very easy to prepare and incredibly nutritious. It contains a whole range of important and beneficial substances for the body. This dish has no equal as a hot lunch.
Ingredients:
- broth (meat) – 1 l.;
- minced meat (chicken) – 400 gr.;
- onion – 1 pc.;
- carrots – 1 pc.;
- potatoes – 5 pcs.;
- pepper (Bulgarian) – 1-2 pcs.;
- egg – 1 pc.;
- oil (vegetable) – 1-2 tbsp. l.;
- pepper - to taste
- greens - to taste;
- salt - to taste.
Preparation:
Prepare vegetables for dressing. Finely chop the bell pepper and onion, grate the carrots on a coarse grater, and cut the potatoes into small cubes.
Fry the onion in a frying pan until golden brown. Place half the onion on a plate. Add carrots to the pan, and after 5 minutes – bell pepper. Fry for another 3 minutes and remove from heat.
Place the minced meat in a bowl and add to it: an egg, fried onion from a saucer, chopped herbs, spices and salt to taste.
Using a teaspoon and wet hands in water, form balls of minced chicken.
Bring the prepared broth to a boil. Add meatballs and cook for about 5 minutes. Add potatoes cut into small cubes and continue cooking for about 10 minutes.
Season the chicken meatball soup with the previously prepared dressing. Boil with the lid closed for 5 minutes over low heat.
Let our soup steep for about 30 minutes so that it becomes more flavorful. Afterwards, you can serve it to the table.

How to choose ingredients
- It is best to prepare soup from homemade or farm chicken . The quality of such meat is much better than store-bought counterparts, but if you do not have the opportunity to cook with poultry, then choose high-quality chicken in the store. Good meat has a shiny, slightly moist surface without stickiness, and a neutral aroma. A rotten smell, as well as the presence of artificial and chemical fragrances, should alert you, because this means that a dishonest seller was trying to hide the staleness of the meat.
- A high-quality chicken carcass should not have bruises, scratches or blood clots . The skin of a young bird is always pale pink, with yellowish fat, and the yellow color indicates that this is a bird 2 years old or older. A good chicken should not be too big, because this means that it was fed food with added growth stimulants and hormones that are harmful to the human body.
- For the soup, choose any vermicelli to your liking, but the best choice is spider web vermicelli . This product cooks quickly and goes well with any soups and broths. High-quality vermicelli should be dry and crumbly, with a pleasant flour aroma without the smell of dust and mold.
Preparation
- Wash 300-400 g of chicken fillet, separate from the bone using a knife. You should have 2 briskets and 1 bone. Cut the meat into small pieces and grind in a meat grinder or blender into homogeneous minced meat.
- Fill the pan with 2 liters of water, add the bone and place on low heat to cook the broth. Don't forget to remove the foam!
- Wash 1 bunch of parsley thoroughly. Fill a saucepan with 2 liters of water, add the bone, chop and mix with minced meat until smooth.
- Add 1 egg to the minced meat for viscosity, 1 tbsp. l. semolina and mix thoroughly. Let the semolina swell for 5-10 minutes, then pepper and salt the minced meat to taste.
Adding semolina will make the minced meat more tender and will prevent the meat juice from escaping into the water during cooking.
- Wet your hands in cold water and form small round meatballs. Place the formed meatballs in the refrigerator for 5-10 minutes to allow the minced meat to settle.
- Peel and finely chop 1 onion. Peel and grate 1 large carrot and fry along with onion for 1 tbsp. l. any vegetable oil.
- Peel and cut 3 medium-sized potatoes into small cubes.
- Remove the bone from the broth and salt the water to taste. Add the fried onions, carrots and potatoes to the soup, and carefully lower the meatballs into the slowly simmering broth. Cook for 15-20 minutes, depending on the size of the meatballs.
- Add 30 g of thin noodles to the soup, mix thoroughly and squeeze out 2 cloves of garlic for flavor. Cook the soup for another 5 minutes and then remove from heat. Ready!

Tips and tricks
- If you don't like vermicelli , and soup with meatballs and noodles is not suitable for you, then pasta can be replaced with rice and make a very tasty soup with meatballs and rice. Such a replacement has little effect on the taste of the finished dish, because vermicelli is added to the soup for satiety, and not for taste.
- If you want to significantly save time , then cook meatballs for future use. This semi-finished product easily tolerates freezing without losing its excellent taste! To do this, form the required number of meatballs, freeze them on a wooden cutting board or a special freezer tray at a temperature of at least -18°C, then place them in a bag and store them in the freezer for up to 6 months.

- vermicelli (small) – 2 tbsp. l.;
- loaf – 100 gr.;
- milk – 100 ml;
- bay leaf – 2 pcs.;
- oil (vegetable) – 2 tbsp. l.;
- pepper (allspice) - to taste;
- pepper (ground) - to taste;
- greens - to taste;
- salt - to taste.
Preparation:
Cut the carrots into strips. Chop half of the onion.
Fry carrots and onions in a frying pan with the addition of vegetable oil.
Soak the pulp of the loaf in milk.
Take 3 liters of water into a saucepan, add onions and carrots, cook over high heat until boiling.
After boiling, add salt, reduce the heat and continue cooking for about 15 minutes.
Peel and dice the potatoes and add them to the pan along with the bay leaf and allspice.

- fillet (chicken) – 600 gr.;
- rice – 200 gr.;
- potatoes – 5 pcs.;
- egg – 1 pc.;
- carrots – 1 pc.;

- flour – 2 tbsp. l.;
- oil (vegetable) – 2 tbsp. l.;
- pepper (ground) - to taste;
- bay leaf - to taste;

Preparation:
Rinse the chicken fillet under running water. Cut it into pieces. Pass the fillet and onion through a meat grinder.
The minced meat that we received from the meat grinder must be mixed and added salt and pepper. Add 1 egg to it and mix again.
Cut the potatoes into small cubes, add water and put on fire.
Rinse the rice several times until the water becomes clear.
After the pan with potatoes boils, remove the foam and add rice.
Let's make the soup dressing. To do this, we need to finely chop the onion and grate the carrots on a fine grater.
Fry onions and carrots in a frying pan with the addition of sunflower oil.
Let's prepare the meatballs. We wet our hands in water, take the minced meat and form small balls. Place on a surface to which the minced meat will not stick.
After the potatoes are almost ready, salt them and add the meatballs to the pan.
Add the soup dressing when the meatballs float to the surface. Let it simmer for another 3 minutes.
Throw the chopped herbs and a few bay leaves into the pan and remove the soup from the heat.

Ingredients:
- chicken – 1 pc.;
- parsley – 1 bunch;
- onion – 1 pc.;
- peas – 40 gr.;
- minced meat (chicken) – 400 gr.;
- garlic – 2 cloves;
- potatoes – 5 pcs.;
- noodles – 100 gr.;
- pepper - to taste;
- salt - to taste.
Preparation:
Place the pan with the chicken on the fire and let it boil. Remove the foam and reduce the heat. Add whole peeled onions, peas, parsley and salt to taste. Cook until the chicken is completely cooked. Pull out the chicken and onions to create chicken broth.
While the chicken was cooking, we prepared the meatballs. Add fried onions and chopped garlic to the minced meat and mix everything well. We made small meatballs.

Preparation:
Place minced meat, onion, parmesan, parsley, pepper and salt in a bowl and mix.
Make meatballs using a teaspoon and water.
To prepare 1 cup of tomato puree, you need to mix 2 tbsp. l. tomato paste with water.
Place the broth and tomato puree in a saucepan and put on fire. Cook for 5 minutes over low heat.
Add meatballs and pasta and continue cooking for about 15 minutes.
Remove soup from heat. Let it brew for 10 minutes.

Preparation:
Let's start with the meatballs. We make minced chicken breast using a meat grinder.
Separate the yolk from the white and add only the yolk to the minced meat.
Three onions and add to the minced meat, salt and mix.
We form small balls of minced meat and place them on the board.
To prepare the broth, we need to bring a small amount of water to a boil.
Cut potatoes, peppers and carrots into cubes.
After the water boils, add carrots, potatoes and half an onion. Cook covered for about 20 minutes.
Add the chopped pepper after the potatoes are half ready. Add the meatballs, reduce the heat and cook for about 5 minutes. At this time, chop the parsley.
