Hello dear readers. Today I want to share with you a delicious and simple pancake recipe. I made this for the weekend and everyone really liked the dish. Moreover, I prepared not only pancakes with sausage and cheese, the recipe with photos, you can see below, but also pancake rolls. The first time we tried this dish was at a friend’s house, during Maslenitsa, where the table was bursting with food and pancakes with different fillings. By the way, in 2021 Maslenitsa week will be from February 20 to 26. We've probably already tried a large number of pancake recipes, with different fillings, but now we want something unusual. Dough recipe for thin pancakes with kefir

This recipe is universal, they are suitable for stuffing and for eating, the dough is very soft and tasty, for me it is ideal, here everything is in moderation. But most often, pancake dough with milk is used for stuffing.

Ingredients:

  • 500 grams of sour milk 1.5% or 2.5% (can be homemade)
  • 2 medium sized eggs
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 200 ml. boiling water
  • 2 cups flour (I use 250 gram cups)
  • 1-2 tablespoons of sugar (but you can leave it out)
  • 5 tablespoons vegetable oil

1. Beat eggs into a bowl, add salt and sugar, and beat with a kitchen whisk.

2. Then pour in kefir, mix, and add the sifted flour, it is very important to add it in portions and mix well. If it doesn't work with a hand whisk, use an electric one or a mixer.

3. Pour soda into a glass, pour boiling water, stir well, it will hiss, and then pour it in a thin stream into the dough. At the same time, pour in with one hand and beat with the other so that nothing gets cooked.

It was not convenient for me to take photos and all at once, so I asked my assistants to take photos.

4. You see how the dough began to bubble, now I suggest letting it rest for 10 minutes, on the table, at room temperature. Then add vegetable oil and mix everything.

5. Then fry them in a heated frying pan on both sides until browned. Before pouring the dough in for the first time, I make sure to grease the pan with vegetable oil.

In fact, you can make the dough using any recipe you like, I tried this one and liked it. You can also cook using the same ingredients, but add milk instead of kefir, then they will not fall into the hole.

This dough option is universal for me, they are soft and elastic. But you can choose, or cook according to your favorite recipe.

Filling for stuffing sausage pancakes with hard cheese

So, after preparing the baked goods, you can start preparing the filling. I use boiled sausage and hard cheese. In fact, you can take processed cheese, ham or smoked sausage. You can add fried mushrooms or tomatoes. I have a simpler option.

Ingredients:

  • 200 grams of sausage
  • 200 grams of hard cheese
  • mayonnaise optional (I don't add)
  • any greens (I also have without them)

1. Cut the sausage into strips using a sharp knife. I try to keep all the pieces even and the same. I bought it sliced ​​from the supermarket so it's easier for me to cut.

2. I grate hard cheese, using a fine or coarse grater.

3. I move all these ingredients into a bowl or plate, mix, and stuff. Look, if you have your own tomato, you can chop it so that there is no water, use the skin.

If you wish, season with sour cream or mayonnaise, I don’t add any of this. I know that many people love it, that’s why I wrote it.

Pancakes with sausage and cheese - recipe with photo

Pancake ingredients:

  • 300 ml. milk (I have country milk)
  • 200 ml. boiled warm water
  • 2 tbsp. spoons of sugar
  • 0.5 tsp salt
  • 3 eggs
  • 100 grams of vegetable oil
  • 8-10 tbsp. spoons of flour
  • vanilla sugar optional

We have been making this recipe for quite a long time, the pancakes turn out tender and tasty.

Filling ingredients:

  • 200 grams of sausage
  • 200 grams of hard cheese
  • Mayonnaise optional
  • Sesame seeds optional

Let's start preparing the dough; for this you need to prepare the ingredients. I shared the dough recipe in detail, with step-by-step photos, here. Today I will add some photos. Eggs need to be mixed with sugar and salt.

Add milk, water, vegetable oil and flour. Combine ingredients with a whisk. I don’t beat the dough with a blender or mixer, but if it’s convenient for you, then do it the way that’s convenient for you.

Be sure to leave the dough at room temperature for 40 minutes to an hour. If there were lumps in the pancake batter, then after 30 minutes, stir it with a whisk again, all the lumps will disperse. The dough for this recipe is of medium consistency, not thick.

Fry the pancakes on a hot frying pan on both sides. It's up to you to fry or not, I don't like very fried pancakes.

My pancakes come out in holes, and this is because they contain vegetable oil, this is the first thing. The pancake dough stood for about 1 hour at room temperature, this is the second, and the third is that I fry them in a hot frying pan.

For the first pancake, I grease the pan with vegetable oil, and then I don’t do this, since the dough contains vegetable oil. I fry pancakes in a non-stick frying pan.

Previously, there were no such frying pans as there are now, and my mother fried pancakes by greasing the frying pan with a piece of lard.

In this way we fry all the pancakes on both sides. From this amount of dough I got exactly 22 pancakes. My frying pan is small, 15 cm in diameter. Therefore, if you have a large family or are expecting guests, prepare more dough.

For the filling, I use regular boiled sausage, which I bought at the store; I had it cut into thin pieces (in English this is called slice). They also cut me hard cheese.

Initially I wanted to make pancakes with ham and cheese, but I couldn’t find good ham, and it’s unclear what they didn’t take. Therefore, we decided to buy regular boiled sausage.

Now I want to show how you can make pancake rolls with boiled sausage, or ham and cheese. We will also need mayonnaise for decoration and fried sesame seeds.

I used hard cheese, but you can replace it with soft processed cheese, or soft cheese in packs.


How to wrap pancakes with filling in an envelope

When you have cooked all the pancakes, stack them on top of each other, and now you can wrap them. They are folded in different ways, today I will show two, I like them.

Ingredients:

  • 400 grams of filling
  • 10-12 pcs. pancakes

1. Place the pancake on a cutting board, or on any other surface. I turn it over to the reverse side, which is less fried. And I put a tablespoon of cheese and sausage on the edge. Indenting from the edge.

2. I wrap it from the bottom, as if tucking and hiding everything. Thus, we will make an imitation of an envelope.

3. I fold on one side, fold on the other side.

4. And I twist it, maybe with a tube, or by rotating the stuffed part towards the free edge. And we do this with everyone. In fact, you can make any quantity, 10-20, or 30 pieces. Place in the refrigerator, or freeze, and reheat for breakfast, or as needed.

5. If you freeze them, place them on a board covered with cling film, at a distance from each other. When they freeze, this may take 1-3 hours, I put them in a tight bag, and then they don’t stick together.

How to fry filled pancakes in a frying pan

And now, the most delicious thing is for the cheese to melt and begin to stretch, do you like this? I recommend reheating or frying them. I definitely fry it in butter, you can use vegetable oil, but with creamy notes and a pleasant taste, I like it better.

I place a piece of butter in the frying pan, literally 10-20 grams, if you want more, add more. I wait until the pan heats up and it melts. I post the prepared products.

It is important to cook not over hot, but over medium heat, so that nothing burns, but cooks evenly.

I fry for 1-2 minutes on each side, you can cover with a lid. And this is the kind of beauty that I end up with. To say it’s delicious is an understatement, it’s amazing!

Pancakes with sausage and cheese, wrapped in a roll

We've sorted it all out, and now I want to share with you another option on how to roll up the blanks. I tried this beauty at my godfather's for Christmas, it was spectacular, I had never seen such a presentation before. We all learn throughout our lives!

Ingredients:

  • 200 grams of sausage (cut)
  • 150 grams of cheese (I used sliced)
  • a little mayonnaise
  • toasted sesame seeds for garnish

1. Let's prepare the ingredients, I bought everything at the supermarket, I baked pancakes. You can cook them using absolutely any recipe.

2. I put a pancake, sausage and cheese on it. You can take sliced ​​Hochland cheese, they are sold packaged in 100 or 200 grams.

3. When we have placed everything, we begin to roll it up, that is, roll it up, but we need to do it tightly,

4. Then we cut diagonally with a sharp knife, the ugly edge can be cut off, I cut off a lot in the photo, maybe a little less, it’s edible, you just want to serve beautiful, perfect pieces on the table.

I also advise you to first separate the edges from the sides of the pan, and then turn the product over with a spatula. Then it will definitely not break.

In general, beautiful and delicate products are obtained. Soft and tender, despite being cooked in water. You can already eat it like that, but we are making a full-fledged snack.

Step 7. Once the entire stack of pancakes has been baked, let’s start stuffing them. In the meantime, we are preparing the filling, cover the stack with a towel so that the crispy edges steam and soften.

Grate the cheese on the coarse side of a grater. If you have a soft or melted product, you need to cool it first.

And I'll cut the sausage into small cubes. If desired, you can grate it. Then the mass will be more homogeneous.

To improve the taste, you can add chopped tomato or cucumber here. And also mix the whole mass with mayonnaise or a small amount of sour cream. But at the same time, the fat content of the snack will increase.
