  • vanilla to taste;

  • 55 grams of powdered sugar.

Step-by-step recipe for “Rotten Stump” pie with jam

Warm the yogurt a little in the microwave or oven. Recommended temperature is 38 degrees. Add baking soda and set aside.

At the same time, whisk the sugar and fresh chicken eggs. As soon as the mixture begins to lighten and increase in size, pour in the swollen yogurt.

Now pour a glass of any jam inside. While stirring the mixture, sift in the flour. Replace sticky dough.

Now take out the cake. Clean the mold and wipe dry. Pour out the second part of the dough. Cook it for the same amount of time.

When both cakes have cooled completely, cut each layer in half lengthwise.

Place the full-fat sour cream in a bowl. Add vanilla and powdered sugar. Beat until fluffy and homogeneous. Grease the surface of the cakes with sour cream dressing.

Fold the “Rotten Stump” pie with jam. Cover with remaining sour cream.

Soften the chocolate in a water bath. Pour in a spoonful of milk. Mix and thicken a little. Decorate the baked goods in a chaotic order. Serve with tea.

Depending on the jam used, you can “play” with the color scheme of the cakes. So, blueberry, cherry or currant will give the dough dark shades. But apple, pear, sea buckthorn or peach have pleasant golden nuances.

Pie with jam “Rotten stump” is very easy to prepare. Therefore, housewives often remember this recipe when unplanned guests are already on the doorstep. But don't underestimate this popular dessert. You just need to add another jam, and it will be a completely new and original pie!

The beauty of this recipe is that you can use almost any jam to make the dessert. It all depends on what kind of baked goods you prefer: sour or sweeter. The traditional recipe involves adding dark-colored jam: plum, currant, blueberry. The pie will turn out dark and will live up to its name, resembling an old stump.

But every housewife brings something of her own to every recipe. You can take raspberry, strawberry, apple, pear or apricot jam. You can also mix several types of fruit jam. This will make “Rotten Stump” even tastier. In addition, it is unlikely that anyone will be able to repeat the recipe!

Required Ingredients

For the test

  • wheat flour - 2 cups;
  • kefir 2.5% - 1 glass;
  • chicken eggs – 2 pcs.;
  • sugar – 1 glass;
  • jam – 1 glass;
  • sunflower oil – 3 tbsp. l.;
  • baking soda – 2 tsp;
  • vanillin – 10 g;
  • butter – 20 g;
  • semolina - 1 handful.

For decoration

  • sour cream 20% - 2 cups;
  • powdered sugar – 4 tbsp. l.;
  • raisins or gingerbread crumbs – 100 g.

Cooking process

Step 1. First, let's make the cream for decorating the pie. Mix sour cream and powdered sugar. Beat with a mixer for a couple of minutes. Don't worry if the cream turns out too runny. In this case, just put it in the refrigerator for a while to thicken.

Step 2. Now you can start preparing the dough. Beat the eggs and sugar well with a mixer until foam forms.

Step 3. Add wheat flour, vanillin and baking soda to the resulting foamy liquid. In this case, there is no need to extinguish the soda! This will be done by kefir, which we will add a little later. Mix everything thoroughly with a mixer.

Step 4. Add your favorite jam and mix everything again until a homogeneous consistency is obtained.

Step 5. After this, add a glass of kefir to the resulting mass. Mix with a mixer again. The dough should turn out a little thick, like low-fat sour cream.

Step 6. Add sunflower oil to the dough and mix it with a wooden spoon.

Step 7. So that the finished pie can be easily removed from the mold, grease it with butter and lightly sprinkle with semolina. After this, pour the prepared mass into a baking dish (23-24 cm in diameter). Place the pan in the oven and bake the pie at a temperature of 180-200°C. Cooking time: 40-60 minutes.

You can also bake a “Rotten Stump” pie with jam in a slow cooker. To do this, also grease the mold with oil, but you can sprinkle it with flour. Now pour the dough into the mold. Cook the pie in the multicooker in the “Baking” mode for about 60-65 minutes until done.

Step 8. When the jam pie is well baked, remove it from the oven (multi-cooker), remove it from the mold and let it cool.

Step 9. Remove the thickened sour cream from the refrigerator. Brush the cooled pie on all sides. Decorate the pie with raisins or dark gingerbread crumbs.

The recipe has come to an end, and the Rotten Stump pie with jam is ready. Now you can safely cut it into pieces and enjoy fragrant homemade cakes. A cup of your favorite tea goes perfectly with jam pie.

Don't forget to leave a comment and bon appetit!

Option 3: “Rotten stump” pie with jam and nuts

It is impossible to spoil the taste of dessert with nuts. Especially if you use several types at once. And in order to grind them well, it is recommended to use a coffee grinder, blender or meat grinder.

Ingredients:

  • two chilled eggs;
  • two thirds of a glass of sugar;
  • one and a half cups of flour;
  • two thirds of a glass of jam;
  • vanilla;
  • a glass of yogurt;
  • spoon of soda;
  • 50 grams of powder (sugar);
  • chocolate and milk for decoration;
  • 105 grams of mixed nuts.

How to cook

Bring the yogurt to a warm state (38 degrees). Add baking soda. Mix.

In the next step, whisk the cold eggs with white sugar. As soon as the mixture turns white, pour in the yogurt. By this time it will begin to bubble.

At the next stage, add jam to the mixture. Mix. Sift the flour. Substitute a sticky and homogeneous dough.

Pour the mixture into a circle shape. By the way, we recommend lubricating it with oil.

Cool the finished dough, leaving it in the oven for an hour. At this time, make sour cream by combining sour cream with powdered sugar and vanilla.

Cut the cooled cake into three parts. Lubricate each with cream. Cover the entire “Rotten Stump” pie with jam with the remaining mixture.

Melt chocolate with milk in a water bath. Decorate the cake with drizzles of warm chocolate. Sprinkle it generously with the chopped nut mixture. Serve with tea or cool milk.

In the recipe we suggested using a nut mixture. You can buy it ready-made or customize it to your taste. It is also permissible to include only one type of nut. For example, walnuts, peanuts or hazelnuts.

How to decorate a rotten stump cake

There are few ways to decorate this delicious dessert, because it must maintain the appearance corresponding to its name. Mostly decorating the Rotten Stump cake is carried out according to the following schemes:

  • topping with crumbled puff pastry (baked) or shortbread;
  • covering the sides with boiled condensed milk and drawing wood “circles” with melted chocolate;
  • sprinkling crushed nuts over sour cream glaze;
  • installation of “mushrooms” (cookies), as on an old stump.

Option 4: Pie “Rotten stump” with jam and condensed milk

Condensed milk is a common ingredient used in most domestic homemade desserts. Therefore, we could not ignore it. And this time we suggest coating the inner cakes with thick thick milk.

Ingredients:

  • half a glass of jam;
  • half a glass of sugar;
  • one and a half cups of flour;
  • two eggs;
  • half a glass of milk;
  • a packet of baking powder;
  • can of condensed milk;
  • half a bar of milk chocolate;
  • 155 grams of sour cream;
  • vanilla.

Step by step recipe

Beat cooled eggs with sugar. Once you have a light mass, pour in the milk. Then add half a glass of light jam (peach or apricot).

Continuing the mixing process, add flour, baking powder and vanilla. Knead into a thick, viscous dough.

Grease the springform pan with oil. Sprinkle with flour. Pour in the prepared dough. Level the surface.

During this time, beat the sour cream with light powdered sugar. Leave the cream in the refrigerator. Open a can of condensed milk.

Carefully remove the finished cake from the mold. Once completely cooled, cut into 3 pieces of equal height.

Lubricate the first one with condensed milk. Place the second one. Repeat the procedure. These two layers will take the entire jar.

Now cover the future “Rotten Stump” pie with jam with the third layer. Cover the entire dessert with sour cream. Move to refrigerator shelf.

Melt half the tiles. It is better to do this in a water bath with the addition of a small amount of milk so that the mixture turns out viscous and does not harden after cooling. Decorate the cake with chocolate cream.

Classic condensed milk can be replaced with boiled or “Toffee”. Thanks to this, the dessert will turn out to be not quite ordinary, but no less tasty. Try both options and decide for yourself which one suits you best.

Rotten stump - a classic recipe

  • Cooking time: 7 hours.
  • Number of servings: 8 persons.
  • Calorie content of the dish: 4276 kcal.
  • Purpose: for tea.
  • Kitchen: homemade.

This step-by-step recipe with photos will help you figure out how to prepare classic rotten stump, achieving sponge cake fluffiness and ideal cream density for them. There is no glaze here, because... Traditional technology was not provided for initially - this was already an author’s addition that appeared later. It doesn’t matter what kind of jam you use, but it is advisable that its structure does not contain large particles of berries/fruits.

Ingredients:

  • eggs 1 cat. - 2 pcs.;
  • sugar – 360 g;
  • flour - 3 cups;
  • sour cream – 700 g;
  • jam – 100 g;
  • soda – 7 g;
  • raisins – 100 g;
  • lemon.

Cooking method:

  1. Turn on the oven and preheat to 190 degrees. Pour boiling water over raisins.
  2. Place the bowl with the eggs broken in it in a water bath. The power of the burner is not higher than average, because... The task is only to slightly warm the contents of the bowl, and not to boil (as for melting chocolate).
  3. Whisk until the mixture becomes light and immediately remove from heat.
  4. Add sugar (160 g) in a stream under a running whisk.
  5. Add a glass of sour cream and jam no earlier than the sugar grains have dissolved.
  6. Thicken the dough for the Rotten Stump cake with flour, adding baking soda last. Mix and fill the mold (diameter no more than 22 cm).
  7. Bake the crust for 35 minutes.
  8. At the same time, make the cream: add the remaining sour cream with sugar and turn on the mixer with a knitting needle attachment. Beating is carried out for 4 minutes. After 2/3 of the mixture, you need to separate and add the zest removed from the lemon (grate) and the dried raisins cut into halves.
  9. Remove the biscuit and cut into 3 equal layers after cooling.
  10. Coat with cream (the part with additives) and glue. Cover the top with the same, but without additives. Place in the refrigerator overnight or for 6 hours, and the cake is ready to surprise with its taste.

Option 5: “Rotten stump” pie with whole berry jam

You can add jam to the dough, as in previous recipes. But you can also use whole fruits from it, which we recommend laying on top of the sour cream dressing. This will fill the dessert with bright berry nuances, which will make the cake lighter and fresher.

Ingredients:

  • two glasses of jam with whole berries;
  • one and a half cups of flour;
  • half a glass of sugar;
  • two chicken eggs;
  • half a glass of kefir;
  • vanillin to taste;
  • a spoon (without a slide) of soda;
  • 485 grams of sour cream (fat);
  • 105 grams of chocolate;
  • 60 grams of powdered sugar;

How to cook

In the microwave or in a water bath, heat the kefir to body temperature. Add baking soda. Mix.

In a separate, definitely dry container, beat the sugar with cold chicken eggs. Pour the liquid part of the jam (approximately 165 ml) into the resulting mixture. Also add kefir and soda.

Continue mixing until smooth. Then add wheat flour. Knead into a flowing viscous dough.

During this time, use a mixer to make sour cream by whisking powdered sugar with full-fat sour cream and vanilla. Leave in the refrigerator until the mixture thickens.

Now turn off the oven. Cool. Then take out the form. After taking out the cake, cut it into 3 parts.

Spread each layer generously with sour cream, placing whole berries on each cake layer. Cover with the remaining flavorful sour cream dressing.

At the last stage, heat the chocolate in a water bath with a spoonful of milk. After cooling the mixture a little, pour over the incredible cake.

The type of jam depends entirely on your taste. But it must contain small berries. It could be blueberries, currants, cherries or strawberries. If the fruits are large, be sure to finely chop them before laying them on the surface of the cakes.

How to bake Rotten Stump

The number of variations of this dessert is already becoming impossible to count. There is no GOST standard for it, so each housewife tries to prepare the dish in her own way. However, professionals agree that the correct Penek cake should have a characteristic looseness on the cut and a gray-brown color characteristic of rotten wood. This is achieved mainly through biscuit cakes with a special composition. The surface is filled with delicate sour cream, which is then sprinkled with crumbs, and rings are drawn with melted chocolate.

Cream

Professionals create a classic composition for soaking cakes and covering the entire dessert based on sour cream. Anyone can figure out how to prepare a traditional cream for a Rotten Stump, because it is much easier than custard, butter and other options that are more popular among confectioners. However, it has several basic nuances that cannot be ignored:

  • Use only full-fat sour cream - anything below 25% does not whip well and does not hold its shape; after several hours, such cream will simply be absorbed and “disappear.”
  • Do not take cane sugar - only white or even powder: the grains should dissolve and not creak on your teeth.
  • Beat with a mixer: a whisk will not give the desired airiness and tenderness.
  • The standard ratio of sugar to sour cream is 2:5, calculated by weight.

Biscuit

Most housewives like the fact that even “stale” products can be used on the cake layers of this cake. Sour cream or kefir that has begun to sour is an unloved jam. The latter gives that same mysterious gray tint that the correct Rotten Stump biscuit has. You can prepare it in 2 ways: like classic fluffy cakes, which are cut in half after cooling, or like small rolls, from which the cake is then laid out. The composition does not change: a small egg, sour cream, a little sugar, flour, jam and soda - these are all the ingredients for this sponge cake.

Option 6: “Rotten stump” pie with jam and cognac

Despite the fact that cognac is a strong alcohol, it is often found in confectionery. So, it is used to impregnate cakes. They also add it directly to the dough. It turns out very unusual. Try this version of this cake.

Ingredients:

  • two eggs;
  • vanilla;
  • three glasses of cognac;
  • one and a half cups of flour (wheat);
  • a third of a glass of milk;
  • half a glass of sugar;
  • 85 grams of walnuts;
  • half a glass of raspberry jam;
  • a packet of baking powder;
  • 65 grams of chocolate for decoration;
  • 550 grams of sour cream;
  • 65 grams of powdered sugar.

Step by step recipe

Sift flour (wheat) into a bowl. Add baking powder and chopped walnuts.

In another container (dry), beat fresh eggs with sugar. Then pour in cognac and milk. Add raspberry jam. Mix all.

Pour the flour mixture into the egg mixture. Knead the dough with a whisk.

After turning off the stove, leave the cake to cool. At this time, it is good to beat rich fresh sour cream with powdered sugar.

Cut the finished dough. There should be three parts. Grease the surface of each with sour cream.

Cover the entire Rotten Stump pie with jam with the remaining sour cream. Traditionally, decorate with chocolate melted in a water bath.

Alcohol will evaporate at high temperatures. At the same time, cognac will provide a unique aroma and somewhat brutal taste to the presented cake. Men with a sweet tooth will especially like this. Although, we are sure that women will not mind either.
