Very healthy rabbit meat can be easily prepared tasty and quite quickly. Use this recipe and your dinner problem will be practically solved. All you have to do is choose a side dish.

How to cook “Rabbit fillet stewed in sour cream”

Cut the rabbit fillet into pieces and add water, let it sit for at least an hour. Then prepare the marinade. Peel the garlic, chop it using a garlic press and mix with two tablespoons of vegetable oil, spices and herbs.

Wash and lightly dry the rabbit meat, mix with the marinade. Let marinate for 2 hours.

The meat is marinated, put a frying pan on a little more than medium heat, fry the rabbit fillet until lightly browned. Then add a little water to lightly cover the meat. Salt. Simmer for about 30 minutes.

If you use prunes, pour boiling water over them for 15 minutes, then drain the water and cut the prunes into pieces.

Peel the onions and carrots. Cut into strips and fry for 10 minutes.

Add prunes, mix well and fry for another minute.

We send the vegetables to the frying pan with the rabbit, which has already been stewed. Mix.

Dilute the sour cream slightly with water or milk and pour it over the rabbit and vegetables. Simmer, covered, over low heat for about 30 minutes. Taste for salt and add, if necessary.

How to cook “Rabbit in sour cream in the oven”

1. Cut up the rabbit, wash and dry. Place the rabbit parts in a high saucepan, rub with spices, salt and pepper. Squeeze the lemon juice directly onto the rabbit. Leave to marinate overnight in the refrigerator.

2. The next day, brush the spices off the rabbit pieces. Roll in flour and fry in oil until golden brown.

3. Transfer to a heatproof dish.

4. Pour 0.5 liters of hot water into the mold or pan for the rabbit. Leave it for now. Peel and chop the onion, leek and garlic. Fry in a frying pan in butter.

5. Peel and chop the root vegetables and carrots, add to the onions. Salt, pepper, simmer until soft. Then add to the rabbit. Send the bay leaf there too.

6. Place sour cream in a saucepan or baking dish, cover with a lid and bake at 180 degrees for 1.5 hours. Stir during cooking. If it's boiling hot, open the lid slightly. Bon appetit!

Rabbit with herbs and vegetables

A delicious complete dish for lunch or dinner.

Ingredients:

  • Vinegar - 100 ml.
  • Champignons – 150 g
  • Rabbit - 1 pc.
  • Wheat flour - 100 g
  • Sour cream – 250 g
  • Rosemary - to taste
  • Carrots - 1 pc.
  • Salt - to taste
  • Garlic - 1 head
  • Butter - 50 g
  • Potatoes - 2 pcs.

Preparation:

Fry mushrooms in butter. Separately fry the potatoes and carrot rings.

Soak the rabbit in water and vinegar. Then dry and rub with spices.

Fry the rabbit, first dipping it in flour.

Pour sour cream over the meat and simmer for about an hour.

Serve the rabbit with vegetables and mushrooms.

Rabbit with mushrooms in sour cream

A piquant and very creamy dish with a delicate mushroom flavor will perfectly complement an everyday dinner or a holiday feast.

Ingredients:

  • Champignons – 200 g
  • White wine - 100 ml.
  • Sour cream – 150 g
  • Dried rosemary - 1 tbsp.
  • Rabbit – 600 g
  • Garlic - 3 cloves
  • Thyme - 5 sprigs

Preparation:

Chop the rabbit into large pieces.

Boil the meat with rosemary sprigs.

Drain the water and add spices and wine to the rabbit. Evaporate the alcohol.

Fry onions and mushrooms. Pour into the rabbit along with the estimate.

Simmer the dish for about 30 minutes, and then add the garlic.

Serve the finished rabbit with wine and sour cream sauce.

Rabbit kebab in sour cream step by step photo recipe

Ingredients:

  • Rabbit - 1 pc.;
  • Onions 100 gr.;
  • Sour cream - 150 gr.;
  • Garlic - 5-7 cloves;
  • Spices - any to taste, I used 1 teaspoon each of red and black ground pepper;
  • Spicy herbs - 1 teaspoon ground thyme;
  • Salt - to taste;

Rabbit shish kebab recipe. The rabbit meat is cut into pieces, pre-marinated in spices, onions and sour cream, strung on skewers and baked until beautifully golden brown on the grill. This kebab is served with fresh vegetables and herbs.

Previously, I had already prepared rabbit kebab, but here I decided to experiment a little and create something between that kebab and the now traditional dish of rabbit stewed in sour cream. Of course, since we were preparing barbecue, no one planned to stew anything, but before the final cooking of this dish on the grill, the rabbit meat was marinated for at least about an hour in a marinade that included sour cream. So, I’m telling you how my experiment happened, which resulted in simply incredible results.

We cut the washed rabbit carcass into portioned pieces, if possible (as far as possible), cut out the extra bones (for example, from the legs), I highly recommend leaving the ribs as is, since these are the most delicious pieces of our future kebab. Yes, I would like to draw your attention to the fact that from cut-out bones (see the pile in this photo for correction) and pieces of rabbit meat with a backbone (not particularly suitable for barbecue), you can prepare just a very tasty rabbit soup!

Place the pieces of rabbit meat that are intended for barbecue into a deep enamel or plastic bowl, add 1 teaspoon of ground red pepper to the meat,

Salt our kebab (I don’t remember exactly, but it seems I added something like 1-1.5 teaspoons of salt),

Add a teaspoon of ground black pepper. Now, let’s leave the rabbit aside for a while and prepare sour cream for the marinade.

Place one teaspoon of dried thyme in a small bowl.

Add to it 150 grams of fresh sour cream,

And squeeze 5-7 cloves of garlic into the sour cream, mix everything well and leave the sour cream to infuse with herbs and garlic, and let’s return to our rabbit...

Cut a small onion (or cut half of a large one, as I did) into not very small cubes,

And we'll send the onions to the rabbit meat. In this recipe for rabbit shish kebab, we don’t need a lot of onions, since the marinating will take place in fermented milk sour cream, the role of the onions in this recipe is to give taste, and not to marinate the meat...

Now, using your left powerful (and of course, clean) hand, mix the rabbit meat well with salt, onion and spices,

Let the game stand for 20-30 minutes (so that the onion gives juice and mixes with the meat juice and spices) periodically (2-3 times during the entire time) stirring the rabbit meat,

After that, pour sour cream onto the meat,

Mix everything well one more time, and leave the kebab to marinate for (... incredible numbers are usually written here: 4.6 hours, or even “overnight,” but I recommend marinating rabbit meat for no more than 2 hours, since it’s much longer to marinate this already tender meat!?) one hour.

After marinating the rabbit meat in sour cream, thread the rabbit pieces onto skewers,

And immediately place them over previously prepared good (hot and even) coals,

After 3-4 minutes, we’ll turn our rabbit kebab over and bake it on the other side,

And then turn the rabbit meat 2 more times, after 1-2 minutes, until the required degree of baking is obtained, after which,

The rabbit kebab that we marinated in sour cream is immediately removed from the heat and served hot to the table, or like this, i.e. right on the skewers,

Or, you can serve rabbit kebab along with fresh herbs and tomatoes,

Recipe Notes

I will repeat my advice that I gave last time: when cutting up a rabbit for this dish, we do not use axes (so as not to get crushed bone chips), the carcass can be cut well with an ordinary knife along the joints and ribs!
