Curd manna with poppy seeds - you can’t think of a better breakfast!
Fragrant and delicate in texture, curd manna with poppy seeds tastes very much like cheesecake, but unlike it, it is baked not in a water bath, but in the usual way. The preparation of curd manna, the recipe for which is quite simple, is best planned for the evening, since the curd-poppy seed-semolina base should cool well overnight and acquire a homogeneous structure. But in the morning, when you cut the pie, you get perfectly even pieces that don’t fall apart. Cocoa or coffee with cream will be a great addition to hearty baked goods.
Curd manna with poppy seeds
Marble cut of pie
Ingredients
Dough:
- 100 g butter;
- 1.5 teaspoons (250 ml) flour (240 g);
- 1 egg;
- 0.5 teaspoon each of vinegar and baking powder;
- 2 tablespoons of water;
- 1/3 teaspoon salt.
Curd:
- 350 g cottage cheese;
- 1/2 cup of powdered sugar (do not replace sugar, otherwise it will affect the taste in a negative way);
- 1 egg;
- 150 g cream (33%);
- 1 tablespoon starch (corn);
- 1 teaspoon vanilla sugar.
Poppy-semolina mixture:
- 400 ml milk;
- 5 tablespoons of sugar;
- 5 tablespoons of poppy seeds;
- 4 tablespoons of semolina.
Cooking cottage cheese manna with poppy seeds
First of all, you need to make shortbread dough, namely: sift the flour, combine it with salt and baking powder, add slightly softened butter.
Grind everything into crumbs.
Mix egg, cold water, vinegar.
Pour into the butter-flour mixture.
Knead the dough, wrap in film, and refrigerate for 30 minutes.
After the time has passed, roll out the chilled dough into a pancake shape.
Place parchment on the bottom of a springform pan (I used a 22 cm diameter), then seal the ring. No need to lubricate. Place a layer of rolled out dough into it, distributing it evenly over the surface. Next, put it in the refrigerator again for 30-40 minutes. If you don’t do this and immediately put the pan in the oven, the dough may slide down the walls a little, but you need high sides.
After time, prick the chilled dough with a fork, line the bottom with parchment, and pour beans or peas on top. Place in a preheated oven (180°) and bake for 20 minutes. Then remove the parchment with beans and bake for another 5 minutes.
In the meantime, do the following: rub the cottage cheese through a sieve, add egg, cream, vanilla sugar, starch and powdered sugar.
Beat until smooth.
Next, put the milk on low heat. With continuous stirring, pour semolina into it in a thin stream. Then pour poppy seeds and sugar into a homogeneous milk-semolina mixture.
When the milk-poppy seed-semolina mixture thickens, remove it from the stove. After cooling slightly, add 3 tablespoons of the previously prepared curd mass and stir. The result is 2 fillings - curd and curd-poppy-semolina.
Now you can fill the baked dough. Place in it alternately the curd layer, then the curd-poppy seed-semolina layer, while lightly mixing them with a long wooden skewer and shaking the mold in order to subsequently obtain a marble cut.
Thus fill to the brim.
But it’s better to make the top layer white. When baked in the oven it will take on a beautiful creamy hue. If you use a 22 cm mold, then there will be just enough fillers to decorate the top of the curd manna. For these purposes, you can use a pastry bag.
Next, place the pie in an oven preheated to 180° for 40 minutes. Its readiness can be determined by the beautiful yellowish tint of the curd top layer. Carefully remove the baking dish from the oven and leave it until it cools completely, then put it in the refrigerator overnight. In the morning you need to remove the ring. This is what should happen.
Place the curd manna with poppy seeds on a flat dish, cut into portions and enjoy a wonderful nutritious breakfast! You can also make very original and tasty bunnies for children using cottage cheese.
Forming and baking dessert
After the dough is thoroughly kneaded, you should take a deep baking dish, heat it a little on the stove (if it is metal), and then generously grease it with butter. If desired, the dishes can be sprinkled with dry semolina or crushed breadcrumbs. Next, you need to pour the previously kneaded dough into the mold and send it to the preheated oven. Such manna should be baked for no more than 50 minutes at 180 degrees. If necessary, you can check the readiness of the dessert as follows: you need to take a dry toothpick, a match or an ordinary knife, and then stick it into the very thickness of the pie. If after such actions the dough does not stick to the object, then the manna can be safely removed from the oven.
Delicious manna with cherries and almonds
There are many variations of curd manna. To diversify the classic version, the main ingredients include fruits, berries, honey, condensed milk, and nuts. This recipe uses canned cherries. - cottage cheese – 100 g;
- brown and demerara sugar – 25 g each;

What are confectioners silent about?
Not everyone likes semolina porridge, but in childhood we are constantly fed this dish. And even small children are not all happy to eat semolina, but you really want to feed your child healthy food.
Prepare some manna; no one will be able to refuse such a treat. Experienced housewives probably know how manna is prepared. But beginners should carefully study the advice of professionals.
We start, of course, with the basics. The fact that manna contains semolina is not specified. After all, the name of the baked goods speaks for itself. Soak semolina in sour cream, kefir or pasteurized cow's milk. Filtered water is not suitable for preparing manna.
Next, be sure to add beaten chicken eggs. Flour can be added or not. It all depends on personal preferences.
Today we are discussing how curd manna is prepared, so our baking will also include such a fermented milk product.
On a note! It is advisable to choose moderately fatty cottage cheese. Large lumps are ground in a sieve or crushed in a blender to make the manna tender and airy.
Baking soda, quenched with acetic acid, gives the baking a richness. But you can replace such an ingredient with baking powder, approximately doubling the portion.
All sorts of fillings are also added to mannikas. The most common types are candied fruits, pieces of fruit, dried or fresh berries, and dried fruits.
List of additional ingredients:
- bananas;
- chocolate;
- cream cheese;
- raspberries;
- apples;
- coconut pulp, etc.
An ordinary manna can be turned into a real confectionery masterpiece, it all depends on the height of your imagination and culinary skills.
Confectionery secrets:
- Semolina must be poured with fermented milk drink and left for some time to swell;
- To make the manna more tender and fluffy, you can beat the protein mass separately;
- Egg yolks are ground with granulated sugar or powder;
- the manna is baked for at least half an hour; readiness is checked with a toothpick or skewer;
- you can make layered manna, alternating, for example, a curd layer and a chocolate one;
- Too wet cottage cheese is first ground, and then wrapped in gauze and squeezed thoroughly.
As practice shows, curd masses with various fillings are not suitable for preparing manna. It is better to give preference to a pure store-bought or homemade product.
Both silicone and springform molds are used for baking. Even a baking sheet will do. To prevent the manna from sticking to the walls of the mold, they are greased with butter, sprinkled with semolina or covered with parchment paper.
