If you don’t yet know how to cook potatoes stewed in sour cream sauce with mushrooms, then this recipe is for you! This dish can be used as a side dish or as an independent dish.

Potatoes with mushrooms recipe for the oven

1. Wash the potatoes, peel them, cut into rings 3-5 mm thick.

2. Grease a baking sheet with vegetable oil. Place potato rings. Sprinkle salt, pepper, coriander on top (half of the planned portion of spices).

3. Peel the onion, cut into thin half rings, and spread evenly over the potatoes.

Pickled mushrooms spoil the taste, use only fresh ones!

5. Strain the mushrooms, cut large ones into pieces. Place on a baking sheet on top of the potatoes and onions. Add a second portion of salt, coriander and pepper.

6. Mix sour cream (mayonnaise) with water (150 ml). Pour the resulting sauce evenly over the potatoes and mushrooms so that the dish does not burn or become dry during baking.

7. Grate the cheese on a coarse grater and sprinkle on the potatoes.

How to cook “Potatoes stewed in sour cream sauce with mushrooms”

1. Cut the champignons into large pieces. Then finely chop the onion so that it is not visible in the finished dish. Cut the potatoes into large pieces.

2. Next, fry the champignons in butter and vegetable oil. When they turn a little golden, add the onion and fry a little. Add the potatoes, fill them with water (almost along the edge of the potatoes).

3. Next, salt the dish, add bay leaf and nutmeg. Let the potatoes cook. Add warm water to the sour cream and stir, then add it to the potatoes and mix well. Let the potatoes boil for 5 minutes, at the end add herbs and a little garlic to taste.

Baked potatoes with mushrooms and cheese


Since ancient times, forest mushrooms have been present in the diet of many, mainly Slavic, peoples.
When potatoes began to be grown everywhere in Europe by the middle of the 19th century, dishes with them gradually began to gain popularity. Potatoes baked with mushrooms and cheese are no exception. Although cultivated mushrooms are now available year-round, wild mushrooms have a richer, more vibrant aroma and flavor. Young forest mushrooms are much superior in taste to champignons grown under artificial conditions. They have only one advantage over wild mushrooms - they are safe.

Step-by-step recipe for potatoes with mushrooms and cheese

Ingredients for cooking (per serving):

  • Potatoes – 200 g;
  • Champignons – 150 g;
  • Onions – 50 g;
  • Sour cream – 60 g;
  • Cheese – 30 g.

How to bake potatoes with mushrooms and cheese in the oven

Thoroughly peel the potatoes and remove the “eyes”. Cut the tuber into thin long strips.

We wash the champignons. If necessary, cut off the roots. Cut each mushroom in half. Then cut each half into thin slices.

Cut the peeled onion into small cubes of equal size.

Place all the ingredients in a container where the potatoes will be baked. Here it is portioned. Place salted potato strips on the bottom.

Place champignon slices on top.

Sprinkle everything with onion cubes and salt. You can add a ready-made mixture of seasonings for cooking mushrooms.

Pour sour cream over the onion. Carefully pour in 1/3 cup of water.

Before placing the mold in an oven preheated to 220°C, close it with a lid. If this is not included with the baking dish, use food foil.

After 35 minutes, you need to take out the pan with potatoes, remove the foil, and sprinkle the finished dish with cheese. Now, without closing the mold, return it to the oven for 1 minute.

Potatoes baked with mushrooms and cheese are ready!

Potatoes with mushrooms, meat and cheese in the oven

  1. Meat - half a kilo.
  2. Potatoes - half a kilo.
  3. Mushrooms - half a kilo.
  4. Onion - 2 pcs.
  5. Mayonnaise - 200 gr.
  6. Vinegar (9%) - 1 glass.
  7. Hard cheese - 100 gr.
  8. Seasonings and salt - to taste.
  9. Vegetable oil - as needed.

First, cut the onion into half rings and marinate it in vinegar for 30 minutes. The pickled onions will definitely cook in the allotted time. If you are not comfortable with vinegar, then it is better to fry the onions in a frying pan along with mushrooms in a small amount of vegetable oil until half cooked.

Next, cut the meat into layers and beat it vigorously with a kitchen hammer. Any meat of your choice is suitable - pork or beef. Sprinkle the meat on both sides with salt and spices. Place in an even layer in a greased baking dish. In general, each housewife chooses the order of laying layers of products herself. Some people first put a layer of potatoes, and others, as in this recipe, a layer of meat. I don’t see much of a difference, since this is an oven and it distributes heat evenly over the container.

And don’t forget to turn on the oven in advance, setting the temperature to 180 degrees. So that later you don’t have to wait for it to heat up.

If you do pickle the onion, rinse it in cold water to remove the vinegar. Place the onion layer on top of the meat.

And now it’s the turn of the mushrooms. Previously, I wrote that it is better to lightly fry the mushrooms before placing them in the mold. And I don’t go back on my words. If you marinated the onions, fry the mushrooms separately. Do not cut too large. You can also choose any of the mushrooms available. Champignons, oyster mushrooms or forest mushrooms. There is no difference, only wild mushrooms have more flavor. So, place a layer of mushrooms on the onion.

Now start preparing the potatoes. Cut the peeled tubers into pieces lengthwise. The thinner the pieces, the better. Season them with salt and seasonings, pour a tablespoon of vegetable oil. Mix well and place on top of the mushrooms. Dilute half the mayonnaise in water until liquid and pour the solution over the top layer.

To ensure that the potatoes do not remain raw at the end of cooking, I advise you to cover the pan with foil and place in a preheated oven for 35 minutes.

Then remove the pan from the oven, spread the remaining mayonnaise over the top layer and sprinkle with grated cheese. Then place in the oven for another 10 minutes without foil or lid.

After 10 minutes, take out the finished dish. Distribute into plates and bring to your household or guests. Now you know how to bake potatoes with mushrooms, meat and cheese in the oven.

This recipe includes not fresh, but pickled (canned) mushrooms. Which makes the process of preparing the dish much easier, which can also be called potato casserole with mushrooms.

  1. Onion - 2 pcs.
  2. Potatoes - 1 kg.
  3. Pickled mushrooms - 1 jar.
  4. Sour cream - 400 gr.
  5. Cheese - 150 gr.
  6. Salt, seasonings - to taste.
  7. Vegetable oil - for frying.

Drain the marinade from the jar of mushrooms into a glass. Cut the mushrooms themselves into slices. Cut the onion into small cubes and fry in vegetable oil until softened. At this time, turn on the oven at 200 degrees.

Then put the chopped mushrooms in the frying pan and fry for another 5 minutes along with the onion. The moisture from them should evaporate a little.

Now work on the potatoes. Peel it and chop it into thin strips. Pour sour cream over the potatoes, sprinkle with salt and spices. Stir and place half in a greased baking dish or deep baking tray.

This is followed by a layer of mushrooms fried with onions and then the second half of potatoes.

Place a layer of grated cheese on the surface and cover the pan with a lid or foil. Place in the oven for 35 minutes.

After this time, remove the foil and bake uncovered for another 10 minutes to obtain a golden brown crust on the surface of the casserole.

And your potatoes baked in the oven with sour cream are ready! Take out and divide into portions.

Potatoes in the oven


Cooking dinner this way is much easier for many housewives. Oven dishes have one advantage - they do not require constant presence in the kitchen. All you have to do is prepare all the ingredients, place them on a baking sheet and wait until they are completely cooked. To complete the dish, you will need a deep baking sheet or some kind of heat-resistant form. It’s good if it goes with a lid, as covered potatoes taste much better.

Ingredients:

  • Potatoes - 3−4 pcs.;
  • Mushrooms - 200 g;
  • Sour cream - 200 g;
  • Onions - 2-3 pcs.;
  • Vegetable oil - in a frying pan;
  • Salt and pepper to taste.

Cut the potatoes into large pieces or circles, and the champignons and onions into small ones. Heat a frying pan, pour oil into it and fry the onions and mushrooms for five to ten minutes.

It is necessary to preheat the oven and prepare a baking dish. Its bottom is greased with vegetable or butter. After all the preparations , begin to place the ingredients in the mold in layers in this way :

  • The first is potatoes;
  • The second is onions with mushrooms.

After this, everything is salted and poured with sour cream or sour cream sauce. If there are a lot of potatoes, you can repeat the layers. It is important to try to maintain consistency, then the appearance of the dish and its taste will be preserved as much as possible in its original form.

When everything is placed on a baking sheet, you need to put it in the oven for about forty minutes and wait until the dish is completely cooked. Cooking potatoes is always not only quick and tasty, but also very interesting. If you watch the process, you will notice how white potatoes with mushrooms in the oven with sour cream gradually become rosy and appetizing.
