    • 1 cup sugar (any kind)
    • 1 teaspoon salt or amount to taste

    Preparation:

    To easily peel tomatoes, scald them with boiling water. You can even cook it for a minute. Let it cool and the peel will come off easily. Tomatoes, peeled and seeded, finely chop, puree in a blender, put in a saucepan and simmer for an hour.

    Soak dried chili peppers in hot water for 15-30 minutes. If you are afraid of excessive spiciness, remove the seeds and internal membranes. If you are not afraid, grind the soaked peppers in a blender with the addition of a small amount of water.

    Add the pureed chili peppers and all other ingredients (pre-chopped) to the stewed tomatoes. Using a blender, blend the sauce until smooth.

    Simmer for another 2 hours until the sauce thickens.

    Pour into pasteurized jars, seal tightly and use as desired.

    These sauces have a strong spicy and tart flavor. Ideal for marinating pork, roasting pork, braising pork and eating pork. They are also great for dressing salads. Choose the type of chili pepper based on your taste preferences. And don’t forget that the spiciness of the sauce can be reduced by removing the seeds and internal membranes from the peppers.

    Ingredients:

    • 1 glass of water (hot)
    • 6 dried red chili peppers (cayenne, Japanese chili, or for those who like it spicy, you can take Habanero).
    • 4 dried Pequin chili peppers
    • 1 large onion (finely chopped)
    • 1.5 cups ketchup or tomato puree
    • 1/3 cup vinegar (preferably apple cider vinegar)
    • 1/4 cup brown sugar
    • 2 tablespoons vegetable oil
    • 2 cloves garlic (chopped)
    • 2 teaspoons dry mustard
    • 2 teaspoons Worcestershire sauce (or substitute soy sauce)
    • 2 teaspoons black pepper
    • 2 teaspoons liquid smoke
    • 2 teaspoons paprika
    • 1/2 teaspoon cumin

    Preparation:

    Place dried chillies in hot water for 15 minutes. Transfer to a blender, add some of the remaining soaking water and blend until smooth.

    Fry onion and garlic in oil. Add the resulting pepper puree and the rest of the ingredients. Bring to a boil. Turn the heat to low and add all the other ingredients. Simmer over low heat for another 5 minutes. Cool. And you can use it. The sauce will keep in the refrigerator in an airtight container for up to two weeks.

    Ingredients:

    • 240 ml/cup prepared yellow mustard
    • 100 g / 0.5 cups sugar
    • 60 gr. / 0.3 cups brown sugar
    • 180 ml / 3/4 cup apple cider vinegar
    • 50 ml / 1/4 cup water
    • 30 g / 2 tbsp. tablespoons ground chili pepper (Habanero, Scotch Bonnet, Ghost and Carolina Reaper peppers are ideal for lovers of extreme heat)
    • 5 ml/1 teaspoon soy sauce
    • 30 ml / 2 tbsp melted butter
    • 15 ml/1 tbsp. spoon of liquid smoke
    • Optional: 5 grams/1 teaspoon ground black pepper, 5 grams/1 teaspoon ground white pepper, other spices to taste and desire

    Preparation:

    Combine all ingredients except soy sauce, butter and liquid smoke in a medium saucepan. Simmer over low heat for 20 minutes, stirring occasionally. Add the remaining ingredients and simmer for another 10 minutes.

    • 1.5 cups ketchup
    • 0.5 brown sugar
    • 3 medium cloves garlic, finely chopped. Or dry garlic

    • 3/4 teaspoon freshly ground black pepper
    • 1/4 salt

    1. Peel the onions and garlic and finely chop them individually.
    2. Heat the olive oil in a heavy-bottomed frying pan, add the onion and fry over medium heat for 5 minutes until soft. Then add garlic to the pan and fry for another 2 minutes.
    3. Next add tomato sauce and bring to a boil.
    4. Pour boiling water over sugar and mustard powder and stir until completely dissolved.
    5. Add tomato paste with vinegar, stir and pour the resulting mass into the tomato sauce.

    • tomato juice – 250 ml;
    • cane sugar – 4 tbsp. l.;

    • butter – 2 tbsp. l.;
    • ground red pepper – 1 tsp.

    Bring finely chopped garlic and juice to a boil, reduce heat. Add sugar, sauce, vinegar, seasonings. Keep on low heat for about 8 minutes. Add butter if desired and remove from heat.

    BBQ sauce with honey

    A bright, spicy, sweet and sour barbecue sauce with honey for meat or poultry. Apply it with a brush to almost cooked ribs or chicken, grilled or in the oven. And the sauce will turn into a wonderful and delicious glaze.

    3. Bring the ingredients to a boil, reduce the heat to low and cook, stirring, for half an hour until the sauce reduces and thickens.
    4. Cool the finished barbecue sauce with honey, pour into containers and store in the refrigerator.
