An original holiday salad prepared in the form of a fabulous Roasted Chicken is an uncomplicated, satisfying and very tasty appetizer for the whole family.
The classic version of the salad is prepared from simple, affordable and healthy products - chicken, boiled eggs, onions, mushrooms.
Low-fat sour cream, homemade or store-bought mayonnaise are used as a dressing. Feel free to experiment with other ingredients and serving methods.
How to prepare Chicken Ryaba salad
To prepare the Ryaba Chicken appetizer, boiled fillet, juicy smoked breast, as well as meat fried in a pan or baked in the oven are used.
Marinated or fried champignons, chanterelles, honey mushrooms, milk mushrooms, boletus and any other mushrooms go well with chicken.
To add a refined, sweet and exotic taste, canned corn or pineapple is added to the snack.
The prepared ingredients are cut into strips or small cubes, mixed with dressing or laid out in layers using a culinary ring.
“Motley chicken” with mushrooms, cheese and ham
The salad is very rich and interesting. Thanks to the unique dressing, it becomes incredibly tasty and satisfying.
Ingredients:
- 0.2 kg ham.
- 0.15 kg. boiled chicken fillet.
- 0.2 kg. pickled mushrooms.
- 0.15 kg. cheese.
- 0.35 kg. apples
- 0.4 kg. tomato.
- 4-5 sprigs of parsley.
- 0.3 kg. sour cream.
- 3 tsp. honey
- 20 ml. lemon juice.
- 20 gr. mustard.
- Spices, salt.
Preparation:
Cut the ham and chicken into strips. Cut the mushrooms into 4 parts. Chop cheese, apples, and tomatoes into cubes.
For dressing, mix sour cream, honey, lemon juice, mustard with chopped parsley and salt.
We form the salad in layers, coating each with sauce in the sequence: mushrooms, cheese, chicken, apples, ham, tomatoes. We decorate the dish with herbs and mushroom caps.
Sauce
The Ryaba chicken appetizer is traditionally seasoned with sour cream or mayonnaise.
You can easily make your own low-calorie sauce by mixing unsweetened yogurt with various spices. This dressing is necessary for dishes with dry chicken breast, potatoes, and croutons.
A salad with smoked or fried meat, fresh vegetables, mushrooms and nuts is dressed with vinaigrette sauce, a mixture of lemon juice and high-quality olive oil.
A festive version of the dish can be served with a sauce made from raw yolk, a clove of garlic, a spoonful of Dijon mustard and anchovies, pureed in a blender until smooth.
How it is served Serving the dish will be more impressive and festive if you decorate it in the form of an appetizing motley chicken.
To do this, the entire surface of the salad is covered with “feathers” - mushrooms, walnuts or boiled carrots.
The head, wings and tail of grated cheese or egg whites are placed on top of a thin layer of mayonnaise. The eyes are made from olives or black olives, the scallop is made from a tomato, and the beak is made from yellow bell pepper.

1.With fried chicken and prunes
A salad with juicy chicken fillet fried until golden brown, champignons and healthy prunes will become even tastier if you let it brew well and soak in the refrigerator for several hours. Instead of medium-sized pickled cucumbers, you can use small crispy gherkins; they should be cut into circles.
Appetizer Ryabka chicken will be less high-calorie if you replace fatty mayonnaise with sour cream mixed with salt and your favorite seasonings.
The finished salad can be decorated with boiled quail eggs, cut into halves or quarters.
Ingredients:
- chicken fillet – 450 g;
- pitted prunes – 9 pcs.;
- mayonnaise – 8 tbsp. spoon;
- cucumbers (salted, pickled or lightly salted) – 2 pcs.;
- olive oil – 5 tbsp. spoon;
- champignons – 250 gr;
- onion – 1 pc.
Preparation:
Fry the onion in oil until transparent. Pour the sliced champignons into the pan. Fry until done. Separately, fry the fillet, cut into medium-sized pieces, until cooked. Cut the cucumbers into small cubes, pitted prunes into strips. Mix and season the Ryaba Chicken appetizer with mayonnaise.
2.With boiled chicken breast and walnuts
A spectacular layered salad with dietary chicken breast and walnuts will become even juicier and more tender if you first marinate the onions in vinegar or scald them with boiling water.
The cooled boiled breast is separated into fibers by hand so that the dish has a more airy texture, but if necessary, the meat can simply be cut into cubes or not too thin strips. If desired, the nuts are first fried in a hot frying pan without adding oil, and then chopped.
Mayonnaise should be applied in the form of a thin mesh, and not in a continuous layer, otherwise the finished salad will turn out greasy.
Ingredients:
- chicken breast – 350 g;
- walnuts – 18 pcs.;
- eggs – 5 pcs.;
- mayonnaise – 7 tbsp. spoon;
- cheese – 250 gr;
- onion – 1 pc.
Preparation:
Boil the breast and separate it into fibers. Hard boil chicken eggs. Cool, grate. Layer layers of boiled breast, chopped onion, eggs, grated cheese, finely chopped walnuts. The order can be arbitrary. Each layer of salad should be coated with mayonnaise.
3.With smoked chicken and fresh cucumber
A quick, savory appetizer, Ryaba chicken with aromatic smoked chicken, olives and crispy fresh cucumber, can be easily prepared in just 20 minutes.
This salad will be an excellent addition to any holiday table and will help out the hostess in a situation when guests are already on the doorstep.
Honey mushrooms can be replaced with almost any pickled mushrooms - chanterelles, champignons, milk mushrooms and even Japanese wild shiitake mushrooms, which are often added to oriental dishes. Small pickled mushrooms of approximately the same size can be used for garnish rather than chopped.

- smoked chicken breast – 350 g;
- cucumbers – 2 pcs.;
- olives or pitted olives – 8 pcs.;
- eggs – 2 pcs.;
- pickled honey mushrooms – 250 g;
- sour cream – 4 tbsp. spoons
Preparation:
Boil chicken eggs hard. Cool, cut into slices. Cut the smoked breast into pieces, cucumbers into strips, honey mushrooms into slices, olives into rings. Mix smoked meat, cucumbers, mushrooms, olives. Season the Ryaba chicken appetizer with sour cream. Place boiled egg slices on top.
4.With pineapple
Roast chicken salad with pineapple – it’s simple, beautiful and fantastically tasty.
Canned pineapple adds bright colors, juiciness, aroma and sweetish, but not cloying notes.
The salad is served in a large glass salad bowl so that all layers of the appetizer are clearly visible.
An alternative option is a flat serving plate, on which the ingredients are laid out in layers using a special cooking ring.
The finished dish will keep its shape well and will not fall apart when serving if you put it in the refrigerator directly in a ring, covered with cling film, for a couple of hours.
Ingredients:
- chicken fillet – 450 g;
- canned pineapple – 250 gr;
- mayonnaise – 8 tbsp. spoon;
- eggs – 3 pcs.;
- cheese – 150 gr.
Preparation:
Boil the fillet. Cut into cubes. Boil chicken eggs hard. Cut the pineapples into thin slices or small cubes. Layer out boiled meat, pineapples, grated whites, grated cheese, grated yolks. Each layer of salad should be greased with mayonnaise.
Chicken salad with mushrooms
The dish is easy to prepare. It turns out tender and pleasant to the taste. Prepared from ordinary products.
Ingredients:
- 0.3 kg. pulp of boiled chicken.
- 0.15 kg. boiled mushrooms.
- 0.15 kg. pickled cucumbers.
- 0.1 kg. celery root.
- 60 ml. kefir
- 100 gr. mayonnaise.
- Pepper, salt.
Preparation:
Chop the chicken, mushrooms and cucumbers into cubes. Three celery roots.
For the sauce, mix kefir, mayonnaise, salt, pepper.
Combine all products, season with sauce and mix.
5.With tomatoes
A nutritious salad with boiled chicken, tomatoes and pitted prunes, served with fresh, slightly warmed white bread, croutons or savory garlic croutons.
Instead of regular medium-sized tomatoes, you can add small, sweet cherry tomatoes. They are cut into thin slices or circles rather than into strips to give the salad a more impressive look and rich texture.
To beautifully decorate the finished dish, you can use olives, walnuts or boiled egg yolks, which need to be mashed with a fork or grated.
Ingredients:
- chicken fillet – 450 g;
- tomatoes – 3 pcs.;
- vegetable oil – 3 tbsp. spoons;
- onions – 3 pcs.;
- mayonnaise – 4 tbsp. spoons;
- pitted prunes – 6 pcs.;
- greens - 1 bunch.
Preparation:
Boil the fillet, cut into strips. Cut the onion into rings or half rings and fry in oil until golden brown. Cut the pitted prunes and tomatoes into strips. Mix all ingredients, season with mayonnaise. Place the Ryaba Chicken appetizer in a mound and sprinkle with chopped herbs.
“Ryaba chicken” with chanterelles and boletus
The harmonious duet of chanterelles and boletus gives the salad a mild mushroom flavor. The dish turns out to be a wonderful and satisfying appetizer for the holiday table!
Ingredients:
- 0.4 kg. boiled chicken meat.
- Three boiled eggs.
- 0.15 kg. oily.
- 0.15 kg. chanterelles.
- Three boiled potatoes.
- Two onions.
- Carrot.
- 40 ml. vegetable oil.
- 200 gr. mayonnaise.
Preparation:
In one frying pan, fry onions and carrots, in another frying pan – onions along with chopped mushrooms. Three potatoes. Cut the meat into cubes. Separate the eggs from the yolks and rub each part with a grater.
In a cooking ring, we form the salad in layers in the following order: potatoes mixed with mayonnaise, chicken fillet cubes, fried onions and carrots, mushrooms, grated egg whites with mayonnaise. Cover the top of the salad with grated yolks. After a few hours, remove the cooking ring and decorate the salad to taste.
6.With ham and olives
To prepare the festive salad Ryaba chicken, use any ham - raw smoked, boiled-smoked, dry-cured, boiled, canned.
Pitted olives are cut into thin slices or gently crushed with a tablespoon to make serving simple and even more appetizing at home.
A salad with meat, ham and white bread croutons will become more flavorful if you add the right spices. Coriander, fresh or granulated garlic, marjoram, curry, turmeric and rosemary go best with boiled, fried or smoked chicken.
Ingredients:
- chicken fillet – 450 g;
- ham – 250 gr;
- pitted olives – 12 pcs.;
- eggs – 3 pcs.;
- cheese – 150 gr;
- crackers – 100 g;
- sour cream – 4 tbsp. spoons;
- mayonnaise – 4 tbsp. spoons;
- dill – 80 gr.
Preparation:
Boil fillet or breast, cut into cubes. Cut cheese (preferably hard varieties) into cubes, olives into slices, ham into cubes or strips. Boil eggs hard. Cool, cut into cubes. Mix. Season with a mixture of sour cream, mayonnaise and finely chopped dill. Sprinkle the Ryaba Chicken appetizer with white bread croutons before serving.
Warm salad with chicken and pickled honey mushrooms
Some components of this dish are stewed in a frying pan before being added to the salad bowl. Thanks to this approach, the salad becomes more aromatic and appetizing.
Ingredients:
- 0.4 kg. boiled fillet.
- 0.4 kg. pickled mushrooms.
- 0.2 kg. tomato.
- 4 boiled eggs.
- 0.15 kg. cheese.
- 0.15 kg. wheat crackers.
- 6 lettuce leaves.
- 80 gr. mayonnaise.
- 80 ml. soy sauce.
- 40 gr. mustard.
- 20 ml. lemon juice.
Preparation:
Cut the boiled chicken flesh into pieces and throw into a hot frying pan. Pour soy sauce mixed with mustard over the fillet and simmer until the liquid evaporates.
Wash the lettuce leaves and place on a plate. Make a light layer of mayonnaise and lemon juice on top.
On top of the salad we place chicken meat from the frying pan and pickled honey mushrooms. Divide the tomatoes and eggs into parts and distribute them over the surface of the meat, pouring mayonnaise on them. Sprinkle the dish with grated cheese, crackers and herbs.
7.With corn
Thanks to the win-win combination of smoked meat, vegetables and sweet canned corn, the Ryaba Chicken appetizer is especially tasty and aromatic.
Instead of boiled carrots, you can add Korean spicy carrots, which will make the dish more piquant. In this case, grated garlic and hot seasonings should not be added to the mayonnaise dressing.
It is recommended to use classic processed cheese without additional flavorings. If desired, processed cheese with a rich creamy taste can be replaced with any hard cheese.
Ingredients:
- smoked chicken meat (breast or fillet) – 450 g;
- canned corn – 250 g;
- carrots – 2 pcs.;
- processed cheese (without additives) – 2 pcs.;
- mayonnaise – 8 tbsp. spoon;
- cucumbers – 3 pcs.;
- garlic – 1 tooth.
Preparation:
Cut smoked meat, cucumbers and processed cheese without additives into cubes. Drain the canned corn in a colander. Boil the carrots. Peel and chop using a vegetable cutter or a special Korean carrot grater. Combine ingredients. Season with a mixture of mayonnaise and grated garlic.
“Ryaba chicken” with green peas
A simple salad can be prepared every day. It will appeal not only to adults, but also to children. For the latest gourmets, it is recommended to replace mayonnaise with sour cream. This will make the dish more healthy and lighter.
Ingredients:
- Boiled chicken breast.
- A can of canned peas.
- One onion.
- 0.25 kg. champignons.
- Two pickled cucumbers.
- Mayonnaise.
Preparation:
Chop fresh champignons and fry with onions. Chop chicken meat and cucumbers into cubes.
In a salad bowl, mix mushrooms with the remaining ingredients. Season the dish with mayonnaise and decorate.
8.With potatoes
A hearty salad with boiled breast, potatoes and hard cheese should stand in the refrigerator for 2 hours to soak well in the dressing and become even tastier.
Bitter onions should be pre-pickled or replaced with leeks, which have a more delicate taste.
Soft, hard and even processed cheese will be much easier to grate if you keep it in the freezer for about half an hour. The finished salad is served on a large flat plate or in portioned glass bowls, garnished with fresh cilantro, dill or halves of walnut kernels.

- carrots – 1 pc.;
