Good afternoon, dear friends and readers of my blog! There is a series of holidays with long feasts. On holiday tables there is an abundance of meat dishes and hearty snacks seasoned with mayonnaise. It's time to take a little break, and I bring to your attention several recipes for simple and tasty vegetable salads, the main ingredient of which will be iceberg lettuce.

This vegetable is a not very dense head of cabbage with green leaves, which can be easily confused with cabbage. It is rich in vitamin and mineral complexes, and contains a lot of other useful substances. If you wish, you will find many articles on the Internet about its beneficial properties. And most importantly, it contains less than 20 kilocalories per 100 grams of this wonderful vegetable. For your information, many nutritionists recommend including it as part of the fasting menu.

Today I will tell you what delicious snacks you can prepare from this wonderful vegetable. The advantage of the recipes I offer is that they are quite simple and can be prepared from any products that you find in your refrigerator.

Iceberg salad - a very tasty recipe with tomatoes and cucumbers

First of all, I offer you the simplest, in my opinion, recipe with Iceberg lettuce. To prepare it, we will take one small Iceberg fork (if the fork is large, then take half), a couple of fresh medium-sized cucumbers and tomatoes. We will divide the preparation of this dish and all subsequent ones into two parts. The first is preparing all the products, the second is preparing the dressing.

Ingredients:

  • Iceberg salad – 1 small fork (about 300 g)
  • Tomatoes – 200 g
  • Medium-sized cucumbers – 2 pcs.
  • Green onions – bunch
  • Cheese – 25-30 g (for decoration)
  • Salt, pepper to taste

Refueling:

  • Juice of half a lemon
  • Ready mustard – 1 tbsp. l.
  • Olive oil – 2 tbsp. l. (can be replaced with refined vegetable)
  • Pomegranate sauce – 2 tbsp. l.
  • Garlic – 2 cloves (optional)
  • Greens for decoration

First of all, we will thoroughly wash all the vegetables, herbs and lemon. Next, let’s separate the forks into separate leaves. If you cut the leaves into strips, you don’t have to separate them from the head of cabbage.

It is recommended to remove the lettuce leaves from the head one at a time and plunge them into ice water, since a sudden change in temperature will make the leaves denser and crispier.

Next we need to dry them. To do this, you can use a special vegetable dryer or paper towels (napkins).

After which we begin slicing the iceberg. We cut the lettuce leaves into strips or tear them into larger pieces with our hands. Salad torn by hand looks more airy due to the different sized pieces.

Next we chop the tomatoes and green onions. I like to use cherry tomatoes (round and cream) because they are easier to cut and the finished dish looks much more beautiful.

First we cut the cucumbers lengthwise into separate plates, and then cut them into strips like this.

Place chopped vegetables and green onions in a dish with Iceberg, add salt and pepper. Next, we begin to prepare the dressing, for which in a deep bowl we mix lemon juice squeezed from half a lemon, mustard, pomegranate sauce and olive oil. You can also use regular refined vegetable oil, but then the dressing will have a less bright taste.

Since I like my dishes spicier, I add a couple of cloves of finely chopped garlic to the dressing. You can simply pass it through a garlic press.

Instead of pomegranate sauce, you can use balsamic vinegar or soy sauce to prepare the dressing, but then you need to add 1 tbsp. l. sugar and reduce the amount of lemon juice by half.

The finished dish is seasoned immediately before serving. It is recommended to mix the ingredients with the dressing only before you begin to place the salad on plates.

How to make a delicious sauce, dressing for Iceberg salad?


Salad dressing

It's no secret that salad dressing significantly enriches and even changes the taste of main dishes. There are many recipes for dressings for Iceberg lettuce. The most popular ones are listed below.

Classic dressing

  1. Add lemon juice (1 tbsp) to 100 g olive oil
  2. Add ground black pepper (1/4 teaspoon) and salt to taste
  3. Whisk the sauce until smooth and season the finished salad with it.

With sesame

  1. Roast sesame seeds in a hot frying pan
  2. Pour olive oil (3 tablespoons), juice of half a lemon and Dijon mustard (1 teaspoon) into a bowl.
  3. Salt, add black pepper, sugar and turmeric (a pinch each)
  4. Mix the ingredients and add the roasted sesame seeds

Spicy dressing

  1. In a mortar, grind walnuts (several kernels), sesame seeds (1 teaspoon) and garlic (2 cloves)
  2. Season the ingredients with sea salt
  3. Add olive oil, prepared horseradish sauce (1 teaspoon), apple cider vinegar (1 teaspoon) and pepper (pinch)
  4. Mix the ingredients and pour this sauce over the salad.

Garlic dressing

  1. Mix kefir (1 glass), sour cream (1/2 tablespoon) and mayonnaise (2 tablespoons)
  2. Coarsely grate the cucumber
  3. Crush the garlic (3 cloves) and mix the ingredients
  4. You can add chopped dill, ground pepper and salt to this sauce

Iceberg lettuce salad recipe with chicken

In the second recipe for Iceberg salad with chicken that I want to offer you, we will use chicken breast. You can, of course, add other parts of chicken meat, but then our dish will not be so light (dietary).

Ingredients:

  • Iceberg lettuce – 1 small fork
  • Chicken breast – 300 g
  • Cherry tomatoes – 200 g
  • Capers – 2 tbsp. l.

Refueling:

  • Juice of half a lemon
  • Olive oil – 4 tbsp. l. (can be replaced with refined vegetable)
  • Mustard - 1/2 teaspoon
  • Salt, pepper to taste

First of all, we will boil the chicken breast in salted water, removing the skin first if necessary. Next, we will thoroughly wash all the vegetables and lemon, after which we will separate the Iceberg forks into separate leaves and remove excess moisture.

We cut the leaves into not very large pieces, and the tomatoes into slices. I have cream Cherry tomatoes, I cut them in half. Next, place the vegetables in a deep dish.

After we boil the chicken breast until tender (cook for about 20 minutes), cool it, cut it into small pieces and place it in a dish with chopped vegetables. Then carefully mix all the prepared products.

For a bright taste, add a couple of tablespoons of salted capers, salt and pepper. Those who like it spicier can add more capers. Next, we begin to prepare the dressing by mixing lemon juice squeezed from half a lemon, olive oil and mustard. You can also use regular refined vegetable oil, since capers and mustard will give our dish a bright taste.

That's all. The recipe for this dish is quite simple, but the taste is extraordinary. I definitely recommend preparing it.

Iceberg salad: recipe with red fish salmon


With salmon

There are several appetizer options that perfectly combine salmon and iceberg lettuce. Let's try to prepare one that, in addition to the above ingredients, includes quail eggs. They will add more satiety to the dish, but will not greatly increase its calorie content.

  1. We prepare this appetizer not from individual lettuce leaves, but from chopped heads of cabbage
  2. To do this, wash them, cut them into small pieces and leave them to dry on a paper towel.
  3. Boil quail eggs in boiling water for 3-4 minutes and place them in cold water until completely cool.
  4. Peel the eggs and cut them lengthwise into two pieces
  5. Wash the cherry tomatoes, cut into four parts and salt
  6. Prepare the sauce using a blender
  7. To do this, whisk together lemon juice, olive oil and chopped parsley.
  8. Add salt, pepper and bring the sauce until smooth
  9. Place the salad in a bowl, add salmon slices, cherry tomato slices and egg halves
  10. Pour the sauce over just before serving.

How to make iceberg cabbage and vegetables salad

I prepared the next salad with Iceberg cabbage from the products that I found in the refrigerator the day after the holiday events. Since the guests were already refusing hearty meat dishes and asking for something light vegetable, this recipe came in handy.

So, I took out the Iceberg forks, sweet bell peppers and pickles from the refrigerator that I didn't need when I made the vinaigrette. For greens, I have parsley and a bunch of green onions.

Ingredients:

  • Iceberg Lettuce – 1/2 medium fork
  • Bell pepper – 1 pc.
  • Pickled cucumbers – 3 pcs.
  • Green onions – 1 bunch
  • Parsley – 1 bunch
  • Salt, pepper to taste

Refueling:

  • Juice of half a lemon
  • Ready mustard – 1 tbsp. l.
  • Refined vegetable oil – 2 tbsp. l.
  • Pomegranate sauce (or balsamic vinegar) – 1.5-2 tbsp. l.

Wash vegetables and herbs thoroughly under running water. We disassemble the Iceberg fork into separate leaves and remove excess moisture.

We clean the bell pepper from seeds, remove the partitions and cut into strips. Although this recipe can be cut into larger pieces.

Next, chop all the greens and pickles. I had pickled cucumbers that I bought at the market. You can replace pickled cucumbers with pickled or pickled ones. This is not important in this recipe.

Place all the vegetables and herbs in a deep bowl and mix gently. Lastly, add salt and pepper. Next, let's prepare the dressing.

In a deep bowl, mix lemon juice, mustard, my favorite pomegranate sauce (narsharab) and vegetable oil. As I wrote above, pomegranate sauce can be replaced with soy sauce or balsamic vinegar. We do not use the ayran that you see in the photo in this recipe. I used it to make a dressing for radish salad. But I'll tell you about this next time.

We add the prepared dressing to our simple dish, mix again and treat our guests and household members.

A simple and delicious salad of Iceberg and feta cheese

The salad according to this recipe turns out to be moderately salty and spicy if you use real cheese. For those who want to prepare this dish in a softer version, I recommend taking Adyghe cheese.

This salad is one of my favorite things to make with iceberg lettuce. This festive Iceberg and Shrimp dish takes a little more time and effort to make, but it's worth it.

Ingredients:

  • Iceberg lettuce – 1 small fork or half a medium fork
  • Shrimp – 500 g (frozen)
  • Bell pepper – 1 pc.
  • Hard cheese – 25-30 g.
  • Salt, pepper to taste
  • White bread croutons (or croutons)

We clean the bell pepper from seeds, remove the partitions and also cut into strips. I was in a hurry, and therefore did not cut it very thinly. If you have enough time, try to cut the pepper into thinner slices. In this case, the salad turns out tastier.

Place the chopped vegetables in a deep dish, add salt and pepper. Then we start cooking the shrimp. For this recipe, I bought regular frozen unpeeled shrimp. I didn’t defrost them, but simply washed them well in cold water to remove the ice shell.

Seafood is never defrosted before cooking.

Then I poured water into the pan, brought it to a boil, put the seafood in it and cooked after boiling for 1 minute. This time is quite enough, since the shrimp are sold already boiled. For 1 liter of water I added 0.5 tbsp. spoons of salt, no spices used.

After the shrimp have cooled, we remove the head and clean them of the shell and intestines. Next, fry in olive oil for 2-3 minutes. A wonderful aroma spreads through the kitchen, and you want to try these wonderful crustaceans. We try just one thing, then the second... Then, having pulled ourselves together, we continue cooking.

Place the cooled shrimp in a dish with vegetables. Place a layer of white bread croutons on top. You can simply cut the bread into cubes and fry it in a frying pan over low heat. Then it dries out a little on top, but remains soft inside.

I fried the bread in the same pan that I fried the shrimp in, adding a little more olive oil to infuse the bread with the flavor of the shrimp. Having placed the finished cooled croutons on the salad, we begin to prepare the dressing, which consists of olive oil and lemon juice.

Add the dressing to our finished dish, but do not mix it. Sprinkle grated cheese on top (I used Parmesan).

It is recommended to mix the ingredients with the dressing only before you begin to place the finished dish on plates. The salad turns out very tasty and, of course, is worth the time and effort spent on its preparation.

Iceberg salad: recipe with crab sticks and corn


With crab sticks

Crab sticks are a cheaper substitute for crab meat. They are used in the preparation of various dishes, from sandwiches to salads. Crab sticks go well with ice salad.

  1. We start preparing this snack with an apple.
  2. Peel this fruit and cut out the middle
  3. Cut the pulp into squares
  4. Then immediately sprinkle the apple cubes with lemon juice.
  5. This will help prevent them from turning black.
  6. Cut the iceberg into thin strips
  7. Cut crab sticks into cubes similar in size to chopped apples
  8. Mix all ingredients and add canned corn
  9. You need to drain the water from it first.
  10. To enhance the taste of this salad, you can add various spices and mayonnaise.

This salad combines sweet apple pulp and tender crab meat. And even though crab sticks today are made from completely different products, the spicy combination of flavors of this salad will appeal to even the most real gourmet.

Green salad with cheese dressing

Ingredients: cherry tomatoes, cucumber, red onion, iceberg lettuce, cilantro and parsley to taste.

For dressing: two spoons of low-fat sour cream, thirty grams of hard cheese, one spoon of mustard, one clove of garlic and salt to taste.

Preparation

Salads with iceberg lettuce, the recipes for which we will study today, are very simple to prepare. To prepare one of them, you need to wash the vegetables and cut them to your liking. The greens are coarsely chopped and added to the vegetables along with lettuce. Next, prepare the dressing. To do this, grind the cheese and garlic using a blender until fine crumbs form. Then sour cream and mustard are added to them, mixed well and salted. Pour the prepared dressing over the salad and serve, placing it on a large platter.

Iceberg with omelet

Ingredients: one hundred grams of iceberg lettuce, one hundred and twenty grams of ready-made omelet (two eggs, one spoon each of starch and milk), ten grams of leeks.

Preparation

Delicious salads (photos of which you can see in the article) are very simple to prepare. For this recipe, you must first prepare an omelette from the above ingredients. When it is ready, it is rolled into a tube and cut into rings. Lettuce and leeks are also chopped. All products are combined in a bowl, salted, sprinkled with vinegar or ketchup added if desired, mixed and served on a large platter.
