Step-by-step cooking process

You should start by preparing the so-called marinade, for which you need to mix raw eggs with mustard, salt and pepper.

  1. Next, you need to cut the turkey fillet into longitudinal pieces, lightly beat them and add them to a mixture of eggs and mustard, mix well and leave for 1 hour.

  2. While the meat is marinating, you need to chop the peeled nuts. This can be done in a coffee grinder or simply crushed with a rolling pin after pouring it into a bag.
  3. Prunes must first be soaked in boiling water for 10 minutes, rinsed thoroughly and cut into pieces.
  4. Next, each piece of meat should be sprinkled with ground nuts, a tablespoon of prunes should be placed on it, wrapped in a roll and placed in a greased baking dish.
  5. When all the rolls are formed, they can be lightly greased with mayonnaise or sour cream and, if desired, sprinkled with grated cheese, and then placed in the oven preheated to 220°C for 30 minutes.

Step-by-step cooking process

The filling for meat rolls according to this recipe can be prepared not only from eggs and cheese, but also any other, depending on your own preferences:

  1. Mix the pre-cooked minced meat with bread soaked in milk, 1 raw egg, finely chopped or grated onion, half the herbs, salt and pepper.
  2. Boil the remaining 3 eggs and grate with cheese, add garlic squeezed through a press, finely chopped remaining herbs, sour cream or mayonnaise and mix.
  3. From the resulting cheese and egg mass you need to form balls and wrap each one in a portion of minced meat.
  4. Next, each cutlet thus obtained with filling must be wrapped in strips of bacon.
  5. Place the prepared rolls in a greased baking dish, cover with foil and bake for 30 minutes. at a temperature of 170°C.

  6. After half an hour, the foil must be removed from the pan and the dish should be baked again for 10-15 minutes. Until the bacon is golden brown.

  1. First you need to choose the right meat for porchetta. When purchasing, you should choose a piece of peritoneum with the maximum amount of meat, not fat, and always with skin. Wipe a piece of pork belly (rectangular) with a damp towel, remove films, cut off excess fat. Carefully remove the rib bones, if any.
  2. Next, place a piece of peritoneum skin side down. Using a knife, make shallow cuts (in the form of large diamonds). Add salt to taste, add coarsely chopped garlic. Sprinkle with paprika flakes, pepper and herbs - rosemary, oregano, fennel seeds. Massage well and rub the spices into the cuts of the meat.
  3. Roll the piece of meat into a tight roll. Then tie the roll with culinary thread and strands, fixing its shape.
  4. Wrap the prepared porchetta in baking paper to prevent the skin from burning and sticking to the foil when baking. Then wrap the porchetta in paper in a double layer of foil and put it in the refrigerator for a day. During this time, the meat should be well marinated in garlic and spices.
  5. After a day, place the porchetta on a baking sheet and bake in an oven preheated to 150ºC - 160ºC for about 3 hours. Once baked, remove the porchetta from the oven and carefully remove the foil and paper from the porchetta. Place the roll on a baking sheet lined with a new piece of baking paper. Then increase the oven temperature to 200ºC.
  6. Next, place the porchetta back in the oven for about 30 minutes to brown, bake, and crisp the pork skin. Turn the porchetta frequently while baking to ensure it bakes evenly and crisps. When the skin is baked, you need to take out the porchetta and let it “rest” for 15 minutes.

  4. Place a layer of foil in a baking dish and place the rolls on it, greased with a small amount of sour cream.

  5. Next, you can add a glass of water to the pan and place the dish in the oven to bake for about 30 minutes. at a temperature of 180-200°C.

Boiled pork belly roll

Ingredients:

  • Pork brisket - 1.5 kg;
  • Salt - to taste;
  • Mixtures of peppers (peas and ground) - to taste;
  • Mustard - 1 to taste.

Cooking method:

  1. We cut off some of the skin and align the edges so that they meet later. Coat with mustard and rub thoroughly with seasonings. It is best to chop a mixture of peppercorns and grate our meat.
  2. Now roll it up and rub the outside with seasonings. We tie it with thread so that the roll does not unfold. Grab all the edges and tie well.
  3. Now put it in a saucepan with boiling water. Add bay leaf, peppercorns and meat seasonings. Cook for about 2 hours, then let the meat cool in the same broth. Salt to taste.
