Beef with prunes is baked in the oven, making a very good second course for a regular or holiday dinner. In addition to meat and prunes, carrots and onions are baked. Juicy, beautiful dish!

Meat stew with prunes in the oven

  1. Pork balyk – 1.5 kilograms;
  2. Prunes – 100 grams;
  3. Mayonnaise – 5 tablespoons;
  4. Mustard – 3 tablespoons;
  5. Salt, spices - to taste;
  6. Garlic – 3 cloves;
  7. Soy sauce – 3 tablespoons.

Wash and dry the balyk. Place on a board and use a sharp knife to cut the steaks across the grain, without cutting all the way through. The end result should look like a book. Peel and finely chop the garlic.

In a separate bowl, combine mayonnaise, mustard, salt, spices, soy sauce and mix everything well. Thoroughly coat the meat with the resulting marinade, including the cuts. Transfer it to a deep bowl and put it in a cool place to marinate overnight.

Cut the dried prunes into large rings. We take the soaked meat out of the bowl and begin to place prunes between the steaks. Turn on the oven at 220°C.

Transfer the stuffed meat into a glass roasting pan and, without covering, place in a hot oven for 40 - 50 minutes.

How to cook “Beef with prunes in the oven”

Rinse and dry the meat, then cut into portions. Wash prunes, onions and carrots as well. We cut the onion into half rings and cut the carrots into discs.

Fry the pieces of beef on both sides in vegetable oil. Fry each side for a couple of minutes.

Place the meat in a baking dish and distribute the prunes on top.

Lightly fry the carrots in the same pan. Place on top of the meat.

Fry the onion a little, put it on the carrots.

Pour boiling water or broth over everything. The water is level with the top layer.

Bake the dish in the oven preheated to 180 degrees. Cooking for 2.5 hours.

Remove the finished dish from the heat-resistant form and place on plates.

Baked accordion pork with potatoes

During cooking, the potatoes are soaked in meat juices and marinade. Use tubers of the same size for this dish so they cook evenly. It is better to choose tomatoes of medium density with soft skin.

Ingredients:

  • pork entrecote - 1 kg;
  • potatoes - 1 kg;
  • soy sauce - 100 ml;
  • mustard - 3-4 tbsp. l.;
  • olive oil - 50 ml;
  • salt - 1 tbsp. l.;
  • tomatoes - 2–3 pcs.;
  • cheese - 150 g.

How to cook:

Peel the potatoes. Place in a single layer in a baking dish. Place the meat on top and make cuts in it at equal intervals.

Mix mustard, olive oil, soy sauce. Taste and add salt if necessary. Distribute the resulting mass evenly over the entire surface of the meat. Insert tomatoes and cheese into the cut.

Cover the pan with foil, making sure there are no gaps. Bake in the oven for 1 hour 20 minutes at 180°.

Recipe for accordion meat (pork) with prunes in the oven

Prunes have a slightly smoky flavor that opens up when heated. You can use rice as a side dish - pour it into a baking dish, pour in water, and then place the prepared meat on top. The cereal will absorb all the released fat and juice. Honey in the marinade will help to get a golden brown crust.

Ingredients:

  • pork neck - 1 kg;
  • prunes - 150 g;

For the marinade:

  • sunflower oil - 4 tbsp. l.;
  • salt, paprika - 1 tsp each;
  • mustard seeds, mustard - 2 tsp;
  • honey - 1 tsp;
  • garlic - 2 cloves;
  • black pepper - ½ tsp.

For refueling:

  • olive oil - 3 tbsp. l;
  • salt - 1 tsp;
  • Provençal herbs - ½ tsp.

Garnish:

  • potatoes - 1 kg.

How to cook:

Make cuts across the entire surface of the meat at equal intervals from each other, forming an “accordion”. Place prunes between the petals. Mix all the ingredients for the marinade and pour the resulting marinade over the meat. Place in a baking bag and leave in a cool place for 10 hours.

Score the peeled potatoes crosswise. Place in a baking dish. Combine the dressing ingredients and pour over the vegetable. Place the container in the sleeve as well.

Place meat and potatoes on a baking sheet. Bake in the oven. Time - 1 hour, temperature - 190–200°.

Beef with prunes in the oven in foil can turn out incredibly juicy and tasty, the main thing is to choose the right meat. You should not give preference to meat that is too stringy, fatty or, on the contrary, low-fat. As a last resort, if you are not confident in your abilities, contact the seller for help. For the marinade, in addition to prunes, you can use a variety of ingredients - mustard, soy sauce, lemon juice and tomato paste, as well as your favorite spices.

What we need:

  • beef - 600 g;
  • mustard - 1.5 tsp;
  • prunes - 2 handfuls;
  • salt - 2 pinches;
  • spices - 1/2 tsp;
  • soy sauce - 4 tbsp. l.

Makes 3-4 servings of baked beef.

How to bake beef with prunes in foil

  1. To prepare the marinade, you need to mix soy sauce, mustard, and spices. The recipe uses separately ground fenugreek, a set of barbecue spices, and a couple of pinches of dried thyme. Prunes can be dried or smoked. If there are bones in it, they need to be removed. If it is too dry, you need to soak it in hot water for half an hour. It’s convenient to chop and mix everything in a blender. Add also salt if the soy sauce is not too salty. Grind at high speed for several minutes.

  2. You can cook beef immediately on foil. First, wash the piece of meat and dry it with napkins, cut off any excess with a sharp knife. To better soak the beef in the marinade, you can make several cuts on top.

  3. Spread the marinade on all sides of the piece of beef.

  4. You can immediately wrap the meat in foil and put it in a cool place for a couple of hours. If you don’t have free time, you can immediately put the beef in the oven. To do this you need to set the temperature to 180 degrees.

  5. We bake the meat in foil for half an hour, and then unwrap it and cook for another 15 minutes. It is advisable to pour the fat over the beef, which will accumulate at the bottom of the foil package.

The meat dish can be served warm or cooled, cut into slices or small pieces. A variety of sauces, fresh vegetables and herbs will be appropriate for meat - just like at a picnic. The same marinade can also be used to cook meat in the sleeve.
