As soon as the conversation turns to cold soup, many people immediately think of okroshka.

Its advantage over other dishes is that this soup does not need to be boiled and then reheated later. There is no specific list of products included in its composition. The housewife herself decides what vegetables to put in the okroshka.

In summer, the main components are fresh vegetables: cucumbers, radishes, greens. In winter, okroshka can be made with radishes and carrots.

Classic okroshka is prepared with kvass. Also for this purpose, kefir, yogurt, mayonnaise, and sour cream are used, which are pre-diluted with water or mineral water.

Thrifty housewives do not leave a single product unattended. For example, when making cottage cheese, whey remains. It is used in baking bread and cookies. It makes a very tasty okroshka.

Where else do you get whey?

First, you can buy it at a large grocery store. Secondly, it is easy to prepare it yourself. Whey is made from kefir, milk, and yogurt.

Method 1:

  • Take 1 liter of kefir.
  • Place a colander on a saucepan or deep bowl. Cover it with gauze folded in four layers.
  • Pour kefir into a colander. Place the pan in the refrigerator and leave overnight.
  • In the morning, you will see a clot on the gauze that looks like diet cottage cheese. Moreover, the longer you keep it in a colander, the thicker it will become. This means that more serum will be released.
  • Lift the edges of the gauze and gently squeeze out the resulting curd. From 1 liter of kefir you get approximately 600 ml of whey.

Method 2:

  • Pour kefir into a glass jar.
  • Put it in the microwave. Preheat on high for a few minutes. After 3-4 minutes you will see whey begin to separate from the kefir.
  • When the kefir curdles and rises to the top, remove the jar from the oven and leave it on the table until it cools down.
  • Carefully pour the contents of the jar into a colander lined with cheesecloth and allow the whey to drain completely into a bowl placed underneath. Then lift the edges of the gauze and squeeze out the remaining whey.

Method 3:

  • Pour 2 liters of kefir into a saucepan and place on low heat.
  • Heat until the kefir turns into a curdled mass.
  • Cool. Then place it in a colander with gauze. Let the whey drain into the pan under a colander.

Subtleties of cooking

  • It is advisable to boil potatoes for okroshka “in their jackets”. With this method of cooking, more useful substances will remain in it, it will not boil over, and it will be easier to cut.
  • If you put warm potatoes or eggs in okroshka, it can quickly turn sour. Therefore, it is advisable to boil potatoes, carrots, and meat in advance and cool well in the refrigerator.
  • The whey should also be cold.
  • If okroshka is prepared in large quantities, do not immediately pour whey into it. All ingredients are crushed, poured into a saucepan and put in the refrigerator. As needed, chilled chopped vegetables are placed in plates and poured with whey.
  • They put a lot of greens in okroshka. It could be parsley, dill, cilantro. Those who like a more spicy taste can add basil, celery and other herbs.
  • The whey is quite acidic, so you don’t need to acidify it with vinegar or citric acid. But if you put a little mustard or horseradish in the okroshka, it will acquire a more expressive taste.
  • Okroshka is a low-calorie dish. After eating it, after a while the person wants to eat again. Therefore, in addition to vegetables, they put sausage, meat, and fish in it.
  • Meat and fish are boiled, cooled in broth, cut into pieces, and combined with the rest of the ingredients.
  • Whey-based okroshka is seasoned with sour cream.

Whey okroshka with sour cream: the most delicious recipe

My first acquaintance with such a dish as okroshka was not very successful. It might even be completely unsuccessful. My mother and I were passing through visiting a distant relative, and she treated us to a pitiful semblance of real okroshka. This okroshka contained only potatoes, boiled carrots and sausage, seasoned with water and mayonnaise.

I tried the real, most delicious okroshka in one of the restaurants in our city. It was okroshka with whey and sour cream. I’ve never eaten tastier okroshka in my life! Just for fun, I tried okroshka with kefir, chicken broth, and mineral water, but okroshka with whey and sour cream is the most delicious!

Since then, I always cook whey-based okroshka with meat for my family. I add a lot of herbs, lemon juice, and of course, sour cream.

Since I’m preparing a large portion, I don’t pour the whey over the entire okroshka at once, but mix it directly in the plate. “In dry form” the okroshka is better preserved, whereas if all the ingredients are poured with whey at once, the next day the cucumbers in the okroshka become soft and begin to sour. These cucumbers taste like snails.

By the way, they do exactly the same thing in restaurants. Nobody cooks okroshka in a five-liter saucepan, unless it’s a set lunch. Ingredients:

  • Pork (fillet) 0.5 kg.
  • Boiled potatoes in jackets 4-5 pcs.

How to prepare okroshka with whey:

Pre-boil the meat, check that it is soft, and chop finely.

We peel the potatoes and chop them finely, as for Olivier. I use a vegetable mesh to cut potatoes – it’s quick and easy.

We also chop the eggs.

Slice the cucumbers.

With radishes it's not so simple. It takes a long time to cut with a knife, the mesh doesn’t take it, so it’s best to use a blender.

Be careful not to overdo it so you don't end up with a puree. 3-4 presses of the blender button are enough.

Dry chopped radishes store very poorly. Within a couple of hours it will turn yellow and become bitter. Therefore, if you are making a large portion of okroshka and will not pour the whey all at once, you will have to chop the radishes each time before serving.

If you make a small portion of okroshka (1-2 times), then you can safely pour the whey over the radishes.

Mix all ingredients for 1 serving in a plate, add greens.

Pour in whey, salt, add lemon juice to taste, and a spoonful of sour cream.

Serve okroshka to the table and enjoy!

Whey okroshka with boiled sausage

Ingredients:

  • potatoes – 3 pcs.;
  • cucumbers – 2 pcs.;
  • eggs – 3 pcs.;
  • radishes – 3 pcs.;
  • low-fat boiled sausage – 200 g;
  • whey – 2 l;
  • dill - to taste;
  • sour cream – 100 g;
  • salt;
  • green onions - a small bunch;
  • mustard – 1 tsp.

Cooking method

  • Boil the potatoes in their skins in advance. Cool. Clean. Cut into small cubes.
  • Boil hard-boiled eggs. To prevent them from bursting during cooking, place them in boiling salted water. Place the boiled eggs in cold water and cool. Peel off the shell. Chop with a fork.
  • Cut the cucumbers and sausage into cubes, and the radishes into thin slices.
  • Chop the green onions and place in a bowl. Grind with salt. Add mustard and sour cream. Stir.
  • Place sausage, cucumbers, radishes, eggs, and potatoes in a saucepan. Add onion and finely chopped dill. Fill everything with serum. Add salt and stir again.

Okroshka with whey and sour cream

This recipe does not use potatoes, but if you want, you can add two more potatoes. But even without it it is very interesting and more dietary. In general, some chefs believe that it is better to prepare soups without potatoes.

Compound:

  • 3-4 hard-boiled eggs
  • 3-4 cucumbers,
  • 300 grams of boiled sausage,
  • 100 grams of sour cream,
  • 1 liter of whey,
  • Salt.
  1. Cut all foods.

Whey okroshka with cucumbers

Ingredients:

  • fresh cucumbers – 3 pcs.;
  • eggs – 4 pcs.;
  • green onions - a small bunch;
  • salt;
  • dill - several sprigs;
  • sour cream – 100 g;
  • whey – 1.5 l.

Cooking method

  • Boil hard-boiled eggs. Cool. Clean it.
  • Chop the onion and dill.
  • Cut the cucumbers into small cubes.
  • Place everything in a saucepan. Fill with serum. Add some salt. Mix well.
  • Place in the refrigerator for one hour.

How to cook okroshka using whey and sour cream with sausage

To do this, the ingredients of the recipe - meat, vegetables and fresh herbs - must be finely chopped and poured with whey. The classic first course is traditionally seasoned with sour cream.

  1. To add a piquant taste, prepare the dressing with mayonnaise and spicy homemade mustard.
  2. Mix sour cream with grated horseradish.

Okroshka with whey and sausage is prepared cold. The soup is supplemented with doctor's sausage, milk sausage, or made with any meat or sausage product without fat.

But, if sausage is not acceptable as part of okroshka, then such a gastronomic product as sausage is excluded from the ingredients and a refreshing whey soup is prepared with boiled meat and tongue.

There are no problems with whey for making okroshka. It is easy to obtain after making homemade cottage cheese or buy ready-made whey in the dairy section of any supermarket, or purchase it from private traders on the market.

Whey-based okroshka with chicken

Ingredients:

  • chicken fillet – 400 g;
  • potatoes – 2 pcs.;
  • fresh cucumbers – 2 pcs.;
  • eggs – 2 pcs.;
  • radishes – 3 pcs.;
  • green onion - a few feathers;
  • any greens - a small bunch;
  • salt;
  • whey – 2 l;
  • sour cream – 200 g;
  • mustard – 1 tsp.

Cooking method

  • Boil the chicken fillet until done. Cool in broth. Cut into pieces.
  • Boil the potatoes in their skins in advance. When cool, peel and cut into cubes.
  • Grate the cucumbers and radishes on a medium grater. Boil hard-boiled eggs. Grind.
  • Chop the greens and onions.
  • Place everything in a saucepan and pour in the whey.
  • In a separate bowl, mix sour cream, mustard (horseradish) and salt. Add to the okroshka and mix again. Let it brew.

Recipe for whey-based okroshka with chicken

You can refresh yourself and have a tasty meal on a hot day with such a very nutritious dish of traditional Slavic origin as okroshka. It is considered dietary, but contains many beneficial vitamins and minerals. The preparation process is very simple and easy, and the ingredients are not expensive, are quite common and tasty. To create okroshka you will need:

  • boiled chicken breast – 450 g;
  • boiled potatoes in their jackets – 300 g;
  • hard-boiled eggs – 5 pcs.;
  • fresh cucumber – 300 g;
  • radish – 300 g;
  • greens to taste – 300 g;
  • whey – 3 l;
  • sour cream – 120 ml;
  • fat kefir – 400 g;
  • salt and allspice - 5 g each.

The preparation time takes one hour, the dish also needs to sit for a couple more hours in a cold place, and the energy value of one hundred grams of okroshka is 46 kcal.

Chop the pre-boiled foods first and place them in one container - potatoes into half-centimeter cubes, chop the eggs very finely, chop the chicken into thin small cubes.

Next, chop fresh vegetables - cucumbers and radishes, or better yet, grate them coarsely. Wash the greens and chop finely. Add everything to the previously chopped products and pour in whey, sour cream, kefir, add pepper and mix well. Salt is required only when necessary and after all the okroshka is mixed.

The dish is traditionally eaten with a piece of gray or white bread; to add more sourness, you can add a little citric acid or add salad mayonnaise.

Mixed meat okroshka

Ingredients:

  • veal – 150 g;
  • ham or ham – 150 g;
  • beef – 200 g;
  • cucumbers – 3 pcs.;
  • green onions - a bunch;
  • ready mustard – 1 tsp;
  • eggs – 3 pcs.;
  • salt;
  • whey – 1.5 l;
  • sour cream – 200 g;
  • sugar – 1 tsp;
  • lemon acid;
  • various greens - a small bunch.

Cooking method

  • Cook beef and veal until done. Cool in broth. Cut into strips.
  • Hard-boil the eggs, cool, peel and finely chop.
  • Peel the cucumbers and then cut them into thin strips.
  • Chop the green onions, mix with a little salt and mash until juice appears.
  • Place ingredients in a saucepan.
  • In a separate bowl, mix sour cream, mustard, sugar, salt and grated onion. Dilute with serum. Pour into a saucepan with chopped vegetables and meat. To give the okroshka a richer taste, add a little citric acid and stir again.
  • Cool in the refrigerator.

Vegetable whey okroshka

Ingredients:

  • potatoes – 3 pcs.;
  • radishes – 3 pcs.;
  • greens - a small bunch;
  • carrots – 1 pc.;
  • green onions - a few feathers;
  • cucumbers – 2 pcs.;
  • eggs – 2 pcs.;
  • salt;
  • mustard – 0.5 tsp;
  • sour cream – 100 g;
  • whey – 1.5 l.

Cooking method

  • Cook carrots and potatoes separately. Cool. Cut into small cubes.
  • Boil the eggs hard. Cool. Chop with a fork.
  • Chop the onion, mix with salt and grind until juice appears. Add mustard and sour cream. Stir.
  • Chop the greens.
  • Place all ingredients in a saucepan. Fill with serum. Stir. Place in the refrigerator for one hour.

Okroshka on whey with mayonnaise

Sometimes mustard is added to okroshka. But it’s even tastier to make homemade mustard mayonnaise for this. Do it for literally five minutes, the result is worth it.

You can cut only the egg whites into cubes, and mash the yolks separately with a fork with salt and herbs - this will add an additional hint of flavor. Or cut some of the yolks and mash 2-3.

Compound:

  • Cucumbers – 4 pcs.
  • Radishes – 15 pcs.,
  • Boiled sausage – 0.5 kg,
  • Potatoes – 4 pcs.,
  • Eggs – 9 pcs.,
  • Greens - a bunch,
  • Salt pepper,
  • Serum,
  • Mayonnaise.

For homemade mayonnaise:

  • Eggs – 2 pcs.,
  • Salt – 1 tsp,
  • Sugar – 0.5 tsp,
  • Dry mustard – 1 tbsp. with a slide (or 2 tbsp. regular mustard),
  • Vegetable oil (preferably 1/3 cup extra virgin olive oil, and add the rest with refined sunflower oil, or without olive oil) - 1 tbsp.
  1. Boil eggs and potatoes, cool, peel.

2. While the potatoes are cooling, you can make mayonnaise. Mix 2 eggs, 1 tsp. salt, half tsp. sugar and 1 tbsp. with a pile of dry mustard. Start beating with a mixer or blender. Slowly start adding vegetable oil. Pour in about a glass of oil in a thin stream and whisk until the mayonnaise thickens. As I wrote in the ingredients, only a third of the oil should be olive oil, otherwise it will taste bitter. Or you can just use sunflower.

3. Separate the whites and yolks from the boiled eggs. Cut sausage, potatoes, egg whites, radishes, and cucumber into cubes. Chop the greens. Mash the yolks in a separate plate. Add a teaspoon of salt, chopped onion and dill. Mash everything together well.

4. Pour the chopped potatoes into the pan. Add chopped radishes and stir.

5. Put cucumbers there. Mix everything.

6. Add sausage and egg whites.

7. Add about 4 tablespoons of homemade mayonnaise and stir. Add the mixture of yolks and herbs.

8. Pepper a little. Pour in serum. Okroshka will taste better when it sits. For those who like cold okroshka, you can add a few cubes of pre-frozen whey.

9. You can top this okroshka with sour cream.

Whey-based okroshka with fish

Ingredients:

  • fish fillet – 300 g;
  • bay leaf – 1 pc.;
  • potatoes – 3 pcs.;
  • fresh cucumbers – 2 pcs.;
  • eggs – 2 pcs.;
  • green onions - a thin bunch;
  • vinegar;
  • dill - several sprigs;
  • salt;
  • black pepper;
  • whey – 1 l.

Cooking method

  • Pour a small amount of water over the fish fillet and bring to a boil. Add salt, pepper and bay leaf. Cook for 20 minutes. Cool in broth. Then cut into medium pieces. Be careful not to get any bones.
  • Boil the potatoes in their skins. Cool. Clean. cut into strips.
  • Hard boil the eggs, cool. Clean. Mash with a fork.
  • Cut the cucumbers into thin slices.
  • Chop the onion and herbs.
  • Place fish, potatoes, cucumbers, squirrels, and herbs in a pan. Fill with serum.
  • Grind the yolks with a small amount of liquid and pour into a saucepan with okroshka. Salt and add vinegar. Stir gently.
  • Refrigerate.

Okroshka recipe with whey and sour cream

To add spiciness and piquancy to the finished okroshka, prepare an original dressing. To do this, mix sour cream with 2 tsp. table mustard and thoroughly grind the mixture with a spoon.

  1. We wash the cucumbers in running water; if the skin is too rough, remove it with a vegetable peeler. Chop fresh cucumbers into cubes.
  2. Boil the eggs in water with salt for 4-5 minutes. If you want to replace quail eggs with chicken eggs, you will need 2 or 3 eggs, depending on the size.
  3. Chop the peeled eggs into small pieces, leaving a few circles or halves to decorate the prepared okroshka.
  4. Then cut the pre-cooked potatoes into small cubes. Another way is to grate the potatoes on a coarse grater. Place the eggs and potatoes into a saucepan or deep bowl.
  5. Cut the sausage into thin strips or small square pieces and add to the pan with the rest of the ingredients.
  6. Finely chop the washed greens and, if desired, chop a small bunch of green onions.
  7. Next, add salt, pepper and mix the mixture until the salad is smooth.
  8. Then add the whey little by little so as not to make the okroshka too liquid. When the desired thickness is achieved, season the soup with sour cream. Mix again.
  9. Place the pan with okroshka in the refrigerator to cool and steep for about 1-1.5 hours.

We take out the cold whey-based okroshka, pour it into portioned plates and serve with fresh homemade bread from the oven.

What is the difference between traditional okroshka and whey-based okroshka? Cold soup has a pleasant sourness that does not irritate the stomach and generally has excellent taste. Okroshka made from meat, vegetables and fresh herbs is very tasty and filling.

Okroshka on whey with beets

Ingredients:

  • potatoes – 3 pcs.;
  • small beets – 1 pc.;
  • greens - to taste;
  • fresh cucumbers – 1 pc.;
  • green onions - a small bunch;
  • salt;
  • whey – 1 l;
  • lemon;
  • sour cream – 150 g.

Cooking method

  • Fill the beets with cold water. Bring to a boil. Cook over low heat until soft. When hot, rinse with cold water. Cool in the refrigerator. This will preserve its rich color.
  • Grate the cold beets and cucumber on a medium grater.
  • Boil the potatoes with their skins on. Cool. Cut into small cubes.
  • Finely chop the greens and onions.
  • Place all ingredients in a saucepan. Fill with serum. Add some salt. Squeeze the juice from the lemon and use it to bring the okroshka to the desired taste.
  • Place in the refrigerator for 2-3 hours.

Note to the hostess

Knowing the peculiarities of preparing okroshka with whey, you can come up with your own recipe. For example, replace carrots with fresh tomatoes. Or replace the mustard with horseradish.

But remember that the serum cannot be stored for long. Within two days it turns sour. If you have this fermented milk product, then start preparing okroshka as quickly as possible. And do not store the finished dish for more than a day. Even in the refrigerator. Bon appetit!
