You can use fresh tomatoes instead of canned ones. Before cooking, the skin must be removed. This will be easy to do if you first pour boiling water over the tomatoes.

Cooking process:

  1. Heat oil in a large saucepan over medium heat, add pork and brown on all sides. Add carrots and celery. After lightly frying, add pepper.
  2. Mix the tomatoes with juice, add broth, tomato paste, garlic, sugar, spices and pour everything into the pan with the meat. Bring to a boil over medium heat.
  3. Cover the pan with a lid and place in the oven for 1 hour until the meat is tender. Let sit for 10 minutes, then remove the meat and cut into slices. Serve with vegetables and sauce.

You can also cook meat in a slow cooker. In this case, meat and vegetables are fried in a bowl under a lid for 10 minutes in the “baking” mode. Then add the products from step 2 and simmer for 1.5 hours.

Let's prepare all the necessary ingredients.

Cut the beef into small pieces.

Fry the meat in vegetable oil until golden brown, remove from heat, add salt and pepper.

Cut the onion into feathers.

Place on top of the meat.

Scatter the garlic cloves on top (you can chop them finely if you wish).

Peel the carrots and cut into slices.

Place on top of the onion.

Remove seeds from bell peppers and cut into small pieces.

Place a layer on the carrots and add salt.

Cut the eggplant into half rings.

Lay out the next layer.

Cut the tomatoes into large cubes.

Place on eggplants, add salt and spices.

Pour water, put on the stove, bring to a boil, reduce heat to low and simmer without disturbing(!) for 1 hour.

Vegetables will shrink in size when sauteed. This is what they look like when ready.
