How to choose a good chicken fillet for chops
Previously, when I, like everyone else, bought chicken in a store, through trial and error I formed a limited circle of sellers from whom I bought chicken. I have no doubt, it has happened to you that you put a huge thick leg into a frying pan, and it starts to ooze juice, and by the end of cooking you no longer have a half-kilogram piece of meat, but a two-hundred-gram parody of it...
It is clear that during the cooking process any meat loses juice, but no more than half! Therefore, look carefully: if the pieces are disproportionately fluffy and elastic, and do not sag when you take them in your hand, but gracefully puff up, maintaining their elastic shape, then they are injected with brine. Discard such an “appetizing” piece and better take it somewhere else where the pieces are not so huge. You will be much more likely to pay for real meat rather than water.
In addition, make sure that the color of the meat is uniform, not too bright (again, this could be dyes in the brine), but not deathly pale. Chicken meat is light pink in color. It should not have an unpleasant odor, should not be slippery to the touch, and should not smell like vinegar or spices. Fresh meat does not have a strong chicken smell. It is elastic, but can be easily pressed with a finger and then gradually returns to its shape, rather than springing or blurring under the finger.
Well, we bought chicken fillet. Now let's move on to the recipe for chicken breast chops in batter. It is very simple and does not require much time.
Recipe for cooking chicken chops in batter in a frying pan
Kitchen appliances and utensils: cutting board, kitchen knife, fork, culinary hammer, 2 wide plates, batter bowl, frying pan.
Ingredients

Preparation
- We wash the chicken fillet, cut it crosswise or slightly diagonally, if the fillet is too small, into pieces about a centimeter thick.
- We beat the pieces on both sides with a hammer so that they almost double in size.
To prevent the meat from splashing all over the sides when beating, you can put the pieces in a disposable plastic bag or cover with cling film on a board. - Place the chopped pieces on a plate, sprinkling each with salt and pepper to taste.
Preparing batter for chicken fillet chops
- Break the eggs into a bowl, add a pinch of salt and beat with a fork or whisk.
- Gradually, without ceasing to beat, add flour and bring the mixture to a homogeneous state, breaking up all the lumps. You can simplify your task by doing it all with a mixer or blender.
- Add sour cream and mix everything well. If necessary, add flour. You need to achieve such a consistency that the batter is thick, viscous, but still liquid. Our batter is ready!
How to cook chicken chops
- Cooking chicken fillet chops in a frying pan. To do this, turn on the heat on the stove just above medium and set the frying pan to heat up. Then pour a little vegetable oil into the pan so that it spreads over the entire surface in a very thin layer.
- Dip the beaten chicken fillet into the batter, dip on both sides and place in a frying pan with vegetable oil.
- Fry without reducing the heat until a golden crust forms, and turn over to the other side. We take into account that the batter absorbs oil, so, if necessary, add it little by little.
- Remove the finished chops from the frying pan onto a plate.
- For the next batch, add a little vegetable oil again and repeat the procedure: dip in batter, fry, turn over, fry, remove. Keep doing this until all the chops are fried. Our chops are ready!

In my opinion, these chops can already be considered an independent dish and do not need an accompanying side dish. You can only serve them with sauce. It seems to me that mushroom sauce would come in handy here. Although any other, tomato or sour cream based, will also wonderfully complement the taste of these chops.
