Cake with jam - a recipe from my sister's cookbook. My sister always loved to bake and this cake was the most delicious during the Soviet Union's shortages. But there was always jam, and the base was an ordinary sponge cake.

Description of preparation:

Cake with jam is a simple dessert from my childhood.
Nowadays you can buy or prepare any cake, but at that time a can of condensed milk was a great find. Often my sister prepared it only with jam, but on holidays she added custard with condensed milk. The cake turned out amazing! I’m sharing a recipe on how to make this cake quickly and easily. You can use any jam. I did not soak the biscuit, since the jam soaks the cakes very well. The process of making plum pie in the oven step by step

  1. Let's start with the plum pie filling. Melt the butter in a frying pan over medium heat.

    Make sure that the oil does not start to burn. This happens due to high temperature.

  2. We will sort out the plums, choosing ones that are dense, ripe and without rot. Wash the selected fruits and dry them well with a paper towel.


    Cut the fruit in half and remove the seeds.
    If you wish, you can cut the halves in half again or leave them as is. Place them in a frying pan with melted butter.

  3. Sprinkle the plums with sugar, stir, and simmer over medium heat for 3-5 minutes.

  4. The filling is considered ready when the plums become soft, hold their shape and do not disintegrate into the puree.

  5. Roll out the selected dough (in my case, homemade cottage cheese dough) for the pie with a rolling pin into a thin rectangular layer about 5-7 mm thick.

    To prevent the filling from leaking out and soaking the bottom of the pie, sprinkle a sheet of rolled out dough with starch, breadcrumbs or dry cookie crumbs.

  6. Place the plum filling on the dough, leaving 1.5-2 cm free edges on each side.


    Fold the dough over all edges, covering the filling so that it does not leak out during baking.

  7. Let's roll up the dough. Do not press down too hard to prevent the filling from leaking out.

  8. Line a baking pan with parchment, grease it with oil and place the roll seam side down.

  9. Place the pie with plums in the oven, heated to 180 degrees, bake for half an hour until golden brown.

How to make “Cake with jam”

Prepare the base of the cake - sponge cake. Beat the eggs together with sugar until fluffy.

Add flour and starch and stir until smooth. Pour the dough into the mold and place in an oven preheated to 200 degrees for 10 minutes, then reduce to 180 degrees and bake for another 20-25 minutes.

Prepare the custard, mix the egg with flour, milk and vanilla sugar. Boil over low heat until thickened. Add boiled condensed milk and mix well.

Cut the sponge cake into three parts and start assembling the cake. Grease the first cake with jam and add 2-3 tablespoons of cream.

Coat all the cakes with jam and cream. Decorate the cake to your liking. Place in the refrigerator for 6 hours to soak the cake.

Step-by-step preparation of plum pie in the oven

Even if we have very little time, a pie with plum jam can be prepared very quickly. And if you make the dough in advance, then while the oven is heating up, we will have finished all the preliminary chores. So let's get started.

  • Heat the butter in a small saucepan. It should only melt, but under no circumstances boil, otherwise the oil may acquire a bitter taste.
  • Sift the flour into a separate bowl of suitable size. Mix flour, salt, sugar and baking powder. We try to mix everything evenly.

Adjust the amount of sugar according to your choice. With these proportions, the dough will turn out to be quite sweet, so it will go better with jam, which has a slight sourness. If the filling itself is sugary, we recommend reducing the amount of sugar in the dough by a third to get a more neutral base.

  • Add melted butter to the flour and mix well.
  • Add eggs one at a time.
  • Quickly knead the dough. It should not be tight, pleasant to the touch and, at the same time, stick well to your hands and cutting board. You shouldn’t keep it warm for a long time; the principle of butter dough is the faster, the better.
  • Place the dough in the refrigerator for 20-30 minutes, if you have time. If there is a lot of dough, then after forming the pie, the excess can be put in the freezer - it will keep well there for 1-2 months.
  • Preheat the oven to 180 degrees.
  • The baking dish does not need to be specially prepared, because the dough itself already contains enough oil, but the bottom can be lined with baking paper to make the finished pie easier to remove.
  • We take the dough out of the refrigerator, separate a third of it and put it in the freezer. The larger piece will go to the base.
  • Roll out the dough according to the size of the mold, not forgetting about the sides. Don't make them too high - 2-3 cm is enough. Press lightly with your fingers so that it is the same thickness everywhere - about 0.5 cm.
  • Place plum jam on the dough and spread it evenly over the entire surface.

The amount depends solely on taste and mood, but if you put too thick a layer, the cake may turn out soggy.

  • Take the rest of the dough out of the freezer and crumble it into small pieces. You can simply “tear” the dough with your hands or use a coarse grater. Sprinkle the resulting crumbs over the pie.

  • Place everything in the oven for 20-25 minutes - during this time the dough will become pleasantly golden and crispy.
  • Take it out, cool slightly and serve.

Open sour cream pie with jam

A very interesting recipe. This pie is prepared according to the principle of a classic yeast pie, but a different dough is used.

Ingredients:

  • Sour cream 15% fat – 1 cup;
  • Refined vegetable oil – half a glass;
  • Granulated sugar - half a glass;
  • Wheat flour – 2.5 cups;
  • Baking soda – half a teaspoon;
  • Apple jam – 0.5 kg;
  • Sliced ​​almonds;
  • Starch;
  • Poppy.

Preparation:

Place the sour cream in a bowl and add vegetable oil. Now mix everything into a homogeneous mass and add granulated sugar. Next, take a mixer and beat everything until the sugar dissolves. After this, add soda, pour in the sifted flour and knead a soft, homogeneous dough. Separate two thirds of the dough for the bottom and walls of the pie, set aside one part to form the top lattice.

Now take a springform pan and grease it a little with vegetable oil. Roll out most of the dough into a round layer, the size of which should be larger than the diameter of the mold. Sprinkle the dough layer with flour and carefully transfer it to the pan. We form the bottom and sides of the future pie. Mix apple jam with two tablespoons of starch and place it on the bottom of the mold.

Turn on the oven, which should warm up to 180-200 degrees. While the oven is heating up, make ropes out of the remaining dough and place them on a slanted lattice on the pie. You can also make flowers or any other decorations you like. We wrap the sides of the pie, forming a smooth, high edge that will not allow the hot jam to leak out of the pie. Sprinkle everything on top with poppy seeds and almonds.

Place the pie in the oven and bake for about forty minutes. As usual, we check readiness using a dry toothpick. Remove the cake from the pan when it has cooled.

Biscuit recipe

Preparing the sponge cake for the cake is perhaps the most basic step. That is why special attention should be paid to baking biscuits. Biscuit can be prepared in different ways. However, the quick biscuit is the most popular. That is why, first of all, we will look at how to quickly prepare a sponge cake.

Ingredients:

  • 2 cups of flour
  • 1 teaspoon sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 8 tablespoons softened butter
  • ¾ glass of milk.

Making a quick sponge cake:

In a large bowl, mix dry ingredients (flour, sugar, baking powder and salt). Add softened butter. Mix everything well. Next, gradually pour in the milk. Mix the dough.

Then roll out the dough on a floured surface to the desired thickness. Place the rolled out dough on a baking sheet. Bake the biscuit for 12 – 15 minutes.

This is the easiest way to make sponge cake. However, along with the above recipe, the recipe for sponge cake with sour cream is very popular. To make a sponge cake with sour cream, we need:

  • 6 eggs
  • 200 grams butter
  • 300 grams of sour cream
  • 300 grams of sugar
  • 400 grams of flour
  • 1 pinch of salt
  • 1 packet of baking powder.

Preparation:

Grind slightly softened butter with sugar. Add egg yolks to the resulting mixture. Mix. Add sour cream and mix again.

Separately, beat the egg whites with salt. Combine both mixtures.

Next, we begin to add flour and baking powder into the mixture. Place the biscuit dough into a baking pan.

Preheat the oven to 180 degrees Celsius. Place the baking dish in the preheated oven. Bake the sponge cake with sour cream for 35 - 40 minutes.
