How to make lazy cheesecake with cottage cheese

Ingredients:

  • Egg – 5 pcs.
  • Flour – 280 g
  • Sugar – 140 g
  • Sour cream – 200 g
  • Baking powder – 1.5 tsp.
  • Cottage cheese – 480 g
  • Vanilla sugar – 1 tsp.
  • Candied fruits – 1 handful(s)
  • Salt – 1 pinch(s)

Preparation:

Prepare ingredients for lazy cheesecake with cottage cheese. It is better to take the eggs out of the refrigerator in advance so that they beat better - this way the finished cheesecake will be fluffy and soft. Also get the sour cream in advance. Weigh the required amount of flour and sift it. Turn on the oven and preheat to 180 degrees.

Crack 4 eggs into a mixer bowl or bowl and beat for 30 seconds until smooth and lightly foamy.

Set aside 2 tablespoons of the total amount of sugar used in the recipe (this is approximately 40 grams), and pour the remaining sugar into the bowl with the eggs. Beat at the highest speed of the mixer for 5-7 minutes. The result should be a fluffy white air mass.

Add sour cream, salt, sifted flour and baking powder. Turn the mixer back on and beat for a minute until all ingredients are thoroughly combined.

Prepare the filling for the lazy cheesecake with cottage cheese. To do this, place all the cottage cheese in a wide bowl (the fat content does not matter, take it based on your own taste), the remaining regular sugar and vanilla, break the egg. Grind with an immersion blender until smooth. Add a handful of finely chopped candied fruits and mix. Instead of candied fruits, you can take raisins, dried cherries, dried cranberries or dried apricots. If you don’t have dried fruits on hand, simply increase the amount of sugar in the filling.

Line a 24 cm diameter mold with baking parchment and pour in the dough. Flatten with a spatula and carefully place the filling in the center. Bake for 55-60 minutes. If the edges of the dough begin to burn and the filling is not yet fully baked, you can cover the cheesecake with foil. It is better to take a mold for lazy cheesecake with a diameter of 22-24 cm, no less, since there is a lot of dough and filling and there is a risk of not completely baking the filling.

Lazy cheesecake with cottage cheese is ready. Bon appetit! Serve it lightly sprinkled with powdered sugar or honey.

Yeast cheesecake dough: recipe

Tasty and airy dough is the secret of excellent cheesecakes that will definitely delight your loved ones and guests. The best dough is yeast dough. It is the yeast that will allow your base to be tall, soft, and fluffy. You can use any yeast (both dry and live). This dough is ideal for any cheesecakes: sweet, with meat, cottage cheese, cheese and jam (you just need to adjust the amount of sugar).

You will need:

  • Flour (highest quality) - 3 cups with a slide (3.5 cups without a slide, it is important to look at how pleasant and elastic the consistency of the mass is).
  • Milk 2.5% - 200-220 ml (you can choose milk of any fat content and even replace it with sour milk or whey).
  • Dry yeast - 1 sachet per 10-11 g (any manufacturer).
  • Butter – 2-3 tbsp. (soft, easily replaceable with vegetable-cream mixture).
  • Eggs – 1-2 pcs. (it all depends on the size of the eggs, so that the dough is tasty and has a beautiful color, use homemade eggs).
  • Sugar - a few tbsp. according to your preferences
  • Salt – a couple of pinches to enhance the taste (optional)

IMPORTANT: Vanillin can also be added to the dough if you are baking sweet cheesecakes.

Cooking:

  • First part: “Preparing the dough.” To do this, you should slightly warm the milk (until warm). Dissolve sugar along with yeast in it and add only 1-2 tbsp. flour. The resulting mass should be placed closer to the heat and “do not disturb for 15-25 minutes.”
  • Part two: “Preparing the dough.” Eggs should be thoroughly beaten into foam along with salt. Add them to the dough and stir in melted butter (or spread). Gradually add flour until you reach the desired consistency.
  • Third part: “Kneading the dough.” When the dough becomes elastic, place it on the work surface, kneading it with your hands, after sprinkling the table with flour. Add flour in small portions so as not to overdo it and make it too lumpy. Soft elastic dough will allow your cheesecakes to be fluffy and tall.

Know that the taste and external characteristics of lazy cheesecake will depend on the quality of your cottage cheese.

I recommend adding candied fruits to the filling; you can add poppy seeds, berries or dried fruits.

You should not add nuts; the color of the baked goods will become gray and completely unappetizing.
