Zucchini and pumpkin pie

A simple but incredibly tasty vegetable pie made from puff pastry. It is a striking example of the fact that pumpkin can be used to prepare not only sweet desserts, but also hearty pies to replace the main dish.

Products:

  • pumpkin - 250 g;
  • zucchini - 200 g;
  • 2 onions;
  • 3 cloves of garlic;
  • cream - 250 ml;
  • 1 pack of puff pastry;
  • salt, pepper, paprika.

Cut the zucchini and pumpkin pulp, peeled and seeds, into small cubes. Cut the onion into quarters, and at the same time chop the garlic cloves.

Stew all vegetables in cream with spices for about 15 minutes.

Grease a baking dish and place a layer of puff pastry in it. Next, we form high sides and lay out the finished filling. Decorate the pie with a mesh of strips of puff pastry.

Bake for 40 minutes at a temperature of about 180°. A delicious and satisfying pie is ready!

Pumpkin pie with cottage cheese and cinnamon

The main secret of this delicacy, without a doubt, is the aromatic filling of fresh cottage cheese and sweet pumpkin.

Sand base:

  • wheat flour - 200 g;
  • a pinch of salt;
  • half a stick of butter (from the refrigerator);
  • 1 chicken egg (from the refrigerator);
  • granulated sugar - 75 g;
  • 1 tsp. baking powder.

For the cottage cheese-pumpkin mixture:

  • pumpkin puree - 300 g;
  • egg - 1 piece;
  • half a glass of sugar;
  • 1 pack of cottage cheese;
  • a pinch of salt;
  • vanillin and cinnamon to taste;
  • semolina - 2 tbsp. l.

Cut the pumpkin pulp into pieces and place in a saucepan. Lightly add water and simmer for 20-30 minutes. Let cool and puree using a blender.

Grind all ingredients for the dough, except eggs, into homogeneous crumbs in a blender, add the egg and knead the dough. Place it in the freezer for 15 minutes.

Prepare the filling: mix all ingredients until smooth in a blender bowl.

Place the chilled dough evenly in the mold, not forgetting to form high sides. Pour the pumpkin-curd mixture inside and bake the pie for 40-45 minutes at 180°C.

Decorate the finished dessert with powdered sugar.

Halloween Pie

A Halloween themed pie couldn't be easier! You will need puff pastry without yeast, red jam and an egg for greasing.

  • 450 g ready-made puff pastry,
  • 250 g jam or jam,
  • egg.

Roll out the dough into two circles, one slightly larger. On one, use a knife to cut out eyes, a nose and a mouth with teeth, like a jack-o'-lantern. Chop the pumpkin pulp and simmer in a slow cooker for about 15 minutes, then puree it in a blender. While the pumpkin is cooling, thoroughly beat the eggs with sugar and salt until fluffy. Next, add pumpkin puree, butter and lemon zest to them. Once stirring is complete, add flour, baking powder and cinnamon. Lastly, add washed and well-dried raisins to the dough.

It is recommended to bake using the “Baking” program for 1 hour. Before serving, cool and sprinkle with powdered sugar.

Ingredients for the dough:

  • 1 stick of butter;
  • 50 g powdered sugar;
  • 1 cup flour (200 g).

For the filling:

  • pumpkin pulp, cut into strips - 700 g;
  • 50 g butter;
  • 3 tbsp. l. Sahara;
  • a handful of raisins;
  • zest and juice of one lemon.

Leave the oil in a warm room for 30 minutes until it becomes soft. Then thoroughly grind it with powdered sugar, add flour and mix. You should get a stiff dough, which, after wrapping it in film, put it in the refrigerator for about half an hour.

Prepare the filling in a saucepan: mix butter, pumpkin, sugar, raisins and simmer over low heat until softened. At the end of cooking, add lemon juice and zest.

We take out the dough and divide it into 2 parts: one more, the other less. We distribute most of it into a mold with sides with a diameter of 22-24 cm. Pour the filling onto the base and grate the second part of the dough on top. Bake at 200-210 degrees for about 30-40 minutes.

Cut a couple of red apples into slices and sprinkle with lemon juice to prevent them from turning black quickly. Grease two apple slices on one side with nut butter, glue the edges with butter inside and add four marshmallows each to make teeth.

Stuffed Peppers for Halloween

Halloween themed hot! Choose your favorite stuffed pepper recipe, cut out the faces and bake in the oven or simmer until tender.

  • 500 g minced pork,
  • 5-7 tbsp. l. boiled rice,
  • bulb,
  • 60 g white bread,
  • 12 pcs. bell peppers (if available, choose yellow or orange),
  • Bay leaf,
  • salt and spices for pork to taste,
  • 3-4 tbsp. l. tomato paste,
  • water.

In a bowl, mix minced meat, chopped onion, white bread without crust soaked in milk, salt and spices.

Wash the peppers, cut off the tops, cut out triangular eyes and a toothy mouth on the side of several peppers, and fill with minced meat. Place the peppers in a large pan, add bay leaf, tomato paste and fill with water to the middle of the pan.

Bring to a boil, then simmer, covered, at a low simmer for 45-50 minutes.

Serve the finished stuffed peppers with mashed potatoes, porridge, salad and sour cream. Bon appetit!

  • 1 1/2 cups flour,
  • 1 glass of boiled water,
  • 1/2 cup sugar
  • 2 tbsp. l. liquid honey,
  • 2 tbsp. l. vegetable oil,
  • a pinch of salt,
  • 1 tsp. baking powder.

Mix honey with vegetable oil, 1/3 cup of water, add sugar, salt, mix.

Now add the sifted flour and baking powder in parts, mixing well. You will get a thick dough. Then, stirring, dilute with the remaining water to the consistency of pancake batter.

Pour the batter into lined muffin tins, or grease the tins with vegetable oil. Fill the molds 3/4 full. Then place the baking sheet with the preparations in the oven, preheated to 180 degrees, for 20-25 minutes. Check readiness with a wooden toothpick.

Cool the finished cupcakes and remove them from the molds. You can make pumpkins from one cupcake, or you can glue two together using cream from boiled condensed milk and butter at room temperature. Candies or melted chocolate are suitable for decoration.
