How to cook cottage cheese casserole
It will be useful for novice cooks to know how to cook cottage cheese casserole with semolina in the oven, because this dish has been familiar to us since childhood. Golden brown crust, delicate taste and melting consistency - all this distinguishes the right dessert from all the others, making it well-made and loved. If a child refuses cottage cheese in its pure form, then baked cottage cheese casserole with semolina in the oven will make this product his favorite. It is important to do it correctly so that the dish does not become rubbery, bland or tasteless.
How to prepare a delicacy? You need to start cooking by preparing the ingredients. Cottage cheese for dessert is suitable medium or high fat, then the dish will not be too dry. You can wipe it or leave it in its natural state - then the texture will be better felt. To obtain a more delicate texture, which when cut looks like bird's milk in the photo, it is better to beat the cottage cheese with a mixer, rub through a sieve or simply mash with a fork.
The second important component of the dessert is the egg. It is important to maintain a balance when adding, because if you add too much, the treat will turn out “rubbery.” The optimal proportion is 2 eggs per half kilo of cottage cheese. Instead of flour, semolina is used in this delicious delicacy; the proportions of the component are 3 teaspoons per 750 g. Before adding to the dough, semolina is diluted with boiling water.
The remaining ingredients are added to taste - sugar, dried apricots, prunes. In addition to dried fruits, it’s good to add canned pineapples, fresh apples, coat the surface with sour cream and sprinkle with powdered sugar. If you use dried fruits, you need to soak them first, and simmer fresh fruits in a frying pan to release excess juice - this way the dish will retain its elastic shape and will look attractive even in the photo.
The secret of this delicious delicacy lies in the correct placement of ingredients: first you need to mix eggs with sugar, add cottage cheese, semolina swollen from boiling water, and additional ingredients. If you want to get a particularly delicate texture, you need to separate the whites from the yolks. The egg whites are beaten with salt until fluffy and added last to the baking mixture. In order for the dish to bake evenly, do not make it too high. The mixture is laid out on the oiled bottom of the mold and baked in the oven for a certain time.
How long to bake
Having learned the secrets of preparing the ingredients, you should understand how long to bake the cottage cheese casserole. The dish does not require long baking; about 40 minutes is enough for all the ingredients to cook. The optimal temperature is 180 degrees. Some recipes suggest a level lower - from 150 degrees. After the main cooking time, you can leave the dish inside the oven for a few more minutes so that it acquires an even golden crust.

Recipe for a fluffy cottage cheese casserole “Like in kindergarten”
Sometimes you want to remember your childhood and treat yourself to delicious dishes. We present to your attention a cottage cheese casserole that is very reminiscent of treats from kindergarten. The baked goods have a soft, airy structure. Before cooking, stock up on a few ingredients:
- Cottage cheese – 500 g
- Granulated sugar – 3 tablespoons;
- Vanilla sugar - a pinch;
- Semolina – 2 tablespoons;
- Sour cream – 100 g;
- Butter – 2 tablespoons;
- Salt - half a teaspoon;
- Dried grapes – 100 g;
- Chicken eggs - 1 or 2 pieces.
Preparation:
- Prepare the butter in advance. It needs to be softened. Remove the product from the refrigerator and place it on a plate. Wait a few hours for the butter to melt. Place soft butter in a deep bowl and add cottage cheese. Mash with any cutlery - fork or spoon. The mixture should be thick. Make sure there are no lumps.
- In another bowl, combine 2 tbsp. spoons of sugar and 1 broken chicken egg. To ensure the mixture is homogeneous, it is recommended to use an electric mixer. Do not wait for thick foam to appear; it may interfere with cooking. The main thing is that the products mix well with each other and become the same color.
- Add the sweet egg mixture to the curd mixture. Add 2.5 tbsp. spoons of semolina and 1/2 teaspoon of table salt. For aroma, add a little vanilla - a small pinch will be enough. Mix the mixture well.
- Rinse the raisins. Soak the dried grapes in boiling water for 5 minutes to soften them. Add the prepared raisins to the dough. Mix well again so that the berries are evenly distributed inside the dough.
- Turn on the oven. Turn the temperature dial 180 degrees. Wait until the oven reaches the desired temperature. Meanwhile, prepare the mold. Grease the bottom with vegetable oil. Sprinkle lightly with semolina.
- Pour the finished dough into the mold. Approximate baking time is 35 or 40 minutes. On older ovens there are no degrees marked near the temperature regulator, so you will have to check the readiness yourself. To do this, use a toothpick.
- Serve the finished cottage cheese casserole on the table. You can pre-decorate the dish with sour cream, condensed milk or berry jam. This will only make it tastier.
