Herring roll with processed cheese and egg
Perhaps you thought that a snack roll can only be prepared with the saddle inside? This recipe describes in detail the method of preparing a roll, when the salted herring fillet is on the outside, and inside there is a cheese filling with vegetables and herbs. There is nothing difficult to prepare, and the herring roll looks appetizing.
Required:
- salted herring (fillet) - 250g;
- egg - 2 pcs.;
- processed cheese - 1 pc.;
- mayonnaise - 30g;
- carrots - 1 pc.;
For decoration:
- greens (fresh) - to taste.
Recipe:
If the herring is whole, then you need to cut it. Remove bones. Cut the fish into two parts. Cut off any irregularities. Place the fish fillet on the table, having previously covered it with cling film. Lubricate the herring with a thin layer of mayonnaise.
Next, place grated processed cheese on both halves of the fish. It will be easier to grate the cheese if you put it in the freezer for 1 hour before doing so.
Coat with mayonnaise again. Distribute finely grated eggs in the next layer.
Place the cut pieces of herring in the middle in an even strip.
Garnish with strips of boiled carrots and parsley or dill leaves.
Carefully connect both parts of the fish. Wrap everything in cling film to make a small roll. In this form, place in the freezer for 2 hours. Unroll the finished frozen salted herring roll, remove the film and cut into portioned slices. Serve the appetizer on the table. Bon appetit!
With cucumber and greens
To prepare an appetizer of two herrings, take two boiled eggs, one boiled carrot, a pickled cucumber, a bunch of fresh herbs, 100 g of soft processed cheese, 60 g of butter, a heaped tablespoon of mayonnaise. Divide the cleaned herring into two fillets and cut off thickened areas on them to even out the surface of the workpieces.
Cut the trimmed pieces of fish, as well as eggs, carrots and cucumbers into small cubes, and chop the greens. Add butter, cheese and mayonnaise and mix well.
Place half of the resulting mixture on the fillet and level it, cover with the second piece, wrap tightly in cling film and put in the refrigerator. Repeat for the second herring. Before serving, keep the rolls in the freezer, then cut into portions and serve on bread or loaf croutons.
Herring roll with melted cheese
Ingredients for “Herring roll with melted cheese”:
- Herring or iwasi (lightly salted 500-600g) - 1 piece;
- Processed cheese (soft) - 100 g;
- Cucumber (fresh) - 1 pc.
Recipe for “Herring roll with melted cheese”:
1. Cut the cucumber into strips. 2. Cut the herring so that you get two fillet halves. 3. Place the fillet on cling film and beat lightly with a kitchen hammer. Spread with cheese and sprinkle with chopped cucumber. 4. Carefully wrap the herring with the filling into a tight roll, in several layers of cling film. We put it in the refrigerator. Since the roll turns out to be very soft, cutting it will be difficult. In order to beautifully cut the roll before serving, put it in the freezer for 1-2 hours. With cream cheese and olives
For this dish you will need one lightly salted herring, 150 g of cream cheese, 5-6 olives, a bunch of fresh dill. The fish needs to be cleaned, the head separated, the skin and bones removed, and divided into two halves.
Place both parts of the fillet overlapping on a sheet of cling film - the thin sides should overlap each other slightly. Place another sheet on top and lightly beat to smooth out any unevenness. Be careful not to damage or hole the fish.
Chop the greens, finely chop the olives and add to the cream cheese, mix well.
Spread the resulting mixture onto the fillet and use film to roll it into a tight roll, just as rolls are wrapped with a mat. Wrap it in plastic and keep it in the refrigerator for about an hour, and before serving, put it in the freezer for 15 minutes.
Unroll the chilled roll and cut into pieces, serve on toasted Borodino bread croutons. For greater brightness, the appetizer can be decorated with slices of tomato or bell pepper.
Original appetizer of herring with mustard and gherkins
Products for cooking:
- Lightly salted herring (it’s best to take ready-made fillets, but not cut into pieces, so as not to bother with the bones) – 6-8 pcs.
- Mustard (it is advisable to take classic or spicy, but French grain mustard is also suitable) - 3 or 4 tablespoons at your discretion.
- Salad onions – 2 pcs.
- Gherkins – 4-6 pieces.

For the marinade you will need:
- Apple or wine vinegar – 220-250 ml.
- Water - the same amount as vinegar.
- Sweet onions – 2 pcs.
- Peppercorns – 8-10 peas.
- Mustard seeds - half a teaspoon.
- To your taste, a couple of juniper berries, if you have them, or a couple of cloves.

How to cook herring for the holiday table
- The preparation of this herring dish should begin by preparing the marinade. To do this, cut the peeled onions into half rings, pour the finished half rings into a saucepan or stewpan (deep bowl).
- Pour vinegar and water into a separate saucepan, add pepper and mustard, bring to a boil. If you use cloves or juniper, they should also be added to the marinade before placing the pan on the stove. The marinade should boil for 4-6 minutes, and then it should be removed from the heat, pour in the prepared onion, and leave the food until it cools. Attention! It is best if the onions in the marinade do not cool completely, but up to 40-30 degrees, that is, they will be warm.
- We clean the herring from the bones (do not remove the skin); the halves of the fish in the form of fillets should lie in front of us.
- Cut the gherkins lengthwise into 4 parts.
- Cut the onion prepared for the main dish into half rings in the same way as for the marinade.
- Place fish fillets one by one on a food cutting circle, grease with mustard, place chopped gherkins and onions on top of the mustard, roll into a roll and secure with a skewer or toothpick.
- We put our beautiful rolls in some deep container with a lid, it could be, for example, a plastic food container. Pour the marinade over the culinary masterpiece, cover with a lid and leave to marinate for two days in the refrigerator.
On a note! Onions and gherkins can be cut into small cubes, this will also be very tasty and look beautiful.
When the herring rolls are ready, they should be transferred to a beautiful shallow salad bowl and garnished with dill. You can serve this treat with potatoes or as a stand-alone snack with bread.
Helpful advice! If you want to prepare herring rolls for the New Year or for some other celebration, think through your menu in advance, do not forget that this dish needs 2-3 days, no less, to marinate.
With bell pepper and sour cream
Prepare herring fillets as in the previous recipe. For the filling, cut the bell pepper and pickled cucumber into cubes. Add chopped dill, 100 g of cream cheese, 100 g of sour cream, half a teaspoon of lemon juice.
Cover the workpiece with the other half of the fillet and wrap tightly. Place in the refrigerator for a couple of hours to harden.
Serve the roll pieces on toast or arrange them beautifully on lettuce leaves.
Herring snack rolls

- Herring (two fillets) - 1 piece;
- Curd cheese - 100 g;
- Red onion (small onion or half a large one) - 1 piece;
- Pickled cucumber - 3 pcs;
- Dill - 1 bunch;
- Black pepper (ground, on the tip of a knife) - to taste.
For the marinade:
- Lemon juice (or vinegar) - 2 tbsp. l.;
- Sugar - 0.5 tsp;
- Black pepper (ground, on the tip of a knife) - to taste.
For the sauce:
- Olive oil (or other vegetable oil) - 4 tbsp. l.;
- Mustard (with seeds) - 0.5 tsp;
- Lemon juice - 1 tsp.
To submit
- Bread (black) - 1 piece;
- Dill - 4 sprigs.
Recipe for herring snack rolls:
Let's prepare the necessary products.
First, pickle the onion. You can use any onion, but red looks better. Cut one small onion into thin quarter rings and pour in the marinade: mix lemon juice (or vinegar), sugar and a little ground pepper (pepper optional). The onions will be sharper with vinegar.
Clean the herring and remove two fillets. On each fillet, from the ridge side, we very carefully make cuts, opening the fillet like a book. We will try not to tear the herring. Place each opened piece of herring on cling film. Instead of film, I used regular plastic bags.
Cut the pickled cucumbers into small thin cubes.
Grease each fillet with a layer of soft cheese (I used cottage cheese with tartar sauce) and place pickled onions on top. First, remove the onions from the marinade onto a paper towel and pat dry slightly.
Lightly sprinkle the onion with ground pepper, place pickles and finely chopped dill on top. Set aside a few sprigs of dill for decoration.
Using cling film, tightly roll the fillet into a roll and put it in the refrigerator for 2 - 4 hours. This is necessary so that the roll becomes compact and does not crumble when cutting.
After the specified time has passed, remove the roll from the film and cut it into pieces approximately 2-3 cm thick. Place them on slices of black bread, pour sauce over them and garnish with dill. I didn’t take a photo of the preparation of the sauce, but everything is very simple here: mix mustard with vegetable oil and lemon juice. Mustard with grains looks impressive in this sauce. This herring stuffed with onions, carrots and beets, with butter and lemon juice is a godsend for those on diets. The dish is distinguished by a minimum of calories and labor costs associated with its construction. The filling is placed in assembled rolls, which are placed on cheese, which, at the same time, adds flavors and serves as a stand.
Ingredients:
- salted herring – 2 pcs.;
- hard-boiled eggs – 2 pcs.;
- boiled beets – 1 pc.;
- boiled carrots – 1 pc.;
- smoked cheese – 300 g;
- oil – 4 tablespoons;
- lemon juice – 2 tbsp. spoons;
