- potatoes (medium, not large) - 9-10 pieces;
- bacon (raw, chilled) - 300 grams;

- butter - 50 g;
- greens – 1 small bunch;
- sunflower oil - 1 teaspoon (or parchment paper);
- salt, pepper - optional.
Cooking sequence:
- The potatoes must be thoroughly washed, put in a saucepan, and simmered over medium heat without peeling them; the water should be slightly salted. Cook until done, but the main thing is not to overcook it so that it doesn’t start to fall apart when cut.
- While the potatoes are cooking, begin preparing the remaining ingredients.
- We cut the cheese into slices according to the amount of potatoes.
- Lightly salt the bacon on both sides (to taste, no salt required).
- Finely chop the greens.

The dish will require the following ingredients:
- Beef pulp – 1 kilogram;
- 500 ml meat broth;
- 70 grams of ghee;
- A little table salt and black pepper.
For filling:
- Dried porcini mushrooms – 4 pieces;
- 100 grams of green onions;
- 100 grams of ghee;
- Ham – 150 grams;
- 1 egg (white and yolk separately);
- Flour – 70 grams;
- Parsley – 100 grams;
- Ready mustard – 70 grams;
- Table salt and ground black pepper.
Preparation:
- Soak dried mushrooms in hot water for half an hour;
- Green onions should be finely chopped with a knife and fried in melted butter (50 grams);
- Place the flour in a frying pan, add 70 grams of melted butter and fry everything;
- Then cut the ham into thin bars or strips;
- Soaked mushrooms, stewed onions and finely chopped parsley are passed through a meat grinder into a cup. Add the water in which the mushrooms were soaked, mustard, yolk, fried flour, salt, ground pepper and mix. The filling is ready;
- Place the filling into the pre-prepared beef pulp and place pieces of ham in the middle;
- Then the meat is wrapped in a roll and tied with ordinary thread;
- Place the roll in the duck pot, add melted butter and fill everything with meat broth;
- Preheat the oven to 200 degrees and put on the duckling pan with the roll. It simmers for 2 hours. Then reduce the temperature to 160 and simmer for another 20 minutes;
- Then we take out the roll, wrap it in foil and put it back in the duckling with the broth. Place in the oven and simmer for 30 minutes;
- Afterwards we take out the meat and strain the sauce;
- At the end, the stuffed roll should be cut into pieces and placed on a flat plate.
Quail with prunes

- quail – 6 pcs;
- prunes – 300 g;
- garlic – 1 piece;
- dry red wine – 500 g;
- mayonnaise – 100 g;
- honey – 50 g;
