  • When purchasing, first of all, you need to pay attention to the shade and noticeable smell - it is necessary that they be the most natural and not repulsive.
  • The freshness of meat can be checked by touch. If you press the fillet with your fingers and a dent immediately forms, which immediately disappears, it means the product is fresh.
  • It is not advisable to purchase fillets that are too large - it is better to choose pieces no larger than the palm of your hand.

The cooking time depends on the chosen method, the thickness of the workpieces and the presence or absence of filling:

Other tips and tricks regarding cooking meat in Albanian style are:

  • It is advisable to place the meat in the freezer for 15 minutes and then cut it to make it easier to work with. It will harden a little and will therefore be easier to cut into cubes.

  • It is very important to achieve a delicate consistency of the meat mixture, so the onion should not be cut, but grated.
  • The meat needs to be cut into small cubes - this way it will fry much faster and will be much tastier.
  • For 1 kg of chicken fillet you need to add 150 g of sifted flour or starch.
  • To ensure that the meat mass is thick and does not spread throughout the pan, you can add additional sour cream (mayonnaise, milk), but not water.
  • The meat mixture should be similar to pancake batter.
  • If you don’t have time to freeze the meat, it is recommended to first cut it into plates, then beat it with a culinary hammer and cut it into cubes.

  • Before further frying the finished mixture, you need to leave it for at least 30 minutes. "rest" in the refrigerator.
  • In addition to greens, you can supplement the basic Albanian meat recipe with almost any ingredients to your taste. For example, exquisite taste and aroma can be provided by hard cheese, walnuts, prunes, tomatoes, mushrooms and even zucchini. Even the most unusual combination at first glance can produce an expressive range of flavors.
  • Albanian meat can be a relatively dietary dish if you cook it from lean chicken breast in a dry non-stick frying pan.

Place cooked items on kitchen towels to remove excess oil. Hot Albanian chicken breast meat is served with thin slices of vegetables and any sauce.
